Seared Salmon with Tomato and Spinach Makes 1 serving Ingredients 1 (4 oz.) salmon fillet 1 tbsp olive oil 2 oz. corn 2 oz. fresh spinach 1 oz. plum tomato, diced 1/2 tsp shallots 1 oz. lemon juice Directions Pan sear salmon in olive oil until golden brown on each side and salmon is cooked all the way. Set aside. Add shallots & tomato to same hot pan and sauté for 1 minute. Add corn and spinach. Sauté for 3 minutes. Combine all ingredients. Top with lemon juice. Per serving: 360 calories, 26 g protein, 17 g carbohydrates, 22 g fat, 2 g saturated fat, 97 mg sodium and 62 mg cholesterol
