Gingerbread Snowflakes

Chocolate-Dipped Meringue Sandwich Cookies

INGREDIENTS 4 large egg whites 1 cup confectioners’ sugar 1/2 cup almond flour 2/3 cup sugar

GANACHE: 6 ounces semisweet chocolate, chopped 3 ounces unsweetened chocolate, chopped 1-1/4 cups heavy whipping cream 1 tablespoon light corn syrup TOPPINGS: 1/2 cup chocolate sprinkles 1/2 cup sliced almonds, finely chopped and toasted 1/2 cup sweetened shredded coconut, finely chopped and toasted DIRECTIONS Place egg whites in a large bowl; let stand at room temperature 30 minutes. Preheat oven to 225 degrees. In a small bowl, whisk confectioners’ sugar and almond flour until blended. Beat egg whites on medium speed until foamy. Gradually add 2/3 cup sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until stiff glossy peaks form. Fold in confectioners’ sugar mixture. Cut a small hole in the tip of a pastry bag or in a corner of a food-safe plastic bag; insert #805 round pastry tip. Fill bag with meringue. Pipe 1-inch diameter cookies 1 inch apart onto parchment paper-lined baking sheets. Using a finger moistened with water, smooth tops of cookies. Bake 40-45 minutes or until firm to the touch. Turn oven off (do not open oven door); leave cookies in oven for 1 hour. Remove from oven; cool completely on baking sheets. For ganache, place semisweet and unsweetened chocolates in a small bowl. In a small saucepan, combine cream and corn syrup; bring just to a boil. Pour over chocolate; stir with a whisk until smooth. Remove 1 cup ganache to another bowl; refrigerate 25-30 minutes or until mixture is thick enough to pipe, stirring occasionally. Reserve remaining ganache for dipping; let stand, covered, at room temperature, stirring occasionally. Cut a small hole in the tip of a pastry bag or in a corner of a food-safe plastic bag; insert No. 802 round pastry tip. Fill bag with chilled ganache. Pipe onto bottoms of half of the cookies; cover with remaining cookies. (Ganache may soften as it warms. If necessary, return ganache to refrigerator until firm enough to pipe.) Place toppings in separate shallow bowls. Dip each sandwich cookie halfway in room temperature ganache; allow excess to drip off. (If necessary, warm ganache in microwave for 10 seconds to thin slightly.) Dip in toppings as desired; place on waxed paper and let stand until set. Store in airtight containers at room temperature. Yield: 7 dozen.

INGREDIENTS 1 cup butter, softened 1 cup sugar 1 cup molasses 1/4 cup water 5 cups all-purpose flour 2-1/2 teaspoons ground ginger 1-1/2 teaspoons baking soda 1-1/2 teaspoons ground cinnamon 1/2 teaspoon ground allspice 1/4 teaspoon salt FROSTING: 3-3/4 cups confectioners’ sugar 1/4 cup water 1-1/2 teaspoons light corn syrup 1/2 teaspoon vanilla extract

DIRECTIONS In a large bowl, cream butter and sugar until light and fluffy. Beat in molasses and water. Combine the flour, ginger, baking soda, cinnamon, allspice and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour or until easy to handle. On a lightly floured surface, roll out to 1/4-inch thickness. Cut with 2-1/2-inch cookie cutters dipped in flour. Place 2 inches apart on ungreased baking sheets. Bake at 350 degrees for 10-12 minutes or until edges are firm. Remove to wire racks to cool. In a small bowl, combine frosting ingredients; beat until smooth. Transfer to a plastic bag. Cut a small hole in a corner of the bag; pipe frosting onto cookies. Yield: about 5 dozen.

Nanny’s Fruitcake Cookies INGREDIENTS 1-2/3 cups chopped pecans or walnuts 1-1/3 cups golden raisins 1 cup pitted dried plums, chopped 2/3 cup dried apricots, finely chopped 1/2 cup dried cranberries 1/4 cup Triple Sec 1 cup butter, softened 1/2 cup sugar 1/3 cup packed light brown sugar 1/2 teaspoon ground nutmeg 1 large egg 2-2/3 cups all-purpose flour DIRECTIONS Place the first five ingredients in a large bowl. Drizzle with Triple Sec and toss to combine. Let stand, covered, overnight. In a large bowl, cream butter, sugars and nutmeg until light and fluffy. Beat in egg. Gradually beat in flour. Stir in fruit mixture. Divide dough in half; shape each into a 12x3x1-inch rectangular log. Wrap in plastic; refrigerate overnight or until firm. Preheat oven to 350 degrees. Unwrap and cut dough crosswise into 1/2-inch slices. Place 2 inches apart on ungreased baking sheets. Bake 13-16 minutes or until edges are light brown. Remove from pans to wire racks to cool. Yield: about 4 dozen.

