1kg deseeded butternut pumpkin 40ml olive oil 1 large onion, peeled, chopped 3 medium garlic cloves 2 carrots, peeled, chopped 750ml (3 cups) chicken stock 1 tsp mild paprika 1 tsp ground cumin 1/2 tsp turmeric 1/2 tsp ground coriander 1/2 tsp grated fresh nutmeg 250ml (1 cup) creme fraiche
pesto ingredients
2-3 tbs roasted pumpkin seeds, plus extra to serve 1/2 tsp grated ginger 2 medium garlic cloves 1/2 cup fresh basil leaves 1 tsp grated parmesan cheese 120ml (6 tbs) olive oil

A delicately spiced soup to add some extra winter
sizzle, topped with pumpkin & ginger pesto method 1.
To make pesto preheat oven to 170ËšC. Toss cleaned pumpkin seeds in a little olive oil, spread on a baking tray and roast for about 10 minutes or until golden. Once cooled place roasted seeds, ginger, garlic, basil and parmesan in a food processor and whiz to a paste. With the motor running, slowly add the oil until ingredients combine. Cover and set aside.

Preheat oven to 180˚C. Cut deseeded pumpkin in half, place cut-side down on a lightly oiled baking tray. Place unpeeled garlic cloves on the same tray. Bake for 20 minutes and remove garlic so that it doesn’t overcook. Peel the roasted garlic and set aside. Continue baking pumpkin for another 25 minutes or until tender and cooked through. Scrape out the pumpkin flesh and discard the skin, set aside.
3. Heat oil in a saucepan over medium heat. Add the onion and carrots and cook for 5 minutes until softened. Add pumpkin, stock, 2 cups of water, the spices and seasoning. Bring to the boil, then reduce heat and simmer uncovered for 25 minutes until the carrot is soft and stock is reduced. Peel roasted garlic and add to the saucepan. Allow the soup to cool for about half an hour before blending in batches. Return the soup to the pan, stir through creme fraiche and gently reheat. Serve drizzled with the pesto and sprinkled with roasted pumpkin seeds and pepper.
