Welcome to the latest edition of the Hawkinge and Elham Valley Handbook; we’d like to wish you all a very happy Christmas, and a peaceful New Year. In the run up to Christmas, we bring you news of the Folkestone Winter Shelter, to help make sure everyone has a warm meal and somewhere to sleep during the coldest months; and we also bring you news of the Boxing Day Dip at the Sunny Sands, organised for charity by The Lions Club. We would also like to congratulate Gareth and Lyle Hurford-Jones on the opening and re-launch of their fantastic businesses in Lyminge. The 5 businesses, including Lyminge Country Store & Country Store Barn, Four Candles, offering Antique and Architectural Salvage, Red Dragon IT, for all your computer needs, and The Clinic, Lyminge for both Podiatry and Osteopathy. They have done

a wonderful job, and these businesses in the centre of Lyminge really are well worth a visit. As we enter 2013, please remember to let us know what you have planned too. Don8 Network; Working Within Our Community

Raising money for B48’s, Folkestone A local shop, based at 314 Cheriton Road, DON8 is doing some great work within our local community. Here we hear the thinking behind it… The idea behind what we have done so far at the shop was to provide a fund raising arm for some lesser known charities. When I say lesser known, I mean in the national eye. We at DON8 were saddened by the struggle some of the lesser charities, that all do amazing work WITHIN OUR COMMUNITY, were having to cope with just to stay operational.

However, giving it a reshuffle and setting out a better management structure enabled the charity to continue. Hundreds of people have been helped out over the years with advice, family support, and a lot of the time, just lending an ear, they provide a common ground for mostly single parents of all ages to visit, with or without their children and find comfort with each other’s company. At DON8, Cheriton Road, we sell furniture and more; everything from beds to tables and chairs and everything in between. We accept donations

and have a free collection service for any donated goods that you might want to give us. We also accept financial donations at the shop but cannot do this online yet. This year we are looking to raise £20,000.00 for B48’s but will only achieve this with your help. We need products that you think other people might want to buy and we also need people to come and buy our products. All we need is for all of you to pop in once a month and buy something, anything, a book, cd, sofa, tables, wardrobe - whatever it is, our prices are low and our people are friendly so pop in for a cup of tea if nothing else. Many thanks and we look forward to seeing you soon.

The charity we have embraced this year is B48’s. Most local people will have heard of this as it has been running in its present form for the last 12 years. Once funded by the lottery this charity started and identified its need within our local community. After 3 years the lottery grant was

Exciting Times for Lyminge 3 New Businesses Launch and 2 Businesses Re-launch in Kent Village Saturday 1st December 2012 saw the launch of three new shops and the re-launch of two existing businesses, with a large crowd enjoying the tours of each of the 5 businesses before the cutting of the ribbon. Seasonal Recipe Roman Roasted Lamb Shank by Hythe Brasserie This recipe is simple to prepare and great for dinner parties because once the marinating is done, just leave the shanks in the oven and serve when you’re ready. Ingredients: • 4 Lamb shanks

For the marinade: • 2 cloves Garlic • Handful of fresh Rosemary • 2 tablespoons Olive Oil • 1 Tablespoon Red Wine Vinegar • 4 anchovy fillets (the salty ones from a jar or tin)

Serves 4 Method 1. Put all the marinade ingredients in a small blender or pestle and mortar and mix to a rough paste. 2. Place the shanks in a deep roasting tin, smother in the paste, cover and leave for 2 hours. 3. Pre heat the oven to 180 celsius or gas mark 7. 4. Keep the shanks covered and roast for 1 ½ hours. 5. Uncover shanks and roast for a further ½ hour. 6. Remove from the oven and allow to rest for 10 minutes and to serve simply. 7. Place the shanks in bowls and add some of the rich roasting juice.

Delicious with buttery mashed potatoes and some dark greens. Chef’s tip: No need to add any salt to the marinade as the anchovies provide the salt content.

Folkestone Collective’s First Birthday The Folkestone based collective ‘Mermaids and Seagulls’ will be celebrating their first birthday this Christmas as they return to the Old High Street with another pop up shop. The Creative Quarter will be buzzing this year with new talent joining some of the original members. New businesses will be bringing statement scarves, retro children’s dresses, glass decorations, crazy prints and even skull doorstops to the shop. The shop is open daily from the 1st to the 23rd December between 10a.m. and 5p.m. at no.67 The Old High Street. The shop follows the group’s very successful exhibition hosted at the George’s House Gallery in the summer.

One of the organisers, Suzi Ashworth of Sweet Pandemonium says “The ladies have been working extremely hard to fill the shop with gorgeous and affordable handmade gift items especially for Christmas shoppers.” and “We hope this is the first of many birthdays to come, the collective is clearly a popular idea and is expanding with even more Folkestone businesses taking part this year.” “As a group we are really benefiting from supporting each other and I think that is really important in helping our businesses to grow.” The group are thrilled with the numbers now following them on social media sites having only been in existence for a year.

