As our global population grows and innovations abound, the world is becoming a smaller yet more complex place. Fruit that grows in one hemisphere can be shipped to someone’s plate across the world in a matter of days. Fish disappear from oceans as they multiply in aquaculture ponds. Food waste plagues one country, while food scarcity plagues another. And in every corner of the globe, food and food production is a source of both health and disease. SPRING 2016 21
