Welcome on board your Cambodia Angkor Air flight. Make yourself comfortable, and enjoy the latest issue (November-December 2020) of our inflight magazine, Angkor. In each issue we bring you articles and information about the Kingdom of Wonder, and the amazing destinations we fly to. A couple of holidays are happening, a popular favourite is the 2020 Water Festival late October and early November. On the 9th of November we celebrate Independence day. This holiday was established to celebrate the anniversary of Cambodia's independence from France on 9 November 1953 and is Cambodia's national holiday. It’s also the beginning of the wedding season. “Marriage, Love in the kingdom”. Cambodia is a country full of rich and colourful rituals rooted in tradition. They celebrate life in all its vastness, from the start of the harvest season to the passing away of a member of the community. Among these ceremonies, one unmistakably stands out for its importance within Khmer culture and for its visual appeal: a Cambodian wedding is something not to be missed during your visit to the Kingdom. For the adventurous. “Khmer Tattoo”. Tattooing has been synonymous with the ancient warriors of the Angkorian Empire dating back to 803 AD. It was believed that this ink adornment would deem the warriors invincible in the midst of battle and they would live to fight another day. Closer to home we look at Senmonorom. Your journey into Mondulkiri will most likely start at Senmonorom, the provincial capital and Mondulkiri’s logistic hub. Two serene lakes welcome travellers to the centre of town. The area around the city is peppered with awe-inspiring waterfalls and temples from which to contemplate breathtaking views of the surroundings. Lets explore Zhengzhou. As one of the 8 ancient cities of China and capital of Henan province, Zhengzhou is famed for its cultural and historical attractions dating back thousands of years. This issues Q&A. In this issue we talk to “Scott Neeson”, the founder and executive director of Cambodian Children’s Fund. A popular 'Australian' local character who has done wonders for the local children in Cambodia. Just over the border, C`ân Tho´. With its extensive canal system, floating markets, delicious local dishes and undeniable charm, C`ân Tho´ is one of the top tourist destinations in Vietnam’s deep south. Popular local destinations, Kampot and Kep. Spectacular natural beauty and a wealth of things to see and do puts the riverine town of Kampot and the coastal resort of Kep high up on any traveller’s list. Hungry? “Cooking with fire, foraging, fermentation and edible flowers. Cambodian food”, perhaps Southeast Asia’s oldest cuisine, has been on trend since the start, cooking with fire, making use of edible flowers, foraging, fermenting, preserving, and pickling, long before they became fashionable. It’s time for Cambodian cuisine to get more attention. So sit back, relax, and let the world fly by as you enjoy your flight with Cambodia Angkor Air. The Editorial Team

what’s the weather like in Cambodia in nov'- dec'? Cambodia is coming into it's dry season meaning there will be almost no rain for the next six months! That said, the occasional short early morning shower in the first half of the month is not unusual. Average temperatures of 25 °C, low humidity and plenty of sunshine makes November a popular time to travel across the entire country. The temperate climate means days exploring the Angkor temples, close to Siem Reap, is more manageable; although lunch time shade is usually welcome by most. On the waterways the levels are still very high making it another good month time to enjoy a cruise on the Mekong River or Tonle Sap. Further to the east the waterfalls of Mondulkiri remain full flowing and impressive. To the south of the capital Phnom Penh, the return of more constant sunshine ensures that the beaches of Sihanoukville, Kep and the entire south coast spring back into life with warm, sunny days and calmer seas expected.

2020 water festival

Cambodia’s annual Water Festival, or Bon Om Touk, which this year fell on October 30-31 and November 1, is renowned for its traditional boat races held along the Tonle Sap river in Phnom Penh. Best viewed from the bustling banks of Sisowath Quay or the opposite section on Chhroy Changvar peninsular, the races are an exhilarating spectacle with teams representing their home provinces paired off against each other throughout all three days of the public holiday. The brightly-painted dragon boats can measure more than 30 metres in length and hold 80 oarsmen.

The Water Festival falls on the full moon during the Buddhist lunar

Smaller Water Festival celebrations take place in Siem Reap and across the country, but the largest festivities are in Phnom Penh. Fireworks light up the sky over the Tonle Sap each night from 7pm,

The Water Festival also marks the seasonal reversing of the Tonle Sap river's current, and is seen as a way of giving thanks to the waterways for providing fertile land and plentiful fish.

