非洲鸡 African chicken

非洲鸡的由来 Foreign Chicken 相传1940年左右,在一家澳门旅馆工作的厨师 到曾是葡萄牙殖民地非洲旅游, 被当地的非洲 鸡启发,回澳后经过研究和改良,创作了独一无 二的非洲鸡。 The dish is believed to have taken form in the hands of local Macau chef Americo Angelo, who perfected the dish in a small hotel in the 1940s. He was inspired to attempt his own rendition, which he had first enjoyed while travelling through some of the former Portuguese colonies in Africa, and ever since, African Chicken has never been the same.

According to the owner of the restaurant, Henri’s developed their own recipe for the cooking method and the blend of the sauce.

老板说他们跟大部分餐厅的做法不一样,平常吃 到的都是鸡跟酱汁分开煮。但为了让鸡肉更入 味,酱汁能吸收到鸡的鲜味,他们的厨师把鸡和 酱汁一起煮。煮的时间恰到刚好,鸡肉鲜嫩。 “Many other restaurants tend to cook the chicken and the sauce separately, but we cook them together in order to infuse flavor in the chicken and make it juicier,” says Raymond, the restaurant owner. By cooking the two together, the sauce absorbs the chicken flavor

as well as tenderizing the chicken, allowing for a fuller, tastier dish.
