Torchon
Torchon D’Artagnan’s Torchon is made from foie gras, a drop of Armagnac and little else. Since traditionally this method of preparing foie gras was to wrap it in a towel and simmer it in duck bouillon, it was given the name “Torchon” which means “dish towel” in French. Today, more commonly, cheesecloth is used to form the raw foie gras into a cylindrical shape that gets gently poached. This cooking method gives an exceptionally smooth and silky texture to the foie gras. As always with D’Artagnan, no nitrite or any other preservatives are added.
