T WINKLE, T WINKLE Top contender for the year’s most romantic event so far took place in central Poland on 21 June. For the third year running, authorities in Poznan chose Kupala Night, the Slavic celebration of the summer solstice, to light up the sky with
thousands of Chinese lanterns. This year they aimed to break a world record for the most paper lanterns released simultaneously. Some 40,000 lanterns transformed the inky night sky into a sea of twinkling orange stars.

As if the delays, overcrowding and odd odours aren’t bad enough, they’re always full of those kind of couples cuddling up, rubbing noses, using their affectionate, cutesy, wutesy nicknames for each other. Thankfully, Prague’s transport system has come up with a clever idea for sour singletons. Project planners hope to introduce singles-only carriages to provide people with an opportunity to meet other singles in today’s busy world. It’s likely that the dating car will be the last carriage, but Ropid are currently running surveys to find out what age groups are interested, and what times would be best to run the trains. Couples who accidentally stray into the love carriage will not be asked to leave.
The Sz i get Eye Take in the best bits of Sziget Festival from the 65m-high ‘Budapest Eye’, placed right in the heart of the action Forget about the Rolling Stones at Glastonbury, Atoms for Peace at Exit, or Blur at Primavera. This year, Sziget is the summer’s hottest event act – and not only because temperatures in Budapest will reach a scorching 30°C! Held on Obuda Island, in the heart of beautiful Budapest, Sziget attracts 400,000 fans from across 70 different countries for a whole week of non-stop partying, fantastic music and wild performances. A sense of carnival usually permeates Sziget, as performance artists wander around in a variety
of guises – there’s also a theatre tent with circus performers, art tents, cocktail bars and more. Sound exhausting? You can chill out on the banks of the Danube or even escape into the city for a little bit of sightseeing. And the best bit about it all? The music. Headlining acts at this year’s event include Blur, Regina Spektor, Everything Everything, DJ David Guetta and more. At the heart of the action is the Sziget Eye, pictured above. This giant ferris wheel – at 65m, it’s one of the world’s largest travelling ferris wheels – has been in Budapest’s Erzsébet Square throughout the summer. Now it’s smack-bang in the middle of the action in Obuda Island, with spectacular views across the site and beyond. From 5 to 12 August, sziget.hu

SERPENTINE PAVILION A different artist is chosen each year to design a temporary building for the lawn outside London’s Serpentine Gallery in Kensington Gardens and for 2013, award-winning Japanese architect Sou Fujimoto was selected for the commission. His Serpentine Pavilion is made from a lattice
of 20mm steel poles, giving a delicate, lightweight appearance. Talking about the ambitious installation, Fujimoto said, “The delicate quality of the structure, enhanced by its semi-transparency, will create a geometric, cloud-like form, as if it were mist rising from the undulations of the park. From

TIMBER TIMEPIECES Valerii Danevych’s wooden watches are proving a big talking point with connoisseurs. Revealed this spring at Baselworld, the watch and jewellery show, they’re made entirely with wood (with the exception of the tiny metal spring needed to propel the movement). The Ukrainian craftsman’s latest creation is a men’s wristwatch that took seven months and 1,800 hours to make. Chances are you won’t be picking up one of his items next time you’re in Kyiv – his latest costs around €100,000 – but they’re undoubtedly something to behold. danevych.com

Food F i ght! The stern parental warning of “Don’t play with your food – eat it!” can be ignored at the world’s most famous food fight Looking to unleash your wild side this summer? Or simply want to feel like a kid again? Then head to the sleepy village of Buñol, 40km from Valencia, to take part in one of Europe’s liveliest – and muckiest – annual festivals: La Tomatina. What started out as a post-war, testosteronefuelled food fight has evolved into a renowned and wholly bizarre culinary event. Anyone who unknowingly stumbles upon Buñol on the morning of the last Wednesday of August will be in for a bit of a shock, as around 30,000
revellers wait patiently for the world’s largest food fight to begin – though that can only happen after someone scales a two-storey high, greased pole to seize a joint of ham. Sounds wacky already, yes? Once the ham has been claimed, a cannon is fired and participants can grab fistfuls of ripe tomatoes (lorries from local farms rumble into the centre of town with 140 tonnes of them) to start two hours of organised chaos as the fruit is crushed and hurled about, creating a gigantic salsa stew. Another rocket indicates an end to the fun and, as the rivers of tomato juice in the street get hosed down, so the tomato throwers head for the public showers next to the river to clean up and de-pulp. latomatina.org
The world’s largest flag was revealed this summer. Unfurled in the small town of Clinceni, south of Bucharest, it measures 349mx227m, or 72,290m². That’s larger than three football pitches! The Romanian flag beats Lebanon’s 2010 record (which was an impressive 65,650 m²). It weighs five tonnes, is sewn with 70km of thread and took 200 volunteers and numerous sandbags to keep it pinned to the ground. Now all they need is a flagpole large enough to run it up.