Triple Chocolate Candy Cane Cookies INGREDIENTS 3/4 cup butter, softened 1 cup sugar 1 large egg 1-3/4 cups all-purpose flour 1/2 cup baking cocoa 1/4 teaspoon salt 1/4 teaspoon baking soda 3 ounces white baking chocolate, chopped 2 teaspoons canola oil, divided 3 ounces semisweet chocolate, chopped 1/4 cup crushed candy canes (about 10 miniature) DIRECTIONS Preheat oven to 350 degrees. In a small bowl, cream butter and sugar until light and fluffy. Beat in egg. In another bowl, whisk flour, cocoa, salt and baking soda; gradually beat into creamed mixture. Shape dough into 1-inch balls; place 2 inches apart on ungreased baking sheets. Flatten to 2-inch rounds with the bottom of a glass. Bake 6-8 minutes or until set (do not overbake). Cool on pans 5 minutes. Remove to wire racks to cool completely. In a microwave, melt white chocolate with 1 teaspoon oil; stir until smooth. Drizzle over cookies. Repeat with semisweet chocolate and remaining oil. Sprinkle tops with crushed candy canes; let stand until set. Yield: about 3 dozen.

Empty Stocking Fund continues to bring holiday joy to local families For many local families in Effingham County, Christmas is not as joy-filled as it could be. For them, the cupboard is bare, and the space under the Christmas tree is empty. “It is hard to explain to a child why that special gift they have dreamed of all year was not waiting for them Christmas morning,” said Effingham County District 4 Commissioner Reggie Loper. This is where the Empty Stocking Fund comes into play. Loper chairs the fund, and has for at least a decade. The fund is a cooperative effort between the Exchange Club and the Effingham Department of Family and Children Services (DFCS), and donations pour in from all over the county. Loper took the reins of the fundraising effort at the request of his wife, Sherry, who had served as president of the Exchange Club. Sherry said the club had raised as much as $10,000 for the fund during her tenure. Loper’s efforts have increased that amount, averaging somewhere between $18,000 and $22,000 annually. Each year, Loper and his cousin, Donnie Rahn begin right after Thanksgiving to “make the rounds,” according to Sherry. They can’t go any earlier. “People just aren’t in the right mindset for Christmas before then,” she said. She says there are people who give year after year, and they often have a check ready when he arrives, knowing that Loper will be coming around. That face to face interaction is key, Sherry said. “Everybody knows him,” she said of her husband. “This is where his family has been for eons. They know what kind of person he is, they know he’s honest. When they see him, they know the money is going for a good cause.” For those who benefit from the fund, the process begins with an application through DFCS, and then a letter of credit is issued. These letters may be used to shop at local businesses to help fill Christmas needs such as purchases of toys, clothing, medicine and food. None of the funds may be used to purchase tobacco or alcohol. Applicants may be seniors, or families with children, and don’t have to be a recipient of DFCS to qualify. The Lopers don’t pick the families who receive

the letters, and likely don’t even know them. Around 300 to 350 people are helped each year. They believe that allowing the families to shop for themselves is the best way to help them. “It gives the families a little more control and say-so,” said Sherry. “They know what they need more than anybody else. It’s nice when they can do their own thing without having it handed to them by somebody else.” She adds that the retailers in the area do a fantastic job helping with the program. She mentioned that Wal-Mart gets the bulk of the shoppers, since “they have everything there.” “The staff everywhere has been unbelievable in helping us with these individuals. And the staff at DFCS does an excellent job handling the applicants and getting the letters out,” she said. She also thanked those who give each year, mentioning Plant McIntosh in Rincon, specifically, which holds a baked goods auction each year, which provides a large donation. “They raise thousands of dollars there every year,” she said. This year, the company raised $14,500 in the auction, their highest amount yet. Loper stays involved with the fund because it makes a difference in people’s lives, and because it does so locally. “He remains involved with this and is so committed to it because it does so much good for so many people. This is close to his heart,” Sherry said. Anyone wishing to donate to the Empty Stocking Fund can make a contribution at any BB&T Bank and Renasant Bank in Effingham County. Individuals or families who would like to apply for help from the program should make application at the Effingham County Department of Family and Children Services.
