LOLLAPALOOZA Chicago hosts some of the biggest music festivals in the world every summer. With Lollapalooza, Pitchfork and so many more, there is a music festival for everyone. The biggest music festival to come of out Chicago is Lollapalooza. The festival prides itself in hosting all sorts of genres, from indie rock to elec-

PITCHFORK Another popular festival in Chicago is the Pitchfork Music Festival, sponsored by the music publication of the same name. This festival is the go-to for anyone interested in up-and-coming bands and underground artists, while also boasting some big headlining names. Earlier this semester, I reviewed the lineup to

tronic to even the occasional metal act. This is the festival everyone seems to be talking about. Each year, this four-day festival draws more than 400,000 people by bringing some of the biggest names to the stage. This year, headlining acts include: Bruno Mars, The Arctic Monkeys, Jack White, The Weeknd and Travis Scott. The festival will take place from August 2 to 5. With big names comes big price, though. A single day ticket at the base price costs $120 with

fees. Tickets can be expected to be much more costly once they sell out and can only be purchased through outside vendors. Be smart with your money, and buy sooner rather than later if you are dying to go. The festival also takes place in Grant Park, so parking is ultimately nonexistent. Be sure to research means of getting to and from the festival, and pray you don’t miss your train home.

The festival will take place from July 20 to 22, and tickets can be purchased from around $75 per day or $175 for all three days. Pitchfork takes place in Union Park, located on the Near Westside of Chicago by the Green and Pink lines of the CTA. Parking is an option as well

as traveling by train, so getting to and from the festival is exceptionally easier, if that is a concern.

SPRING AWAKENING Spring Awakening, taking place from June 8 to 10, is an electronic music festival that draws in fans from all over. The festival in recent years has brought in more than 90,000 attendees. In the past, Spring Awakening has been held in

COUNTRY LAKESHAKE Fear not, country music fans. There is a festival designed especially for the biggest country music fans out there. Country LakeShake will return to Chicago for its fourth year, being one of the very few country music festivals in the area. This festival will take place from June 22 to 24.

RIOT FEST My personal favorite festival, Riot Fest, takes place at the tail end of summer. This year, the festival will take place from September 14 to 16. The festival switched locations a few years ago and now takes place in Douglas Park, Chicago. This festival is home to various rock, punk, industrial and hip-hop groups, while also priding it-

It will include several big names in the electronic music world, including deadmau5, Kaskade and Tiesto. Tickets for this festival currently range from $79 per day or $209 for all three days. Prices are expected to go up once the limited number at this price range sell out. Again, buying early would be advised to save more money.

Headliners will include Blake Shelton, Dierks Bentley and Florida Georgia Line. It is held at the Huntington Bank Pavilion at the popular Northerly Island. Several types of tickets for this festival will be sold. General admission lawn tickets are on sale for $99.50 per day, where general admission full access tickets are $150.50 per day. Full access tickets get attendees entry to unrestricted areas of the festival, including the chance to get up close to the main stage versus being restricted to lawn seats.

This summer, I encourage you to try something new and impress your friends with a dessert that requires almost no ingredients but a whole lot of love. If you can follow the recipe, surrender to the science (or magic) of baking, and keep all these tips in mind, you will be successful and will wow everyone this party season.

-A dash of white vingar -4 large eggs (you will be using just

the egg whites) -1 tsp cream of tartar (can use lemon juice but it won’t work as well) -250 grams(1cup

and 5tsp) of superfine or caster sugar (See tip below) -½ tsp vanilla extract -A pinch of salt

The best way to do this is to break each egg white into a small bowl first, and then add it to your large bowl. This means if one egg yolk breaks, you don’t have to throw them all out and start again. Fats from the egg yolk will sabotage your recipe and prevent the egg whites from properly whipping up into beautiful silky clouds of deliciousness.

separate. Keep testing until the granules are dissolved, and you achieve “stiff peaks.”. 8. Add a pinch of salt and the vanilla right before the mixture has been completely beaten. Do not add the vanilla too soon, as it could limit the volume of your meringue. 9. Carefully spoon the mixture onto the tray, creating 12 “plum-sized” meringues. 10. Bake in the oven for 25 minutes. Turn off the oven, leaving the door closed and the meringues inside as it cools for at least one hour.

