I was recently speaking to someone who wasn’t from the area and they asked me, ‘What’s that groovy little cafe as you’re passing through Pottsville?’ ‘That’s The Palm,’ I said. And it’s under awesome new family ownership – managed by young brother-and-sister duo Liv and Osca but owned and loved by their whole family. Liv says each and every one of her eightperson family are all excited to get to know Pottsville and the wider community. They were born in Lismore but grew up near Toowoomba, and they and their family actually also own two cafes in Dalby, but now they have finally landed their dream cafe, The Palm. Liv says it’s always been her dream to own a healthy, beachside cafe, and there’s something very satisfying about seeing people turn their dreams into reality, isn’t there? When her family aren’t busy with the cafes in Dalby, they come down to Pottsville to help out at The Palm. As she’s a current cafe owner and has four years of management experience within the industry, the community’s favourite cafe looks to be in good hands. Liv and Osca’s approach to food truly encapsulates sustainable living. Having the perfect chef for the job was very important to Liv, and she says head chef Jay feels so right that he’s already part of the family. food. Currently studying health and wellness, Liv believes in a farm-to-table approach, and loves being able to show and explain to the community what they are eating and where it came from. The Palm offers locally sourced, preservative-free, healthy, and delicious food with the majority of it made from scratch in their very own kitchen. With a cocktail bar on the cusp of opening, there are plans in place to expand their menu to incorporate tapas and artisan cheese boards. Despite only taking over the reins on 7 June this year, they have already seen an overwhelming response from the community. Located perfectly on Pottsville’s main street, there is something about this cafe that draws you to it. With a modern, beachy facade and interior but warming atmosphere, it is truly a nourishing spot to come and enjoy your breakfast and a coffee. Your breakfast and lunch will taste even better with live, local music. You’d already be mad not to stop in at The Palm if you’re passing through Pottsville but with live music starting soon there is no way you can pass that up. Since opening in 2015, The Bolt Hole has continued to evolve and grow: they want guests to enjoy a good time every time! Now open till 2am, the bar has ramped up its exclusive spirits portfolio to over 300. The bar has a strong focus on whisky and gin with vintage, rare, and exclusive bottles lining the extensive back bar. The whisky cabinet forms a whisky den, which is perfect for sipping on the good stuff and perusing the boutique and international offerings. The Bolt Hole is gaining further recognition in the world of craft cocktail making with one of their bartenders (Shane Crosland) going through to the Australian finals of the Diageo World Class Cocktail Competition 2019. This is the world’s biggest and most recognised cocktail competition. The Bolt Hole was also nominated for Best Regional Bar at the Australian Bar Awards. The team at The Bolt Hole exude confidence and swagger complemented with a knack for finding the right match for an indecisive palate. They have just launched a new signature cocktail menu that is influenced by local and seasonal ingredients – all with fun names like the Jean Claude Pan Dan and Pocket Rocket (Tanqueray Gin, clarified pineapple, coconut syrup, rocket puree, lime, celery bitters, and Crème De Violette Sherbet). As a winter treat, The Bolt Hole is offering 25 per cent off their newly crafted cocktail menu every Wednesday and Thursday throughout July. The Bolt Hole, upstairs at the beach end of Fletcher St is a dimly lit refuge from Byron’s sun-dazed, crowded streets. Green Chesterfields, handmade furniture, antique light fittings, designer bathrooms, and a tarnished copper bar supported by recycled timber are just some of the highlights. Bar snacks are available throughout the evening with smokehouse barbecue and other treats available for events and parties.