S ultan s of Spin Ping pong is having a moment, and it’s partly down to A-list actress Susan Sarandon. As odd as it may sound, Sarandon is one of the co-founders of SPiN Galactic, a ping pong social club that opened in New York four years ago. The concept proved so popular that SPiN’s trendy table tennis clubs quickly popped up in three more cities: Milwaukee, Toronto and LA. But now SPiN has upped its game and opened its first venue outside of North America: Dubai.
Entrepreneurial brothers Dani and Rami Alyamour, along with Sarandon and her business partner and boyfriend Jonathan Bricklin, unveiled SPiN Dubai in Wafi Mall in May this year. With Champagne on tap, incredible cocktails and Justin Beiber’s favourite DJ playing the tunes, this extravagant opening party certainly didn’t need any more bling, but Sarandon’s presence added a little extra dusting of Hollywood glamour. SPiN Dubai is undoubtedly the company’s most extravagant venue yet, with a table tennis table cased entirely in gold, 10 additional ‘designer’ tables and golden ping pong balls.
You don’t have to book ahead for one of Dubai’s most interesting new nightspots, you just need to impress the men at the door to get in. A regular court will cost you 100 dirhams (€21) per half-hour, the centre court is 200 dirhams and a game on the pure gold court, 500 dirhams. There’s also a bar serving cocktails, a very eclectic food menu (think sushi, cerviche, quesadillas and burgers) and a terrace shisha lounge. 1. To me, art is everywhere on the streets of Belgrade, while the galleries showcase the work of local artists. This shot of Andricev Venać is dominated by the statue of the Nobel Prize-winning author Ivo Andrić. This whole area itself is a work of art and place for inspiration. I particularly like the route leading from Pionirski Park to main street Kralja Milana, thronged with buses, cars and people heading for the heart of the Old Town. 2. places. The detail of the stones surrounding this disused fountain in Čumićevo Sokače, known as the Design District, captured my imagination. This district is tucked away behind the bustle of Terazije and is well worth exploring, thanks to the small designer shops and cafés, so unlike the branded streets elsewhere in Europe.

3. I have had a lifelong fascination with water, with boats and with the feeling that by climbing aboard and pushing off, the world lies ahead to be discovered. A river can define a city; Belgrade is blessed with two, the Sava and the Danube. These boats were moored on the banks of the Sava in Zemun. On a hot day there is little to match walking along these riverbanks, feeling the breeze in the air, wondering where those boats will go next. 4. Serbia has no coastline but those who live in Belgrade are lucky enough to have the shores of the artificial lake at Ada Ciganlija on which to seek refuge from the heat of a hot summer’s afternoon. The lake and park are filled with life all year round, with runners and cyclists working out as they circle the lake. What better way to spend a lazy Sunday than lounging at one of the many waterside bars with a cool beer and a plate of grilled minced beef and pork, known as ćevapčići?

DJ Nico de Transilvania’s turntable grafts electro beats onto Romanian folk songs
I love dancing, and I started DJing simply because so many times I’d go out and there wouldn’t be any music I wanted to dance to,” says Romanian DJ Nico de Transilvania. This feisty female DJ is the living embodiment of the music she plays: a beautiful, positive, funky fusion of tradition and innovation. When she pumps out her unique Balkan folk melodies, cut with phat beats that make dancing irresistible, she’ll be wearing the kind of pretty, embroidered dresses that would have adorned fair country maidens centuries ago. New and old, rural Romanian and internationally

When she was a child, Nico’s father ran a restaurant near Cluj-Napoca that was constantly alive with melody. She started collecting various tracks
from an early age. During the communist years, it would be whatever she could get her hands on, but after the 1989 Revolution she embraced as wide a range of influences as possible, her favourites always those she could dance to. “I studied choreography in the UK. I would DJ at house parties and then some people invited me to play at a club in Brighton. They gave me a residency and it just went from there,” she says. Nico is being modest, but her litany of gigs is impressive: Bestival, London Fashion Week, Secret Garden Party, Venice Biennale Arts Festival, and of course many clubs across the world. But recently Nico

has been expanding her influences further with a project called Music Without Frontiers, which includes tracks from around the world. She will retain a Balkan heart, but her new sets are more eclectic. The skill is to find the thread that flows within and between the music and follow it from tune to tune. She has often been hired for an hour-long set, only to be still on stage four hours later, because they just won’t let her stop. “I am not a technical DJ who is searching for the perfect beat. For me it is about searching for the perfect song that is going to make you want to dance so much that you can’t stop yourself.” Yet the toughest crowd to please was the one back home. “The hardest gig I ever played was my first one in Romania. Their reaction was, ‘This is our grandparent’s music. It’s not cool enough.’ So at first they really struggled with it, but now they love it. Now there are other people playing Balkan club nights in Romania, and I go back and play festivals and clubs as often as I can. I feel so alive there.” nicodetransilvania.com

more to do than go around stinging guests”. And, of course, not only would the new project help Polish bees, it stood to benefit the Hyatt too, providing a delicious, locallysourced foodstuff for guests to enjoy. Last May, Marek Barzyk (pictured below left), a beekeeper from the south of Poland made ready the rooftop, creating some shade, placing a couple of trees and running water. Barzyk now visits Warsaw every two or three weeks to harvest the honey, and head chef Dariusz Suchenek checks on the bees daily. Each of the five hives yields 14kg of honey every time it is emptied, enough not just for guests’ breakfasts, but also for

There are plans to start using it in treatments at the hotel’s spa, as well as to make miód, Polish mead, for welcome cocktails. pposite Warsaw’s famous Łazienki Royal Park, the Hyatt Regency Warsaw is a good fit for those who love gardens and green space. Its position is also perfect for the hotel’s newest guests, who pay their way in honey rather than money: they are the 100,000 bees brought from the south of Poland to live in hives on the roof. The Hyatt is the first hotel in Poland to keep bees and it’s all down to enterprising general manager Heddo Siebs (pictured far right). One day in spring last year, Siebs’ wife decided to get involved in a protest in the city centre about declining bee population in Poland. “When she first told me about it,” he says, “I thought: okay, we actually can do something about this.” The following day, Siebs went to his colleagues with his unusual idea. The team was initially reluctant – they were worried about the bees stinging the hotel guests – but Siebs told them “the bees have much

As served by head chef Dariusz Suchenek at Venti-tre Restaurant To make the dulce de leche, blend 400g butter, 170g sugar, one egg, 25g double cream, 25g single cream and 170g honey. Then stir in the 670g flour and 10g baking soda. Allow the mixture to cool in the fridge for an hour. To to make Polish ‘Karpatka’ cream, beat five egg yolks with 170g sugar and 80g potato flour. Heat 500ml milk and gradually add the mixture. Bring to the boil, stirring continuously. Put the mix in the fridge for an hour. When cold, stir in 200g lightly whipped butter and set aside. Preheat the oven to 200°C. Divide the cooled cake mixture into three portions. Roll these out and transfer them to a baking tray covered with baking paper. Bake for nine minutes. Leave to cool completely then stack, using the ‘Karpatka’ cream and dulce de leche as glue between layers. Sprinkle with walnuts. Delicious!

