I Can't Believe It's Not Butter! Rice Bran Oil Product Healthier Alternative to Margarine Apr 08, 2014

Scientists with the U.S. Department of Agriculture (USDA) have developed an extract made from rice bran oil that can be used as a partial replacement for margarine, butter, or shortening. The product is somewhat similar to a nut butter but has a unique texture. It mostly contains unrefined rice bran oil and rice bran’s natural wax, in addition to small amounts of vitamin E, plant sterols, and gammaoryzanol. Foodies, take heed: the product apparently tastes good! Early experiments at the USDA’s Agricultural Research Service (ARS) National Center for Agricultural Utilization Research in Peoria, Illinois involved using the extract instead of a portion of the butter in standard recipes for granola and for white bread. Taste testers reported no negative effects in the taste or texture of either food.It gets better. The rice bran oil product has several advantages to traditional margarine or shortening. This product has no trans fats, those pesky things that contribute to heart disease. The product is also shelf-stable, resisting the oxidization that sometimes turns things off.
