medium heat, stirring, for 5 minutes until just beginning to brown. Stir in the onion and cook, stirring, for 5 minutes until the onion is just beginning to colour. Mix in the garlic, red pepper, orange pepper and tomatoes. Cook for 2 minutes, then pour in the stock and bring to the boil. Cover and simmer for 40 minutes, stirring occasionally. Add the spaghetti, cauliflower, broccoli and kale and simmer for 5 minutes until the spaghetti is tender but still firm to the bite. Add the basil leaves and salt and pepper to taste, if using. Ladle into warmed bowls, top with the cheese and serve immediately.
