Highlands’ wellness resort adds rooms

ascading along several rolling acres in the heart Highlands is the four-star Old Edwards Inn and Spa. Nearly $100 million in renovations in the past several years have produced a world-renowned spa resort and private championship golf club. Brand new in 2013, The Falls Cottages at Old Edwards opened with 22 new guestrooms, an additional outdoor heated mineral pool, whirlpool and freestanding outdoor fireplace. A new coffee café and cocktail bar called “Art’s at the Lodge” provides another dining venue to accommodate the additional rooms. The resort also expanded spa areas in 2013 to meet the growing demand. Guests of Old Edwards are surrounded by the warmth and character of Old Europe architecture and period antiques. Cyprus

A

t Cyprus, diners can explore all the world’s cuisine in an open-kitchen environment and experience Highlands’ most exciting dining destination. Chef-owner Nicholas Figel grew up working in his father’s restaurant, On the Verandah, and has apprenticed in Venice and Milan. Figel truly has a passion for food, preparing peasant food and traditional cuisine from around the globe and adding his own twist. “Many chefs have a focused style – Italian or French, for example,” Figel said. “I stray from those traditions. My style is more playful and more energetic, sometimes loose. I strive for a relationship among elements — sweetness/saltiness, crispness/ smoothness, color contrasts. So, I’m always hunting for interesting relationships between foods and flavors.” Taking its name from the Island of Cyprus, the restaurant conveys a warm, energetic and open quality. The interior features a lot of copper in its decor, including the copper bar, as a nod to Cyprus’ main export. The World Tour menus, which change weekly, focus on one type of cuisine from a specific region, opening up not only a world of delectable flavors but of imagination as well. World Tours in May include Travels with Earnest, a menu tracing Hemingway’s world journey (May 15), Shinkansen — The Bullet Train, the post-war Japanese evolution from substance, to post-modern (May 22) and Perfect Harvest. Dishes, such as the Rijsttafel Chicken, often convey the stories of two cultures meeting and the cuisine that emerged. The Dutch-Indonesian dish is served with fresh vegetables and rice cooked in a banana leaf and a pinwheel of house-made sauces. This dish also can be prepared with Cyprus’ house-pressed tofu. Figel said he strives to create an exciting experience for diners, where they enjoy all of the energy — from flames bursting out of the pan to ever-changing gallery of local art on the walls and, at the heart of it, the complex and memorable flavor combinations in the dishes. “We have a vibrant kitchen,” he said. “The ambiance is a little

loud. The music is energetic. The food is a little spicy. Nothing is stuffy here.” The creative menu and open atmosphere is a place where diners are encouraged to ask questions. “The best aspect of being a chef is the connection you make with customers,” Figel said. “At one point, I was looking for recognition for particular recipes, attention for particular dishes. But now, it’s more about pleasure, maybe communicating ideas the way an artist or dancer communicates ideas.” Diners start off with fresh bread served with olive oil and can select a beverage from the diverse martini menu with freshsqueezed juices. Martinis include the spring-a-tini, lychee-basil, Maker’s Mark Manhattan, lemon drop and more. Or choose from a selection of old and new world wine or beer. The kitchen staff collaborates with Marker Mountain Farm, located on Turtle Pond Road, where the organic produce is harvested daily during the season and only the best quality ingredients are used. Fresh fish is ordered in-transit from the coast. The selection changes nightly and focuses on the freshest salt water fish variety, for example, black fin snapper poached in mango-coconut nectar with dark soy, shrimp pepper sauce and roasted onions. Great starters include gulf shrimp ‘tom rim,’ a Vietnamese spicy caramelized shrimp served hot with rice noodles and fresh cilantro, or the French cognac roasted marrow-bone, which is featured in “Chefs of the Mountains,” published last year. The restaurant offers 10 fixed menu items that are gluten free and at least seven vegetarian entrées on a given night. For example, the mole poblano vegetariano starts with a poblano peppered that is charred over an open flame and then flash fried and stuffed with fresh vegetables, local goat cheese from Dark Cove Farms, plantains and a mole sauce that is based on a family recipe. For classic comfort food, diners can turn to the world chophouse menu and choose from the truly Americana of steaks with the Kansas City Cowboy Ribeye, a bone-in-steak USDA Prime grade chop seasoned with dried garlic and onion, or turn to the marinated lamb sirloin, a grassfed organic cut from New Zealand, roasted in a 625 degree oven. From the ice cream churned in house, to all of their homemade sauces, the kitchen staff truly does not take any shortcuts.

