Why did you decide to open your own hotel? “I opened my first restaurant, Sapori Italian, in 2007 (see page 25), and anticipated a demand for accommodation in the Gosport area, so decided to combine my restaurateur experience with a hotel. There are a number of new businesses opening and significant money being invested in Gosport Marina, which means there should be more visitors and business people coming to the area in need of a place to stay. Also, it’s nice to find a pub

that is still a classic British pub; simple, clean and comfortable.” What’s your favourite dish on the menu? “I love our homemade pies; sometime my eyes are bigger than my stomach, but they are delicious. A proper shortcrust pastry pie with lashings of gravy and vegetables. Our chefs are rustling up some great classic pub meals, with simple things such as homecooked ham with eggs & homemade chips, sausage and mash, or a fresh salad. Ingredients are sourced locally; namely the Fishmonger (which we also own) and the butcher N.A. Griffiths at Lee -onthe-Solent.”

What are your ambitions for Bridgemary Manor? “We would like to continue to grow, further refurbishments are due to the bedrooms, and we have a very loyal customer base who return to stay with us whenever they are in the area. Pubs are closing rapidly in the UK, so we hope to buck that trend and continue to succeed.” What makes your hotel so unique? “Being a family-run business, we see things from a different perspective. Big businesses are faceless and therefore have less interest in the individuals well being. We get to know all of our guests, whether it’s overseas hotel guests or

local beer drinkers, each are as important as each other. Our staff are efficient and courteous and enjoy their job, so therefore in turn guests enjoy their experience with us. Whether it’s a quick drink or fourcourse dinner, we aim to give the same levels of service. We have catered for so many diverese events, so no two days are the same.”

Meet the head chef: Ian Buzzard David George meets Ian Buzzard, Watermark’s head chef, who’s been cooking great British cuisine at the restaurant in Port Solent since 2011. What’s your background? I’m from Birmingham originally. I trained at Birmingham College of Food, Tourism & Creative Studies, where I achieved my NVQ 1, 2 and 3 in Hospitality and Catering. I joined the Royal Navy in 2001 as a chef and served 10 years on a number of different ships. I then decided to leave the navy at the end of 2011 to start a family with my wife, who I married in August 2006. What first inspired you to become a chef? I used to spend a lot of my school summer holidays with my two grandmothers, one of

whom used to be a head cook at a school, so we did a lot of cooking together. i think that combined with me loving my food really inspired me to become a chef What makes the food at Watermark special? We really pride ourselves on making from scratch 99.9% of the food that we serve to our customers, I don’t think there are many other restaurants in the area that can say that.

What’s your favourite dish on the menu? Ive got a couple of personal favorites, the Chicken with Ratatouille is very good, as is the Slow-Cooked Lamb Shoulder with Balsamic & Veal Jus. What advice would you give to aspiring chefs? If you have the passion to want to do the job and don’t mind unsociable hours, then go for it. The feeling you get when people enjoy what you have cooked makes it all worthwhile.

Now being run by the next generation of the family, André Guedeney has worked in the shop since before he could see over the counter. Meet André; the man who is taking the family business forward David George met André Guedeney to learn more about a family business which began back in 1988. When did you start baking? “For as long as I can remember I have been experimenting in the kitchen. Our business was first established by my parents in 1988 and some of my earliest memories are of watching my parents working in the shop, seeing their passion for creating new recipes and how they valued their customer relationships. I remember wanting to work in the shop from a young age and as soon as I could see over the counter, I got my first job in the shop working as a Saturday boy! I began managing the day-to-day running before taking over the business in January 2016.” What inspired you to take over the family business? “I have always been incredibly proud of my parents’ hard work and dedication to the business. Over the years, they

developed many unique and now locally-renowned recipes: our famous homemade garlic chicken, homemade mini quiches, our salad niçoise as well as our homemade mayonnaise and dressings, are just some examples of our closelyguarded family recipes which we have been serving for almost 30 years. I have always wanted to build on this with my own recipes and continue to grow the family business for another 30 years – and beyond!” Why is André’s special? “The quality and range of the products we offer is undoubtedly one of the most important factors: we freshly bake all our bread and many other products on the premises every day, we have the largest range of fresh baguette fillings anywhere in the city, and our range of fresh cakes and breakfast patisseries and brand new André’s freshly-ground coffee is pretty good too! Our huge variety of fillings and toppings means that each

