Deli Star Chef’s Corner We are currently conceptualizing a "Red Mojo Pork.” Mojo from Portuguese molho, meaning "sauce" is the name, or abbreviated name, of several types of sauces, varying in spiciness, consisting primarily of olive oil, salt, water, pepper varieties usually indigenous to area of preparation, garlic, paprika, cumin and other spices. Mojo originated in the Canary Islands, where the main varieties are red mojo (mojo rojo) and green mojo (mojo verde). Other countries have recipes similar to mojo, where acid ingredients such as vinegar, lemon, orange or lime juice may be used. the "Mojo" has even found itself influencing flavor profiles of BBQ sauces in the United States. The flavor profile we are developing is a balance of Sweet, Salty, Spicy, and Acid. This is the dance on the tongue that we crave on most outdoor american traditions called BBQ. So coupling the diverse applications and styles of the American tradition our Red Mojo Pork could easily lend itself to BBQ inspired applications like a spin on Hawaiian Pizza, Mexican Pork Carnitas, Cuban Slow Roasted Pork, maybe even the ultra hip Jibarito from Chicago's edgy food scene. Where ever you might find this distinctive citrus based, smokey, sweet, "touched" with a hint of spice inspired slow cooked pork. Don't pass it up. Take a bite and enjoy the Cuban flair.