▲ SARMALE CU MAMALIGUTA If you only try one Romanian dish on your travels, it simply has to be sarmale. Some will argue that these stuffed cabbage leaves aren’t traditionally Romanian (it’s highly likely that the original influence came from the stuffed vine leaves favoured in the Ottoman Empire), but the Romanians have made this dish their own, stuffing it with minced pork and rice. There are lots of great restaurants
in Bucharest where you can order sarmale, but our favourite is Bistro Atheneu, a relaxed and buzzing bistro dating back to 1924 on Str. Episcopiei. Its menu, which changes daily, is chalked up on the wall in Romanian only – but staff will be more than happy to run you through the day’s specials. ▲ BULZ Bright yellow bulz is made with ma˘ma˘liga˘, a Romanian version of polenta (a kind of creamy cornflour porridge) and is usually topped with a fried egg and sour cream. A rustic, simple side dish, bulz is wonderfully stodgy and exceptionally filling. Traditionally, it was seen to be a peasant’s dish, but today it’s popular throughout Romania. ▲ TOCHITURA DE PORC Order a meat dish in Romania and chances are the waiter will place a pork dish in front of you. ▲ CIORBA DE VACUTA Ciorba means ‘sour soup’ in Romanian. You can order ciorba with almost any ingredient, be it cabbage, meatballs, chicken or fish. he young German guiding us around the city’s World War II underground bunker paused in his tour. “You may hear me referring to Szczecin as ‘Stettin’, the old German way, rather than ‘Shtretcheen’, which is how the Poles say it,” he explained. “This is simply because I have difficulty with the new pronunciation; there is nothing political about it.” Well, yes, it’s a potentially touchy point. Over the years, much of Poland has been divided up, and Szczecin, a city only 20km from the German border, is no exception. Over the last 200 years it has been under the Prussian, then German and latterly Soviet thumb. At the end of World War II, the city was made part of Poland. Almost all its German inhabitants were expelled while thousands of homeless Warsaw Poles relocated here. It was a mixed-up city. While the rebuilding of Warsaw’s Old Town made great strides, Szczecin’s new Polish influx were less keen to resurrect theirs, reminding them as it did of the city’s Prussian past. “Warsaw was a different story,” explains our German guide Niko Rollmann. “The Nazis had completely destroyed it. For the Poles, it became a symbol of rebuilding the nation, so they made a supreme effort. In some cases, the bricks from towns that had been German, such as Szczecin, were sent to be used in Warsaw. The capital was seen as the main priority.” In Szczecin, the reconstruction of the Pomeranian Dukes’ Castle and the Old Town began in 1958. The castle was completed in 1980, while the Old Town remains a work in progress. “The castle was labelled as of Slav origins,” says Niko. Built on a hill, the castle had offered excellent command of the nearby Oder River. “The Pomeranian Dukes were not strictly German, nor strictly Polish, so either side could claim them.”

Sadly, most of the original architects’ plans of the Old Town had been lost. While the rebuilding of Warsaw’s Old Town was lucky to utilise the paintings of Bernardo Bellotto, which in some ways improved on the original, Szczecin had to make do with old photographs. Colourised postcards
were used to reproduce the gaudy colours. The result is not entirely authentic. “One interpretation is that they wanted to move away from Prussian architecture. Another is more simply money. The nearby Pomeranian Dukes’ Castle is simplified because a one-to-one reconstruction would have been too costly,” explains Niko. A good example is the Old Town Hall, not quite destroyed in the bombing. The bottom half is medieval and gothic, but the top half is more in the baroque style. Outside, there is an eye-catching sculpture, the Big Arch, by Bernhard Heiliger, a German who was born in 1915 in the city when it was

