hile New York State legalized recreational cannabis in 2021, it would be a long way out before Capital Regionites could visit a dispensary in their own community. For many connoisseurs, buying legal cannabis meant traveling out of state to Massachusetts, or making a stop while down in New York City. One savvy business owner, however, was determined to make a Capital Region outpost happen, playing the long game from the get-go. When Schenectady’s Don Andrews opened Upstate CBD in 2019, he was already thinking ahead. While the smoke shop focused on CBD and hemp products, it was important to Andrews that customers’ experiences in the smoke shop mirror a dispensary as much as possible—even though he wasn’t yet selling cannabis. “I set up that place as if it was a dispensary to gear up and get ready for when New York State legalized,” says Andrews, who took inspiration for his shop from his travels to places such as Colorado and California, two states that had early legalization, and the notorious coffee shops that sell cannabis across the pond in Amsterdam. When New York State business owners could finally apply for a dispensary license, Andrews drew upon his strong foundation and was quick to mobilize. Now, Upstate CBD is known as Upstate Canna Co.—the first legal dispensary to open in New York State’s Capital Region.

After Upstate Canna Co. opened its doors on April 1, 2023, the dispensary quickly became known for its impressive selections of flower, edibles, concentrates and topicals—and the fact that its cannabis is locally grown. Unlike the cannabis one would find outside of a legal dispensary, Upstate Canna Co.’s products are labtested, ensuring safety and quality. Andrews explains that having this peace of mind is important to his customers. For Jen Rodgers, an Upstate Canna Co. shopper, the dispensary has been a resource for accessing cannabis products that support her overall health and wellness—as well as her relaxation. As someone who deals with insomnia, she’s been glad to find relief through natural products. “If you’re an overthinker, it helps put you in a peaceful mood, have a nice evening and sleep,” says Rodgers, who has some words of wisdom for the many folks who are coming to cannabis for the first time now that dispensaries are popping up in our region. “What I always tell my friends, or anybody who’s interested, is: You don’t want to play around and try a bunch of different things. Just find something that works for you and stick with it.” For some, this may mean THC and CBD tinctures for managing pain, or even THC seltzers as a stand-in for alcoholic drinks. For others, it may mean choosing from a selection of locally grown flower, trying healing THC lip balms for winterchapped lips, or finding the right vegan gummy for welcoming dreamland. “There’s so much product out there,” says Andrews. “There aren’t enough stores.” While that may sound like hyperbole, it isn’t, due to the rocky start that legalized cannabis has suffered in New York State. While the process for business owners to obtain their licenses has been slow on the uptake, many farmers were able to convert their farms to grow cannabis much more quickly. With not enough brick-and-mortar dispensaries open to legally sell their crops, many farmers have watched their investments turn to rot.


That’s why Andrews partnered up with Scot Trifilo—of Ten-Ten Cannabis—for last fall’s Saratoga Cannabis Growers Showcase, where cannabis growers, cultivators, processors and retail dispensaries came together to sell their products in a marketplace setting, a short-term compromise between New York State and cannabis industry entrepreneurs. Starting last September, the showcase ran twice weekly in the Saratoga Springs City Center Parking Garage, before eventually expanding to five days a week. New York State put an end to showcases statewide on December 31, but the experiment proved how popular legal cannabis is in the Capital Region— Saratoga’s City Council reported that the first two days alone brought in a whopping $70,000 worth of sales. Andrews isn’t the only local entrepreneur committed to expanding the cannabis industry in the Capital Region. Schuylerville’s Old Saratoga Mercantile & Farm launched The Potting Shed; just as the Old Saratoga Mercantile is known for its locally grown organic produce in its general store, the Potting Shed has become a hub for locally grown flower. Amsterdam Cannabis created 2530 jobs when brothers Thomas and Anthony Marcellino opened their hometown’s first dispensary. And further downstate, Matt Robinson opened the popular Legacy Dispensary in swank Hudson. “It’s about meeting people and seeing their journey,” Robinson says of his role in providing cannabis education to customers or networking with other growers and producers to solve problems and strengthen local industry ties. Despite navigational challenges, Robinson says that this community-building has been one of the great “blessings of being open.” For other entrepreneurs, being open will

