Guar gum (E-412)

It is the energy reserve product of animals. Its structure is similar to starch amylopectin; although more ramified, it is perfectly digestible and we eat it in animal meat, especially liver.

Gold (E-175) additives—coloring agents What is it? A mineral product that is used as a coloring agent for coatings. Where does it come from? How is it obtained? From physical treatment of gold processing. Form: Powder or sheets. General uses:

In the retail food industry: To coat and decorate confectionery and in baking.

In restaurants: As a coloring agent for coating products and preparations, although its use is very limited. Quantity and instructions for use:

Basic quantity for cooking: QS (minimum quantity required to obtain desired effect) for the coating of preparations.

Instructions for use: Brush the surface of the preparation with the coating. Mixing with water or alcohol speeds up the process.

Guar gum (E-412) additives—thickening agents additives—stabilizers What is it? A fibrous carbohydrate from the galactomannans group. An additive used as a thickening agent and stabilizer. It has the properties of a hydrocolloid. Where does it come from? How is it obtained? From the seeds of a leguminous plant (Cyamopsis tetragonolobus) that is similar to the pea and native to India and Pakistan. Form: Powder. Additional information:

The seed of the plant has been used for human and animal nutrition for centuries. 101
