An Editors Note This year has certainly started off with a bang! Aspen Estates hit the ground running with the Aspen Equestrian Day that took place on the 3 March 2013, it was a great success enjoyed by participants and spectators alike. Not to mention that while we were furiously compiling the first edition of this magazine Easter took place for all our Christian residents. In the spirit of this we had the Easter Bunny join us at Aspen for the day, searching for Easter Eggs with the children of Aspen Estates. We hope that all residents who celebrated with us; had a wonderful time with their families. There are so many new and exciting events and committees popping up at Aspen that we hope you are keeping your eyes and ears peeled for all communications, so as to get involved and make Aspen Estates a true holistic community. As summer turns to winter, lets not forget to start taking extra care for the cold months ahead. We hope that all residents are getting ready to haul out all their warm clothes and blankets to keep the family toasty and warm. Don’t forget to try out our yummy recipes found at the back of this edition; they are truly delicious.

She carries her teaching skills with great precision and enthusiasm and has done so since the day she started as a young girl.

Egg Hunt Fun Day The morning started wet and unpredictable...but it didn’t stop the excited children of Aspen. They came out in their numbers to find the hidden eggs, with the bunny himself popping in to lend a helpful paw to the festivities. Retro games were played, from sack races to the ever so popular egg and spoon race . Even the mums and dads joined in... the name of the day was good clean fun. Cupcakes, food and drinks were on sale. Congratulations to Nadar who won the Easter Hamper Raffle . Healthy Living Start to ‘eat clean’ . Know what to eat before and after exercise. When you eat right, you just feel better, your body really operates better, and you ‘glow’ inside and out. This is when you truly will see results when wanting to lose weight or maintain it. Most would say “oh you re on a detox”, I would say “no”; I’m just staying clear of unwanted foods within my body! What does eating clean eating mean? Clean foods are natural, free of added sugars, hydrogenated fats, trans-fats and anything else that is unnatural and unnecessary. Many people use this way of eating to lose weight. Used as a way of life, clean eating can make you feel healthy and full of energy. Follow these simple steps to start eating clean

Instructions: 1. Eat six small meals a day: breakfast, lunch, dinner and three snacks. Try to eat every few hours to curb hunger and promote a higher metabolism. 2. Choose whole grains and complex carbohydrates to give you more energy and keep you feeling fuller longer. Remember that whole wheat is

not necessarily whole grain. Look for breads, rice and pasta that are not just brown, but also made with 100% whole grains. One serving is about the size of your closed fist. 3. Leave calorie-filled, non-nutritional “junk food” at the grocery store. If you buy fresh foods, you will eat fresh foods. 4. Eat as many fruits and vegetables as you want. Try to add one serving, about a handful, of each per meal. Fruits also make great snacks because they are full of natural sugar and can help fight those afternoon sugar cravings. 5. Eat lean meats, chicken and fish whenever possible, staying away from processed and fatty meats. This will give you much needed protein with little fat. One serving is about the size of you palm.

6. Read labels look at calorie counts but also look at nutritional value and ingredients. Try to avoid foods with white flour, sugar and sugar substitutes, saturated fats and trans-fats.

Eating a pre-workout snack helps prevent hunger, which in turn can make you dizzy and feel lightheaded. Helps prevent low blood sugar, which give you the same symptoms as being hungry.

7. Take small bags of unsalted almonds, cashews and walnuts with you to work so you don’t get tempted by vending machines and break room junk food. 8. Check internet sites, libraries and bookstores for recipes to keep your new lifestyle fresh and flavourful.

Whether you’re a pro cyclist, or a workout junkie, or just someone who is starting out and just wants to stay fit, fuelling properly before and after exercise is crucial to performance. You may not need as much fuel as a professional would before a 150km cycle race workout, but this information below will give you an understanding as to why and some handy hints as to what to eat!