The art of dancing on the bow of the boat has been around for many years and is believed by all citizens to represent the soul of a boat keeper, or boat spirit, which may be the spirit of the woman or man who came to take care of the boat by lighting incense Sen Pren invited before the team took their boat to race officially in the Royal Water Festival. The tradition of having women dance on the bow of the boat continues in the minds of Cambodians to this day. The art of dancing on the bow of the boat also features a man representing the leader of the boat, who shouts for his team to operate in unison, energetically and harmoniously to reach their destination. All racing boats are always painted in the eyes of the boat, which makes the boat seem alive, representing dragons floating on the water as well. The first group is called the "Srouch" Troops, and the boats that are shaped like today's racing boats are called Ngor boats. The second group is called the Auxiliary Troops and two rows of rowing boats shaped like today's stand racing boats. The third group, called the Bassac Troops, is a large boat with a roof, oars, and sails, shaped like the Bassac boat, called the Pok Chay boat, and the boat is very long. There is a single roof across the front, no walls, only used at night with lanterns, a food boat for the army, which is the delivery of rice from Kampong Chhnang to Kampuchea Kromin Preah Trapeang Province. At the same time as King Ang Chan I ascended the throne, he established this lantern Loy Bratib ceremony every year with candles at night, to celebrate victory, to dedicate the glass chin of our Master Buddha, which is kept in the world of Naga, and to be grateful to the Preah Mae Kongkea. . .

PHNOM PENH GUIDE

Here is some advice and suggestions as to how to make your visit to Phnom Penh and Cambodia that much more safe, easy and enjoyable: Communication in Cambodia Indirect Communication: Cambodians generally have an indirect communication style. Questions are often expressed in vague terms, especially if it is a negative topic. Since the concept of face underpins interactions, Cambodians tend to avoid giving flat-out refusals and smile and nod to keep interactions amenable. Cambodians will also tend to answer indirectly to a negative topic or difficult question. A common response is to say, ‘same, same but different’. Agreement: In Cambodia, the word ‘yes’ can have different meanings. Besides denoting agreement, sometimes ‘yes’ is used to indicate that the person is listening, much like nodding. It can also indicate that the person understands what is being said. Ensure that you understand the context in which ‘yes’ has been said by paying attention to facial expression and body language. Compliments: Modesty and humility are important traits in Cambodian culture. In keeping with this, compliments and praise tend to be met with a deprecating comment or polite disagreement. Humour: Cambodians are quite cheerful and enjoy laughing. Jokes are often told, but sarcastic humour is rarely used.

Getting around Phnom Penh Now days, the new Apps that allow you to call on demand for Taxis and Tuk Tuks seem to be the preferred mode of getting around. They are cheap and efficient. Apps such as PassApp, Grab, WeGO, TADA, Eagle and Zelo etc, are all easy to download, then off you go. Make sure they use the meter! Alternatively there are the more old school modes of transportation, the normal Tuk Tuk (a bike towing a cabin) or the Moto dop. The guy usually with a cap and sunglasses on a motorbike that calls out hello as you walk by. These guys don’t usually work with an organised business. They are individuals just trying to make a living. If you are going to use these guys, make sure you understand what a good rate of pay is for the distance you want to travel. Negotiate up front.

Cambodia's dual currencies The Cambodian currency is riel, yet you’ll probably pay in USD. It's weird, but it's important to know that Cambodia uses USD as well. But doesn’t use American coins, you’ll get change for your purchases in riel (1,000 riel is 25 cents). This is fine, as you can then use your riel when purchasing smaller items such as snacks for bus rides, or a Coca Cola for those sweltering days! Its just part of transactions in Cambodia! If you want to exchange money so that you have riel on hand, you can do so at any bank in Cambodia. You may get better rates at the local markets, so shop around; you’ll be able to identify the money changers by their glass cases filled with piles of notes.

