Is Your Food Still Safe to Eat?

In light of the government’s likely cuts in funding for food-safety surveillance, it’s more important than ever to be alert to recalls and news about food-borne illnesses. The Microbiological Data Program, sure to be axed from the annual budget, was set up in 2001 to test thousands of fruit and vegetables, many times more than are tested by the Food and Drug Administration. Results of those tests are then shared immediately with the FDA, and if necessary, the Centers for Disease Control and Prevention.

Given the recent outbreak of salmonella in cantaloupe and bean burgers, and E. coli in cheese and sprouts, it falls to us to be more vigilant on food safety, especially if some safeguards are going away. Here are some steps you can take to ensure that the food your family eats is safe. If you haven’t set up your computer for automatic food-safety alerts, do it now. Go to the FDA website at www.fda.gov/safety/recalls and sign up for email or SMS/text message notices. If you have a farmer’s market near you, inquire about how the crops are grown and fertilized. Make sure any manure comes only from herbivore animals, not carnivores, which can contain the very parasites and bacteria that you’re trying to avoid. Remember that “organic” means no antibiotics or synthetic ingredients, but it doesn’t completely guarantee your safety. Grow your own. Many localities now allow a

small number of chickens to be kept, even in urban yards. A half-dozen chickens will provide enough eggs for your family ... and if you’re so inclined, the occasional Sunday dinner. Get expert advice and study the feeds you provide. Know where it came from. Feed can be contaminated by a variety of bacteria, including salmonella. The FDA also reports on chicken-feed pellets and had one recall last year because of metal fragments. Whatever the chicken eats ends up in your eggs. With vegetables, you can control the process from start to finish. Consult your county extension office for advice on soils and any additives needed to bring it up to par. Keep pets away from your garden and the source of water you use on the plants. (Whatever is in the water is taken into the plant and can’t just be washed off.) Check www.foodsafety.gov for information on recalls and food handling safety.

fact that the baby’s eyes followed them when they moved and refused to give up on him. • As Rick grew, although he was confined to a wheelchair, his mother worked with him hours every day, teaching him the alphabet. At age 11, he received a special computer that enabled him to communicate, allowing him to attend public school. Rick received a degree in special education from Boston University at age 31 and went to work at Boston College’s computer lab, developing communication systems for the disabled. • The father/son running team got its start as a result of another’s disability. Fifteenyear-old Rick heard of a five-mile run slated to benefit a young lacrosse player paralyzed in an auto accident. Rick approached his dad about participating, and, although not a runner, 37-year-old Dick pushed his son the entire distance in his wheelchair, finishing second to last. After hearing Rick comment, “Dad, when I’m running, it feels like I’m not handicapped,” Dick began running on a daily b a s i s . When Rick was in school, Dick added a bag of cement to the wheelchair for his daily runs.

• That first five-mile run was in 1977. By 2010, the pair had competed in more than 1,030 competitive events, including 68 marathons and six Ironman triathlons. The 2009 Boston Marathon marked their 1000th race and the 25th time they had completed that event. Dick Hoyt was 69 years old when he pushed Rick across the finish line! • The highlight of their athletic career came in 1992 when they spent 45 days running and biking coast to coast across the 3,735 miles (6,011 km) of the United States. • When competing in triathlons, for the swimming portion, Dick pulls his son in a customdesigned boat with a bungee cord attached to the waist of his vest for two and a half miles (3.86 km). During the cycling segment of the event, Rick rides in a special seat of a custom tandem bike for 112 miles (180.25 km), followed by the running, during which Dick pushes Rick in his wheelchair for 26.2 miles (42.2 km). • In 2010, Dick’s book “Devoted: The Story of a Father’s Love for his Son” was published, chronicling their family’s efforts to overcome the obstacles of having a child with disabilities. Dick likes to emphasize the fact that even with cerebral palsy, Rick has “accomplished things that would seriously challenge most people.”

A neighbor takes her grocery shopping, and(573)-259-4329 we take her to other places she has to go. She is extremely set in her ways. I offered to have her home air-conditioned. She won’t hear of it. She says she’s used a fan all her life, and she likes to keep the windows open. I worry about someone her age tolerating heat, and it gets very hot here. Can you provide some arguments that would change her mind? -- D.A. ANSWER: Your offer to air-condition your mother’s home is a kind gesture and has lots of merit. I’m not about to challenge your mother. She has successfully lived a long life, and I could learn from her. People in the past lived comfortably without air conditioning. Your mother does have to be on guard for dehydration and heat sickness. During hot summers, everyone has to stay well hydrated. Older people’s sense of thirst is not as reliable an indicator of fluid needs as is younger people’s thirst sense. She should sip water all day long, or she can choose any beverage she likes, including tea. Cooled