So why is the fuel prior to your workout important? It’s the most critical time (other than when you sleep) for muscle growth! (Yes, ladies this applies to you too!) Muscle burns fat, gives you strength and creates a toned, tight overall appearance. When you work out intensely, your body goes to your energy stores to replenish, but after they get all used up then your body grabs the carbs you’ve consumed and converts it into energy (ATP). Having the energy source readily available will help with the contraction of your muscles, thus, allowing maximizing your full potential with the time spent at training.

• First, you need to eat 1- 1.5 hours prior to your workout for a full digestion and absorption of your snack • Drink a glass of water to hydrate before, 1-2 glasses of water during your workout and one afterward as well. • Choose items that are low in fat and fibre. • High in clean natural carbs • Protein • Make sure you don’t work out with a full stomach. The food will only ferment in your stomach because all the blood is being used to contract your muscles and keep up with you.

Snack Ideas • Protein smoothie with water, and high carb fruitspreferable dark coloured ones like purple grapes, blackberries, etc • Veggies (celery & carrots) with hummus, natural peanut butter or almond butter • Egg whites with veggies, scrambled • Boiled egg, with an apple/pear/plum/orange • Oatmeal & berries (cinnamon, optional) • Natural yogurt, natural cottage cheese or kefir with berries • Vegetable juice (only half and dilute with water, it’s high sodium) • Natural whole wheat, grain toast with peanut butter/ almond butter/hummus

Snack Ideas • Coconut water as your energy drink is the number ONE option for the best absorption for rehydration in your body • Protein shakes obviously! (Protein powder, with berries and water) • Rice cakes with peanut butter/almond butter/ hummus/and fruit • Hummus and whole wheat pita/rice crackers/ veggies-carrots/celery/peppers /radishes • Tuna salad (olive oil, lemon juice, sea salt & pepper) with veggies/pita/whole wheat toast/rice cake • Natural yogurt, cottage cheese or oatmeal with berries (tsp: honey or agave syrup optional)

• Baked potato (small or half of one) with cottage cheese and a dash of olive oil and parsley • Protein shakes are ideal because as your body is jacked from the workout and your stomach isn’t focused on digestion really, liquid energy is KEY! It’s easier on your system and TONS more effective in refuelling your muscles!

No. 3 - Exercise improves mood

Exercise can help prevent excess weight gain or help maintain weight loss. When you engage in physical activity, you burn calories. The more intense the activity, the more calories you burn. You don’t need to set aside large chunks of time for exercise to reap weight-loss benefits. If you can’t do an actual workout, get more active throughout the day in simple ways — by taking the stairs instead of the elevator or revving up your household chores.

Need an emotional lift? Or need to blow off some steam after a stressful day? A workout at the gym or a brisk 30-minute walk can help. Physical activity stimulates various brain chemicals that may leave you feeling happier and more relaxed. You may also feel better about your appearance and yourself when you exercise regularly, which can boost your confidence and improve your self-esteem.

No. 2 - Exercise combats health conditions and diseases Worried about heart disease? Hoping to prevent high blood pressure? No matter what your current weight, being active boosts high-density lipoprotein (HDL), or “good,” cholesterol and decreases unhealthy triglycerides. This one-two punch keeps your blood flowing smoothly, which decreases your risk of cardiovascular diseases. In fact, regular physical activity can help you prevent or manage a wide range of health problems and concerns, including stroke, metabolic syndrome, type 2 diabetes, depression, and certain types of cancer, arthritis and falls.

The bottom line on exercise Exercise and physical activity are a great way to feel better, gain health benefits and have fun. As a general goal, aim for at least 30 minutes of physical activity every day. If you want to lose weight or meet specific fitness goals, you may need to exercise more. Remember to check with your doctor before starting a new exercise program, especially if you have any health concerns.

You should be training min four times a week balancing that with cardio training and weight training. Remember cardio training helps with strengthening your cardiovascular system and only burns within that amount of time you are training. Weight training remember it burns calories throughout the day and builds lean body mass. So having a good balance of the two you will see results and feel balanced.

