Exchange Rates • Against the $, Sterling opened the month at 1.53 and is up at 1.54 as of 10th May, with mixed messages regarding the progress of the US and Chinese economies. • Against the €, Sterling opened the month at 1.173 and continued the recent rally to reach 1.185 by May 10th after testing 1.19 a few days earlier.
Crude Oil Energy prices fell globally, weighed down by weakening crude oil prices as economic concerns persisted. Brent crude oil on ICE London fell by 7%. Road fuel prices fell, with EU petrol down 8% and EU diesel down 7%.
Fats and Oil Soya bean oil prices fell in Rotterdam by 4% to their lowest levels since 2010, due to a drop in crude oil prices and an upward revision of soya bean production. The global soya bean production forecast for 2012/13 was raised 1.6m tonnes to 269.6m tonnes.

Wheat prices fell in most markets as the global wheat consumption forecast for 2012/13 was cut by 1.0m tonnes to 672.6m tonnes due to lower feed demand. In the US, milling wheat prices fell on CBOT by 6% and by 5% on LIFFE Paris and London, but rose slightly in Australia, Canada and Germany.

Although not as sharp as last month, the continuing drought in New Zealand, combined with the late spring in the northern hemisphere, has kept the pressure on dairy throughout the world. Butter prices continued to rise in the UK by 17% while SMP and WMP prices increased by 20%. The cheese market had an upward trend, with cheddar prices increasing in the UK by 5%.

The new crop in Turkey is not developing well and there have been several factors contributing to this. Last year’s crop was a very good one but was not without its quality issues as it came under attack from European Grape Vine Moth. Following a large crop year we usually see a smaller crop the following year as the vines can get over stressed from producing a large crop.

Chocolate Ganache 500g dark or white chocolate (chopped) 500g Rich’s® Ultra Whip Place Ultra Whip and chocolate pieces into a microwaveable bowl and heat on high for 30-60 seconds. Stir and repeat until a smooth consistency is reached. Cool to room temperature before using.

Whip the Ultra Whip on medium speed until soft peaks are formed, then pipe a small amount in the base of a sundae glass. Add layers of berries, raspberry sauce and Ultra Whip, and top with a raspberry or strawberry. Tip: add raspberry sauce over layers of Ultra Whip for an attractive rippling effect!

Tip: add a white chocolate ganache layer to give an extra burst of flavour!
Mix a little Ultra Whip with the cocoa powder, then add to the remaining Ultra Whip and1whip until1 soft peaks.

Start by making a quantity of chocolate Ultra Whip (see opposite) and pipe into a sundae glass with alternating layers of chocolate ganache and sponge cubes or brownie pieces. Pipe a peak of chocolate Ultra Whip to finish and decorate with chocolate sprinkles.

Raspberry Gateau Delicious to look at and to eat, this indulgent Raspberry Gateau is guaranteed to tempt hungry customers! 2 vanilla sponge layers 15g raspberry jam 200g Rich’s® Ultra Whip 10g miroir glaze with red colouring 40g raspberries Chocolate sprinkles to decorate Spread raspberry jam onto one of the sponge layers and top with a third of the whipped Ultra Whip. Add another sponge layer and top with a further third of Ultra Whip. Using a palette knife spread half of the remaining Ultra Whip on the sides of the gateau and use a comb scraper to embellish. With a star nozzle, pipe a border around the top of the gateau using the remaining Ultra Whip and fill the centre with the raspberries and glaze. Decorate with chocolate sprinkles.

Coffee Choux Buns Coffee choux buns created with Rich’s® Ultra Whip are so easy to make, look great in any display case and have a shelf-life of 7 days chilled. Ingredients to make 10: 10 choux bun shells 100g caramel glaze topping 200g Rich’s® Ultra Whip 20ml coffee Coffee beans to decorate
Simply mix 200g of Ultra Whip with 20ml of cold coffee (freshly ground is best) on medium speed until piping consistency is reached. Pipe generously into choux buns and decorate with caramel glaze and a coffee bean. Delicious!