Can I drive in Cambodia

Officially, a Cambodian driver’s licence is required for driving in Cambodia, including for the use of motorcycles over 125cc. If you carry your valid original driving licence from your home country, you can apply. Some local travel agencies can arrange a licence for an administrative fee. If you decide to apply for a Cambodian licence yourself you need to visit – Driver’s License Service Centre, Aeon Mall 2, Sen Sok City, 2nd Floor Street 1003, Phum Bayab, Tuol Kork, Phnom Penh The General Department of Public Works and Transport Street 598, Phnom Penh Tel : 023 427 845 Call Ms. Kim (Call Kim) if you need a local to help you organise a licence. +855 92 256 388

SIEM REAP GUIDE

Here is some advice and suggestions as to how to make your visit to Siem Reap and Cambodia that much more safe, easy and enjoyable: Cambodia is amazing, so spend more time here Cambodia is a really wonderful place to spend your holiday. From the cities and villages to the rivers and beaches, farmland and forest, all populated by the most friendly, spirited and optimistic people just waiting to greet you with their beaming smiles. Travel for a month or more here, get off the beaten track; spend a little longer at the temples; live the island life for a week. We guarantee you won’t regret it. As someone living here, I can tell you most expats living here now came on holiday and stayed. There is something for everyone.

Tipping Tipping isn't expected in Cambodia, but it is always appreciated. Many service workers in Cambodia earn a low wage, so if you are happy with the services provided by waiters, drivers, guides or others, leaving a small tip depending on the service is a good way to show your appreciation. As a guideline if you are travelling alone we would recommend that you tip your guide $7 per day. If travelling as a couple you should offer $10 per couple per day. If you are travelling in a group of 3-4 then tipping between $15-20 per group per day is about right.

Drinking water Drinking tap water generally isn't recommended in Cambodia. Water quality varies from region to region and there may be harmful bacteria or viruses present, so the safest option is to treat or purify your water, or opt for bottled water. Some hotels you'll stay in may have drinking water available. Although tap water in Phnom Penh and Siem Reap is claimed to be safe, a lot of chlorine is added, and it doesn't taste good. Outside these two cities water is usually untreated and the source unknown. Bottled water is sold everywhere and is cheap so there is no reason to drink tap water. Ice is generally safer, originating from treated water and produced in large cubes which are delivered to outlets or shops which serve ice. Round ice "cubes" with holes in are drinking water and safe, large blocks are for cool-boxes, and should not be added to drinks. The source of crushed ice is not always certain hotels will be fine, though.

Cultural sensitivity

Cambodia is a predominantly Buddhist country. It's also conservative by nature. We foreigners are more free spirited and when on holiday, especially in a warm climate tend to dress accordingly. We also have a less conservative approach to things and let our hair down when on holiday. The government here actually promotes certain behaviour especially in cultural tourist locations like Pagodas and temples. Just make sure your wearing appropriate clothing for religious locations and behave accordingly. Take off shoes before entering religious places and usually someone’s home. Ask before taking photos of locals especially monks. A bow would be more appropriate that a handshake, especially in this Covid period. In public just be respectful and aware of your surroundings. Also be patient and try not to lose your cool. Anger and rudeness are not well accepted by locals. They usually avoid confrontation. A smile will get you further here than being rude.

charming

getaways

Kep Kep is a quaint and quiet seaside town, often viewed as the little cousin of Kampot. What it lacks in things to do and with a less vibrant social scene than other destinations, it makes up for with excellent seafood, especially the crab, which alone attracts many visitors, local and international. A walk around the crab markets is a must-do! There is also a picturesque small stretch of sandy beach and a calm bay in which to swim to escape the baking sun. Afterwards, wander over, dry off and relax on the nearby hammocks, or at the bars, cafés and restaurants and take in some of the most beautiful sunsets Cambodia has to offer. Kep is also is very affordable to stay in, but visitors are spoiled for choice with hotels, guesthouses and numerous rustic lodges which offer pools and hillside retreats. The Kep Sailing Club is a high-end retreat that also excels in fine dining and fantastic views from its pier. Short term trips off to Rabbit Island or treks into the Kep National Park are highly recommended but it’s just as easy to sip on ice-cold drinks, lounge on the beach and lose yourself for a few days at this coastal retreat.

