Chef Pat Pascarella helms the kitchen at The White Bull as executive chef and partner. The restaurant—with a name inspired by literary icon Ernest Hemingway, who referred to the blank page as “the white bull”—showcases a thoughtful menu of simple, farm-forward fare prepared with ingredients sourced exclusively from Georgia farmers and purveyors. Dishes are defined by the ingredients available rather than any specific cuisine, and the menu showcases an elevated, yet approachable selection. Since opening in Decatur Square in March 2018, The White Bull has been named “Best New Restaurant” by Creative

Loafing, “Best Farm-to-Table Restaurant” by Atlanta Magazine, and among “Atlanta’s Best New Restaurants of 2018” by Thrillist. Both the food and cocktail programs have been recognized in local and national publications, including Garden & Gun, Condé Nast Traveler, The Atlanta JournalConstitution, and more. Chef Pascarella has two decades of experience in kitchens and draws expertise from a culinary background that most recently included serving as executive chef at Atlanta’s The Optimist and as executive chef and owner of his renowned Italian restaurant Bar Sugo in Norwalk, Connecticut. In 2016, The New York Times awarded Bar Sugo with the much soughtafter rating of “Very Good,” calling the restaurant “serious about food that is both fresh and innovative.” Prior, Pascarella cooked in Manhattan

Pascarella: I personally think we have a bunch of like-minded chefs and operators who just want to do something good. Whether it’s donating time and money or just elevating a cuisine in a way where we basically eliminate the carbon footprint. Why choose Atlanta as the home for your culinary career? I like Atlanta because it’s a perfect climate to grow a ton of ingredients, and we are at the center of the Southern food explosion that’s happening right now. Atlanta offers so many different areas to succeed. You don’t find that in many cities. What seasonal ingredients can you find in Atlanta that you cannot find elsewhere? I absolutely love the fact that we can literally grow anything here—it’s amazing! I personally love the wheat we grow here. We use it all year round, and it’s extremely flavorful. Seventy percent of Americans’ diets come from wheat, and they have no idea where it comes from. But in Georgia, we do. What food trends do you think are next to arrive in Atlanta? Vegetable-driven restaurants...and pasta is going to make a comeback!

Atlanta-based husband and wife team, Thip and Vanh Athakhanh, are the founders of Snackboxe Bistro, and their recent trip to Laos in 2016 inspired them to reconnect deeply with their roots and bring their passion for Laotian culture and food to life. Thip’s professional background includes freelance photography and over 10 years of experience in global supply chain/project management. Her expertise in sourcing, negotiating, and the ability to develop forecast models transferred seamlessly into the restaurateur world, allowing Snackboxe to offer high-quality ingredients while keeping costs competitive. She creates her own menu and recipes, constantly brainstorming innovative ideas that will let her marry old-school tradition with the latest food trends. CHEF RON HSU OF LAZY BETTY

An Atlanta native, Executive Chef and Partner Ron Hsu brings culinary chops from the internationally-acclaimed, Michelin-starred restaurants of NYC, serving as executive sous chef and creative director at Le Bernardin, and executive chef at Le Colonial. Lazy Betty, Hsu’s first restaurant, opened in February 2019 in Atlanta. This modern and inventive restaurant is also helmed by Chef de Cuisine/Partner Aaron Phillips and Hsu’s siblings, Anita and Howard. Lazy Betty serves tasting menus that showcase refined dishes, each course designed by Hsu to feature an array of cooking styles and flavors. Also find Hsu on Netflix’s cooking series “The Final Table,” which premiered in November 2018. DiningOut Magazine: What sets Atlanta’s dining scene apart from other Southern cities? Hsu: I think one way Atlanta cuisine is standing out is the influence of ethnic food that’s so prevalent all over the state. The influence of Buford Highway has been permeating the food scene for decades, and Duluth has proven itself to be a little Koreatown. With Atlanta being such a diverse city with so many people moving here, I think it’s being represented better than ever. Why choose Atlanta as the home for your culinary career? I don’t know if I chose Atlanta or it chose me. I was born here and spent more time in the kitchens of Atlanta than any other city. What Atlanta offers that no other city offers is the people and culture. At Lazy Betty, the chefs are very interactive with customers, and we love having them spend their evenings with us so we can get to know them. Atlanta represents “Southern hospitality” like no other place.