SZCZECIN SEEMS EMOTIONALLY CLOSER TO BERLIN THAN WARSAW ‘Stettin’. Inside is given over to a museum (muzeum.szczecin.pl) outlining the history of the city in a permanent exhibition. (Entrance is free for tourists throughout August and until 8 September, as with all the city’s museums.) Downstairs, in what was the old cellar, there is a rather lovely
old restaurant, U Wyszaka, with curved brick arches and old beer barrels; the outside seated area is popular on long, warm evenings (uwyszaka.pl). Dotted with Nazi propaganda posters is the World War II bunker on ul. Kolumba, next to Szczecin Glowny railway station and open to the public since the end of the Cold War. Today, Szcecin’s inhabitants seem emotionally as well as geographically closer to Berlin than to Warsaw. German visitors are plenty, either due to nostalgia or to enjoy the fantastic spa treatments, be they in Szczecin or Poland’s spa capital on the Baltic coast, Kołobrzeg. One of the funkiest venues in town, the Brama Jazz Café, is built in the Baroque Royal Gate, a remaining Prussian fortification, at ul. Holdu Pruskiego 1. And there are so many other works in progress: a highspeed tram link to unite both sides of the city, a major exhibition on the real-life Great Escape from Stalag Luft III, a theatre and, opening this July, an illuminated fountain on the Chobry Embankment. All I know about Tuzla,” said the teenager in a Metallica T-shirt sitting next to me, “is that it has good hospitals and textile factories.” To be fair, I didn’t know much about Tuzla myself. I’d attempted research but the travel guides hadn’t been there, Facebook and Twitter were inauspiciously silent, and while I appreciated the input of a young metalhead from Sarajevo, my luggage was too full for fabrics and I was hoping to avoid the need for medical care. Tuzla was my starting point for a whistle-stop tour of Bosnia, a road-trip to Mostar armed with a hire car, a photographer, and three helpful phrases translated by Google, written on Post-It notes and tucked into my wallet: “Mogu li dobiti pivo?” (Can I have a beer please?), “Ima li nešto učiniti u Tuzla?” (Is there anything to do in Tuzla?), and “Ja Volim Bosnu” (I love Bosnia).
I’m glad to report the first note was required more frequently than the second, although the Tuzla question initially came in useful as we sat in a café on the outskirts of town, sheltering from a rainstorm. The lakes were fantastic for swimming, replied the waitress, although she was possibly making a joke about the size of the puddles forming in the car park. She advised us to dine at the cosy 18th-century townhouse of Čaršijska Česma (Zrtava srebenice 2, +387 35 258 408). To the sound of heavy showers we braved the local speciality, ćevapi with goulash; or, in other words, a grilled meat sandwich drenched in meat sauce. Between my seventh and eighth piece of meat, not including that found in the sauce, we heard a trumpet, a saxophone, and the beat of a drum, and then saw newlyweds pass by the window. The bride and groom were being led a brass band; pied pipers followed by wedding guests – and, more impressively,

Café terraces were swiftly repopulated, a man selling helium balloons reemerged from under a leafy tree, and the colourful Ottoman-era buildings of the town square were suddenly bathed in light. Fearing the good weather may be fleeting, we went looking for the waitress’ lakes. Ten years ago someone at the municipality had a bright idea. The city sits on extensive salt deposits and when holes were dug in the ground, salt water sprayed out and bodies of water were formed. These became a trio of artificial lakes, which in summer pull off a convincing impression of the seaside, with pebble beaches, cafés, bars, cycles for hire and splendid views of the city’s skyline, which, it seemed, was soon to be invaded by ominously dark clouds. I returned my sun lotion to my bag and prepped my first Post-It note for action.
IN THE SUMMER, TUZLA’S LAKES PULL OFF AN IMPRESSION OF THE SEASIDE At Checkpoint (Zlatarska 3, checkpointcaffebar.wix.com/chekpoint), a charmingly dingy bar in a three-storey townhouse, we received a crash course in Tuzla’s music scene, and down the alley at Sloboda (Soni Trg, caffesloboda.ba), we sat under a Bob Marley poster and peoplewatched local hipsters. Returning to our car through the main square, we passed a statelylooking green building, a memorial to the victims of the Tuzla Massacre of May 1995, when 71 civilians were killed by shelling. Entering Sarajevo after a drive through the mountains, we saw further signs of Bosnia’s turbulent recent past. Cemeteries have been constructed in all available spaces; gravestones slope up the hills of the Sarajevo Valley. From April 1992, Sarajevo experienced the longest siege of a capital city in modern history, lasting almost four years. Its citizens spent long periods without water and electricity, food and clean water were scarce, and 11,500 people were killed, mostly by sniper fire, shelling and mortar

attacks. As we checked into the excellent Hotel Bristol (Fra Filipa Latrića 2, +387 33 705 000, bristol.shazahotels.com) which, having been destroyed during the siege, reopened in 2011, we couldn’t help but notice the wall opposite the lobby, riddled with hundreds of bullet holes. Throughout the city, marks in the ground caused by shelling have been filled with red
resin to create a floral effect. One such ‘Sarajevo Rose’ can be found by the entrance of the Sacred Heart Cathedral, which dominates the buzzing, pedestrianised Ferhadija Street. We crossed this road and entered a park where older men gathered round a giant chessboard to watch a toughly fought stalemate, and reached the edge of Stari Grad, the Old Town. Thankfully, it was spared the worst of the war damage and many of its Ottoman-era buildings are still gloriously intact. In the Baščaršija district, there’s a beautiful 16th-century mosque, a bazaar where transactions are mercifully haggle-free (although there’s lots of tat to wade through), and Morića Han, a caravanserai (roadside inn) built in 1551 for traders passing through the city. In its shaded courtyard at Divan Cafe (+387 62 530 972), our tour guide Dino taught us how to drink Bosnian coffee – it’s like drinking Turkish coffee, it seems, but about a hundred times more complicated.
“EVERY DAY I DISCOVER SOMETHING NEW ABOUT MY CITY” Dino and his family fled to Switzerland during the conflict, but they never had any doubt they would return. “I love living in Sarajevo,” he told us. “Every day I discover something new about my city.” He took us to a plaque on a wall on the south side of Baščaršija, next to where the Latin Bridge crosses the Miljacka, and told us the world changed on this spot 99 years ago. The plaque bears the name of Archduke Franz Ferdinand, assassinated by Gavrilo Princip in June 1914, the shooting that sparked World War I. Sarajevo may bear scars, but it’s also bubbling with youthful energy. Eighteen years after the post-conflict baby boom, it’s awash with teenagers – girls in stonewashed jeans, boys in designer shirts – who have

