Second Sight

We’ve gotten used to the idea that local food is a good thing. We come to regard our local beer breweries with the kind of loyalty sports teams get. Now distilleries are getting their turn. More slowly and in smaller numbers than breweries, distilleries that make various kind of alcoholic spirits are opening in Cincinnati and Northern Kentucky. Their intentions range from New Riff, probably the best known, who sticks mostly to bourbon, the spirit Kentucky is best known for, to Karrikin, about to open in Fairfax, which will be making all kinds of liquor including bourbon, brandy, gin and mescal paired with an ambitious restaurant. That ability to do things differently is the advantage and selling point of small distilleries. “People learned to love bourbon. This is the next step,” said Terry Shumrick of Shumrick and Leys in Norwood. “People are looking for unique signature tastes. We can experiment and do things that the big distillers can’t.” To open a distillery is to get involved in the complicated, archaic world of liquor laws and state control boards. But Ohio and Kentucky have woken up to the idea that it might make sense to encourage distillery businesses and have loosened regulations that have made this new trend of microdistilleries possible. Ohio is a control state: the state actually owns the bourbon, rum and gin made by Shumrick and Leys or Northside Distillery and sells it back to them, with an almost 50 percent tax. But a local maker can now selfdistribute their product, selling directly to restaurants and bars who want to add local flavor to their cocktail programs. The federal government helped, too, by drastically lowering the excise tax on spirits, making it a somewhat more profitable business to get into.

But to the drinker and spirits enthusiast, the most important changes in legislation are measures that allow distilleries to actually serve their products on site in pours and cocktails, not just 1⁄2-ounce tastings. So now you can try before buying, drink a rum, whiskey or vodka right where it’s made, with a tour of the fermenting, distilling and aging process, often meeting the owner or distiller. No one would suggest going on one grand tour of all these distilleries at one time, but the list is small enough that you could visit and check all these off your list before the new ones open.

New Riff Distillery Everything bottled at the New Riff Distillery in Bellevue is bottled in bond, including their straight Kentucky Bourbon. That, says Jay Erisman, is the most stringent quality standard for spirits in the world. A quality designation that Kentucky distillers created in 1897 when whiskey was often adulterated, it must be aged four years, have no additions of flavor or sugar, be made within one distillery season (6 months) and be bottled at 100 proof. Not only that, New Riff does not use chill filtration.

180 new beds mean no more waiting list for recovery Melissa Reinert and Terry DeMio Cincinnati Enquirer USA TODAY NETWORK

ERLANGER – It's not uncommon for someone struggling with addiction to wait two to four weeks for a treatment bed in Northern Kentucky. "When a person calls to get into recovery, they're ready now," said Jim Beiting, Transitions chief executive. "They shouldn't have to wait. They really can't wait." That's about to change. Later this month Transitions Inc. will open Project 180 Residential Treatment Center. "Call us at 3:15 and we'll have a spot for you at 3:16," Beiting said. "With this treatment center, we will have eliminated the waiting list. That's a good thing."

The problem

Addiction, especially the heroin epidemic, has taken the region by storm, wrecking homes, tearing apart families and destroying, even taking lives. St. Elizabeth Emergency Departments reported 1,584 heroin overdoses in 2016, compared to 252 in 2011. That's a 529 percent increase in just five years. Currently, residential recovery options are limited in Northern Kentucky. At Transitions treatment centers Wrap in Covington and Droege House in Dayton, there are 15 detox beds; eight for men, five for women; and two that are flexible. There are only 45 residential treatment beds for men and another 45 for women.