DO NOT OPEN THE OVEN DOOR! 11. When the meringues are done, they should be completely cool and come off the paper cleanly. The bottom should be hard and, if you tap it gently, it will sound hollow.

DO NOT PANIC! If your meringues come out of the oven with cracks on the top or in weird shapes, you are still on the right track. Meringues are ideal desserts to make for a number of reasons. Firstly, they are meant to be a little ugly, and secondly, you cover up the ugly with cream. In the end, this is a dessert that is all about how it tastes, not how it looks. For the novice baker who doesn’t own icing tips or piping bags, or know what fondant is, or struggles to get cookies all the same size and shape, this is the dessert for you.

For the best results use room temperature eggs. Start by separating the yolks from the whites when cold, then leave the whites to reach room temperature before whipping.

4. Add cream of tartar. Acid works as a stabilizing agent (science or magic or something). Acid strengthens the bubbles in whipped eggs so they don’t collapse when baking. 5. Start whisking the egg whites in the bowl. Start on a low speed, so the egg whites slowly fluff up. You will see bubbles begin to form. As you get to the “soft peaks” stage you can start to add the sugar

What is superfine (caster) sugar? Basically, it is sugar made of smaller granules than the regular kind. It is great for use in baking, as it dissolves faster, and is readily used in British recipes. If you have problems with crunchy granules of sugar in your baking, consider grinding up regular sugar in a food processor for 30- 60 seconds, or buying superfine sugar in the store. Be careful not to grind up the granules too small, as that creates confectioners sugar. Superfine is a size somewhere in between.

To ensure whipped egg whites achieve maximum volume and remain stable, they must be free from all grease and fat. This is why we use vinegar as a last step to clean our tools.

3. Prepare eggs whites with absolutely no yolks.

1. Preheat the oven to 300 degrees Fahrenheit. 2. Clean all the equipment that you will use, bowl and whisk or whisk attachments, with white vinegar on a napkin or paper towel.

his summer, I am excited to once again create a dessert that brings me so much joy. It’s crunchy, chewy, mallow-y and light. It melts in your mouth and wraps your tongue in the perfect amount of sweetness. Paired with fresh whipped cream or icecream and your favorite summer fruit, it is the epitome of a warm vacation in a bowl. For me, this is the perfect dessert to follow any greasy barbequeB.B.Q. food, whether it be a

- A deep stainless-steel or glass mixing bowl - A baking tray - Wax paper or baking paper -A food processor (if you are grinding your own superfine sugar)

“No peak” stage is when the eggs are getting foamy and opaque, but are still liquid-y. “Soft peak” stage is when you lift the whisk out of the eggs and a “peak” starts to hold for a second, but quickly melts back down. “Firm peak” stage is when the peaks hold on the whisk, but flop over. “Stiff peak” stage is when the peaks stand up straight to attention and hold their shape.

Store in airtight containers in a cool, dark place and only decorate with cream or ice-cream right before you are ready to eat it. Meringues don’t like moisture, so rainy or extremely humid days are not the best for making or eating these, but usually they will survive long enough to still be delicious.

SERVING

Make fresh whipped cream by whipping heavy cream using an electric beater and slowly adding spoonful’s of confectioners sugar. Just like making meringues, as the cream whips it will expand, and as the sugar is added it will get thicker and sweeter. When you have achieved the consistency and sweetness you desire, add a teaspoon of vanilla extract. Whip for 10 seconds to combine, and either spoon or pipe your whipped cream on top of your meringues. Add fresh fruit and mint leaves to decorate and serve with vanilla ice-cream.