AT NIGHT, SARAJEVO IS BUBBLING WITH YOUTHFUL ENERGY no memory of the bad times. When we see a poster advertising “The Best Thursday Night In Town!” we’re unable to resist, although we must have looked like protective dads keeping an eye on their kids at Klub Sloga (facebook.com/cinemasloga), where teens watched local rock bands while trying to find the courage to approach the opposite sex. As a city with a Muslim majority – it’s avowedly secular and relaxed, though – Sarajevo’s cafés also attract the teen nightlife vote. At Dibek (Luledina 3), they share gossip through shisha smoke, and at Buregdzinica Sac (Mali Bravadziluk 2) they fill up on the best burek (thin pastry stuffed with meat, cheese or spinach) in a town where people take burek very seriously. We ended the evening at the positively eccentric Zlatna Ribica (Kaptol 5), where the music is dizzyingly varied, the hosts are brilliantly bohemian, and the toilets are furnished with phones that ring every time you use the sink, as well as a vintage black-andwhite TV which screens, at least on my visit, interviews with Jean-Claude Van Damme. The following morning we sipped sahlep, a milk-andcinnamon drink of Turkish origin, at Čajdžinica Džirlo on Kovači Street, where owners Husein and Diana Džirlo (“like the dictator and like the princess,” they helpfully added) preside over the warmest, friendliest and most social tea house in town. We met Bosniaphiles, repeat visitors who’ve fallen in love with the country, and traded their advice on Mostar for our tips on unexplored Tuzla. It was a magnificent drive to Mostar, a winding journey high above the river canyons of the national park. On a singlecarriageway we slowed to a crawl for lorries and held on tight as reckless drivers

overtook us at sharp bends. The local FM radio station, so fond of Phil Collins, dissolved into a static hum as we lurched higher and higher into the mountains. For lunch we stopped in Jablanica, famed for its roast lamb. At Zdrava Voda (zdravavoda.co.ba) we almost had to shield our eyes from grisly scenes taking place by the open-fire grill, but didn’t complain when the flavoursome spit-roasted lamb and potatoes landed on our table. Mostar’s famous Old Bridge stood for 427 years before being destroyed by artillery fire in 1993. We stood on the reconstructed bridge, opened in 2004 following a major international effort to restore the Old Town, patiently waiting for a man to jump off it. For 45 minutes he stalked the railings in his trunks, collecting money from tourists hoping to see a local tradition – Mostar boys are known to jump from the bridge as a teenage rite of passage. Eventually he raised enough cash to belly-flop into the water. We walked the cobbled streets of the old town, past the shops selling Soviet-era medals

From here, the view of the bridge in the sunset was magnificent, and the rebirth of Mostar after such devastation seemed particularly inspiring. A man tugged on my shoulder, saying something in a language I didn’t understand. I pulled my wallet out my pocket and located the crumpled third Post-It note. “Ja Volim Bosnu,” I said. “Thank you,” he replied.

THE NORTHERN LIGHTS Also known as the aurora borealis, they dance across the night sky in northern Norway, casting a magic spell on all who view them. Scientists will tell you that the Northern Lights are caused by atoms rubbing each other up the wrong way in the high atmosphere, creating these bizarre illuminated spectacles. But for viewers, the shimmering and swaying green and yellow flashes and dashes tell their own story – of something mystical, something bigger than us. The northern towns of Tromsø and Kvaloya (pictured overleaf) are the gateway to the best and darkest viewing areas. THE OLSO-BERGEN RAILWAY The journey of almost 500km from Oslo to Bergen is one of Europe’s most spectacular train rides. At over 1,200m above sea level, the wild section across the Hardangervidda plateau is also Europe’s highest main railway line. This central section is the route's most dramatic, with views of rocky escarpments, windswept moors, lakes and glacial remains from another era. istronomie – a combination of bistro and gastronomie – describes a restaurant that has the informal look of a bistro yet serves creative, haute cuisine-style dishes. The concept first originated in Paris in the 1990s, with restaurants such as Le Chateaubriand and La Régalade leading the charge, but in the past few years it’s gained popularity in Brussels, one of Europe’s leading gastronomic cities. Buzzy and unpretentious, bistronomie restaurants tend to be run by young, ambitious chefs who want to focus on excellent produce and flavour combinations, and cut out unnecessary, pricey extras that might distract from the food – be they fancy tablewear, décor, prime location or expensive out-of-season ingredients. The chefs carefully plan out a select menu, which also helps keep prices for their exceptional cuisine low. “A lot of people want to dine out once a week instead of once every three months,” says Johannes Denis, co-founder of the Bistronomie Guide, on why bistronomie has taken off in the Belgian capital. Denis, along with business partner Steve Engels, set up the guide, a book and website, to showcase the best bistronomie restaurants in Belgium. “The food definitely counts,” Denis explains. “A bistro serving croque-monsieurs or spaghetti Bolognese will not make the cut.” We met with two of Brussels most talented bistronomie chefs to find out more about Brussels’ nouvelle nouvelle cuisine.

is extremely diverse, with lots of people from Brazil, Poland and Morocco. For our restaurant, it’s fantastic. We get caramelised condensed milk from the Portuguese cornershop, and the Armenian store next door introduced us to a buckwheat honey that smells a bit like horse manure: great with cheeses! A Hungarian butcher started importing a rare organic black pig. As a small restaurant, you’d be crazy not to tap into this diversity.” Walk into laid-back La Buvette, housed in a former horse butcher’s, and you’ll find Scheidt personally explaining his creations at the tables, as old-school hip hop plays softly in the background. After lunch service, he jots down ideas for dinner. “You really have to change dishes on a daily basis, otherwise boredom sets in. I use the same suppliers as the Michelin-star restaurants, just less expensive ingredients,” Scheidt explains. “I don’t use a lot of fish and meat, which means that I have to do more with vegetables, herbs and fruits. That works well, since I don’t want to create food that is too heavy. You should leave my restaurant light-footed and light-hearted.” Scheidt studied law in London but soon realised all he really wanted was to cook, so started in restaurants in London and Paris as a commis and worked his way up. He owned a restaurant in Paris before moving