"Though many providers in the community have been working hard on this for many years, most of our facilities have been sub-par," he said. "This helps to change that. From detox, to intensive outpatient, to treating pregnant mothers, we are moving in the right direction with Project 180." Knochelmann said the community "came together like no other time in our history to address the opioid crisis." However, it’s not just an opioid crisis, it’s an addiction crisis, he said, and Project 180 will help. Kenton County contributed $1 million for the purchase of the building that houses Project 180, Knochelmann said, "because it's the right thing to do." According to Knochelmann, this cooperation is the way to make Northern Kentucky "one of the healthiest communities in the country." "We value life," he said. "The lives of addicted, the lives of pregnant moms, the lives of men who are ready to change their lives and their success is dependent upon us working together. That’s what we do in Northern Kentucky." Jim Beiting, with Transitions, said that Project 180 is the solution the region needs. The name, Project 180 was chosen for three reasons: No. 1, it expands treatment capacity to 180 beds. It also offers treatment on demand and it will assist in turning lives around by 180 degrees. Make biscotti your way, learn tricks for good rib roast Cranberry almond biscotti

Rita’s Kitchen Rita Heikenfeld

Well, you’ll never guess who just emailed me about Busken Bakery’s beloved Boston brown bread. (Some of you will remember that they used to serve it at their restaurant in Downtown Cincinnati). None other than Dan Busken, President and CEO. Dan thinks he may be able to find it, and if so, I’ll share it with you. When I was testing the cranberry almond biscotti recipe, my husband, Frank, kept taking slices off the baking sheet before I could bake them a second time (biscotti means twice baked). A darn good testimonial, wouldn’t you say? Check out the foolproof recipe for standing beef rib roast, too. Save the bones for bone broth. You’ll find a recipe on my site.

Perfect standing beef rib roast

Maybe you’d like to sub in cherries for cranberries, or pistachios for the almonds. How about chopped apricots? Or a few more nuts and no fruit, or vice versa? Ingredients 2 cups all-purpose flour 1 cup granulated sugar 1 teaspoon baking powder Couple pinches salt ⁄4 cup dried cranberries

3

1 cup chopped, slivered or sliced almonds, toasted in a 350 degree oven for 7 minutes, or just until fragrant 2 large eggs ⁄4 cup vegetable oil

This roast is expensive, and a loyal reader shared this recipe. “Similar to the way Cooks Illustrated recommends roasting beef,” she said. Start roasting it at a high temperature to sear outside and then roast it really slow so that it stays moist inside. First, season as you like. Place ribs side down in a sprayed pan and roast at 450 for 15 minutes. Reduce oven temperature to 250 and roast until thermometer reads about 125 for rare; up to 145 for medium or so. The roast continues to cook at least 5 degrees more when it’s out of the oven. Let it rest, tented with foil, for about 20 minutes before carving.

Viewpoints Dealing with addiction during the holidays

Caring for fresh-cut Christmas trees Campbell Extension Office Don Sorrell Agriculture Agent

The fragrance of a fresh-cut Christmas tree brings back happy memories from my childhood. Growing up in a rural community meant that our fresh cut Christmas tree was an Eastern Red Cedar. This is the same species of tree that still grows in our pasture fields and along our roadsides in Northern Kentucky. During the week before Christmas we would walk our farm hunting for that perfect tree for the holiday season. That tradition continued with my wife and our children and now with our grandkids. The Eastern Red Cedar does not make a good Christmas tree due to its flimsy branches that do not hold up well with lights and tree ornaments but the cedar smell and price ($0) makes up for its disadvantages. When choosing a fresh-cut tree to buy, take a handful of needles and carefully bend them back. Needles on a fresh tree should be flexible. If they snap and break easily, select another tree. If the tree produces a shower of green needles after gently bouncing it on the ground, the tree is too dry. When transporting your fresh cut Christmas tree, protect it by tying the branches back with twine or place it in a

