President Wiley Cutts opened the meeting and led club members in prayer. Rhonda Cope led us in the Pledge of Allegiance to the Flag. . Our guest speaker today was Dr. Doba D. Jackson, Associate Professor of Chemistry & Biochemistry at Huntingdon College. Dr. Jackson received his Ph.D. in Biochemistry from the University of Toledo (Ohio), and completed postdoctoral research with a National Science Foundation Breast Cancer Research Fellowship at Penn State Univ. His research is in the area of understanding protein structure and function. He and Huntingdon students collaborate with researchers at Alabama State University and published their first joint research paper together in January 2013. Dr. Jackson spoke on “The Seven Healthy Benefits of Dark Chocolate,” an appropriate topic for our meeting on Valentine’s Day. He told us how many of the benefits of dark chocolate are based upon its various ingredients that fight free radical damage and minimize the effects of aging. The seven benefits of eating dark chocolate include: (1) blocking activity of various free radicals and minimizing the effects of aging, (2) improving cardiovascular health, (3) protecting the brain from conditions related to high blood pressure and clots, (4) reducing incidences of insulin resistance and glucose intolerance, (5) relieving inflammation, (6) reducing weight, and (7) helping fight tooth decay. Dr. Jackson emphasized that the milk chocolate does not have these effects, as only dark chocolate contains significant amounts of the cocoa bean. Moderation in eating dark chocolate was stressed, and one may have to cut down on calories in other areas if a person eats more than a candy bar a day of dark chocolate.
