thepublishers We’re having a freakishly warm day just a week after the skies dumped, oh, about 37 inches of snow on the ground. It was actually more like 17 inches but once you crack a foot of snow, you might as well add a few more of them. This wouldn’t be the first time a pouty little country girl has been photographed on a front porch in her dirty bare feet. I could offer an explanation, an excuse, or a flat out lie, but we’re just a little worn out. Don’t get us wrong. There’s nothing prettier than a white fluffy blanket of snow on the ground. There’s nothing cuter than seeing your squealing kids eat bowls of snow cream in their undies while their wet clothes hang to dry near the stove. And there’s nothing more indulgent than huddling in for the big storm once the kids have gone to bed, feasting on “bread and milk.” Here’s to your health! Or, to your sickness. We’re assuming we had the flu. It wasn’t the messy kind where the laundry machine was running nonstop. It was just this mix of coughing, sinus pressure and body aches that lingered longer than the reputed 37 inches. The nice thing is things really slowed down for a few days.

Adam and Peyton (who are now back to pre-flu energy levels) were on such great behavior. We nicknamed them our Victorian children. You would walk into a room, they would slowly turn their heads to look at you with a newly matured face (a little gaunt, perhaps?), and then turn away. They didn’t fight. They didn’t fuss. They must have been composing 19th century American poetry in their heads. Thank goodness the color has returned to their cheeks. Thank goodness they are once again sparring over taking turns on the camera’s remote for this picture. Thank goodness for this freakishly warm weather. Go home, Pax. You’ve had too much milk. Enjoy! Balance You know you’re doing too much when you learn to brush your teeth with your left hand, not to increase brain power, but so you can dry your hair with your right hand. If February’s big chill and snow was tempered by cupid’s love, March’s tradition strives for balance between its rowdy lion and gentle lamb. Finding the perfect balance in our own lives is, for most of us, an ongoing quest, verging these days almost on virtue. Balance in wine is no different; it’s essential. We call a wine balanced when fruit, alcohol, tannins and acidity are in proportions that allow the wine to be neither too hot (alcoholic), flabby (not enough acid), mouth-puckering (due often to young or strong tannins) or sharply acidic. While balance refers to the interaction among many elements in wine, the most obvious to understand is that between sugar and acidity. Too low in sugar and a wine will taste tart; too high in sugar and it will be flabby and soft. A wine low in extract (flavor intensity) will be boring. If a red wine is high

in tannins (found in skins, stems and pips and where the most antioxidant properties come from) its acidity must be low or it tastes harsh. The less tannic a wine, the more acidity it can support. And a wine can tolerate acidity better if its alcohol content is higher. Temperature also comes into play with balance. Heat emphasizes the wine’s flavors and is the reason why drinking (good) white wine at cellar temperature, or warmer, allows you to taste its fruit and complexity more easily, but also why reds tasted outdoors in summer seem heavy or cloying. Heat will appear to intensify the alcohol, which is volatile, and can spoil the palate. Likewise, chilling can hides flaws in cheap wine. Odoardi, Savuto, 2006 – To me this under-appreciated wine epitomizes good balance. Savuto is a D.O.C. in Calabria, the toe of Italy’s boot, a rugged, poor region that is home to rustic reds and bowls of pappardelle pasta. Odoardi Savuto is a blend of weird-sounding, indigenous grapes: Gaglioppo, Greco Nero, Nerello Cappuccio, Magliocco Canino and Sangiovese. A bit of age

prevents the resulting wine from tasting too angular and gives it appealing complexity. The nose brings to mind dried prunes and raisons, in part the result of how it’s made, by using the Recioto method of drying grapes, similar to Amarone. Balance and complexity all for $14. Jean-Michel Guillon Burgundy If, in the most basic sense, a balanced wine is one in which all the components work together in harmony to provide not only an memorable nose and taste, but an overall experience, the Burgundies of Jean-Michel Guillon are the ambassadors of balance. From the Côte de Nuits in Burgundy’s north, Jean Michel’s wines are velvet in a bottle. That may be a bit simplistic since they range from Gevrey Chambertin to Chambolle Musigny, with different vintages reflecting different aspects of the burgundian terroir, but I’ve never tasted a bad one. In the wee hours of the morning in Roseland, with temperatures in the low 20’s and the skies a lackluster shade of grey, the folks at Rose Isle Farm are fixin’ to feed. Massie Saunders and Casey Smith crank the tractor, grab a couple shovels, and start prepping the cattle’s warm breakfast. Feasting on the spent beer grain from the Blue Mountain Barrel House in Colleen, these cows begin every day on the right hoof. “Casey and I started doin’ this roughly two or three years ago.” says Massie, the eldest of seven local brothers. “I been foolin’ with the beef part of it for about five years, but I been raising cattle for probably forty years.” Casey, who has a herd of his own outside of Rose Isle Farm, is really the brains behind the grains. “If you think about it from a nutritional standpoint, the elevated temperature of the food this time of year makes a big difference in the feed consumption,” Casey explains.

“Think of it in terms of calories. The calorie intake that you and I consume if we are outside, we have to increase to stay warm in the winter months. Well, it’s the same thing with the cattle. When the feed is hot, they need to utilize less calories in the course of 24 hours to survive.”