sleeve of plastic netting. Another alternative is to put it inside a covered part of the vehicle. The wind dries out the needles, reducing the time it can remain safely inside your home. When you get the tree home, cut 1 to 2 inches off the bottom of the trunk. Then place it in a bucket of warm water to allow water uptake. Keep the tree in a cool garage or shed out of the sun and wind until you are ready to decorate it. Before bringing the tree inside, cut off another 1 to 2 inches from the bottom of the trunk to improve water uptake. Place the trunk in a sturdy, water-holding stand. Locate the tree in the house away from heat sources to prevent drying out. Fill the reservoir of the stand with the following solution to keep it fresh for an extended period: 1 cup of corn syrup (food for the tree and 3 tablespoons of liquid bleach in 1 gallon of water. Bleach helps thin out or remove the sticky pitch from the tree trunk and allows more water to enter the tree. Check the tree stand reservoir daily and continue to add the solution if the tree remains in the house. A fresh tree can easily drink a gallon or more of water each day. Remove the tree before it becomes dry or brittle or when needles begin to fall. A dry tree is a fire hazard. It is better to be safe than sorry. Don Sorrell is the Campbell County Agriculture Agent.

Source: Alex Elswick, extension associate for family resource management The holidays can be a stressful time as we rush from place to place buying gifts, attending parties and preparing food. But for families dealing with addiction, the holidays can present a unique set of challenges. You have probably heard that addiction doesn’t discriminate. In fact, at least 25 percent of the population has a close relative who has a substance use disorder, and one in five Americans personally know someone who died from opioid addiction. If you have an addicted family member, you are not alone and that there are things you can do to cope. Here are some considerations to help you deal with a loved one’s addiction during the holidays. ❚ Keep your expectations in check. If you have an addicted loved one, then you know all too well that addiction can be messy. And, unfortunately, addiction never takes a holiday. You will want to accordingly manage your expectations. Unrealistic expectations can lead to disappointment and added stress among people who are addicted, people in recovery and their family members. ❚ Set firm boundaries. You are well

within your rights to communicate to your addicted loved one that you have expectations. It is helpful to be clear about your boundaries and the consequences if they are not able to abide by them. If your loved one cannot act according to your boundaries, it is important that your family enforce those consequences in solidarity. ❚ Support loved ones in recovery. Recovery is a marathon, not a sprint. Your recovering loved ones still have struggles, and the holidays may exacerbate them. This may be particularly true if this is their first sober holiday. Especially in early recovery, your loved one may be dealing with anxiety or depression, and they may find it difficult to enjoy the holiday. Be sure to give them the space they need during holiday celebrations and do not critique their every action. Remind other relatives that this may not be the appropriate time to air past grievances as it could create or revive tension among family members. ❚ If a loved one relapses during the holidays, offer them support. If they participate in a 12-step fellowship, you may consider contacting their sponsor, offering to attend NA or AA meetings with them or asking them if they will consider going to treatment. Remember, you have a right to establish and enforce boundaries to protect you and your loved ones this holiday season. For more information, contact your Kenton Extension office.

Longtime Brossart coach Goller steps down Submitted

On behalf of the many athletes he has positively impacted during his career, Bishop Brossart High School administration would like to thank coach Brian Goller for his tireless work with our soccer programs. Coach Goller has elected to step down as the head girls soccer coach after three seasons at the helm. He served as the head coach of our boys program for 21 seasons prior to taking

over the girls program in 2016. During his varsity career, coach Goller amassed 280 wins. He was named the Northern Kentucky Coaches Association Coach of the Year three times, and was twice named Private School Coach of the Year by the Kentucky State Soccer Coaches Association. He won three district championships with the boys, and two with the girls, two regional championships and won All ‘A’ State Championships in 2005 and 2013.

“We’ve been truly blessed to have coach Goller as a coach, mentor, and role model to our soccer players for the last two decades,” said Kevin Bundy, Bishop Brossart athletic director. “His impact on our athletes goes far beyond the 280 games he’s won. He’s helped mold his players into great citizens and given them memories that will last a lifetime.” Mr. Goller will continue to teach social studies and religion at Brossart, and continue his role as the student

council moderator. “I have been privileged to coach a number of gifted players, but I have been blessed to be associated with so many great young men and women over the years,” Goller said. Brossart will begin taking applications for the head girls soccer position next week (Dec. 10) and will continue to seek candidates until the position is filled. Anyone interested should contact Mr. Bundy, kbundy@bishopbrossart.org .

