Don’t forget our feathered Friends As we gear up for another winter, now is a great time to start thinking about how we can all help birds to survive the winter. Frost, snow and ice can make finding food very challenging for birds, but putting out food is something we can all do. Whether you fill a bird-feeder with nuts or prepared bird food, or prefer to make your own bird food, your offering can mean the difference between life and death for birds at this time of year. However, throwing out whatever scraps you may have to hand onto your lawn isn’t always the best way to help. For example, birds cannot digest milk and cooked porridge oats can stick to their beaks. So to make sure you are doing your very best for your garden friends this winter, the British Trust for Ornithology (BTO) Garden BirdWatch has issued guidelines on how householders can help. 1. Recommended foods: Oil-rich seeds, such as sunflower hearts and nyjer Ground-up peanuts Finely grated cheese, beef or vegetable suet Chunks of windfall (especially) or fresh fruit Dried fruit (that has been soaked first) - note, can be toxic to dogs ... Mealworms Beef or vegetable suet-based ‘cakes’ Pinhead oatmeal or uncooked porridge oats 2. Foods to avoid: Soft fats and oils (can soil feathers) Dried foods e.g. coconut, uncooked rice (could swell after ingestion) Bread (nutritionally lacking, compared with other foods) Milk (birds are not adapted to digest milk) Cooked porridge (can stick to beak) 3. Provide clean fresh water: This is not only for the birds to drink but to help keep their feathers in good condition for insulation. 4. Don’t provide too much: Ensure that food does not go mouldy and clean bird feeders regularly as excess food can attract vermin. 5. Avoid substantial pruning: This is especially relevant for berry-producing vegetation such as holly and ivy that will continue to hold fruit long into winter. 6. Record what you see: Do this through the BTO Garden BirdWatch online, which gathers observations from the public, so that it can monitor garden birds every week of the year. Just by following these few simple steps, you could play your part to help birds this winter. Dr Tim Harrison, BTO Garden BirdWatch, said: “Research shows that providing food during winter improves the survival prospects of many species and can even boost breeding success in the following spring. Cold winters often occur in flurries and if last winter is anything to go by, then thousands of birds will race to our handouts during the next few months.” As well as helping your local bird population, looking after your feathered friends could also be beneficial to you, says Harrison. “Huge numbers of birds that are normally scarce garden visitors, such as Redwing, Fieldfare and Brambling, can pour into our towns and cities during cold weather - so autumn and winter is a great time to be an armchair birdwatcher. Research shows that interactions with nature can reduce levels of stress, so feeding birds can be a positive activity all round.”

How Hot Can You Handle? Growing Chilli Plants Chillies are a great plant for beginner gardeners to cut their teeth on. They require an average amount of care and can be grown indoors or outside, so whether you live in the city and grow on a patio or window sill, or have ample garden space, this plant is well worth a try and yields a delicious versatile fruit. The Scoville Scale Chilli heat is measured by the Scoville Scale. Chillies contain the chemical capsaicin, which stimulates the nerve endings in the mucous membranes, giving them a hot taste. The heat of a chilli can be affected by when it was harvested, as well as growth environment factors, such as the climate. The hottest varieties will often need the longest growing period. Different Varieties There is a huge range of chillies. Ring of Fire is a very hot cayenne variety. Cherry Bomb is fruity and medium-hot, perfect for pizza, pasta or spicy salad. Hungarian Hot Wax is an early mild chilli that produces large fruit all season. It is ideal in salads, or for pickling.

How to Grow When growing chillies, early sowing in January and February is the secret, to give your chilli peppers plenty of time to ripen. However they can be sown right up until the end of April. Chillies need lots of warmth to germinate, so it is wise to invest in a heated propagator for the window sill, or to use a warm airing cupboard for germination and to cover with cling film or a plastic bag. Sow chilli pepper seeds on the surface of a moist, freedraining seed compost and cover with a fine sprinkling of compost or vermiculite. Place the trays at 18-25C (64-77F) until they germinate. This will take seven to ten days. Transplant into growbags or pots about two litres in size. If you intend to grow them outside, gradually acclimatise them to outdoor conditions over a ten-day period. By pinching out the growing tip of the first flowering shoots you can promote more branches and increase your harvest. By keeping them slightly dry you stress them and produce hotter peppers. By mid-May it should be warm enough to put the plants outside, in a sheltered, sunny spot, or you can move them to a warm, sunny window sill or a heated greenhouse, conservatory or polytunnel. Keep the compost moist, but be conscious not to over water them. Harvesting Chilli peppers grown outdoors must be harvested before the first frosts. To store chillies, it is very simple after harvesting to air dry them for four or five weeks or to freeze them, although defrosted chillies will have a soft skin so are best used in a cooked dish. If you can make your plants survive the winter, the fruit yield will increase in the second and third years. At the end of the growing season, choose a healthy plant and cut it back to leave the stem and a few healthy branches. This plant will produce fruit earlier and more prolifically. LAYERED SPICED PUMPKIN PIE by Ashley 3 eggs separated 1/3 cup sugar 1 1/4 cups canned pumpkin 1/2 cup sour cream 1/2 tsp salt 1 1/4 tsp cinnamon 1/4 tsp ground cloves 1/4 tsp nutmeg 1/4 tsp ginger 1 tbs unflavored gelatin softened in 1/4 cup cold water 1/4 cup sugar 1 cup heavy cream, whipped 2 tbs confectioners sugar 1/2 tsp vanilla 2 tbs brandy 1 9-inch pie crust baked and cooled

PECAN PUMPKIN PIE by Blythe Pie Crust: Your favorite crust or Blythe suggests to use Martha Stewart’s Pate Brisee - pre-bake for 15 minutes in a a 450 degree oven Filling: 1 can pumpkin purée 3/4 c sugar 1/2 tsp salt 1 tsp ground ginger 1/2 tsp ground nutmeg 3 large eggs 3/4 c heavy cream 1/2 c milk 3 Tablespoon bourbon (Maker’s Mark) Whisk until smooth. Pour into the pre baked pie crust and bake at 350 for 55 minutes, until filling is set. Let cool.

Directions Beat egg yolks with 1/3 cup sugar until creamed. Add pumpkin, sour cream, salt and spices. Cook over medium heat, stirring constantly, until boil. Remove from heat and stir two minutes. Add gelatin and stir until dissolved.

Topping: 3/4 cup brown sugar 1 cup coarsely chopped pecans 3 Tablespoons melted butter 1 Tablespoon heavy cream 1-2 Tablespoons bourbon to taste

Beat egg whites until frothy. Slowly add 1/4 cup sugar and beat until stiff peaks form. Fold into pumpkin mix.

Sprinkle over the top of the cooled pie. Place pie under broiler just until topping begins to bubble, taking care not to burn the pecans. Cool and serve with whipped cream.

Take whipped cream add confectioners sugar, vanilla and brandy. Spoon half of pumpkin mix into pie shell. Layer half of whipped cream on top. Repeat layers. Chill 2 hours before serving.