La Buvette has been packed since its opening three years ago, as has Café Des Spores, his restaurant dedicated to all things mushroom, across the street. Scheidt’s lunch dishes might include a pig cheek terrine, served with sugar snap peas for a nice crunch; fried pollock with monkfish liver and a crab bisque and, a few beautifully pink pieces of veal in a sauce of blood sausage with artichokes. Portions aren’t huge, but it’s an intensely satisfying meal. And the prices are more than reasonable. A lunch menu with five small courses is €25, while dinner is nine courses for €45. BRUSSELS NICOLAS DARNAUGUILHEM AT NEPTUNE “I used to be sort of militant about organic,” says Neptune’s Nicolas Darnauguilhem. “Now I use it if it makes sense. Our butter comes from a tiny local raw milk producer. Not organic, but as natural as it gets. Wild herbs and plants come from a local forager. The same is true for wines – we only pour natural wines. We know the producers and the way they work. I wouldn’t want anything else.” Housed in a former umbrella and walking cane shop, Neptune is petite – with only 20 seats. With bare floorboards and light bulbs dangling from the ceiling, the décor is simple, but effective. Rather like the food of chef Darnauguilhem. Darnauguilhem, from Savoy in France, studied patisserie and then wandered the globe, living in Latin America and Asia. He worked in hotels and as a sommelier in restaurants before he finally realised his dream of becoming a chef. “Before, I just wasn’t convinced about actually doing it. I’m still developing my style. I am using certain techniques, but I’m not interested in showing them off: maximum flavour is the only goal.” You may be surprised to hear that Darnauguilhem’s cuisine doesn’t include any exotic ingredients. “Travelling influences you, but you don’t come back with products, you come back with a different point of view. In Vietnam they use cilantro to give a soup freshness; here I think what local products I can use to obtain the same effect. Other things influence me as well – my mother, everyday life in general. I cook what I like – as simple as possible, but with unusual combinations. It’s not for everybody, but I don’t compromise.” Lunch at Neptune costs just €26, and the menu can be extended (€56) or super extended (€86) at dinner time, varying daily according to market offerings. A starter could include shreds of cold eel in a ham bouillon with sorrel: only three ingredients, but the contrasts in flavours, textures and temperature elevate the dish to something altogether more exciting. Sommelier Mathieu Dubrana serves an unusual Chardonnay from Franche-Comté with it. The main course

might be an extremely tender pink salmon, sprinkled with pine needles and topped with pea shoots, served with red beets, spring onions and a seaweed sauce. For dessert perhaps, refreshing strawberries and sorbet in an infusion of elderberry and lemon, garnished with mint. As Neptune is getting increasingly popular, the tiny place fills up every night. Younger diners might not mind sitting elbow-toelbow much, but it can leave the slightly older gastronome a little uncomfortable, says the chef. “I might have to start looking for a bigger space soon.” Rue Lesbroussart 48, Ixelles, +32 489 303 350, neptuneresto.com

In life: Tavernas, palm trees and reinvention In literature: Romance, political upheaval and beautiful villages The definitive book about life on this sun-kissed Mediterranean island is the 1957 autobiographical Bitter Lemons by British author Lawrence Durrell (older brother of Gerald, also an author and conservationist). He moved there in the early 1950s and stayed for three years. It’s also a heady reminder of Cyprus’ chequered modern history, which Durrell doesn’t shy away from as he tries to comprehend its complex politics. But there are laughs, too, as well as loveable characters and more than a passing resemblance to Peter Mayle’s A Year In Provence, which came more than 30 years later. It is said that over the decades Bitter Lemons has inspired many to up sticks and relocate to Cyprus, unable to resist the picturesque village of Bellapais, where Durrell lived. The Hotel Bellapais Gardens and its restaurant both come highly recommended, and the village’s ancient abbey is unmissable.

In his novel Valley of Thracians, a Peace Corps volunteer goes missing, presumed dead, in Bulgaria. His grandfather, a retired literary professor, sets out to find him. The quest takes him all over the country, including to the shores of the Black Sea, where Bourgas is its westernmost point. The Bulgarian coast on the Black Sea is also where Count Dracula sets sail for London in Bram Stoker’s 1897 spine-chilling classic. Valley of Thracians has no such otherworldly doings or ships laden with mysterious boxes of earth, though there’s plenty of intrigue as the mystery unravels. And like the country itself, perhaps, nothing is at it seems. “Bulgaria is a modern land with a rich past that is calling out to be discovered,” Ellis tells us. “There are amazing mountains, beautiful beaches, forests, monasteries, historical sites, colourful villages and friendly people wherever you go.” Be prepared for some intriguing culture shocks, however. “It’s not unusual to see a fancy Mercedes driving alongside horse-drawn wagons.”