Cincinnati Enquirer USA TODAY NETWORK

Highlands junior soccer defender Lauren Deckert was just named to the 2018 Allstate All-America Team – a new program that recognizes the nation’s rising high school junior soccer stars. In collaboration with MaxPreps, Allstate evaluated nearly 800,000 players across the country to identify the nation’s top high school soccer players in their junior year and award the “Allstate All-American” title to an elite group of 75 male and 75 female players. The full roster, which will bring the grand total to 250 All-Americans, will be announced in the Spring of 2019. Additionally, Allstate has teamed up with four U.S. soccer legends, including Taylor Twellman, Julie Foudy, Brian McBride and Brandi Chastain, to coach a select group of these All-Americans at the Allstate AllAmerica Cup during the 2019 MLS All-Star Orlando. Deckert was first team all-state, helping the Bluebirds finish as state runner-up in November. She not only led the back line but also was called upon for free kicks. Highlands had 19 shutouts this season, 10 in a row down the homestretch.

Highlands sophomore Lauren Deckert clears the ball out of trouble during Highlands' 1-0 win over Notre Dame in the regional championship game. She led the Bluebirds to a state runner-up finish this past season. JAMES WEBER/THE ENQUIRER

LOOKING BACK: NKY SPORTS

Bob DeMoss was an all-round athlete at Dayton High School Mel Webster Community Recorder guest columnist

Bob Demoss MEL WESTER FOR THE COMMUNITY RECORDER

Dayton’s Bob DeMoss is one of the finest athletes to ever play in Northern Kentucky. During his high school career, he earned a grand total of nine varsity letters. Three came in football, three in basketball, two in track and one in baseball. In football he was the Greendevils quarterback all three seasons earning a spot as one of the Top 12 players in the area on the NKAC Top 12 team. In basketball he also was picked as one of the NKAC Top players but was also named All State in both 1944 and 1945. Bob was heavily recruited by many of the college elite programs but after a long courtship eventually chose Purdue University and almost immediately became a standout quarterback for the Boilermakers. He quarterbacked Purdue for four years 1945, 1946, 1947 and 1948. He played in the NorthSouth Shrine All-Star Game and the 1948 Hula Bowl. In just his fifth game he took his team into Ohio Stadium to crush Ohio State 35-13 and move to 5-0 on the year. When DeMoss arrived on campus he immediately became a rock star and set most of Purdue’s quarterback records at the time including 191 completions for 2,959 yards. He earned his bachelor’s degree in Forestry. In 1949 Bob played for the New York Bulldogs in the National Football

League. In 1950 however, he returned to his Alma Mater, Purdue, as an assistant coach. He remained in that capacity for the next 20 years. During this time, he developed many great quarterbacks that not only broke his records but went on to outstanding pro careers. The 1945 Dayton High School graduate helped Mike Phipps, Bob Griese, Lenny Dawson, Dale Samuels, and Ron DiGravio to pro careers. This group moved the ball an amazing 11.5 miles passing for 19,102 yards for Purdue. He also coached Gary Danielson and Bernie Allen. In 1970 Bob was named the Boilermakers Head Football Coach. In three seasons he was named National Coach of the Week three times. During his career he coached in the North South Shrine game, the All-American Bowl, the Hula Bowl, and the Rose Bowl. Despite a 6-5 record (6-2 in the Big Ten) he stepped down to spend more time with his family. He remained at the school following his time as head coach to be assistant athletic director until retirement in 1992. A plaque honoring him was erected in the offensive staff room in 2008. He was named to the Purdue Hall of Fame in 1999 and has been a member of the Northern Ky. Hall of Fame since 1984 as one of the inaugural inductees. DeMoss passed away in 2017 at the age of 90.
