y fellow neighbors, business owners and colleagues:
I am proud to share with you the exciting changes for the 9th edition of the Bluegrass GreenGuide. Many of you are familiar with the publication that has been produced annually by Ben Perry and Bluegrass Greenworks. The GreenGuide serves as a directory of businesses, non-profit and government organizations that promote eco-friendly products, services and practices such as recycling, composting, reducing energy waste, and contributing meaningfully to our community. In fact, it is through the GreenGuide that I’ve found many of you since moving to Lexington in 2009. I am excited to announce that it is now published by me and my team at Bourbon & Beans. I’ve been an advocate for environmental lifestyle issues since I was just 8 years old. I fought for the removal of styrofoam cups from my father’s office - and succeeded! This mindset continued through my time in NYC where I established an environmental non-profit in 2006...and continues with this project. I was humbled when Ben approached me about publishing the GreenGuide. He has built an incredible foundation for a strong eco-movement in the Bluegrass and I am truly honored to take the reigns and carry it forward.
What does this mean for the GreenGuide? A minor name change Updated design Active social media (Like our NEW Facebook page!) Photos and stories focusing on green initiatives in our community Bi-annual publication in April AND October. Why? To keep the information current and relevant to our residents and visitors. Bluegrass PRIDE will merge the existing Bluegrass GreenBiz/ GreenGroups with their Live Green Lexington program and take ownership of the GreenGroups Quarterly Meetings. I’m excited to include all of the Live Green Lexington Partners (current as of March 10, 2013) in this edition, which is managed by Bluegrass PRIDE and to continue to build connections through our monthly networking event, Lexington Green Drinks. While this is the inaugural GreenGuide issue for us, I’m truly excited for the future of this endeavor. I welcome your ideas and feedback and look forward to working with you to create a wonderful resource for our community! Cheers,

by Michelle Aiello s a Funeral Director at Stith Funeral Home in Danville and Junction City, Ann Yager Hamlin knows that funeral services are as much for the living they are for the departed. And for many of the families she works with, moving on to the next phase is tied to concerns about the world we leave behind. Stith Funeral Home was the first Kentucky funeral home to be recognized by Green Burial Council. They remain one of the only funeral homes in the region to offer eco-friendly burial options.

As a third generation Funeral Director, Ann has a deep understanding of the emotional, physical and spiritual concerns of the people she works with. When her grandfather died, her mother took over the business at the age of 29. As a woman in a male-dominated field (and with two children and another on the way), she had to work especially hard to prove herself. After graduating from Nashville’s John A Gopton School of Mortuary Science in 2002, Ann quickly realized that she would also have to try harder to land a job. “After interviewing at dozens of funeral homes, I realized they weren’t open to what I wanted to do. So I decided to return home and continue the family business with my mother, who’d trained me all my life.” Ann’s primary goals are to educate the public, and to make sure they know all their options. Twenty years ago, her mother discovered a company that made biodegradable floating urns for water burials. She realized that she wasn’t alone in her thinking; and that it is possible to honor the memory of the dead while also keeping the environmental impact in mind. So what are the options for a “green” burial? “It really depends on how green you want to be,” says Ann. A funeral is an extremely personal service, and Ann makes a point to ask lots of questions and listen closely to the families she works with. “Green” doesn’t mean the same thing for everyone. Some people are more concerned with energy conservation. Some have questions about what chemicals leach into the ground. And others want to simply return to nature”. It also depends on the religious beliefs involved. If you’re an “ashes to ashes” type of person, says Ann, then cremation is a viable and environmentally sound option. She’s happy to provide a traditional urn, but also encourages people to use an object with a memory or an emotional significance attached. “I’ve seen gourds, teapots, all different kinds of things. We also have beautiful, simple urns that are Kentucky Proud.” If the family wants a viewing, it is necessary to embalm the body. But is it environmentally safe? “Embalming is basically the cleaning and preserving of the body. Since death is not always pretty, embalming fluid offsets the dehydration that death often causes, and makes the body presentable to loved ones. “The aspect that people take issue with is the formaldehyde – but most of it is absorbed by the cells, so contaminating the ground isn’t a huge concern.” Typically, a very small amount of formaldehyde is used in embalming - about 10 ounces for every two gallons of water.
spring/summer 2013 / GreenGuide:/ 9 When it comes to caskets, most cemeteries have strict rules. “Lots of places require the body to be sealed in some sort of outer container.” While wood boxes have been traditionally used, many cemeteries don’t allow them because they will disintegrate or sink over time. Many cemeteries use caskets made of cheaper composite materials or “particle board” that are definitely not earthfriendly. Ann encourages people to make sure they’re dealing with a licensed funeral director, as apposed to privately owned cemetery, who may have their own agenda. One of the cornerstones of eco-friendly burials is the absence of an outer container, or one that is specially made to break down naturally over time. Stith offers a certified organic pine box with natural rope handles. “We have a source from a sustainable forest in North Carolina. They’re entirely handmade, and every part is non-toxic.” For now, this option remains more of an investment than traditional caskets. Ann admits that anything not mass-produced is often more costly up front, but the end result is something the individual and the family can feel good about. And with all sustainable products, the price will drop as more people chose to use them.