The Aspen Classic is getting bigger and BETTER! The latest competition took place on the 3rd March and in true Aspen style, it was a great success.

How do we treat our itchy or scratchy pets One of the most common problems we see as vets is itchy pets. Unfortunately it can be a very frustrating condition for owners and a real challenge to control as practitioners, especially up here on the High Veld, which is a very allergenic environment. Written By: The Glens Veterinary Hospital Pruritus (or itchy / scratching) can easily be defined clinically as the summation that causes an animal to rub, lick, chew or scratch its skin. Pruritus therefore is not a disease but a sign of an inner lying inflammatory reaction in the skin. Other related conditions include otitis externa, and gland problems and occasionally respiratory and gastrointestinal inflammatory conditions. Unfortunately pruritus is often multifactorial and is not only associated with allergies. There are often other factors contributing to the pruritus such as hormonal, syn induced, immune mediated diseases and underlying skin infection. When we as veterinarians are presented with a pruritus patient we try to follow a diagnostic protocol to enable us to treat and control the pruritus as effectively as possible. This includes skin scrapings, specific skin tests and occasionally blood allergy tests for desensitization vaccines. Once diagnostics have been done then treatment can be tailored to the individual, which usually provides the most satisfactory resolution of the pruritus (itching) There are some general principles that can be applied to most of our pruritic pets:

Use of anti-inflammatories • Corticosteroids – most pruritus in our pets can be controlled with corticosteroids but ideally only used in small amounts over short periods, as there can be undesirable side effects. • Antihistamines – metabolically our pets allergic reactions are not initiated by histamine (as they are in human) and therefore antihistamines do not have a profound effect on pruritus in our pets BUT approximately 10% of our pets will have a positive response to antihistamines and therefore they are always worth trying. Any one animal may not respond to one type of antihistamine but may respond to another. The only way to determine if they will be of benefit is to try them. If the first drug does not work, then try another type of antihistamine and so forth. A one-week course of antihistamine seems to be adequate to determine the efficiency of a particular antihistamine. Such an investigative trial requires a very diligent owner. • Ciclosporin – a new anti-inflammatory treatment, which is showing excellent results with minimal side effects but is sadly cost prohibitive at this

stage (prices are reducing slowly). • Fatty Acid Supplements – The use of Omega 3 fatty acid supplementation is essential in inflammatory conditions e.g. Flaxseed Oil or Salmon Oil. 2. Tropical Treatments • Medicated shampoo provides mechanical removal of allergen or irritants from the skin surface; it aids enormously in the control of secondary infection of the skin and often has a soothing component for the skin. • Creams and ointments help sooth the skin and control secondary infections. • Antibiotics and Antifungals – Pruritic animals often develop secondary bacterial and fungal infections which eventually amply the level of pruritus and decreases the responsiveness to anti-inflammatories. Often a pruritic pet can be clinically controlled when the secondary infections are eliminated.

How to make it EVERYDAY FUN Step 1: Cut two pillow pieces from flannel-backed satin. On the satin side of one piece, use tacky glue to attach rickrack edging and two 2-inch lengths of black fringe fabric trim eyelashes. Trim the fringe if necessary. Step 2: Run a line of glue around the flannel-side edge of the other fabric piece, leaving an inch-wide gap (shown in photo A, marked by waxed paper). Glue the ends of a 16-inch length of elastic to the

flannel (A). Lay the other fabric piece on top, satin side up, and gently press the pieces together. After the glue dries, use a funnel to pour 5 tablespoons of flaxseed and 3 tablespoons of dried lavender into the opening (B) and glue it closed.