Kampot Kampot town is a top destination to unwind in and enjoy the cooler weather in the shadow of Bokor Mountain and the national park. As an added bonus, the riverside town has an excellent culinary scene catering for all palates and budgets. Accessing Kampot from Phnom Penh, Kep or Sihanoukville is very easy with a range of travel options by road. There is also a diverse selection of accommodation from budget hostels, hotels for all wallets and even modern pampering resorts. It's definitely a laid back town, but there is a good night scene with live music and occasional events taking place, especially from the art scene. Day trips to Bokor National Park are recommended to soak in the views (or the selfies), exploring waterfalls and enjoy the winding road up to the summit. Outside of the town, you can also venture out by caving, kayaking down rivers, and in the countryside sample the famous Kampot pepper and farms. Cruises on the river (especially around sunset) are fantastic but adventure-seekers can also go on quads and motorbikes for short term or day trip adventures. Recent additions to Kampot are the camping getaway offered by The Safari, and a small riverside beach in Kampot town.

Cambodia's coastline offers scenic and charming getaways for tourists, locals and expats. Despite the constant and rapid evolution of the fast-developing Southeast Asian nation, destination towns such as Kampot and Kep are foodies favourites, while the jungle sprawl and mountainous Koh Kong entice adventurers. The islands off the southern coast (basking in the Gulf of Thailand) remain an attractive relaxing option, although there are plenty of adrenaline activities to keep everyone entertained.

Koh Kong Koh Kong Province, lying in the south-west of Cambodia, used to be more challenging to reach but is being opened up via new roads and access routes. The main drawcard is the Cardamom (Kravanh) mountains, a range that stretches for 300 kilometres into Thailand. Ecotourism is still a major factor in luring tourists and adventure seekers. Chi Phat is ideal for hikes, kayaking, mountain-biking as well as exploring the local flora and fauna. Other key attractions in the area are the mangroves (accessible via wooden walkways) and the photogenic TaTai Waterfalls. Accommodation is more rustic, and homestays, bungalows and lodges are the norms. 4 Rivers Floating Lodge provides high-end pampering combining luxury and exclusivity but is still very nature focussed. Shinta Mani Wild is another ultra-luxury resort which offers treetop tents with views of the surrounding jungle and waterfalls. You can also venture to Koh Kong Island for unspoiled sandy white beaches, diving, snorkelling and fishing trips.

Sihanoukville & the islands The biggest seaside city in Cambodia, Sihanoukville has seen some dramatic changes in recent years. The port city is used as a gateway to the lush Cambodian islands while the actual transformation of the city is underway with a frenetic amount of new hotels, condominiums and casinos under construction. Cruise ships also disembark at Sihanoukville and use the opportunity to explore the coast. The Queenco Hotel offers a range of watersports and activities and tours as well as an excellent resort-style setup. The often calm and turquoise waters are blessed with tropical islands, perfect for fishing, diving and island-hopping. Koh Ta Kiev, Bambu Island and Koh Preah are perfect for exploring, but it is best advised to use the local tour companies who can tailor packages to suit your needs. The lodging options on the islands themselves are diverse and you need to select where you stay depending on how pampered you want your paradise getaway to be. There are some stretches of Koh Rong that are more popular with backpackers and parties, while Koh Rong Samloem has plenty of more chilled options. New luxury resorts are also popping up on Koh Rong. However, both islands are excellent for relaxing and taking in those postcard paradise moments. There is also very good and easy transport to the islands from Sihanoukville, so there is no reason not to treat yourself to an island getaway.

in the kingdom Cambodia is a country full of rich and colourful rituals rooted in tradition.

The knot tying ceremony, Som Peah Ptem Preah Thong Neang Neak Ceremony, is also of particular significance. Family and friends gather around the couple and tie ribbons around their wrists for good luck. Traditionally, the newlyweds are meant to keep the ribbons for three days. In contrast to many Western weddings where the invite list is often carefully curated, Khmer weddings tend to be open-invite, allowing as many people as possible to share in the joy of the betrothed couple. This can lead to huge, raucous occasions with much laughter, drinking, dining and celebration. Invitees to a Khmer wedding will be given an envelope with their invitation, in which you are expected to put a cash gift to bestow upon the happy couple, helping to cover the costs of the occasion and provide a nest-egg for their future lives together. The march represents the journey of Preah Thong to meet his bride Neang Neak. Before the bride and groom are officially married, they must be properly prepared through an elaborate cleansing ceremony, Kat Sork Ceremony. The singers take on the roles of visiting devadas (deities who watch over the mortal realms), and dance around the marrying couple. They cut the hair of the couple, and shave the groom, in a ritual meant to excise them of any excesses and misfortunes that may have lingered in their lives. The couple is also perfumed. Another ceremony involved is the passing of blessings, Bongvil Popil Ceremony, where married couples are asked to gather in a circle around the bride and groom. Three candles are lit and handed from person to person. Each participant passes his or her right hand over the candle in a sweeping motion, sending a silent blessing to the couple with the purpose