CHEF JASMIN WILLIS OF GRACIOUS PLENTY

After graduating from Le Cordon Bleu with a certificate in baking and patisserie, Chef Jasmin Willis began her career in the pastry world at St. Cecilia working under Corporate Pastry Chef Chrysta Poulos, one of the most skilled chefs in Atlanta, to whom Willis credits with making her the chef and owner she is today. It wasn’t long after arriving at St. Cecilia that Willis was offered a promotion and a transfer to open Marcel as the lead pastry chef—a time she regards as a major highlight in her career—which eventually led her to the commissary at King + Duke. A master of all things sweet and sugary, Willis later decided to try her hand on the cook’s line, which landed her back-of-the-house at Beetlecat. When she discovered her knack for that avenue, the time was right to set out and open Gracious Plenty! But during the year and a half it took to open GP, Willis trained further, under female culinary icon Jenn Robbins. Willis’ accolades include working on the team that won Cochon 555 in 2016, participating in the philanthropic endeavors of Team Hidi, and multiple appearances at Attack of The Killer Tomato Festival! DiningOut Magazine: What sets Atlanta’s dining scene apart from other Southern cities? Willis: I think Atlanta has gone back to its roots. Southern food is about gravy, biscuits, and anything fried because those are the ingredients that have always been readily available. But now that we all don’t have to tend to our own farms, and we have an awesome group of farmers who take pride in what they do, I feel like Atlanta has been given the opportunity to showcase Southern vegetables and produce in a whole new light. Why choose Atlanta as the home for your culinary career? I chose Atlanta because this is where I grew up in the culinary industry. This city has so much to offer. Atlanta is identified as a Southern city but we are one of the biggest melting pots, and the best place to witness that

CHEF NOLAN WYNN OF BANSHEE

Chef Nolan Wynn grew up in a small rural town in South Georgia, where he was greatly exposed to agriculture, hunting, and fishing. This connection to food sourcing helped develop his passion for it at a young age, and he was often found experimenting in the kitchen. By the time he got a job as a line cook the summer before college, Wynn was deeply in love with kitchen culture. He loved the rush, the pressure, and the stress that came with life as a chef. A few years into college, Wynn found himself in the kitchen again and was eager to expand his culinary horizons. At Hugh Acheson’s restaurant, Five & Ten, Wynn cycled through every station of the kitchen over the course of three years before landing at Chef Ford Fry’s no. 246 in Decatur. Here, his flame for pasta making was ignited. He spent a little over five years working at no. 246 and then some time at King + Duke. By now, well-equipped for the culinary world, Wynn and a friend tossed around the idea of opening something all their own—and thus, Banshee was born. DiningOut Magazine: What sets Atlanta’s dining scene apart from other Southern cities? Wynn: While there are still many places in Atlanta that serve the classics and do them well, it seems as if recently many chefs are pushing the boundaries of what Southern food is, presenting classic ideas in a new, inspired, and, oftentimes, lighter way. Why choose Atlanta as the home for your culinary career? Atlanta has always had a ton of great restaurants. And even though many Atlanta restaurants are getting more national recognition, a lot of the best restaurants are “hole-in-the-wall” gems that can be found throughout many of our small neighborhoods. There is always a new place to try that you may have never even heard of. What seasonal ingredients can you find in Atlanta that you cannot find elsewhere? The weather in Georgia is oftentimes unpredictable. This allows for seasons to overlap for an extended amount of time. My favorite time of year is when summer and fall collide. Being able to use tomatoes, eggplant, and peas at the same time as figs, plums, and fall squashes allows for some pretty awesome flavor combinations. What food trends do you think are next to arrive in Atlanta? I really hope that Atlanta continues to break away from its comfort zone and encourages people to be innovative and bring new ideas to our food scene.

CHEF JARED HUCKS OF THE ALDEN

Chef Jared Hucks was born and raised in Atlanta, enjoying the tradition of Southern comfort food and exploring the many facets of ethnic cuisines. Growing up in a creative family of artists, food became his artistic medium. Having traveled and worked on five continents, Hucks brings a wealth of worldly experience to his culinary practice. His cooking career began in 1996, following his first year of college in Steamboat Springs, Colorado, when he returned home to Atlanta and landed his first kitchen job. Beyond graduating from the French Culinary Institute in NYC with honors in

The obsession with healthy dining is becoming more of a normality, so I think we can expect to see more menus being designed around special diets (whether gluten-free, vegan, paleo, keto, and so on) which will encourage more plant-based cooking and an overall accommodation to this growing group of diners and beyond; also, environmental awareness and sustainability, from root-to-stem to nose-to-tail. We’ll continue to be creative and push the boundaries for more sustainable, less wasteful ways of doing things.

