6 Best Herbs to Start Inside
We “Spring Forward” with daylight savings time Sunday, March 9th. The time to start herbs is now. Starting herbs from seed is probably the most frugal & fun way to begin gardening. It is also a great way to try out many herbs that would be too costly to buy as plants. For the same price as one herb seedling, you can often purchase multiple seed packets.
Basil: Sweet basil is a bushy annual, 1 to 2 feet high, with glossy opposite leaves and spikes of white flowers.
Basil leaves are used in cooking, imparting their anise (licorice) flavor to dishes. Many cultivars are available with different nuances of taste, size, and appearance, including cultivars with cinnamon, clove, lemon, and lime overtones, as well as purple-leaved types such as ‘Dark Opal’ and ‘Rubin’. One of the most popular herbs in the garden, basil adds fine flavor to tomato dishes, salads, and pesto.
Chives: Chives are bulb plants, although the bulbs are so tiny that you might not realize they’re there. These plants produce beautiful, globelike pink and lavender blossoms. A perennial, chives grow to about 18 inches high and thrive in Zones 3 to 9. Chives have been added to foods for nearly 5,000 years. Native to Asia, they were probably first used by the Chinese. Colonists brought chives with them to America.
Oregano: Oregano is one of the few herbs that tastes better dried than fresh. “Drying deepens the flavor
and mellows it, so it’s not as bitter,” says Mark Carter, proprietor of the Carter House Inn and Restaurant 301 in Eureka, California. Cut oregano in the morning, after the dew has dried. Hang it in small bunches upside down, or lay it on screens in a warm, dry place. Once the oregano has dried (the leaves will be crisp), remove the leaves from the stems and store them, whole, in a glass container. To preserve the essential oils, wait until just before using them to chop or crush them.
Sage: Culinary sage refers to a small group of the genus Salvia. These are evergreen perennial subshrubs
with woolly grayish leaves that add an musky, earthy freshness to foods. Spikes of purple/blue flowers appear in mid-summer. Sage plants bloom in mid-summer. They may bloom their first year, depending on size and site, but you are really growing the plants for the leaves. Allow the plants to grow unharvested for the first year, to become established. After that you can harvest leaves at anytime, although they are consider at their best before or just after blooming.
Thyme: Versatile and beautiful, thymes should have a place in every herb garden. All thymes are perennial
herbs with very small leaves and tiny flowers ranging in color from white through pink to deep rose-magenta. The creeping types, such as mother-of-thyme (Thymus serpyllum), will cover bricks and stones or low walls and can tolerate a certain amount of foot traffic. T. ‘Coccineus’ is a mat-forming cultivar with showy reddish purple flowers and bronze fall foliage. The bush forms are 6 to 8 inches high and have woody, wiry stems and branches.
Parsley: High in nutritional and medicinal value, parsley is so much more than a mere garnish. Parsley really
has a lot more to offer than just being the token garnish on a plate of steak or fish. This herb is an excellent addition to most recipes, is rich in vitamins and minerals (A, C, calcium, and iron), and fights bad breath. Parsley is a biennial grown as an annual; it will grow in Zones 5 through 9. You can choose from two parsley varieties: curly leaf and flat leaf.