the art of

khmer tattoos

Tattooing has been synonymous with the ancient warriors of the Angkorian Empire dating back to 803 AD. It was believed that this ink adornment would deem the warriors invincible in the midst of battle and they would live to fight another day. All the Khmer Warriors were covered with tattoos from head to toe, including their chest, arms and even fingers. Mighty King Jayavarman VII, tested this out with his own body, being struck by arrows and having all the hits bounce off his chest. Yantra tattooing originated in Cambodia with the use of ancient Khmer script writing. Yant is for the Sanskrit word yantra. Sak means “to tap (tattoo)”. Sak yant designs are normally tattooed by magic practitioners and Buddhist monks, traditionally with a long bamboo stick sharpened to a point (called a mai sak) or alternatively with a long metal spike (called a khem sak). The wise practitioner usually determines the yantra tattoo design and its placement.

These days in modern tattoo parlors standard tattoo machines are used. Caution should always be taken with any kind of tattooing, and those seeking ink should insist that high standards of sterilization of all equipment are applied to reduce the risk of transmission of infection and disease. Those pursuing traditional methods must understand that the equipment will not be sterilized to appropriate standards, warns Chris Walk, owner of Angkor Tattoo, Siem Reap’s premier tattoo studio. Angkor Tattoo specialises in custom designs produced by superior artists. Walk notes that his artists consult pagodas in Siem Reap and Battambang to ensure their yantra designs are correct when doing traditional tattoos. In Cambodia, the tattoo is used as a symbol of self-protection. Cambodians believe a yantra has magical powers to ward off evil and Hardship. The tattoo is particularly popular amongst military personnel. The tattoo supposedly guarantees the person to not receive any physical harm as long as they observe certain rules such as living honestly, not taking advantage of others for your own personal gain, respecting others, refusing to partake in adultery or evil deeds. Common choices include prayers to remain bulletproof, power of the fist, images of elephants on the knees and feet to represent strength and wisdom, and depictions of tigers as this animal is considered to be the King of the Jungle according to many Khmer.

Lord Hanuman, the Hindu mighty ape deity who represents the compassionate warrior, is often depicted on soldiers. High-ranking officers and elders often wear the white Lord Hanuman, who is known as the King of all Monkeys. Since many of the best artists died during the Khmer Rouge era, there are now very few practicing this ancient art Sak Yantra. However, there is a re-emergence of interest in traditional tattoo designs amongst Khmer youth and returnees as well as foreigners. They wear the tattoos as symbols of pride and honour bolstering their cultural identity And foreigners resonate with their deeper meanings. According to Chandara Tep, Owner and Manager of Phnom Penh-based Angkorian Ink tattoo parlour, every symbol or character a person chooses is a refection of how one feels as well as a reminder of the qualities they wish to become part of them. He explains further, “Angkor Wat represents the pride of our culture and nation, and Naga, the Snake King is the special mythological protector guarding Angkor. Garuda the fierce mythical half-man, half-bird creature displays the essence of a brave flying warrior. Images of monks or Buddha convey peace and wisdom, whereas Apsara dancers reflect peace and beauty”. Whether or not these symbols bring good fortune or ward off evil spirits, they remain beautiful works of art. It is refreshing to discover that the old ways have not been lost completely, and still bring the wearer confidence and comfort to enjoy these designs with pride.