FROZEN IN TIME

ooking out my kitchen window after a late winter ice storm, I knew there would be a lot of great photos to be had. I suited up, grabbed my camera, and headed out. I quickly realized my driveway was a sheet of ice and there was no way I would be driving off to take photos. That was OK—my backyard was a winter wonderland of ice sculptures. I slid around my yard, careful not to break my neck, taking photos of icy shapes and glistening fences. I got some cool stuff, but the sun was too harsh and my photos weren’t really capturing what I was seeing (it happens). It wasn’t until I got into the shade that I found the real magic. Branches and leaves and doorbells and bird feeders, all encased in ice. Because I was out of the harshness of the morning sun, the lighting was flat and even, which makes color and texture pop. I saw this little twig with emerging buds and three frozen drips perfectly encased in crystal-clear ice. I got as close as my lens would allow, while keeping in mind that groups of three (in this case, the drips) make for stronger composition, and took the shot. So just remember: 1) Shade is a photographer’s friend, 2) Don’t be afraid to get close, and 3) Three is the magic number! —Francesco D’Amico | f-d-photography.com

hen we’re in the thick of a crushing upstate winter, it’s easy to daydream about having a spa day without having to leave home. After all, what could be better than steamy treatments to unwind before being engulfed in a warm robe or towel? This is no longer a trick question: Spaworthy bathrooms are the latest home improvement trend—and there are specialists across the Capital Region that can spin that dream into a cozy, chic reality. “A heated towel warmer is a must, quite frankly,” Kim Burgess, marketing coordinator for Saratoga’s Bonacio Construction, says, before also recommending a double-sided fireplace. “A hot bath alongside a roaring fire is like being cocooned in warmth. It’s the perfect medicine for a rough day or week.” For the “treatment” part of your spa bathroom makeover, add a whirlpool bath to relax the entire body and offer a hydrotherapy experience, and a rain shower head to give you just the right amount of pressure to relieve aching muscles. Another must for a spa-like staycation are heated floor tiles; after experiencing bath bliss, stepping on icy tiles would be a miss. Burgess also notes that more homes are adding a stand-alone sauna (or an enclosed shower that can also steam as a sauna), and a bucket shower. “What makes the bucket shower special is that it’s filled with cold water,” she says. “This might seem too similar to social media’s ice bucket challenge, but the cold water restores, tones and firms up the body post-sauna. It’s very restorative, and some say it’s also good for the immune system.” If you’re not sure where to begin, the team at GNH Builders in Greenville, Windham and Latham—who note that a luxurious bathroom renovation is a great way to invest in your home—recommend looking first at your personal style: Are you a minimalist? Love a beach vibe? Or is a modern farmhouse look with a huge sunken tub your ideal oasis? Saratoga’s Teakwood Builders finds inspiration in the hotel baths of luxury European and Asian hotels that include multifunctional toilets with heated seats and bidet functions, and use frosted glass shower walls and doors for aesthetics. In one “Powder Bath Zen” spa bathroom created for a client, the company built custom cabinetry, created grasscloth walls to bring the feeling of the outdoors in, and even had an artist hand-paint tiles to recreate the look of waves. I

nternationally inspired but locally sourced, elevated but exuberantly decadent fare is on the menu at The Delaware in Albany, the newest hotspot by the team behind the Old Daley brand of restaurants and catering. The restaurant, located at 300 Delaware Avenue, opened for business on Friday, November 17, after almost a year of thoughtful development. “Our vision was to create a warm and comfortable environment that encourages conversation and fun,” says Stephanie Pettit, co-owner of the restaurant’s parent company, Daley Hospitality Group, and the visionary behind the project’s development and design. “At first glance, you may think it’s going to be formal. But then you hear the 1970s and ‘80s R&B music and see how friendly the servers are, and you know you are in for a great time. Each room has some type of Old World charm, with newly upholstered banquettes and booths, deep green walls and custom wainscoting, wallpaper, antiques and artwork throughout.” The meticulously curated project marks a departure for Daley Hospitality Group’s aesthetic in some ways, says Pettit, but a continuation of its overall paradigm and spirit.

