Women in culinary matter

VICE PRESIDENT OF CULINARY DEVELOPMENT AND SUPPLIER DIVERSITY AT CHARTWELLS HIGHER ED Allison was recently featured on “Chef’s Roll,” speaking about her experiences as a female chef and how she plays a role in making Chartwells an incredible place to work. Here are some highlights:

The culinary industry, especially kitchen jobs, can often be considered inhospitable to women. Why? How is Chartwells different?

Kitchens are male dominated. When I was in culinary school, there were no women Executive Chefs, only men. Not one role model. Chartwells is different. Our parent company, Compass Group, has attracted, hired and retained women chefs. Women in Culinary is an internal mentorship, ally and sponsorship program that celebrates and supports our amazing women chefs. future leadership roles and builds a more equitable culinary world.

Diversity, equity and inclusion can be empty buzzwords in some places, but it seems Chartwells takes their commitment to these things seriously. What does this look like in practice?

Absolutely. We look at this through a few lenses by offering professional development opportunities for all our team members. We promote and hire diverse associates, create greater transparency and connectivity between our managers and frontline associates and, most importantly, strengthen a culture that celebrates individual differences and empowers associates to be themselves.

We are so lucky to be led by a female CEO who believes in building a people-first culture of respect. Our Women in Culinary Program is just one example of empowering our female talent. It provides structured experiential learning to get them into their Chartwells philosophy has meant a lot to me personally. It has always felt comfortable and safe for me to be out as a gay woman.

CAMPUS EXECUTIVE CHEF FOR SAN JOSÉ STATE UNIVERSITY & MEMBER OF COMPASS GROUP’S WOMEN IN CULINARY PROGRAM Compass Group and Chartwells are proud to lead the industry in culinary opportunities for women. This month, San Jose State University’s Executive Chef Pauline Lam competed in Compass’ Culinary Chef Challenge at Johnson & Wales University.

Born in Hong Kong and raised in the California Bay Area, she attended London’s Le Cordon Bleu and spent most of her career as a Pastry Chef. She learned from greats like Sherry Yard, Thomas Keller and at Wolfgang Puck’s Spago.

Pauline began with Compass Group as Google’s Executive Pastry Chef before becoming Chef de Cuisine at Root Café. She wore many hats at Google, including Executive Pastry Chef for Grand Hyatt Kauai. Now as SJSU Campus Executive Chef, she oversees daily operations for multiple business lines.

to have that one-on-one interaction. You don’t have someone you have to look up to – it’s someone right there, face-to-face with you. That’s inspiring and uplifting.

I would tell women in my field not to be intimidated. Be humble but knock their socks off; show them how good you are.”

Representation matters!

Representation matters, and it matters at every level. Whether it is reality television, in the boardroom, or in the makeup of your team and where you work. women have done for us – whether that is inventions or discoveries. It is about taking the time to recognize those things that are often overlooked or may be attributed to men instead of women. It’s about bringing attention to those things, celebrating them, and giving them the recognition they deserve.”
