Our rhubarb is ready for harvesting! Rhubarb is called “pie plant” because in days gone by rhubarb strawberry pie was on the request list for springtime desserts. It is still popular, but more and more, rhubarb is showing up as topping for ice cream. Here’s an easy recipe with rhubarb and strawberries.
Rhubarb Berry Sauce With Ginger Good over ice cream, pound cake, frozen yogurt. 4 cups chopped rhubarb 2 cups strawberries, halved 1/2 cup each sugar and orange juice Grated zest of 1 orange and 1 lemon 1 tablespoon finely grated fresh ginger 1 teaspoon vanilla

Put everything but vanilla in pan and bring to boil over medium heat. Reduce to simmer, skim off any foam and cook until rhubarb is tender, about 10 minutes. Stir in vanilla. Store in refrigerator for up to a week.