The Culture Behind the Delaware In many ways, The Delaware was decades in the making, and has enjoyed a long history of family and friends working hard and dreaming big in the food space. “We started with the Old Daley Inn Restaurant back in 1975,” Pettit says. Gene and Dana Coletti; Gene’s siblings, Don and Ann; and Ann’s husband, Jeff Faller, teamed up on the restaurant, which was set in the historic Lansingburgh section of Troy. Stephanie’s husband, Jim Pettit, joined the restaurant as a dishwasher at 16, and quickly climbed the ladder. In 1999, Jim and Stephanie set out with Gene to expand the Daley empire through catering. Old Daley Custom Catering became synonymous with upscale comfort food, and a few years later, Gene sold the restaurant; Marty Keary, another boot-strapping young employee who shot to the top after starting as a busboy, joined Jim and Stephanie as a partner, and the trio decided to focus exclusively on catering—an operation that to this day serves a 75-mile radius around Lansingburgh in the Capital Region and now has a beautiful, award-winning wedding venue, Old Daley on Crooked Lake. Slowly, their vision expanded to include permanent dining concepts: Daley’s on Yates in Schenectady and seasonal dining at Old Daley on Crooked Lake’s Oak Room. They’ve recently hit the casual market, too, with their Baja California-Mexican food truck that has become a staple on Washington Avenue in Albany, and The Daley’s Snowman, a seasonal walk-up stand in Troy that serves up housemade ice cream, flurries and sherbets.

New Kid on the Block The Delaware’s goal was to distill all of these concepts and vibes into one invigorating metaphorical cocktail. “The design plan alone went through a number of incarnations before settling on the current art nouveau and art deco–inspired aesthetic,” Pettit says. “There is literally not a square inch of the building not touched in some way over the past 11 months.” Now that The Delaware is open, executive chef Elliott Vogel is tasked with executing and presenting the team’s long-in-the-

making story. Vogel, who is also the head chef at Daley’s on Yates, is a bona fide “master” when it comes to creating menus and delivering an entire universe of flavor in one dish, Pettit says. “Once we knew we were opening in November, he was able to hone in on and perfect seasonal items,” Pettit says, adding that guests should come hungry for mouthwatering classics such as Beef Wellington and bone-in New York strip, but also be prepared for decidedly modern options that include smoked tofu. It’s all housed in the former home of the late, great New World Bistro Bar, which set a sky-high bar for culinary chops and old-fashioned hospitality. Thankfully, Pettit reports that the reception, thus far, has been overwhelmingly positive. “The opening was fantastic,” Pettit says. “It was a supergratifying and well-attended evening.” And now that the dining room doors are open and the front and back of house staff have worked out the inevitable grandopening kinks, head over to get a taste of the world, right here in the Capital Region. The space sits 100, but make reservations ahead of time just in case. The Delaware is open Wednesday to Sunday, staying open late on Sundays for hospitality veterans. Favorite dishes for sharing include luscious lobster dumplings with chayote and black vinegar, oil-slicked and spicy blistered

shishito peppers, and garlic focaccia with Locatelli pecorino romano. Next up, go for old-fashioned rarefied elegance (the steak frites—a 12-ounce Highland Hollow ribeye with frites and ramp chimichurri—is an instant classic), indulgence (a seasonal Scallops & Caviar dish with parsnips, almond butter and citrus), wild imagination (spicy Moroccan mushroom noodles with chickpeas, serrano pepper, curry tomato and cilantro), or out-of-the-box vegetarian (smoked tofu pastrami Reuben with sauerkraut, pressed rye, Swiss cheese, pickles and Russian dressing). Do your tablemates a favor and also order the pommes frites to share, and choose from classic salt and pepper, garlic and parm, or spicy BBQ and gorgonzola (if you’re feeling wild). Entrées range in price from $17 (for the blackened chicken sandwich) to $68 (prime Beef Wellington). Wash the worldly fare down with just slightly newfangled takes on classic cocktails, such as an espresso martini or seasonal purée and lime Prosecco cocktail). Locally sourced beer is also on on the menu, as is a healthy selection of excellent wines from around the globe (Sonoma’s Gundlach Bundschu Chardonnay is a steal at $35 a bottle). “We are feeling so good and fortunate,” Pettit says. Now that we’ve seen and tasted, so are we.

striking, octagon-shaped barn that serves as the Inn’s modern take on a ballroom. Boasting a central dance floor, wall-to-wall windows, cathedral ceilings and that cozy fireplace, The Gathering Space, which adjoins a 250-year-oldtavern, can comfortably seat up to 150 guests. Roll With It QUEENSBURY’S STREAKING MOOSE BBQ WRAPS UP THE PERFECT COLD-WEATHER SNACK. SUPER BOWL, ANYONE?