“WHEN I FIRST WENT TO CORFU 40 YEARS AGO, IT WAS LOVE AT FIRST SIGHT”
In life: Year-round sun and a laid-back lifestyle In literature: Beautiful Italian-inspired architecture and romance British author Mary Nickson first fell under the spell of this tiny Greek isle through Gerald Durrell’s My Family and Other Animals, an account of his childhood there. “When I first went there some 40 years ago, it was love at first sight for me, too,” she says. Before starting work on her fifth novel a decade ago, Mary’s publishers suggested she take on a “bigger” book than she had previously attempted, something with a longer time-span, a romantic interest, more threads to the story – and with a real sense of place. “Corfu, an island of contrasts, full of ancient history, but also new development, with its magical kingfisher colours of sea and sky, its lush vegetation but rugged hills, rocky coastline and spectacular views, seemed the ideal background,” she says. The resultant 2005 novel – The Venetian House – in which a young widow returns to the family holiday home to confront her demons, is Corfu to the core and based around a fictitious house that was inspired by several beautiful old Venetian properties that Mary saw on her travels. “The owners were generous in letting me visit them and research their history,” she says, “and the book turned out to be a tale about love for both people and places.” For the island’s best Venetian architecture – most of it dating back to the 16th and 17th centuries – head for its capital, Corfu Town. Some Venetian houses are even available to rent as holiday properties and, perhaps, provide your own romantic adventure.

et between Europe and Asia, Baku, the capital of energy-rich Azerbaijan, is enjoying an economic and architectural boom not unlike that of the oil rush a century ago. Three vast towers fashioned in tapering flames, a handful of new five-star hotels, a carpet museum designed to resemble a rolled-up rug, these are only some of the flagship projects currently being unfurled beside the Caspian Sea. “At the moment, Baku is like a blank canvas for architects, designers and restaurateurs given carte blanche to work with,” says Henry Chebaane, creative director of the Londonbased Blue Sky Hospitality group, responsible for 200 major new restaurants, clubs and lounge bars across Europe and Asia. “It’s the perfect mix of a dynamic, buoyant economy, discerning and demanding international clientele, and simply amazing spaces that can be converted into contemporary venues.” Right now, having had huge success with popular restaurants such as Chinar, Zakura and Sahil, Chebaane and his team are working on the voguish ENERJI, a fire-inspired nightclub located inside an old power station in the

Baku shipyards. In the pipeline is Atelier 61, a dining and leisure complex in which each floor represents a different decade. When the Swede Robert Nobel turned up in this backwater of the Caucasus in 1875, in search of walnut trees to make rifle butts, he found Baku in the grip of oil fever, a boom that would create untold wealth for the Nobels, the Rothschilds and visionary local philanthropists who built sumptuous mansions along grand boulevards. Baku expanded beyond the walled citadel created by the Shirvanshah dynasty in the 1400s. Their palace and the Old City around it, still Baku’s key tourist sights, have also
seen significant renovation. But it’s the adventurous new projects – the Flame Towers, the Heydar Aliyev Center, the Port Baku Towers – that immediately catch the eye and earn Baku the epithet of a post-Soviet Dubai. “I find the city charming, luminous, strange, very contemporary and sometimes unexpectedly old fashioned – and very welcoming,” says Elizabeth White, who recently arrived in Baku as director of the British Council’s operations in Azerbaijan. Formerly based in Kazakhstan, St Petersburg and the Middle East, and now overseeing a number of creative partnerships,

BAKU particularly in theatre, White is no stranger to the post-Soviet way of life. “My first impressions of Baku are very positive,” she explains. “I like the mixture of the splendid and daring brandnew city landmark buildings, together with the remnants of the Soviet style, mixed in with a kind of relaxed, seaside turn-ofthe-century parks-and-fountains Sunday-evening-stroll air about the place. I really like the streets of old two-storey houses with wide balconies shaded with trees – though these might not all survive the building boom.” Defining this boom – and now dominating the Baku skyline – are the Flame Towers, that provide the city with an iconic landmark 1,000 years after the last one, the Maiden’s Tower in the Old City, was rebuilt. Comprising a trio of skyscrapers designed to represent ‘Azerbaijan – Land of Fire’, the Flame Towers will be occupied by luxury flats, offices, a sky garden and the newly opened five-star Flame Towers Fairmont Baku hotel, spa, fitness centre, serviced suites and all. One of five five-star hotels to have opened in two years, the Fairmont complements the nearby Four Seasons Hotel Baku that currently stands opposite the ornate, Tsarist-era headquarters of SOCAR, the state oil company. But not for much longer. Due for completion before the end of 2013 is the SOCAR Tower, two earthquake-proof interweaving towers of 42 floors each, the tallest construction in the Caucasus. But even this will be topped by the $3bn Azerbaijan Tower, which will be the world’s tallest building when completed in 2017. Perhaps even more remarkable is its location, the artificially created Khazar Islands, 25km south-west of Baku, a city within (or rather, without) a city. This floating, high-rise metropolis is being developed at $100bn will be home to 50 hospitals, 150 schools and a potential one million residents. Oh, and a Formula One racetrack. For the time being, most praise for the city’s contemporary architecture is being heaped upon Baku’s latest cultural hub. “I am simply in awe of [Iraqi-British] Zaha Hadid’s work, the wondrous Heydar Aliyev Center,” says Elizabeth White. “When you drive in from the airport, it’s the first great building you see, with its improbable waves and curves arising from among the buildings around. Breathtaking!” Soon to stage a summer-long exhibition of Andy Warhol, Life, Death and Beauty, the venue appears like layers of skin,

pristine white set against a backdrop of the Caspian Sea. Nearby, still under construction, is the Carpet Museum, a new building in the shape of a rolled-up rug, where prime examples of Azerbaijan’s heritage will be moved from their current, Soviet-era premises further east along the waterfront. The eastern seaboard was once Black City, the centre of the local oil industry where the Nobels made their fortune and established the Villa Petrolea. Neglected for decades, this mansion now houses a museum that traces the history of the Nobel dynasty. The world’s first oil tanker, round-the-clock drilling and distilling – all were inventions of the first great boom. This is now Port Baku, new home of BP and another of the city’s gleaming commercial complexes. But just around the corner you’ll find the Museum of Contemporary Art, partly designed by Baku-based artist Altay Sadigzadeh, whose art at the Azeri Pavilion was a big hit during the 2011 Venice Biennale. Fronted by thought-provoking installations by Sadigzadeh, the museum covers 1943 to 2009, from line drawings of Stalin-era oil
workers to Sadigzadeh’s own ironic 21st Century, depicting cocktail-clinking city slickers. It is the perfect summing up of Baku: a city that has changed so much in the last few years, and doesn’t seem like slowing down any time soon.