The Garden Diary Invasive Alien Plant Species Invasive alien species occur everywhere and affect everyone, not only ecologically but economically too. Invasive alien species can be animals, birds, insects, but within these notes the focus is on Invasive Alien Plants (IAPs). Not all alien plants are problematic; only those listed as invasive alien plants should be removed from your gardens. Everybody has a role to play in the management of IAPs. Alien plants are any plants brought into South Africa from other countries. These include plants brought in on purpose for gardens, farming or forestry. Some plants are accidentally introduced, e.g. their seeds were amongst the hay brought in for horses. Of these aliens, whether introduced on purpose or by accident, certain species have escaped from cultivation, reproducing and spreading without human help. Exotic and alien mean much the same thing, but the word ‘alien’ is the preferred term when referring to problem plants. Aliens that become serious problem plants are known as Invasive Alien Plants (IAPs). Currently, there are 198 listed IAPs, and this list will probably be added to in the near future. What makes an alien plant become an invader? 32

Absence of natural enemies. Similar conditions to native country. Vegetative reproduction. Prolific seed production, long-lived seeds. Effective seed dispersal mechanisms, such as water, wind and birds.

Problems caused by IAPs About 750 tree species and 8000 herbaceous species have been introduced into South Africa, of which 198 have been identified as IAPs. These plants grow in our homes, gardens, fields and parks, consuming up to 7% of our annual water supply, displacing indigenous plants, causing fires and soil erosion and endangering many of our animals. These invading alien plants have become

established in over 10 million hectares of land in South Africa, and if left unmanaged, the problem will double within 15 years. IAPs reduce our ability to farm; intensify flooding and fires; increase soil erosion, destruction of rivers, siltation of dams and estuaries, replace natural vegetation and upset natural ecosystems. The cost of controlling IAPs in South Africa is estimated at R600 million a year over 20 years.

It is an unarmed (thornless) tree 5-10m in height and all parts finely hairy; growth tips golden hairy. The fine leaves are dark olive-green. The fruit is a dark brown pod, containing the seeds. The flowers, in flower heads, are pale yellow or cream with a pleasant fragrance (August to September). It is a highly invasive plant and inhibits the growth of natural vegetation. It is thus also classified as a transformer invader plant. Countrywide, it grows along waterways, in urban open space as well as along forest margins, grassland and roadsides. Found mostly in the eastern interior and coastal regions of South Africa. In Johannesburg, black wattle trees grow prolifically along many streams, in disturbed grassland, on ridges and in many gardens; all areas a source of seed. Black wattle can be controlled by pulling out seedlings when they are first noticed; this is the easiest form of control and the least expensive. Seedlings and young plants from 0,5 to 1m in height can be sprayed with a registered herbicide. Large plants need to be cut at ground level and the cut stump chemically treated. Any re-growth must be treated with a suitably registered herbicide. Seeds may continue germinating at a removal site for many years. Seed-feeding biocontrol agents are available in South Africa.

It is thus also classified as a transformer invader weed. Countrywide, it grows along waterways, river banks, dongas and wetlands. Found mostly in the eastern and southern regions of South Africa. Poplars can be controlled by foliar treatment. Seedlings should not be pulled (because they are part of the root system). Seedlings and young plants from 0,5 to 1m in height can be sprayed with a registered herbicide. Large trees need to be cut at ground level and the cut stump chemically treated. Any re-growth must be treated with a suitably registered herbicide. No biocontrol agents are available in South Africa.

Birds in Aspen Featured Bird: Egyptian Goose

The Egyptian goose and Ibis were considered sacred by the ancient Egyptians and for this purpose were domesticated and also featured in the hieroglyphics from those times. This bird is called Mmisri bata bakini in the Swahili language and is sometimes foul tempered. Information Found on: http://wikipedia.com These beautiful geese have a large size and an interesting patch of Chestnut color feathers which surround their yellow eyes and make them look like they are wearing spectacles. The upper part of the body has a color spectrum of grayish brown or reddish brown in different Egyptian geese. The tails of the geese are black whereas the feet and legs, along with the bills are pink in color. Both the genders are similar in terms of their evident physical characteristics but the females are comparatively smaller in size. The female goose makes cackling sounds while the male hisses. These birds populate the Nile Valley as well as the African country all the way south of the equator and have often been spotted in isolated areas of the southern and eastern coast of the Mediterranean Sea. They’re quite aggressive and become very vicious during the mating season. These birds are extremely territorial and can indulge in fights with other birds who try to invade the territory during breeding season. They’re considered the most aggressive birds and are good swimmers and divers.

