By making considered choices when sourcing and buying our food and drink we can eat our way to good health, protecting the environment and the local economy as we go. By using our top tips you will be supporting many small scale, independent businesses across the county, this in turn will strengthen our local food system and help care for the planet. • Look out for the Dorset Food & Drink logo – this indicates that it is a Dorset based business • Try to buy local meat and dairy products that have been exclusively grass-fed as this helps manage the Dorset environment • Buy from independent shops – they contribute much more to the local economy and they care about the provenance of their goods • Eat what is in season – source the freshest produce you can throughout the year • Select ﬁsh from sustainable sources – use the Marine Conservation’s Good Fish Guide (mcsuk.org/goodﬁshguide) • Cook your meals from scratch. You’ll know what’s gone into them, and also save money • Consider growing some of your own vegetables and herbs in your garden, or even a window box • Think about the waste you generate – choose unpackaged goods where possible, or those in compostable or recyclable materials

Well known for her regular television appearances on Ready Steady Cook, Great Food Live and This Morning, Lesley Waters is also a former Head Tutor of Leith's School of Food & Wine, author of several cookery books, a qualified fitness instructor and a mother of two! Though London born and bred, Lesley was quickly charmed by the beauty of the West Dorset area which she now calls home. She is inspired by the superb quality of the fresh local produce available right on her doorstep. Lesley likes to cook seasonal food whenever possible and her simple, flavour-packed modern dishes are easy to recreate with stunning results. Teaching has always been Lesley’s great passion so opening the Lesley Waters Cookery School, at Abbot’s Hill Farmhouse in West Dorset, is the realisation of a long-held dream. Her energetic style of presentation is expertly combined with clear and simple guidance, making her classes both entertaining and informative.

Celebrated chef, restaurateur and food writer Mark Hix is renowned for his original take on British gastronomy. After 17 years as Chef Director at Caprice Holdings, he opened his first restaurant in 2008 – the Hix Oyster & Chop House in Smithfield. He has now opened a further seven establishments including Hix Oyster & Fish House and Hix Townhouse in Lyme Regis, as well as London venues: the Tramshed in Shoreditch, Hixter Bankside in the City, and Hix Soho. Mark, who is frequently lauded for his unrivalled knowledge of ingredients with provenance, grew up in West Bay and trained at Weymouth College. "Being a born and bred Dorset lad and now having a fish restaurant and B&B in Lyme Regis, I love being a part of the Dorset food scene,” said Mark. “I try to support local growers, fishermen and farmers where I can, as food is an important part of everyone's lives."

JAMES GOLDING

LLOYD BROWN

This Dorset chef’s career was forged at a young age in the kitchens of The Savoy Hotel in London. In 1998 he became Chef de Partie at Le Caprice working under Mark Hix and later Elliot Ketley, it was during this time that James’s love for British seasonal produce was ignited. He then went on to work at legendary seafood restaurant J Sheekeys before crossing the Atlantic to join Soho House New York. In 2006 he returned to the south coast both a seasoned chef and new father. As Chef Director at The Pig, James draws inspiration from the region’s unique produce from both forest and sea. Provenance and seasonality are the most important factors for his menus at the award-winning Pig on the Beach at Studland. “We’ve been overwhelmed by the quality and quantity of the local produce,” said James. “We should all be very proud of what is being achieved within Dorset – I know I am!”

Lloyd Brown heads up the Grey Bear Bar Company which specialises in all things cocktail and spirit related. With a passion for ‘keeping it local’, Lloyd utilises a huge range of Dorset-made drinks in his cocktail recipes and at the many events he runs. Lloyd spent six years in London where he launched bars and restaurants for several brands, before returning to Bridport to take over the Venner Bar at The Bull Hotel. His locally-inspired cocktail menu scooped many accolades including Best Bar in the South four years in a row in The Observer awards. In January 2017 Lloyd left the Venner Bar to launch the Grey Bear Bar Company, drawing on his many years of experience. You can now typically find him hosting talks on Dorset made spirits and working with drinks producers on new projects, as well as residencies in bars across the county and consulting for restaurants.

Mrs T’s Traditional Tea-time Treats is part of a family-run bakery in Weymouth which has been trading since 1981. They produce bread and confectionery using traditional methods, baked in their 80year old brick oven. All Mrs T’s products are baked in this bakehouse.

We are a traditional English bakery based in Sherborne, where we bake fresh every day. We were established in 1911 and the bakery is now run by the fourth generation of the Oxfords family. Outstanding food from an outstanding landscape The Dorset Area of Outstanding Natural Beauty (AONB) is a nationally important protected area, so that its natural beauty can be conserved and enhanced for future generations. It is particularly special for its landforms and variety of landscapes, rich wildlife, important historic and geological features, and the poems, paintings and prose of the artists it has inspired. The area has been shaped by over 8,000 years of human settlement and food production. Itâ&#x20AC;&#x2122;s still largely farmed, and from this rich and varied landscape comes a wealth of outstanding food and drink products. The Dorset AONB Partnership established Dorset Food & Drink and is proud to continue to support it, to celebrate the link between the landscape and food and to stimulate the landscape economy.