Prague, Czech Republic TOUCH DOWN When the temperature soars, savvy Praguers head for Žluté Lázně (zlutelazne.cz), a leisure complex on the east bank of the Vltava River where you can play beach volleyball or just lounge in the sun. Ar t and Soul in Slovakia Wizz Air has added another country to its growing list of destinations, when it starts flights from Košice, Slovakia. Wizz Air will fly from Slovakia’s second biggest city to London Luton from 17 September. The route will initially operate
twice a week and will increase to four flights a week from 27 October. Little-known Košice burst into the spotlight earlier this year as European Capital of Culture 2013. “As this year’s European Capital of Culture, Košice is now generating

With beautiful – but scorching hot – Budapest airport for a backdrop, superhuman Sinka dug his teeth into 7m of rope and dragged one of Wizz Air’s new Airbus A320s, weighing over 50 tonnes, by his teeth backwards for 39.2m. After the event, he said: “I am overwhelmed with the record-breaking result today. They were in great spirits, though, and told us how they tried to recreate the Istanbul experience in Turku. They even had pictures of locations in Turku resembling famous landmarks in Istanbul!

Serbia’s Aleksandra Radulovic took a moment out of her busy schedule to tell us about her new role ● “I’ve been working for Wizz Air since March 2011 in my hometown, Belgrade. When I first heard about the WIZZ Ambassador programme, I knew I had to put myself forward. I thought, it’s a new experience and if I am lucky enough to become a member of the Ambassador team I’ll be able to learn so much, and share new and exciting experiences with my colleagues in Belgrade and beyond, and Wizz Air’s passengers. ● I was surprised but delighted when I found out that I had actually been voted in to be a Wizz Air Ambassador. My mind started whirring – who would I meet, what might happen, what will I learn? My friends and family were all so proud of me. They even joke that I should have priority whenever I go to a public event and special Ambassador car plates – pink, of course! ● As a WIZZ Ambassador I represent the airline at media events, conferences and interviews in my hometown. I’m lucky to be part of such a creative team, and I’m looking forward to travelling a lot in the next two years. ● My first task since becoming an Ambassador, after meeting my fellow Ambassadors, was this photo shoot. It was so much fun! ● What I love most about my job is working with people. Spending time with others and meeting new people fills me with such positive energy. My “office” is the most beautiful place. ● The best piece of advice I’ve received from other Ambassadors is to smile, love and enjoy as much as I can over the next two years. It was a wonderful experience for my colleagues, and I’m ready to take on even more.”

SMOKING Smoking on any Wizz Air flight is strictly forbidden, this includes the use of electronic cigarettes. Lavatories are equipped with smoke detectors. ALCOHOL Alcoholic drinks are available on board as detailed in our inflight magazine, WIZZ. These are served at the crew’s discretion to passengers of legal drinking age. While on board, you are only permitted to consume alcoholic drinks purchased from the WIZZ Boutique and Café. The cabin crew reserve the right to stop serving alcohol to any passenger who is or appears to be drunk. YOUR CONDUCT ON BOARD In accordance with International Law, the Captain is in command of the aircraft and every person on board shall obey his or her lawful commands. The Captain has the authority to take any actions deemed necessary to manage passengers who are disruptive or cause problems during flights. Our primary concern is for the safety of our passengers and crew. We have a zero-tolerance policy with regard to passengers who are verbally or physically disruptive towards any other person on board the aircraft. In all cases of disruptive or abusive behaviour by passengers, the crew will always put the safety of the aircraft, crew and other passengers first. They will follow related safety procedures and notify the authorities.
SAFETY EQUIPMENT It is an offence to tamper with or remove any safety equipment on board this aircraft, including the life vests. Any such actions may jeopardise the safety of other passengers and lead to prosecution. Life vests for infants are available and will be provided in the event of a landing on water. SAFE STOWAGE OF YOUR HAND BAGGAGE Please ensure that your cabin baggage remains safely stowed for take-off and landing and at any time as instructed by the crew. Place small bags under the seat in front of you (unless you are seated in an emergency exit row); larger items must go in the overhead lockers. Place your bag securely in the locker and take care when opening lockers, as falling items may injure fellow passengers. SHARP ITEMS If you need to dispose of any sharp items (i.e. hypodermic needle), please contact a member of the cabin crew. ELECTRONIC DEVICES In accordance with International Civil Aviation Authority safety regulations, the use of devices for messaging, calls or internet access must remain switched off once the aircraft doors are closed. Some devices can be used during the flight (when the seatbelt sign has been switched off), these include: ● Bluetooth devices, excluding telephones. ● Devices (including PDAs and smart phones) that have a flight-safe mode, provided this is enabled before the aircraft doors are closed. The device must then be switched off for take-off and again for landing. ● Laptops and tablet PCs including those with built-in WLAN/WiFi, provided the WLAN/WiFi is switched off prior to the doors being closed. ● Electronic games, eBooks, MP3s, DVD and CD players, provided that any WLAN/WiFi is switched off prior to the doors being closed.