ur pizzas are hand-crafted the old fashioned way and baked fresh in our wood-fired oven. We offer eight specialty pizzas, and our guests have the option of creating their own uniquely flavorful combinations. We have added several items to our menu for the 2013 season: new sandwiches, including a Monte Cristo, ribs, create your own pasta bowl and prime rib every day. One of the staff ’s favorite dishes is Eggplant Napoleon, lightly fried eggplant medallions and ricotta cheese with a blend of sundried tomatoes and spinach. We have full ABC permits and the lowest prices in town. We also sell beer and wine to go every day. We offer a cozy pub atmosphere with indoor dining, an outdoor patio and uncovered beer garden. We also feature live music several nights a week. Manager Raymond Oliver and Chef Kenny, who has been with the restaurant since it opened, have proven to be vital to its success. Chef Kenny is self-taught, and his vast experience includes Lake Toxaway Club, The Brown Trout, The Country Cupboard and Jimmy Mac’s Grill. His team includes Chef Will, Mary, Sam and Brian, all of whom work hard everyday to ensure our success.

he Ugly Dog Public House and Dog House are located on “the hill” at 294 S. Fourth St. in Highlands. We are a causal pub with a relaxed atmosphere in which people can come and enjoy craft beer selections on tap and by the bottle, well-designed cocktails, great wines and good friends. Our seasonal and specialty cocktails include lavender-blueberry mojitos, fresh margaritas, strawberry-basil caipirinhas and perfect Manhattans, just to name a few. Our extensive bourbon selection is the best in the area. This season we will offer a reserve wine list as well as Champagne and sparkling wine specials every Friday. Our outside seating at the Dog House is a great way to enjoy a relaxing libation on a cool evening in Highlands, especially to end a rigorous day of golfing, shopping or outdoor activities. If you are hungry, don’t miss our pub menu. We have great burgers that are hand pattied and cooked to order. Alongside our wonderful burgers, we serve premium hot dogs and naturally hickory smoked meats from Highlands Hickory Market. We just spent a week in this cottage. It is wonderful. The pictures do not adequately show the size of the rooms or how clean and well done they are. The master bedroom and master bathroom were very large and well appointed. They appear to be brand new. The living area (LR, DR and kitchen) also appears to be new. The kitchen has everything you could possibly need. The second bedroom, its en suite bathroom and the third bathroom are all a little dated, but adequate nevertheless. This was our first time to spend a week in Highlands. It is great. We will be back.

We loved our four-day stay in this great mountain hideaway. There were eight of us, and everyone had plenty of room and lots of privacy. I’ve never seen a rental more completely furnished. I brought way too much stuff in the way of kitchen things. I was happy to replace the candles on the dining table. Beds were comfortable, and towels were plentiful. It is really like staying at someone’s house, and they don’t mind you using all their things! For some reason, this makes you feel a little more mindful and respectful of the house. We were glad to leave it just as we found it (except for the pile of our used towels). If we have a large group again and want to visit Highlands, we would definitely stay at Tree Tops.

This 5 bedroom, 4 bath home was perfect for our family group of ten for my son’s wedding in Highlands. The two levels made it perfect to set up the downstairs for our young granddaughters’ movies, TV and toys. There were fabulous decks and an outstanding view with no obstructions. You are on top of the mountain with views that go on forever. The kitchen was very well stocked and lacked nothing. The best thing about this home was having everyone together in a beautiful, well-furnished home for our happy occasion. The Chambers Agency is so great to work with, and they attend to all your needs with a smile. We will definitely rent from them again — soon, I hope! By the way, the homeowner was very friendly and helpful.