6. Add the superfine sugar slowly, tablespoon by tablespoon. 7. As you add the sugar, the mixture will become “glossy.”. When all of the sugar is added, turn the speed on the mixer to high. As it expands and becomes glossy, test the mixture by rubbing some between two fingers. If you still feel granules of sugar, the mixture needs to mix more. Every four years FIFA brings us the sporting spectacle of the world, and this year we should have some excellent soccer. Even though the United States failed to qualify this go around, don’t let it discourage you from having a great time this summer. Here are some things to do for your World Cup experience and some things you shouldn’t do.

DO'S

Bring the drinks- Now this may seem minor, but the games and days get long when you’re dehydrated. So be the stand-up guy, and bring the drinks for your World Cup get together. The boys will be grateful, and the girls will definitely take notice. Invite everyone you know- This is the time of the year to act a fool. Your team’s competing for world domination, and you

can tell everyone how excited you are for it. Or you can cry alone in the bathroom when they lose. It’s not a party until everyone is there cheering on the global past time. Get a wireless receiverIt may seem insignificant and a little expensive, but when have you ever heard someone complain about a watch party where they were watching the game on the patio? Take on Grill Master-

Lastly, the man who feeds all is the one who is admired by all. Don’t allow people to talk about how hungry they are midway through the games. That entices them to leave and tell those they know how hungry they were and how they didn’t enjoy the party. Winners write history.

DON'T

Gate keep- The worst guy at any sort of watch party is the one who won’t shut up about the small upcoming team winning games they weren’t expected to. We all get that they’ve known about them for years, but, hell, people just want to live in the moment, and your pretentious

rants are keeping people from enjoying themselves. Bring craft beer- Similar to the one above, the last thing anyone wants to hear at a watch party as they’re pounding cheap beer is how uncultured their taste in booze is. Take a step back and chug the Busch Light, because it’s gonna be a heck of a time.

Run out of Ice- This one may seem simple, but I’ve been to countless parties where the ice runs out, and no one is sober enough get some more. Be sure to pack the ice in every available crevice so that the guests can bask in ice-cold refreshments

hicago will host the second edition of the tennis exhibition event Laver Cup this September. The tournament will see some of tennis’ biggest male stars vie for the trophy at the world famous United Center. The inaugural Laver Cup tournament that was held in Prague saw some of tennis’ biggest names compete for the trophy in two teams of six. Tennis superstars Roger Federer and Rafael Nadal were part of “Team Europe,” while John Isner joined fellow Americans Jack Sock and Sam Querrey as part of “Team World.” The latter was captained by American tennis great John McEnroe. The former was headed by the equally great Bjorn Borg. The 2017 edition had tennis fans all over the world enthralled from start to finish. As qualification for the tournament is based on the Association of Tennis Professionals (ATP) World Tour rankings, this year promises to also bring together the sport’s top players. We may even be treated to the dream doubles pairing of Nadal and Federer once again. The two had the tennis world collectively brimming with excitement when they took to the court to play as a team for the first time last year. Laver Cup was created

to pay homage to tennis great Rod Laver. The Australian has won 11 Grand Slam titles and is considered to be among the most successful tennis players of all time. Federer and last year’s Team World member Nick Kyrgios were in Chicago earlier in the year to promote the event. They were joined by McEnroe, Chicago Mayor Rahm Emanuel and Rod Laver himself in Millennium park. Of playing in Chicago for the first time, 20-time grand slam champion Federer said, “…Chicago’s definitely one of the places I've wanted to come to, and then let alone play as well, and so now this year I'll get both, which I’m very excited,” as reported by Phil Thompson for the Chicago Tribune. The U.S is already home to some of the most prestigious tournaments in the sport. Flushing Meadows, N.Y. hosts the U.S Open, the fourth and last Grand Slam tournament of the year. Miami, Fla. and Indian Wells, Calif. also boasts two of the sport’s most top-tier and popular events annually. Laver Cup runs from Sept. 21-23. Tickets for the tournament are on sale now via their website: lavercup.com.
