Culinary Journey Denia Mercat

Ferry van Houten is a Dutch chef and owner of the culinary boutique retreat ‘Casa Coline’ in Javea. As a professional culinary journalist, I had the opportunity to accompany him on a culinary journey through Denia Mercy, where he took me to some of his favorite food stalls. The market in Denia is a bustling hub of activity, with vendors selling everything from fresh seafood and meats to fruits and vegetables, handmade crafts, and souvenirs. It is a feast for the senses, with the sights, sounds, and aromas of Spain’s rich culinary culture filling the air.

Tallez brothers

Our first stop was at the Tallez brothers’ stall, where we tasted some of the finest Pata Negra ham in the region. The ham was sliced paper-thin and had a rich, nutty flavor that melted in our mouths. Ferry explained that Pata Negra ham is made from free-range acorn-fed pigs and is aged for at least two years, giving it a distinctive flavor and texture.

Pescadería Cofradía

Next, we visited Pescadería Cofradía, a fishmonger specializing in local seafood. The display of fresh fish and shellfish was truly impressive, with everything from sea bream and sea bass to squid and octopus on offer. We selected some beautiful gamba roja, a type of red prawn that is highly prized in Spain for its sweet, delicate flavor. We also tried some fresh anchovies, which were grilled and served with a squeeze of lemon.

Chef Ferry Van Houten has been trained by great Michelin chefs like Paul Bocuse***, Theo Nolet*, Henk Tuin* and Constant Fonk**. With his boutique retreat “Casa Coline”, Ferry wants to organize informal dinners, where fun, quality and surprise are the main objectives. His dj-booth is implemented in his kitchen.

Carnicería la Boina

Our next stop was Carnicería la Boina, a butcher specializing in Rubia Gallega beef. This breed of cattle is native to the Galicia region and is known for its marbled meat and intense flavor. Ferry selected a prime cut chuleton, which he planned to prepare for dinner that evening.

Hermanos Camps

We then visited Hermanos Camps, a stall selling a wide variety of fruits and vegetables. The displays were a feast for the eyes, with brightly colored peppers, tomatoes, and oranges arranged in perfect rows. Ferry selected some fresh figs and avocados, which he planned to use in a dessert, and some local tomatoes for a salad.

La Latería

Our final stop was La Latería, a tapas bar that is famous for its anchoas de Cantabria. They are served on a tostado, including goats cheese and olives. We also tried some croquetas, which were filled with creamy cheese and ham, and some grilled octopus, which was tender and flavorful.

Food Passion

Throughout our visit, Ferry shared his passion for food and cooking, explaining how he had been inspired by the ingredients and flavors of the region. He spoke with the vendors, learning more about their products and techniques, and sharing his own knowledge and experience.

Culinary Spain

In conclusion, Denia Market is a true culinary gem, and Ferry van Houten’s passion and expertise made our visit a truly memorable experience. I would highly recommend a visit to the market and a stay at Casa Coline to anyone looking to explore the rich culinary culture of Spain.