This cabin has everything ... great furniture, books, games, internet access, hard line phone, wonderful bathrooms, fire pit for “s’mores” and hot dogs, location close to hiking trails and Chattooga River. And Chambers Agency is the best. So responsive to requests and calls, even on weekends and evenings. A really great management team!

ur charming mountain town of Highlands has a number of gracious hotels that offer beautifully appointed rooms, excellent cuisine and helpful staff, but an attractive alternative to these lovely hotels is the local bed and breakfasts that offer amenities much like an upscale hotel. The bed and breakfast concept has been in existence in one form or another since the beginning of man. Convents and monasteries in Europe served as B&Bs as they are known for travelers, and in many cases still do. A B&B is generally known as a private home where the innkeeper resides while providing a place to stay for guests. If you are widely traveled then you have heard B&Bs called pensions, paradors, gasthaus, minskukus, shukukos, pousados and other names appropriate to the local language. B&Bs are not low-cost lodging facilities but are considered to be a different lodging experience. Several of our local B&Bs are more than 100 or near-100 years old and offer a warm and cozy relaxing stay with a private bathroom, bountiful breakfast of homemade baked goods and gourmet treats during the day and evening. Some rooms have fireplaces and jetted tubs. Most of the local B&Bs have beautiful rooms furnished with lovely antique furniture. Colonial Pines Inn Colonial Pines Inn began as a small cabin with a sweeping view. 6 eggs, beaten 3½ cups half-and-half 1 Tbsp. vanilla ¼ tsp. salt 3 Tbsp. sugar 1½ tsp. cinnamon Directions Combine first 3 ingredients, cook over medium heat, stirring constantly for 5 minutes or until bubbly. Pour into a buttered 13X9-inch glass baking pan. Sprinkle pecans evenly over above caramel in baking dish. Arrange apple slices over pecans, covering entire dish. Tear bread into pieces and arrange over apples, filling all empty spaces. Combine eggs, half-and-half, vanilla and salt. Pour over bread. Cover and chill overnight. Combine sugar and cinnamon and sprinkle over soaked bread. Drizzle melted butter over bread. Bake uncovered at 350 degrees for 45–50 minutes until golden brown. Serve with whipping cream and apple garnish.

Sweet and Spicy Cashiers chef creates own barbecue sauce

hef Sean Ruddy of Cashiers has seen his fair share of sauces. But a trip to the Cayman Islands gave him an idea for creating a barbecue sauce that now bears his name and is bottled and available to the public. Ruddy, the chef at High Hampton Inn and Country Club in Cashiers, explained how he came up with the baste full of taste called “Chef Sean’s Campfire BBQ Sauce,” which is “sweet, smoky and spicy with a hint of bourbon,” according to the label. “I first came up with the recipe after spending some time as a chef in the Cayman Islands,” recalled Ruddy. “I liked the peppery flavor of the local spices, and so one day I decided to combine some of the island spices with what I knew as American barbecue sauce and was pleasantly surprised. “So after years of refinement and many requests of the folks I have cooked for, I decided to have it produced, labeled and bottled,” Ruddy added. “We began shipping it out in May of 2012.” Describing the taste of his succulent creation, Ruddy said, “The sauce itself is a unique combination of sweet, spicy and with a hint of some bourbon. It has it’s own unique flavor (hence the island spices).” Ruddy was born in New York City and moved to Florida in his youth. He started cooking at the age of 8 and starting working part-time in restaurants at the age of 15. After high school, he went to culinary school at the Florida Culinary Institute in West Palm Beach, Fla., where he graduated in 1995. After graduation he worked at a few jobs before being of-

Chef Sean Ruddy of High Hampton Inn fered the Cayman Islands opportunity. He then relocated to the North Carolina mountains when a job opportunity arose at Wildcat Cliffs Country Club in Highlands. Ruddy also completed studies in food and wine pairing in Saint Helena, Calif., at the Culinary Institute of America. Ruddy was later named Executive Chef at the Greystone Inn in Lake Toxaway. During his tenure, the inn was named one of the top 15 places to stay in the United States by Condé Nast Traveler magazine, and the hotel was awarded the AAA Four Diamond award every year during his term of employment there. In his current role as chef at High Hampton, Ruddy continues to cook southern favorites with a bit of a twist. “I like taking different styles of cooking from all different regions and bringing it south,” Ruddy said during an in-

terview with John Bachelor, author of “Chefs of the Mountains,” published in August 2012. “Cooking is an act of love, and it requires a special touch to make it appealing to everyone.” By request of the many guests at the High Hampton Inn and Country Club, Ruddy finally decided to commercially produce the Campfire BBQ Sauce, which he has been making for many years. People on the Cashiers/Highlands plateau don’t have far to go for a sampling of the sauce. “The sauce itself is available at the High Hampton Inn’s Hampton Market, Cornucopia Market, the Cashiers Farmers Market in Cashiers and the Sapphire Country Store in Sapphire,” Ruddy said.
