Boardwalk dining Glass, pale pickled wood, mirrors and wide open wall-windows to the sea gives Tapas an airy, spacious feel. The Richard Haynes Boardwalk runs right along the seaside of the restaurant, and the ocean hums pleasantly in the background. Tapas is the brainchild of Chef Franco Parisi and managers Alfredo Giovine and Franco Diamanti. “Tapas”, Giovine explains, is a Spanish concept of “finger foods other than chips or peanuts for consumption while drinking, to dull the effects of alcohol. The three entrepreneurs took that concept and made it into the kind of restaurant that is becoming increasingly popular in cities like New York, Miami and California.
