his little enclave where cultures blend has long attracted visitors in a global scale. Despite the geographical size, its charisma is rather wide: besides the populous tourist spots and lively entertainments, there’s still a glimpse of arts and culture. Macau has taken the global ride to arts and culture. Albeit the cultural richness, the market is narrow. The inaugural steps haven’t been easy in marketing “culture”. Fortunately, a number of private bodies and artists have determined to promoting the local creative industry, such as providing exhibition spaces, bridging commercial brands with local artists and thus turning ideas to physical goods. So now everyone can see works from the local industry. I sincerely hope that the Macau government can persist the support for local talents so that people can see the cultures behind.

The musical “Town Musicians” is adapted from Brothers Grimm’s the Town Musicians of Bremen. This year, Macau’s Le French May reaches a sublime magnificence, for it has brought a series of significant programmes to the city. One of which is an exhibition featuring some of the most valuable paintings from the collections of four most influential national museums of France: Musée du Louvre, Château de Versailles, Musée d’Orsay, and Centre Pompidou. The exhibition is showcasing a total of 12 paintings. On the historical significance of these paintings, Arnaud Barthelemy, Consul-general of France to Hong Kong and Macau, said that some of the paintings have been within the curriculum of French foundational education, so that they became general knowledge, as he described, “It is this image (of Louis XIV) that people immediately think of when they mention the King.” You will be connected to big names, namely Picasso, post-impressionist Bonnard from Les Nabis, the cubist Léger, the fauvist Matisse, the impressionism leaders Monet and Renoir, the Rococo masters Fragonard, Boucher and Wertmüller, Louis XIV’s favorite painter Le Brun, the Baroque master La Tour, and the Renaissance master Clouet. Simply put, it covers works from different artistic periods – old and new – that captured some of the most vivid human characteristics and qualities. Another exhibition of phenomenal significance is the Biennial of Lions staged at and sponsored by MGM Macau. Past editions of this exhibition have visited quite a number of places – except Asia – around the world. These lions have eventually finished their majestic run and arrived in Macau for the first-inhistory Asian showcase. Previous editions have toured France’s Lyon, Italy’s Turin and Canada’s Quebec. MGM Macau has arranged an entire exhibition space for the Biennial, and the space was divided into several sections, incorporating a number of art genres, from graphics and sculptures to installations and multimedia. Even so, the exhibition not only takes place in MGM alone, but also around the city in a number of UNESCO World Heritage sites, further enhancing the subtle chemistry of arts and history. In the exhibition, 50 lions, uniquely coloured, stand confidently and firmly without hesitation, not for one second. Lions reign the safari and hold secure their boundaries. In Chinese culture, lions are believed to possess the ability of casting away devils and thus good fortunes come. But in these 50 canines, there is a layer of thinking, or even a form of philosophy, that allows you to re-examine the some sort of relationship, between you and Mother Nature, spirituality, and the universe.

These 80 posters are all from the 1880’s to 1990’s, collected by Dutch art collector Martijn F. Le Coultre. They show the exuberance, colour, mystery and social landscapes of Europe, the Americas and Asia. More than a showcase of art, this peep into straddling centuries reflects the way the world has dramatically changed in the course of 100 years. The exhibition includes lithographs by Jules Chéret, the ‘Roi de l’affiche’ by Alfons Maria Mucha, as well as pieces by Henri de Toulouse-Lautrec, Leonetto Cappiello, Joost Schmidt and Raymond Savignac, among others.

INHERITED MEMORIES EXHIBITION ON VALUABLE MEMORABILIA

The IACM has collected 1437 historic articles related to old stores of Macau since 2011. Background description and restoration of these items has been conducted at the same time to preserve the best of our history and increase the awareness of the public toward preservation of history. Raised in a French countryside, Dominique Bugnand, head chef at Vida Rica Restaurant of Mandarin Oriental, Macau, coached by his mother, possesses excellence in cooking genuine French cuisine. This isn’t the only reason he got the position, but also his talent of invigorating traditions. The frog leg dish he arranged is a representative country-style dish his mom cooked in his childhood with the ingredient he caught live in the field, which makes it a very traditional French dish. To enhance the flavour, he added a scoop of black garlic ice cream to the dish, which might infuriate his mom. The interview took place on that same day when France was about to play against Germany. Chef Bugnand and Mirko de Giorgi, the German F&B director, thus made fun of each other’s team; which means next time you visit Vida Rica, they’ll probably treat you as friends.