Folkestone Lions Club Liven up your Boxing Day Why not take part in the annual Folkestone Lions Club Boxing Day dip, while having fun you can raise money for your favourite charity. Snuffles and Sneezes! Do you seem to have year round hayfever? Wake up with that ‘all bunged up’ feeling? Are you constantly blowing your nose or fed up with sneezing all the time? I see many people in my clinic who have been told they have to live with Rhiniitis, meaning generalised inflammation of the upper respiratory channels. Most often this is put down to an unidentified ‘allergy’ which is causing inflammation! Whatever the cause, as a sufferer, you will know how irritating it can be. Sometimes dietary changes can help. Whether there is an environmental allergen involved or not, identifying food intolerance can often lessen the load on the body if certain foods are eliminated from the diet. Dairy products and sugar are common mucus forming foods that can irritate any problems involving phlegm. Diet may not be a problem at all, or may only be part of the whole picture. A detailed consultation with a professional herbalist is often helpful to piece together the symptoms and case history

to identify patterns that you might not have noticed. In terms of self help pure essential oil of tea tree (anti-septic) and eucalyptus smithii (decongestant) might be helpful to blocked sinuses if applied topically. Dilute a couple of drops of each in 25mls of carrier oil and massage into the painful areas. Elderflowers are anticatarrhal, anti-inflammatory and anti-allergic so can provide relief from a runny nose and sneezing whether allergy is implicated or not. These are often available in health food shops and best made into a tea from the dried flowers. You might be lucky and find a combination herbal tea with added eyebright

and/or plantain – both these herbs also have anti-catarrhal effects and support the upper respiratory system in general. Widely available nettle and chamomile possess anti-allergic properties so, whilst having no direct anticatarrhal action may help if allergy is a feature. Echinacea or elderberry may help as immune system support but it’s always best to seek professional advice if infection is present or the problem is persistent. Recurrent infection of the sinuses can be extremely painful and would call for more detailed help involving full consultation with a herbalist.

The Folkestone Churches Winter Shelter

The Shelter will run this winter from 3rd December 2012 to 25th February 2013. The work of the Winter Shelter helps some of the most vulnerable people in Folkestone and surrounding areas, giving them a hot meal and a warm bed in addition to support with accessing services that allow them to take some control of their lives. The Folkestone Churches Winter Shelter is hosted by various local churches with around 250 volunteers and 4 staff working together to provide a warm welcome, hot food and comfortable bed for homeless guests in the Shepway area. Behind the scenes, staff provide advocacy for guests and work closely with local agencies to support the individual short term and long term needs of those who access our service. The Folkestone Winter Shelter is dependent upon voluntary donations from supporters, and would be very pleased to hear from anyone who

would like to donate or get involved in supporting the Shelter in another way. The Folkestone Churches Winter Shelter project was established in 2009 by Churches Together Folkestone and other local interests having witnessed the hardships facing homeless people locally. For the last two years, the Folkestone Rainbow Centre, an ecumenical charity that has 25 years of experience catering for the lonely, the isolated, the socially excluded and the homeless has overseen the operation of the shelter project. A steering group meets regularly to help ensure that the shelter is fit for purpose and continues to develop to meet the needs of the homeless and vulnerably housed in Shepway. Over the 12 week course of the shelter, volunteers provide the staffing hours essential to ensure the shelter runs its course. In addition many people give up their time in cooking off site and delivering food to the shelter venues. The roles volunteers undertake

include setting up the venue, helping with the cooking at the church, engaging and chatting with the guests in the evening, staying overnight and clearing up the next morning. Every volunteer is asked to complete a volunteer form so the Folkestone Churches Winter Shelter can centrally hold details of their availability, experience, special skills (e.g. first aid), contact details etc. Volunteers have to supply details of a referee who can provide suitable references and FCWS also carries out enhanced CRB checks. Winter Warmers by Pippa Greenwood garden centre for adding winter colour and interest to pots and planters. Some of my favourites are the universal or other winter flowering pansies or even hardier smaller flowered violas. For some seriously sturdy winter colour, try the winter flowering heathers as these make a good base for the display and you can then add trailing plants such as variegated ivies to help provide extra colour, texture and interesting leaf shapes. All these plants will last for years, not just the winter months.

Even if you’re sure you’re not going to venture into your garden much this winter, make sure you have every possible encouragement by creating a winter planter or two. They will not only look gorgeous from the warm comfort of your house, but will also help to coax you outside from time to time. Choose a larger container as it’s more likely to protect the roots on the plants due to the greater volume of compost. I’d avoid any container less than 30cm (12in) diameter if possible. Any container will insulate the roots a little, but one made from thick wood (such as a wooden trough or window box, or a half-barrel) will be very effective. Good quality,

fairy chunky plastic also works quite well. Try to avoid metal as this tends to conduct cold. Warm undergarments are all the rage for winter planters. A lining of bubble-wrap polythene or even a few layers of old fabric or carpet, sandwiched between the sides of the container and the compost will help to keep both compost and roots warm. If you live in a particularly cold area, or simply want to decrease the risk of winter damage further, try to position winter planters out of the windiest areas. If possible place them fairly close to a house wall on the south or west side as this will help to provide a little extra warmth. You’ll be amazed at the range of plants available at your local

At this time of year, garden centres may offer very tiny versions of shrubs such as skimmias, Pieris or hollies and many of the dwarf conifers. They will provide good colour and interest in a container for a year or two and can then be planted in your garden to reach their full size. In warmer areas, you can add bright patches of colour to your display using the ‘winter cherry’ or solanum which has bright yellow and orange fruits. You could also use a few winter flowering cyclamen but these definitely need a very sheltered spot such as a window box on a protected wall. Don’t forget to add in a few early spring flowering bulbs such as miniature narcissus, crocus and miniature iris. Hide them beneath the roots of your winter bedding plants; you’ll forget they are there until they burst out in spring.
