The Queens Park Swizzle INGREDIENTS • 2 parts Angostura 7YO Rum • 1 part Fresh Lime juice • 1 part Demerara syrup (2:1/2 parts demerara sugar: 1 part water) • 12-14 Mint leaves • 6-8 Dashes Angostura Aromatic Bitters

METHOD Muddle lime, mint and sugar with the rum, fill with ice then add Bitters and garnish with mint.

Perthshire Summer Garden This cocktail is a delightfully Scottish twist on the classic Gin Bramble; the quantities of sugar and lime can be adjusted to perfectly suit your tastes!

INGREDIENTS • 2 parts Edinburgh Gin • 1 part Raspberry Edinburgh Gin • 1 tsp caster sugar • Juice of half a lime • Crushed ice • Fresh raspberries

METHOD 1. Muddle the lime juice, sugar and half of the fresh raspberries in a glass. 2. Top halfway with ice, add more raspberries, Edinburgh Gin & Raspberry Edinburgh Gin. 3. Top up the glass with ice, garnish with a couple of raspberries plus a little lime zest and enjoy!

Edinburgh Elderflower Orchard

A simple cocktail can easily be rustled up in pitchers for lazy, hazy summer sipping.

INGREDIENTS • 1 part Edinburgh Gin • 2 parts Elderflower Edinburgh Gin • Cloudy apple juice • Fresh lime • Apple, to garnish • Ice

METHOD 1. Add the Edinburgh Gin and Elderflower Edinburgh Gin to a glass (jar or pitcher!). 2. Top up with ice and the cloudy apple juice; add a squeeze of lime to taste. 3. Garnish with freshly sliced apple, and enjoy!

Dunnet Donkey INGREDIENTS • 50ml Holy Grass • 25ml Lemon juice • Ginger ale to top up

METHOD Add all ingredients into a rocks glass, fill with ice and top up with ginger ale. Garnish with Lemon grass straw and mint spirg. A Caithness twist on the Moscow Mule.

Poetic Licence A light and refreshing summer drink.

INGREDIENTS • 50ml Makar Glasgow Gin • 50ml Pressed Apple Juice • 25ml Fresh Lime Juice • 12.5ml Elderflower Cordial • 25ml Soda Water Garnish: Sliced Green Apple Glass: Highball Ice: Cubed

METHOD 1. Add Makar, Apple Juice, Lime Juice and Elderflower Cordial to a cocktail shaker. 2. Add cubed ice and shake until chilled. 3. Strain into ice filled glass. 4. Top with soda water, stir and garnish. 5. Serve with straws.

Blue Julep INGREDIENTS • 50ml Jim Beam Double Oak • 6-8 mint leaves • 2 bar spoons blueberry compote/jam • 5ml/bar spoon sugar syrup Glassware: Julep Tin Ice: Crushed Garnish: Mint sprig and 2 blueberries, icing sugar - in a capuccino shaker sprinkled over mint and blueberries.

METHOD Build in julep tin Alcohol Units: 2 units

Orcadian Smash INGREDIENTS • 50ml Highland Park 12 YO • 5 Lemon Wedges • 6-8 Mint leafs • 2 bar spoons Orange Marmalade Glassware: Rocks Ice: Crushed Garnish: Lemon Wedge & Mint Sprig

METHOD Take a clean glass. Muddle lemon wedges and marmalade. Add mint and Highland Park 12. Churn with crushed ice. Garnish and serve. Alcohol Units: 2 units

Picnic G &T INGREDIENTS • 50ml Poetic License Strawberries and Cream Picnic Gin • 200ml Fevertree Elderflower Tonic • Fresh Strawberry

METHOD Fill a Havana glass with ice, pour over both the gin and the elderflower tonic. Slice the strawberry and garnish. British summertime (the nice bits!) in a glass.

Brand info Rock rose

Rock Rose Gin gets its name from a botanical forage along the cliffs of the Pentland Firth, where Rhodiola rosea was introduced to the owners by a local herbalist. A rose in the rocks! Over a thousand years ago, the Vikings would harvest wild exposed cliffs like these to gather Rhodiola rosea. This was thought to give them the extra strength to continue on their long, arduous journeys.