Mondulkiri is a stark contrast to the lowlands of the country. Carpeted in lush, dense jungle - inhabited by rich and exotic wildlife - Mondulkiri will make you feel worlds apart from the more arid regions that lay at the heart of the Kingdom. The differences are not just climatic or geographic: culturally, Mondulkiri is also a whole new world, with a population made up almost entirely of indigenous people. Mondulkiri means ‘Meeting of the Hills’, an apt name for a land of verdant, undulating landscape. Bordering the provinces of Kratié to the west, Stung Treng to the northwest, Ratanakiri to the north and the country of Vietnam to the east and south, it is the most sparsely populated province in the country, despite being the largest in land area. Many of the local tribespeople - such as the Bunong come to Senmonorom to trade, and the markets during the early morning are a picturesque sight to behold. Nature-lovers and adventure-seekers will be thrilled by the number of trekking routes available throughout the province, many of them passing or ending in roaring waterfalls. Indulge in a relaxed picnic sitting in the surrounding forested areas, or cool down in the natural pools where they discharge. Indeed, waterfall-spotting is a popular activity in the area: some of the most popular ones are Monorom Falls, Bou Sraa Waterfalls and Chrey Thom Waterfalls. For a dose of cultural stimulation, visit one of the Bunong villages scattered around the province. In these indigenous settlements, you will come face to face with the traditional ways of life and architecture of the Bunong people. Having lived in the area for thousands of years, the Bunong have developed a symbiotic relationship with their surroundings, and have become expert elephant handlers. Ask someone for a ride on one of these gigantic mammals; riding an elephant through the lush greenery of the Mondulkiri jungle is one that every traveller to the area must experience. Another activity that must not passed up during a stay in Mondulkiri is a trip to the Seima Protection Forest, which hosts the country’s greatest trove of mammalian wildlife. Black-shanked doucs, yellow-cheeked crested gibbons and more than half of the total population of elephants in the Kingdom are just some of the treasures that await the traveller. The bird life is also impressive, and the jungle here is lusher and denser than in the rest of province. Come to Mondulkiri and you will find the adventure and closeness to nature that you crave. With a never-ending assortment of gripping hikes, limitless possibilities for spotting exotic wildlife, and luscious, untouched nature Mondulkiri one of the highlights of your trip to Cambodia.

Zhengzhou was the capital of China during the Shang dynasty. Parts of the Shang-era capital city wall that were built 3,600 years ago still remain in Downtown Zhengzhou. Zhengzhou maintains abundant cultural heritages that reflect its glorious history as well as the culture of Henan Province. Zhengzhou Confucius Temple, initially built during the Eastern Han dynasty 1900 years ago, is one of the oldest Confucian Temples in China. Other important architectural heritage sites in the city center include Town God Temple and Erqi Memorial Tower. There are any sights to visit, a few can see here.

scott neeson We talk with Scott Neeson, ex Hollywood executive to the founder of Cambodian Children's fund.

Scott Neeson, the founder and executive director of Cambodian Children’s Fund. Prior to moving to Cambodia, he spent 26 years in the film industry, lastly as President of 20th Century Fox International and oversaw the release and marketing of several blockbuster Hollywood films, including Braveheart, Titanic, Star Wars and X-Men. In 2004, he left the film industry to set up Cambodian Children’s Fund (CCF) after a life-changing visit to Cambodia. He started CCF to help just a handful of children but that has since grown to around 1,900 children living in one of the most impoverished parts of Phnom Penh. We ask him some questions. .

Q: What are some of the highlights you can mention from your time here in Cambodia? There are so many milestones from the opening of the Neeson Cripps Academy, the new medical clinic, the improvement in living conditions we are bringing about through homes, however, the real highlights for me are the individual journeys of the kids. Truly understanding why families were stuck here, the effects of the 1970s and the Khmer Rouge, how this affects the current generation, how to truly change perspective amongst the community was quite the challenge. I brought a good set of business/corporate tools with me from the US but understanding how to apply those in a completely different culture was very hard.

c`ân tho´...

the mekong delta’s hotspot With it's extensive canal system, floating markets, delicious local dishes and undeniable charm, C`ân Tho´ is one of the top tourist destinations in Vietnam’s deep south.

