PLOY Thai in Cooroy, a local “hot spot eatery” is re branding its position to focus on the upward trajectory food movement that is sweeping eateries world wide in Artesian foods, incorporating healing herbs and spices. Ploy Thai, the name inherited from the previous owners, will now be trading as “Noora Thai” from the 30 th June, 2011. Noo has owned the business for over 12 months and has been introducing Provincial recipes to the mainstream menu with her new chef Danny, previously from Jo Jo On Brisbane. and Laos cuisine with emphasis on fresh, organically grown local herbs. The traditional indigenous ingredients used have a huge role to play in pharmacological varying from healthy digestion, skin beautification and toxin elimination, including body regeneration at cellular levels. “Let food be your medicine and medicine your food,” an ancient Greek philosopher foretold, long after the Thai principals were an inherent belief system and integral diet structure for life longevity. Noo is passionate about traditional indigenous Thai foods and medicine and was taught by her uncle, the local village’s Shaman, as a child growing up in North- East of Thailand, whose recipes and blends have been handed down by countless generations. Noo operates a small cooking school from the Cooroy restaurant and will expand the enterprise to foodies that are yearning to be educated on the culinary and health benefits of Thai herbs and spices. Subjects include but are not limited to: Growing/Cultivation/Identification; Preparing Foods for optimum Health Benefits; Cooking Secrets. One has to admire Noo’s knowledge of the local streetscape and bush environment when she explains that the local “Cordyline lily” was used as traditional bush tucker in Thailand and demonstrates how to peel, core and prepare the plant for a meal! Noo is currently compiling a book and video guide on the many uses and benefits of Thai herbs and spices.