When weighing out the environmental effects of the modern funeral with honoring the wishes of the deceased and their families, Ann stresses the importance of doing what feels right. “The ritual of putting loved ones to rest, of seeing them off to whatever you believe is next, is so important. So I ask everyone I work with to keep that mind, and to choose a method that truly honors who that person was.” While Stith Funeral Home is proud to offer many options for eco-friendly burials, Ann maintains that there is nothing wrong with traditional burials. “I offer those too, and respect any way people wish go with it. The job of a funeral director is ultimately to take care of the family, and to protect the dignity of the dead. If I’ve done those two things, I know I’ve done my job.”

T
hese days, an ever-increasing number of businesses are making the move toward sustainability. Not only because it’s the right thing to do, but because it has been proven to reduce carbon footprints, energy costs and even raise bottom line profits. In the not-so-distant past, arguments could be made that the cost of sustainable practices outweighed the benefit. But the fact is that adopting these practices does show direct results. Here are three things that a business can start doing right now to increase sustainability: 1. Preventative
maintenance for machinery, tools and equipment. If new mechanicals are not
in the budget, a strong preventative maintenance plan on current equipment will ensure proper operating condition, maximize warrantees and eliminate costly rushed repairs.
2. Native plant landscapes. Moving towards native planting will lower the water bill. It will also help ease the stress of storm water run-off on our municipal sewer systems. There are a number of local landscapers who can assist with the planning of native plant gardens and decorative landscapes. We are lucky to live in a beautiful Commonwealth with abundant plant life, so make the most of it! 3. Switching
to eco-friendly cleaning products. By now you
know that most traditional cleaning products are not only bad for the environment, but our health as well. There are a number of eco-friendly brands on the market that are biodegradable and free of harmful phosphates, chlorine, ammonia, and petroleum distillates. Many come in lightweight packaging that uses less plastic than traditional containers. And if you do some research, you’ll find that many cost the same (or less!)
than their traditional counterparts. These are some very simple ideas that are easy to incorporate immediately with little planning, budget and resource drain. But there is an even easier place to start, and that is educating and motiviating your entire team to change their behavior. Making everyone in your company aware that you are embarking on a sustainable journey together will build a stronger employee community strengthen the bond between that community and management. Being aware of excess water and electricity usage, implementing office recycling programs and even offering incentives for changes in behavior can all contribute to success. Weaving healthy lifestyle changes into our daily lives will prompt a positive cycle of change toward a sustainable future.

Why eat seasonal?

I
n our modern-day global economy, eating seasonally takes thought and consideration. Our grocery stores stock anything and everything that is available year-round. Chefs and restaurants mostly prepare whatever they want to create from an endless list of ingredients available from their suppliers. Eating seasonally is up to the consumer. But what about eating well isn’t in the hands of the consumer these days? Here in Kentucky, eating seasonally means waiting for summer to have fresh berries and waiting until winter to have all those sweet potatoes. When educating a group of eaters, I like to give this advice: “Hold that item in your hand. If it didn’t exist 100 years ago, put it back.” I think the same could be said for eating seasonally. 100 years ago, we didn’t have the global transportation we have today. Tomatoes weren’t always available in January, but cabbage and carrots were! Cucumbers and strawberries weren’t available in February, but potatoes and collard greens were! See where I’m going with this? Seasonal eating isn’t just about trying to go back in time to a simpler life. By eating
what’s growing seasonally in your area, you are cutting your carbon footprint by asking that fewer trucks, trains, and planes haul your food to you over an average 1,500 miles from field to plate. Over time, if we ALL considered our food purchases this way, we’d have a lot fewer environmental issues such as air pollution and soil erosion.

Another thing to consider when choosing to eat seasonally is how the food makes you feel (aka, how does food affect your health)?