customer can individually select exactly what they would like, as there are literally 100s of different combinations. Ultimately, we offer the freshest food to go in the city and at a reasonable price.” What has been your most memorable moment? “Without a doubt it would have to be when we received a call during the America’s Cup last summer from a national supermarket chain telling us that they had been let down by one of their suppliers and wouldn’t be able to fulfil an order to cater for all the staff throughout the event. We were asked to step in and supply all the lunches - with less than four hours’ notice! On what was already one of our busiest days of the year, we managed to bake, fill and supply some 500 lunches to the extremely hardworking and appreciative volunteers. A truly phenomenal achievement! We then went on to supply the lunches for the volunteers every day of the event thereafter. If it wasn’t for the hard work and dedication

of my own team, it wouldn’t have been possible!” What has been the secret to your success so far? “Aside from having the best customers in the city who are extremely loyal and supportive of everything we do, the reason we have been going for so long is down to the simple fact that we have not lost sight of who we are and what we are good at; providing freshly-made food to go with a personal service to cater for all tastes.” What are your future goals? “Recently we have experienced huge demand for our outside catering services, which caters for all types of events and special occasions. We also help fuel many of the city’s business meetings. Moving forward, we would very much like to continue growing and since our re-launch 18 months ago, we have gone from strength to strength. We’d love for this to continue with more shops throughout the city, so watch this space!”

Why did you decide to open your own Italian restaurant? “I worked in London for a few years, starting as a commis chef, building my way up to head chef. I then decided that it was time to have my own restaurant and cook the food I know and grew-up with. At Sapori, we cook Italian food how Italian families eat it, not American or English variations on Italian food.” What’s your background? “I was born and grew up in Rome, my family are from Calabria and Rome, so I spent a lot of my summers in the south, where they are passionate about their local produce. After

studying at university, I came to England and started full time work in London as a commis chef.” What inspired you to first start cooking? “My mother is an excellent cook, and I watched and learnt a lot from her. Once I got in a professional kitchen, it opened my eyes to some fantastic dishes and regional specialities.” What’s your favourite dish on the menu? “Our pizzas are superb; we hand-make our dough from scratch and all the toppings are fresh and prepared in-house. They are then cooked in a stone pizza oven, finishing them perfectly. Although it might be cliché, a simple well-made Pizza Margarita can’t be beaten. Too many people (notably English and American)

over-complicate pizza, in Italy we prefer to keep it simple and fresh.” What are your ambitions for Sapori? “Sapori is in its tenth year of trade and has done great, we have seen many businesses come and go, or use gimmicks and offers. We just offer fresh food, consistently good, in comfortable surroundings. We don’t serve fast food, just great food as fast as we can!” Would you like to open more restaurants in the future? “We would definitely open more businesses if the chance is there, but it’s about knowing the location and making sure the product is correct. It’s no good opening another Sapori on our own door step!”

Bringing a taste of Malaysia to the heart of Portsmouth David George meets the founder of Ammolite Café, Lisa Chong, to find out what inspired her to open her own Malaysian restaurant. What inspired you to launch Ammolite Café? I opened Ammolite Café in November 2014, as a housewife who likes to bake cake and cook. I’m originally from Malaysia, and I’ve always like to cook our local food to eat at home. I couldn’t find a restaurant serving Malaysia hawker food and birthday cake in Portsmouth, so I decided to take the plunge and open up my own restaurant.

What is Malaysian hawker food? Our dishes are authentic and the ingredients are mostly imported from Malaysia . They have a variety of tastes, mainly spicy, sweet and sour, with an emphasis on heavy taste. Which dishes are you most proud of? One of my favourite dishes on our menu is our Penang Curry Mee. Curry Mee is a noodle dish with a coconut milk curry gravy. There are many variations in Malaysia, but Penang Curry Mee is my favourite. Also, another favourite is our home-made Pan Mien, which is a Hakkastyle noodle.

My other big passion is baking and I’m very proud of our home-made birthday cake. It’s freshly-made with very soft and fluffy sponge, and fresh whipped cream and fruits. We can also make cakes to order, with two days’ notice. What are your ambitions for Ammolite Café in the future? My ambition when I opened the café was to allow more local people to try Malaysian food. We’re now growing our offering, with some more Asian dishes on our menu. I really want to encourage people to try something new and bring a taste of Malaysia to Portsmouth.