Vida Rica is the only restaurant in the Macau property of the well-known Mandarin Oriental, thus allowing all flavours sparkle here. Chef Bugnand has specially designed two new refreshing dishes for the hot summer. Frog Legs And Black Garlic Sorbet (MOP190) is an innovation of a traditional dish popular in France countryside with some twists like wrapping the legs with breadcrumbs and matching it with black garlic ice cream. Crisp versus crisp is probably the essence of the dish. Alaskan Spider Crab And Caviar (MOP280), on the other hand, is a gorgeous blend of fruit and seafood: lobster soup jelly and crab meat cubic with avocado paste and mango juice. Subtropical mango bringing in crab scent and flavour makes it simply fantabulous.

Chris is the owner of the Friendcook, a small diner presenting seafood dishes – apart from Chris’ favourite fusion cuisine – as those by the international hotel brands. Being a seafood lover, Chris has a large on-site water tank for his stock of fresh lobsters around 1.5 pounds each from the U.S. He prefers simple cooking such as steaming or boiling to keep the original flavour of the meat. For instance, the boiled lobster we tried (MOP388). Chilled Crab is the way he cooks his crabs. The crab is first boiled in boiling water before chilled in the fridge. The coolness quickly tightens the meat and gives a tangy texture to it. Friendcook takes pride in offering the unaltered freshness of seafood.

David Wong is one of the Founders of the Macau Culinary Association, Secretary general for Disciples of Escoffier in Macau, Conseiller gastronomie for the Confrérie de la Chaîne des Rôtisseurs.

Zhejiang province in the south of Shanghai and includes the scenic capital city of Hangzhou, it is renowned for its historic relics and natural beauty such as West Lake. Famous for its Longjing or Dragon Well tea but also for its delicious local fare such as Begger’s Chicken or Dongpo Braised Pork. Dishes like these will certainly go well with old vines Chenin Blanc such as Kokerboom, Cartology or De Morgenzon, oh to live in Hangzhou. Methode Cape Classique with its bubbles can cleanse and refresh the palate as the acidity can often softens the powerful taste of famous Szechuan dishes such as Kung Pao chicken or Mapo tofu. Some sugar residue in wines will work with many spicy Szechuan dishes, acting as a foil to chilli. Acidity alone in wines like a Sauvignon Blanc from Elgin or a crisp Chenin Blanc will also work well. Peking duck is a famous duck dish that has been prepared since the imperial era, and is now considered a national dish of China and I have hesitation in recommending any of the Newton Johnson great Pinot Noirs or Eben Sadie elegant Soldaat Grenache from his Old Vine Series. For reds, it’s a little bit more difficult as the strong tannins and wood-aged wines do not generally work with some Chinese food but the times that I have tried many of the Rhone style blends from the Swartland or a Shiraz/Syrah from La Motte and Reyneke with northern lamb hot pots have been successful. The list of different Chinese food and South African wines is endless so the most important thing is the absolute enjoyment in trying to find the right match and experimentation is the key.

CATALYSER the power of rock yan Catalyser is an emerging Macau Rock & Roll band comprising six youngsters with an average age of 20: front man Tomy, drummer Ana, guitarist Anthony, bassist Agos, keyboarder Eugen and acoustic guitarist Daniel. Despite their young ages, they demonstrate an explosive power and appeal on the stage no less mature than veteran bands. Since their formation in October 2012 as a street band, they have been witnessed performing across Macau at Ruins of St. Paul, St. Dominic’s Church Square, etc. On this, Tomy explained that they had wanted to be close with the audience, like their band name suggests, “Become the catalyst of life”. Welcome to the world of Legacy Machine No1 designed by Xia Hang, which is also the world of Mr. Up and Mr. Down: a collaboration between MB&F and Chinese artist Xia Hang. Legacy Machine No1 designed by Xia Hang (LM1 Xia Hang) retains all of the 19th-century pocket watch-inspired features of the original LM1, including the majestically floating slow-motion balance wheel and independent dual time indicators, but with a twist: the power reserve is indicated by a miniature, highly-polished aluminium puppet, designed by talented Chinese sculptor Xia Hang. The puppet sits up straight when it’s fully charged (Mr. Up) and gradually prostrate as the power diminishes (Mr. Down).

