Ingredients 1 4 tbsp 4 2 Fresh Ginger 4 20 To taste Dipping Sauce: 1 1/4 c 1/2 c 1/3 c 3 tbsp 1/3 c 8 oz pkg

Duck Chinese five-spice powder Star anise Garlic cloves, bashed 4 cm piece, peeled and roughly sliced Spring onions, trimmed and cut in half Chinese pancakes Sea salt and freshly ground black pepper

Instant nonfat powdered milk Sugar Boiling H2O Butter or margarine Lemon juice Cream cheese, room temperature

Preheat the oven to 160ºC. Cut off and discard the flap of fat that hangs over the entrance to the duck’s body cavity. Pat the inside of the cavity with kitchen paper, then season with salt and pepper. Rub the entire outside of the duck with the five-spice powder, massaging it into the skin. Put the star anise, garlic, ginger and spring onions into the cavity.
