Brenna Young Applied Journalism 1/15/12 How To Make Peach Shortbread Bar Cookies Everyone has those days where they are in a crunch and need to make a great dessert fast. This is a tasty, quick recipe that is guaranteed to leave guests wanting more and it only requires four ingredients. Step one: Take three cups flour, one and a half cups softened butter and three‐ fourths cup powdered sugar and mix together well. You should now have a dough‐ like substance. Step two: Take half the mixture and spread an even layer on a greased 9 X 13 pan. Step three: Bake the crust at 350 degrees for 15 minutes. I baked it at 335 for 15 minutes and the crust came out nice and flakey. Let the crust cool for five minutes after baking. Step four: Take a can (21 oz.) of peach pie filling and spread it evenly on top of the crust. The recipe notes that any fruit filling will work except lemon. Step five: Spread the rest of the crust on top of the pie filling. To make this easier I took chunks of the dough and flattened it with my hands and then laid it on the pie filling. Step six: Bake for another 30‐35 minutes or until top layer is golden brown. After cooling thoroughly you are ready to enjoy your peach shortbread bars.