Most moon-phase watches simply respond by shortening the period of two full moons to 29.5 days, 44 minutes and 3 seconds shorter than the real time, and thus one-day correction is needed on the blue moon. To most of us, typography is nothing but a technical term and an outdated industry with low efficiency; yet Botalic Press, a popular studio in Macau, has brought it back to life and its exquisite part is now revealed in front of the public.

Founded by Lua at the beginning of this year, Botalic Press, located near Tap Seac Square, is the only typography studio in Macau. The young graphic designer received her education in Australia and started her career back in her hometown after witnessing how the technique had been revived in the western world and increasingly attracted fans to enjoy its special charm. The studio displays so many interesting graphic designs, colourfully printed coasters and postcards on a wooden table and shelves. A huge blackboard on the left is filled with various elegant fonts. The printing machine at the back room is also the centerpiece. It is a second-hand machine almost got labeled as useless, and cost Lua much more money repairing than buying. Lua said humorously, “I heard it had been made by a military tank from World War

II: absolutely my ancestor.� Without enough supply of parts and workmanship, it did take a while to wake the oldie up. Typography was a completely new strange world to Lua due to its complicated procedure. She learned how to operate it totally on her own with the help of just a simple manual and the Internet. Besides the machine, as Lua explained, paper is also the key to creating good works. The machine requires a kind of cotton paper which is softer but stronger than ordinary one. As it is something rare in the region, they have to be ordered online. The studio now produces business cards, greeting cards, post cards and coasters of original designs in both Chinese and English, with geometric graphics and drawings and special embossments. The technique is now vivid.

What is one of the best parts of town for heritage? As the first modern lighthouse in China, Guia Lighthouse is where you can overlook the sweeping scene covering several spots. What Cantonese Restaurant would you recommend? The two-floor western-style building near Lou Lim Ieoc Garden covers a total floor area of 180 square meters. In the front garden, there are sculptures of General and Mrs Ye as well as their daughter and son. These sculptures were created by local sculptor Wong Ka-long and sprinkle a sense of warmth to the architecture. The inscribed plaque was calligraphic work by Ma Man-kei, the passed Vice Chair of the Chinese Political Consultative Conference. The house also showcases a series of original furniture that were obtained from various sources. The house was restored according to the recollection of General Ye’s children. Focuses range from windows and gardens to fishpond and even plantations. The ground floor is a gallery with pictures illustrating the General’s political contribution. Another section is pictures more focused on his private life, mainly taken by himself. There are also many other historical items presented to unveil the life of the revolutionary leader thoroughly.

Singing is not an easy career especially in Macau where the local music community is still premature. That makes Priscilla Chao even more respected with her decade-long commitment to her music dream.


singing and dancing When a member of her high school choir, Priscilla had yet realized the difference between bel canto and pop until she took a pop song competition. The pop world had attracted her so much that she participated in as many singing competitions as possible. In turn, she gained both experience and friendship. Before becoming a singer, she was a part-time backing dancer. She thus believes “combining singing and dancing will provide a different experience to audiences, that is why I am willing to dance on the stage, even though not as skilful as the professionals.”

It was a long and bumpy journey of 13 years from “nobody” to “somebody”. Last year, she finally launched her first album incorporating 8 songs. The hardship is thoroughly reflected in the lyric of one of her hits: No one is perfect, and this is the true me. I crossed all obstacles, and kept smiling however bitter the days. I promise that one day, I will be the one to be remembered. “Local singers had little recognition back then when the audiences mostly saw your performance because you were in the shadow of a Hong Kong star during the concert. Boos were quite possible because they wanted to see the big names ASAP. It was frustrating, yet inevitable for beginners. The show must keep on.” Priscilla said: “That is why I am so happy to see that Macau singers gained respect. I also won faithful fans who would come to my performance. They are the drive of my music dream.”

The texture of the former is more skin-like, yet it is not heat-proof; the latter, on the other hand, can be processed in heat and sterilisation, yet it is harder. The 9 duplexes on the top floor highlight “Material Indulgence”, and in each the lamp is raised up by a huge monster. The airport is located on Taipa Island and is 15 minutes from the Macau Ferry Terminal, 20 minutes from the Barrier Gate and 10 minutes from the COTAI Frontier Post. It operates 24 hours/day. These buses cross the city and stop at the major hotels.