Around a 4-hour bus ride from Hô Chí Minh City, C`ân Tho´ serves as the cultural, economic and political centre of the Mekong Delta. It makes for an ideal base from which to explore this spectacular riverine region and experience some authentic Vietnamese way of life in the countryside. The city is located on the south bank of the Hâu . River, a major branch of the Mekong River, at an intersection with the C`ân Tho´ river. Take a pleasant stroll along the waterfront areas, especially the central Hai Bà Tru'ng street with its large park of sculpted gardens and statue of Hô Chí Minh. Its only after the sun has set that things really spring into life, however, with popular bars and restaurants offering excellent places to drink, dine and watch the world go by. Indulge your taste buds with some exquisite Vietnamese cuisine and fresh seafood, usually great value for money. This area is also home to Ninh Ki'êu Wharf, a tourist hotspot for booking boat cruises. A recommended itinerary is to get there for 5am, so you can embark on the half-hour journey to Cái Rang Floating Market and ˘ enjoy the sunrise on deck on the way. At the floating market, you’ll see a kaleidoscope of colourful vessels selling various goods to the boat-bound customers. Try ordering a traditional hot noodle soup and iced coffee for breakfast, but be careful not to spill them as your boat is rocked by the waves. Several tour companies and individuals at the wharf (“boat ladies”) also offer boat journeys along the canals that spread out around C`ân Tho´. It’s advisable to get on the smaller wooden boats (“sampans”) that can

navigate the narrowest waterways, allowing you to stop at whichever stilt house, boat house, farm, orchard, cottage industry or riverside restaurant that takes your fancy. Back on dry land, head to Mau Than Street in the city’s central Xuân Khánh quarter. Here you’ll find some popular religious buildings including Quang ÐÚ'c pagoda, Buu Tri Pagoda, Tham Tu’Ó’ng Church and Tin Lành Baptist Church. Xuân Khanh market is a top choice to purchase home-grown produce such as fresh fruit, with the added fun of haggling with vendors over the price. A variety of mangos, from sweet to sour, can be relished along with the likes of pineapple, oranges, jackfruit, pomelos, grapefruit, durian and the local favourite “bon bon” (langsat). Tasty and highly affordable street food can be found around the small lanes off Mau Than street, with the famous Hot Pot Alley featuring a dozen outlets serving steaming broths of duck (the C`ân Tho´ speciality), Mekong river fish, seafood or eel with vegetables, egg and tofu. For a simple snack on the go, grab a classic Bánh Mi sandwich. A good way to revitalise yourself is a head massage at a local hairdresser. A proper treatment should last at least 30 minutes, and its advised to agree on the price first.

Check out the Le Bokor Palace Hotel at the top, a historic building perched close to a stunning cliff drop left abandoned for years but reconditioned and reopened in 2018. There’s also a ruined Catholic church and a Buddhist pagoda, as well as a 29-metre-high statue of “Lok Yeay Mao”, the legendary female guardian of the coast. Back in town, browse the selection of colourful boutiques off the riverside or go to the local or night markets, which feature some fun amusements for kids. The Kampot Museum is housed inside the Old Governor’s Mansion, detailing the town’s rich history. Kampot is renowned for cultivating some of the finest pepper in the world – a certified geographical indication (GI) product since 2010 – with many plantations to visit on the outskirts of town. Complimenting the pepper is the highly-rated Kampot salt, harvested in farms next to the sea. Durian, the spiky and pungent “King of fruits”, is also a prized fresh produce of Kampot. For nature fans, there are beaches, caves, lakes and waterfalls to discover in the surrounds. Activities such as cycling, rock climbing and trekking can be booked. At nighttime, you can enjoy a large number of bars and restaurants, indulge in a revitalising massage or hit up the karaoke parlours and nightclubs. Accommodation options in Kampot range from cheap backpacker hostels up to well-appointed and modern hotels. Kep, meanwhile, is a far more relaxed affair with lodgings tending towards the upscale market. Having hosted holidays for Cambodia’s elite for many decades, many French colonial hotels and stylish villas can be found up the verdant hillsides adjacent to the beach, affording sumptuous sea views and calming sounds of nature. A favourite ritual for visitors to Kep is a seafood feast, with the famous “Crab Market” a haven for families and friends to relish fresh shellfish. Koh Tonsay, or “Rabbit Island”, is a short boat ride off the coast, offering some adventurous beach time with basic accommodation.

-FOOD-

cooking with fire, foraging, fermentation and edible flowers Cambodian food, perhaps Southeast Asia’s oldest cuisine, has been on trend since the start, cooking with fire, making use of edible flowers, foraging, fermenting, preserving, and pickling, long before they became fashionable. It’s time for Cambodian cuisine to get more attention.