CHEF TAYLOR NEARY OF RESTAURANT HOLMES

Chef Taylor Neary is executive chef of Holmes, a neighborhood restaurant and bar within the historic Jones House at Alpharetta City Center. A Roswell (Georgia) native, Chef Neary serves eclectic dishes made with locally-sourced, seasonal ingredients from area farms. Prior to opening Holmes in July 2018, Chef Neary attended Le Cordon Bleu College of Culinary Arts in Atlanta. During that time, he worked at Stoney River Grill, Roswell’s legendary steakhouse, before continuing on to Buckhead Life Group’s Kyma. Over the last seven years, Chef Neary has helped lead kitchens at acclaimed restaurants across town, including Roux on Canton, Little Alley Steak, Opulent, St. Cecilia, and Marcel, where he most recently served as sous chef. Guests at Holmes can expect a lunch menu of seasonal salads, small plates, and à la carte entrées, and a dinner menu offering mezzestyle dining, as well as larger plates. The bar serves a creative list of cocktails (prepared with ingredients made fresh in-house), craft brews (canned and bottled), a rotating draft beer from Variant Brewing Company in Roswell, and a wine list comprised of reds, whites, bubbles, rosés, and a handful of reserve options. Housed in the Jones House, a 1915 historic building and former residence preserved by Alpharetta City Center, Holmes showcases a handsome interior with leather banquettes, dark geometric tile, and tinted shades of gray, brown, and navy. Neary: Atlanta is pushing the envelope, mixing traditional Southern cuisine with an eclectic feel derived from different regional flavors and techniques. Why choose Atlanta as the home for your culinary career? Atlanta is my hometown, and the food scene is expanding at a rapid pace, both inside and outside of the perimeter. We’re located in Alpharetta—just outside of the perimeter—and we have the advantage of having local farms within walking distance from the restaurant. What seasonal ingredients can you find in Atlanta that you cannot find elsewhere? We really like to use honeysuckle. We pickle it, use it in vinegars, and use it to fortify cocktails. What food trends do you think are next to arrive in Atlanta? We feel that pasta will always have a place in the city. I see people tapping into old school techniques and making a play on them. 20

As co-owner and culinary director of Storico Fresco Alimentari e Ristorante, an Italian restaurant and grocery in Buckhead, and a soon-to-open Roman-inspired concept, Forza Storico in West Midtown, Chef Mike Patrick offers his guests immersive cuisine and a purely authentic dining experience that reflects the way food and wine are treated in Italy. His handmade pasta, traditional Italian dishes, and the Italian counterculture in the rustic restaurant and market make up an Italian experience that local Atlantans can only dream of. Chef Patrick’s culinary career began as a hobby, making pasta in his basement, and although his path into the culinary world was not a straight one—detouring for everything from scuba diving to drag racing—it was filled with passion. After attending the Florida Culinary Institute and honing his skills across the restaurants of Fort Lauderdale, Florida, Patrick moved to Atlanta where he studied for his sommelier certification through the Court of Master Sommeliers. A 2007 trip to Italy was a major pivoting point, leading to small jobs throughout Italy—from working in a porchetta production facility to connecting with the pasta-making networks of local Italian grandmothers—where he learned as much as possible about the culinary art. Patrick returned to Atlanta in 2009, and the pasta he made at home sold out within 25 minutes on his first day at the Peachtree Road Farmers’ Market. Soon after, Patrick met Pietro Gianni, his partner at Storico Fresco. The duo began making plans for their Italian eatery and grocery store. Their original shop opened in 2013. It quickly expanded and was relocated to Buckhead in 2016. The two are currently preparing for their latest concept, Forza Storico, a Roman-inspired restaurant opening this summer in West Midtown. DiningOut Magazine: What sets Atlanta’s dining scene apart from other Southern cities? Patrick: Atlanta stands out in its adherence and celebration of local proteins and produce. Atlanta is really great at supporting all the farms, artisans, and manufacturers of quality driven products and goods that are regional to the southeast. Why choose Atlanta as the home for your culinary career? It’s more like Atlanta chose me. I ended up here as a firefighter/paramedic after bouncing around a multitude of industries, from drag racing to scuba diving to wine sales and a handful of positions in the culinary world. Atlanta finally gave me the ability to put down roots and explore and revisit my love for food and wine. Atlanta’s farmers’ market system was instrumental in helping me start Storico Fresco, which is a key and essential part of the city’s food infrastructure. What seasonal ingredients can you find in Atlanta that you cannot find elsewhere? We love working with our local farmers to showcase produce and protein that is locally-grown and locally-sourced, which helps us embody the true nature

of Italian cooking. For example, we have McMullan Family Farms growing all of our arugula (up to 8,000-square-feet just to supply the restaurant); we work with local egg farmers (Rise & Shine) to get only farm fresh eggs, since that is a key ingredient in our pastas; and Riverview Farms and Heywoods Provisions helps provide us with all our amazing pork products (guanciale, pancetta, and italian sausage). So we’re big on supporting our local purveyors. We incorporate the seasons pretty naturally, of course, changing the vegetables according to seasons. We also change up pastas, appetizers, et cetera. What food trends do you think are next to arrive in Atlanta? Steady growth of vegetable-based dishes. Vegetarian/vegan trends. More casualstyle dining with great food.