These foul tempered and aggressive waterfowl are excellent when it comes to parenting their young and make strong bonds with the opposite gender. Unlike other geese the Egyptian geese utilize different sites for nesting. You can see them using those nests which have been abandoned by different species of birds and are perched high on top of trees at a good vantage point and safe location. Apart from this the geese utilize old buildings as well as ledges on sharp cliffs to build their nest. This is in stark contrast to those Egyptian geese which prefer to build their nest on the ground and in abandoned burrows. For those who have been nested high up in the trees or other high altitude areas, they keep cackling and hissing at their hatchlings till the young chicks are brave enough to step out of the nest and come down. It takes approximately 28 days for the female Egyptian goose to incubate an egg clutch which ranges from 5 to 8 eggs in each breeding season.

• Egyptian geese are in the family Anatidae. This family is distributed worldwide and includes 147 species in 41 genera. Egyptian geese live throughout much of Africa, mostly south of the Sahara and in the Nile Valley. • Egyptian geese prefer almost any wetlands in open areas. They do not inhabit densely wooded wetlands. In Ethiopia, they live in habitat as high as 13,200 feet (4,023 m). • In the wild, estimated to be 15 years. In zoos, they can live up to 35 years. • In the wild: unlike some species of waterfowl, they do not filter their food. Instead, they eat a variety of vegetation, such as the grasses, stems, seeds, berries and leaves of several different kinds of plants. They also occasionally eat insects and small animals. At the zoo: waterfowl pellets, romaine lettuce and an occasional apple. • Egyptian geese remain in small flocks of family units through the majority of the year, and only pair up during the breeding season. Chicken Soup

Method Combine the chicken stock, chicken pieces, onion, parsley, and lemon zest in a large pot and bring to a boil over high heat. Reduce the heat and simmer covered until the chicken is cooked through, about 30 minutes. Remove the chicken pieces and cool enough to handle. Remove and discard the skin and bones and cut or tear the meat into small pieces. Strain the soup through cheesecloth (muslin) and discard the solids. Return the stock and meat to the pot and add the rice, mint, lemon juice, salt, and pepper. Bring to a simmer and cook until the rice is tender, about 20 minutes.

No Bake Cherry Cheesecake Ingredients

Directions Make the crust: Coat a 9-inch springform pan with cooking spray; line bottom with a round of parchment. Stir together cookies, butter, sugar, ground cinnamon, and a pinch of salt; press evenly into bottom of pan. Refrigerate while making filling. Make the filling: Beat sour cream, 1/3 cup sugar, the cheeses, vanilla seeds or extract, and lemon zest with a mixer on medium speed until very smooth, about 4 minutes. Pass mixture through a fine sieve into a large bowl. Whisk heavy cream and remaining 1/3 cup sugar until medium peaks form; fold into filling mixture, and spread evenly onto crust. Smooth top, and freeze until firm, at least 2 hours. Refrigerate for 45 minutes before serving. Make the topping: Bring half the cherries, and the sugar, vinegar, and cinnamon stick to a simmer in a small saucepan. Cook, covered, for 5 minutes. Uncover, and simmer until cherries are soft, about 3 minutes. Whisk together cornstarch and water; add to cherry mixture. Simmer for 1 minute. Remove from heat, and stir in remaining cherries. Refrigerate until ready to use. Run a knife around edge of cake; release sides to remove from pan, and transfer cake to a serving platter. Remove cinnamon stick from topping; spoon over cake.