Falling in love with Cambodian food on our trip to Phnom Penh, Cambodia‘s capital. It wasn’t any singular experience, rather a culmination of myriad culinary experiences: tasting many pungent dips made from Cambodia’s beloved fermented fish paste, prahok, at a local restaurant; savouring a luxuriant saraman curry, redolent of dry Indian spices and taking our time to relish a rich, complex amok trei (steamed fish curry). Markets and street food in Siem Reap and Battambang, where the best Cambodian breakfasts could be had. Large bowls of aromatic kuy teav soup, Cambodia’s pho; cold fermented rice noodles in a lemongrass-heavy kroeung-based curry, sprinkled with shredded banana flower and fragrant herbs, called nom banh chok; and smoky slices of succulent barbecue pork on rice, the aromas of which waft down every street and lane where they’re grilled right by the roadside. As we’ve been discovering new dishes and ingredients every day, I’ve wondered when Cambodian food would get its time in the spotlight, when it might become the next ‘it’ cuisine. Cambodian cuisine certainly has what it takes to be the next big thing. Cambodians have been cooking with fire, making use of edible flowers, foraging, fermenting, and sharing plates long before any of those things were fashionable. I think it’s time and here’s why.

under-appreciated cuisines, about which countless myths exist (no, it’s not “mild Thai”). Often ignored in Asian cookbooks, it’s one of Southeast Asia’s most influential cuisines, with many dishes featuring in the gastronomies of Thailand, Vietnam and Laos having provenance in the lands of Cambodia’s Khmer people – much of which is now part of Thailand, Vietnam and Laos. While there are many similarities between the cuisines of Cambodia, Vietnam, Thailand, and Laos – a love of aromatic spices, fresh fragrant greens, soups, noodles and spring rolls, smoky barbecues and stir-fries, flavour-packed curries, tropical fruits and sweets – there are also differences that distinguish it and a long rich history that makes it unique.

Yet research attests that they’ve long been used in Cambodia and many are native to the country. When Cambodians forage for wild greens they’re also looking for edible flowers, cultivated in home gardens as well. The most ubiquitous edible flowers include those from the Sesbania family, especially Sesbania grandiflora (phka angkea dey in Khmer, which has a white flower that when closed looks like an elephant’s tusk, and Sesbania bispinosa, a cheerful yellow flower. The flower, vegetable-fruit, leaf, stem, and bark are used, with the dried leaves being made into tea and the pods, which look like string beans also being eaten. Edible flowers in Cambodia are used both raw and cooked, in everything from salads and soups to curries and desserts. Young shoots, pods, seeds, and leaves are also eaten. My favourite edible flowers in Cambodian food include white frangipanis that are deep-fried like tempura. Try them at Chanrey Tree in Siem Reap and Maisons Wat Kor in Battambang.

ATR SAFETY

យន្តហោះប្រភទ េ ATR 72 រចនា ATR 72: DESIGNED WITH SAFETY IN MIND ឡើងដោយផ្តត ោ លើសវុ ត្ថភា ិ ពខ្ពស់ Cambodia Angkor Air is proud to count the ATR 72 among its airliners. This prestigious aircraft is a twin-engine turboprop short-haul airliner built by the French-Italian manufacturer ATR. The ATR 72 is widely recognised as the most cost-effective regional aircraft, a reputation that has made it the preferred choice for short-haul flights. The craft’s innovative design introduces a range of improvements that have dramatically improved the passenger experience. The airliner’s revolutionary design minimises noise within the cabin, thanks to the installation of dynamic vibration absorbers and the use of advanced, soundproof materials. This makes for a silent and serene environment, maximising customer satisfaction. The innovations introduced by the design of the ATR 72 are not limited to passenger comfort. Powered by PW127 engines, the ATR 72 provides outstanding short-field landing performance, particularly for an aircraft of its size. With regards to safety, the ATR 72-500 has been suitably modified to better handle icing, and has a clean safety record. To deal with control surface jams, the ATR 72 has a provision to disconnect the otherwise linked elevator, allowing for the captain or the first officer to have full authority over their respective, independent elevators. With the inclusion of the revolutionary ATR 72, Cambodia Angkor Air offers its customers one of the best flying experiences of any airliner in the region. Clients can enjoy the aircraft on Phnom Penh-Siem Reap, Siem Reap-Sihanoukville and Phnom Penh-Ho Chi Minh City routes, and more to come. Always giving maximum priority to safety, Cambodia Angkor Air continues to invest in new aircrafts that adhere to all international safety requirements.
