This AOP extra virgin olive oil is made of four varieties of olives: Salonenque, Beruguette (Aglandau), Grossane and Verdale. The olives are stored during 48 hours, without air before crushing. This causes variation and greater complexity of the aromas. The olives are then crushed; the paste is pressed or centrifuged to obtain a very sweet oil (without a peppery or bitter taste)