Many of us exercise for an hour a few times a week and assume that takes care of all our heart needs. Not so, apparently, according to a long-term study. Researchers wanted to know the correlation, if any, between the hours spent watching television and heart disease. A second part of the study looked at the correlation between those TV hours and higher Body Mass Index (BMI) and high cholesterol. drinks help keep the body cooled. Evaporation is the chief means the body has for staying cool. Not only is an older person’s thirst sensation blunted, but so is the ability to sweat. Evaporation of sweat cools the body. I don’t mean visible sweat; the sweating I mean is imperceptible but constant. Her fan helps evaporate that imperceptible sweat. However, with a reduced capacity to sweat, older people are at greater risk of suffering from a heat injury. Increased body heat increases the body’s need for oxygen, and that stresses the heart. On very hot days, how about inviting your mother over to your house until the hot spell breaks? DEAR DR. DONOHUE: I have a problem that I am reluctant to talk to the doctor about. It’s a rectal itch. I have tried many preparations, but they haven’t worked. What would you suggest? -- L.F. ANSWER: I’ll mention a few self-remedies, but if the itch doesn’t leave promptly, see a doctor. Too many conditions are responsible for such an itch, and each one has a different treatment. Psoriasis, pinworms, eczema and Bowen’s disease are a few of the conditions causing a rectal itch. The doctor isn’t going to faint when you mention this problem. It’s a very common complaint. Make a couple of diet changes. Stop taking anything that has caffeine. The same goes for citrus fruits, tomatoes and chocolate. If these are the culprits, two weeks away from them should break the itch. Use moist cotton balls in place of toilet paper. Or you can use commercial products like Tucks. Take an antihistamine before going to bed. Itching usually worsens at night. Those are enough home remedies.

Cardiologist Dr. David Cohen described prolonged sitting as the body going into “storage mode.” The longer you sit, the worse the risks. For those still working at desk jobs, he suggested delivering messages down the hall instead of sending email, and in general moving as much as possible. Some of Cohen’s suggestions also can apply to those of us who don’t work outside the home: standing up when talking on the telephone, taking stairs when possible, going for walks. Being up and about is good for weight bearing on long bones and building up bone strength. Moving, even just walking, increases blood flow to limbs, brain and heart. As a start, I’m still in favor of taking the batteries out of the television remote control. There would be no idle channel surfing, skimming for programs with to watch. It was a common last name of many Dutch colonists settling on Manhattan Island in the 1600s, and soon, folks living in the area became known by the term. In 1809, Washington Irving, author of “The Legend of Sleepy Hollow,” also penned the novel “Knickerbocker’s History of New York” under the pseudonym Diedrich Knickerbocker. • The New York Knickerbockers were a baseball team long before they were in the NBA. They were one of the first organized baseball teams, founded by one of the original developers of modern baseball, and were the first team to wear baseball uniforms. Basketball’s New York Knicks team has been around since 1946, one of only two teams remaining of the original National Basketball Association. The other team is the Boston Celtics. • To those in the United Kingdom, a knickerbocker glory is an ice cream sundae. Invented in the 1930s, it’s a concoction of ice cream, jelly, cream, syrup, nuts and cherry. Some add meringue, fruit and even a smidge of alcohol to their recipe. • So many different meanings for the same root word! If you seem to have a natural ability or skill for a specific task, you have a knack for it. Maybe your occupation involves buying and slaughtering old horses and selling the hides, hoofs and meat. You are known as a knacker. If you’re knackered, you’re absolutely exhausted. • If you’re popping the metacarpophalangeal and interphalangeal joints of your fingers, you’re cracking your knuckles. • Men think of knickers as short, loose-fitting pants they might wear on the golf course. If a woman shows up on the green in her knickers, she might be slightly embarrassed, since to a woman, the term means bloomer-like underwear. • Tribesmen in South Africa use a short wooden club that has a knob at the end of it. They refer to this instrument that they use for throwing and striking as a knobkerrie. • Those folks familiar with the terms monkey’s fist, Turk’s head and Solomon Man are knot tyers. The International Guild of Knot Tyers hosts events that feature a competition for this skill. The Six Knot Challenge is a timed contest featuring the Sheet Bend, Reef Knot, Round turn and two half hitches, Bowline, Sheepshank and Clove Hitch. Tying all six in less than 15 seconds is considered excellent, but the world record holder, Clinton Bailey, has completed the task in an amazing 8.1 seconds. • Members of the warrior class during the Middle Ages in Europe were called knights, a word that takes it origins from the German word Knecht, translating “servant” or “bondsman.”
