ice cream cake

8" cake of your choice (prepared)* 1 qt ice cream* 9 sandwich cookies* 1½ tbsp butter 6 oz chocolate chips* 3 tbsp light corn syrup 1/2 cup heavy cream 1 tsp vanilla extract 16 oz buttercream frosting* sprinkles, decorating sugars, candies, etc.
* use homemade or store-bought versions and flavors of your choice!

Prepare the ganache: Place selected chips in a bowl. Add the corn syrup and vanilla extract. Warm the heavy cream until just before boiling. Pour over the chips, and let sit for a few minutes. This should start melting the chips. Mix well until all combined. Set aside, in the fridge if needed, to thicken a little.
Scrape out the filling of the sandwich cookies. Melt the butter. Crumble the cookies, pour the butter over them and bake for 8 min at 350F. Let cool off, set aside.
You will build and freeze your cake in a deep baking dish lined with plastic wrap. Spring mold cheesecake pans are ideal for this and helps with the unmolding.
Once you have baked your cake, slice it in half, to end up with two 1-inch (approx) tall cake layers. Place the bottom layer inside your deep dish, on top of the plastic wrap. Add half the ice cream by spooning it in and smoothing it over. Put the ice cream back in the freezer.
Sprinkle the cooled cookie crunch, making a uniform layer. Pour the ganache over and spread. If it's a bit runny, don’t worry. Place in the freezer for 30 minutes to help solidify.
Take the ice cream out of the freezer to soften, approx 5 min. Spoon the rest of the ice cream on top of the ganache layer. Cover with the second cake layer. This is the bottom of your cake. Back in the freezer it goes for at least 30 min (or longer).
Once you feel the cake is sturdy enough to unmold and frost, put your serving platter over it and flip it over (or unmold on it if using a spring mold pan). Peel off the plastic wrap. You can do one thin layer of frosting and place in the freezer (this called “the crumb coat”) or just finish frosting and decorating it. Place in the freezer until 5-10 min before serving it. Enjoy!