Everyone in Chef Evelyn Ling’s family was in the restaurant business, including her parents who owned a small AmericanChinese restaurant in Forsyth. It was part of the family routine for her and her siblings to help out after school and on weekends. While her brother and sisters preferred to work in front of house, Evelyn gravitated toward the kitchen. This is where it all started. Chef Ling pursued cooking seriously after high school, enrolling in The Culinary Institute of America in Hyde Park, New York, and after, working for a short amount of time at The Greenbrier in West Virginia. When she returned home, she was incredibly eager to jump into Atlanta’s food scene. At that time, Bacchanalia was considered among the best restaurants in the city, and lucky for Ling, Chef Anne Quatrano was willing to take a chance on her. Five years later, Chef Ling finds herself opening Pancake Social at the ever-popular Ponce City Market. DiningOut Magazine: What sets Atlanta’s dining scene apart from other Southern cities? Ling: Other than a few Atlanta staples, there aren’t a lot of restaurants that come to mind that only focus on those traditional Southern classics. To unwind after a long night, I go for an extremely classic choice of Greece: ice cold Ouzo. With a taste of licorice, this liquor is a great way to relax and “feel the breeze coming off the Mediterranean”. In particular, we serve Ouzo Plomari which, when mixed with about 1/4 of ice cold water, transforms magically from crystal clear to an enticing frosted white. It’s a fun party trick, and it’s delicious. WHAT ARE SOME OF YOUR GO-TO SUMMER COCKTAIL INGREDIENTS?

On a hot summer day or night, which Georgia has its share of, I like using fresh mint in our drinks. However, even as a garnish its aroma is revitalizing. An odd one I also love is to use a bit of cream of coconut, which can both sweeten a drink and make me think of relaxing on the beach. And, of course, popping open a great bottle of Le Marca Prosecco never goes amiss. WHAT WAS THE INSPIRATION BEHIND THIS COCKTAIL?

Our Mythical Mango captures the Caribbean. It’s perfectly sweet and refreshing.

THE COCKTAIL MYTHICAL MANGO In a tall glass combine 3/4 ounce New Amsterdam Pineapple vodka, 1 ounce Cruzan Mango rum, 1 ounce fresh pineapple juice, 1/2 ounce orange juice, and 1/4 ounce lemon juice. Add ice, then shake. Strain into a frosted martini glass. Garnish with a Maraschino cherry.

THE COCKTAIL JALAPEÑO SKINNY TITORITA In a shaker filled with ice, combine 2 ounces Tito’s vodka, 1/4 ounce organic agave nectar, 2 ounces fresh squeezed lime juice, and 1/2 ounce fresh jalapeño purée. Shake and pour into a glass. Garnish with a slice of jalapeño and a wedge of lime.

Executive Chef Mary Grace Viado Executive Chef Mary Grace Viado has worked at Village Tavern for nearly 15 years. Prior to joining the Village Tavern team, Viado fine-tuned her culinary skills by stage training at several top New York restaurants including: Restaurant Daniel, Aquavit, Le Cirque 2000, Aureole, Payard Patisserie and Bistro, Café des Artistes and Le Bernadin. KAYA VINEYARD & WINERY Located at a slightly higher elevation, Kaya’s winery and tasting room offers an incredible panoramic view of the North Georgia mountains. The facility features large windows and a covered back deck that makes it the perfect venue for pairing live music with good wine. All of the wines here are produced exclusively from estate-grown grape varietals, including viognier, albariño, merlot, petit verdot, malbec, and sangiovese. After being hand-harvested, the fruit is processed in their facility on the property and then aged in their climate-controlled barrel room located below the tasting room. In addition to crafting signature wines—notable for their distinct balance between wood and fruit characteristics—the goal here is to also provide an educational experience for guests and an engaging environment for their team of winemakers. “Customer service is our top priority,” says Marketing Manager Emily Holt. “We believe how we manage our staff correlates to how we will treat our guests. We are a very close-knit and family-oriented team.” The familial vibe effortlessly reaches Kaya’s visitors through wine tours, tastings, and live music along with the full lunch menu and four cottages available onsite.