BBQ Chicken Eggrolls Makes 25 eggrolls Ingredients:

1 package eggroll wrappers (Nasoya available at most grocery stores) 1/2 red onion, diced 8 oz cream cheese 2 cups cheddar cheese 2 cups BBQ Sauce 4 cups diced smoked chicken, or cooked chicken if smoking not an option

Instructions: • Start by dicing red onion and gathering remaining ingredients • Combine diced onion, cream cheese, cheddar cheese, BBQ sauce and chicken in a large mixing bowl until fully incorporated • Pre-roll mixture into roughly three-inch logs and set aside • Take individual eggroll wrapper and rub a small amount of water along the edges, leaving the center dry • Place pre-rolled mixture in center of eggroll wrapper and carefully roll over, folding in the sides around the half way point, ensuring there are no holes or loose parts of the eggroll • Refrigerate and then fry at 375 degrees for 2-3 minutes until golden brown • Enjoy with your favorite BBQ sauce for dipping (Streaking Moose’s Butt Lovin’ BBQ recommended)

ith winter upon us, it’s understandable to want to stay curled up on the couch in an oversized sweater—smartphone in hand, scrolling away. Unfortunately, that’s not always good for the soul. Spend enough time on social media and you’ll undoubtedly start to feel like you aren’t skinny enough, rich enough, popular enough or taking the right vacations. TikTok, Instagram and the rest are a window into what appears to be a much better life than you’re living. It is, however, all an illusion. If age breeds wisdom, I’ve learned comparison truly is the thief of joy. Many of us are so obsessed with the destination that we fail to pay attention to the journey or what’s often right under our nose. I can’t think of a better example than the story of Joshua Bell. Joshua is a gifted musician from Indiana, who started playing the violin at the age of 4. By the time he was 17, he was performing sold-out shows at Carnegie Hall. He is, without a doubt, one of the finest and most

accomplished violinists in the world. One day, at the height of his success, Joshua Bell tried an experiment. He noticed street performers would set up shop in public spaces and play for spare change. He wondered if passersby would notice if the person singing for his supper, or in this case playing, was him. So on January 12, 2007, Joshua took his 300-year-old Stradivarius to Washington DC’s Union Station to play for the passing commuters during Friday morning rush hour. They call this busking; from Dave Matthews to Ed Sheeran, many of the stars you hear on the radio today started performing this way, long before they were famous. The Washington Post got wind of Bell’s plans and, with his permission, tagged along to watch. They reported with great astonishment that in the hour or so that Josh played, 1,097 people walked by without giving him a second thought, 27 put money into his open violin case on the dirty floor, and just seven stopped to listen. I remind you; this was a world-class musician performing Bach and Schubert

for free, and almost nobody took the time to appreciate it. The man who earns a thousand dollars per minute to play, on that day, made $32 bucks. And here’s the best part: That Stradivarius he was playing in the middle of the train station was valued at between $10 and $15 million dollars. Surely people would have loved to get a glimpse of that. What’s my point? Am I telling you that the next time you see someone playing the violin on Broadway in Saratoga you should stop because they might be a genius? No. But if you want to bring a bit more joy into your life, you should slow down and notice the beauty around you. From our bigscreen TVs and iPads to the dashboard displays in our cars that resemble something straight out of NASA, we are drowning in distractions. When was the last time you sat in complete silence, taking inventory of your many blessings? Trust me, you won’t find them on Snapchat. To borrow a line from the Broadway show Rent, measure your life in love, not likes. I hope you enjoy your winter and hit the pause button long enough to admire its frosty white beauty. Oh, and if you are curious, Joshua Bell (who, as an aside, is no stranger to SPAC) has several concerts this spring, with the good seats going for $300 each. I’ll bet you there are more than a few people in Washington wishing they had missed their train that day.