With the County’s economic focus weighing heavily on agriculture such as farming and animal husbandry for so many years, it seems fitting to pair this industry with our newest form of economic growth: craft beer. “I had been doing some work for Taylor Smack, over at Blue Mountain Brewery, in my Surveying and Engineering business,” says Massie, referring to Saunders Survey’s Inc, also based in Roseland. “I had heard that he was getting ready to build a brewery down here in Colleen. Before the footers were ever dug, we had the deal worked out.” After brewers like Smack have finished using grain for brewing purposes, the standard procedure would be to dispose of the so-called waste. “They’ve got to get rid of it, and most breweries pay a company to come in and get that grain away from their place,” explains Massie. “Well, when we started, we helped purchase containers for the brewery in return for them giving us the grain. We had a big investment starting off, and the deal is we keep it out of their way, and they continue to provide us grain.” High in protein and fiber, one could argue that these cattle have a healthier diet than some humans.

“There’s no hormones, no antibiotics. They’re grown with spring-fed water, hay that we have on the farm here, local corn. They’re just raised here in a good quality environment; they are not pushed or beat or chased all over the place,” says Massie, who understands their lifestyle is just as important as their diet.

“Docility in animals, the calmness, makes a tremendous difference in the quality of the meat. The daily interaction with the cattle, the calm environment, has tremendous effects on the end product. With purchasing the beef locally, we can take you back to the beginning of the feed stores, all the way to the end, and you’re eating the same product that our families are eating ... it’s in our freezer,” states Casey. “Know your food, know your farmer.” BRL MARCH 2014

After living in Paris for a decade, the move to Nellysford was a rough transition for Kay Pfaltz. It wasn’t the lack of taxis or abundance of farmland that got to her though. “I found no good bread, wine, cheese, or chocolate,” Kay remembers. “To me, these were the basic necessities of life!” So with little restaurant experience, the literature-professor-turned-writer opened the very shop that would fulfill her need for those Basic Necessities in 1997. “I always wanted to emulate the European mentality of not just dining, but of food and everything it stands for,” said Kay. “Food is comfort, ultimately, and that’s what we try to do here.” After her business partner, Judy Nelson, left the county, Kay found a new partner in Bev Lacey and Keith Dix, who purchased the shop in 2003 - a partnership Kay calls “a match made in heaven.” Bev and Keith (who also own and operate Blue Heron Farm) bought Basic Necessities right before they were married in 2004, as Bev was planning to move to Nellysford. “I wouldn’t have wanted to live here without Basic Necessities,” said Bev who has recently sold the restaurant back to Kay and new partner Sallie Justice so she could focus on farming full time. “It was a wonderful way for me to get integrated with the community and I’ve thoroughly enjoyed being part of it for ten years.”

Though Basic Necessities has changed hands several times over the years, the restaurant has always maintained one constant (other than Kay!), and that’s the sincere desire of its owners and managers to please its customers; its family. Mae Tyree, who has been working at Basic Necessities for 13 years - since she was in high school, learned to cook in the “closet-sized” kitchen. It is that dreaded time of year again … tax time. As the April 15th deadline approaches it is time to gather financial data, some of which could save you money if you own a home. Home ownership never looks sweeter than at tax time; here is a tax saving summary. Mortgage Interest; the largest tax break for homeowners is typically the deduction of mortgage interest. Interest paid on a mortgage up to 1 million (OR $500,000 if married filing separately) is deductible when used to purchase, construct, or improve a home. Qualifying homes can be non-traditional, such as a boat or RV, as long as it has cooking, sleeping, and bathroom facilities. Interest paid on a second mortgage or home equity line of credit, secured by a home, is typically deductible too. Mortgage interest on a second home within the 1 million limit could also be deductible. Even when renting out a second

home it may still qualify as long as the owner vacations at the property for at least 14 days OR more than 10% of the total number of days that it is rented. Points; points paid to get a better rate on a home loan are deductible. The deduction can be claimed the year that the points were paid as long as the loan was for a primary residence and the points paid were customary and within the usual range for the area. Points paid on a refinanced loan will most likely require the deduction to span into multiple years, i.e., over the life of the loan. Points paid on a loan for a second home will typically be amortized over the life of the loan as well. Property Taxes; real estate taxes are fully deductible. Check the annual statement from the lender for a breakdown of escrow payments to including property taxes. Be sure to get a copy of the settlement statement for the year that the property was

purchased because property taxes are prorated at settlement and a buyer may have pre-paid taxes upon closing on the home. Selling Profits; when selling a primary residence that the homeowner has lived in for two of the past five years, the sales gain/profit may be tax exempt up to $250,000 (or $500,000 if married filing jointly.) Tax relief may be provided to those who did not meet residency requirements in the event of hardships such as a change in health, employment, or an unforeseen circumstance. Unforeseen circumstances; hardships have caused many homeowners to have to restructure home debt or proceed with a short sale or even foreclosure. The lenders forgiveness of mortgage debt is known as canceled debt and it may be taxable income unless the Mortgage Debt Relief Act of 2007 is reinstated. That act, which previously provided exemptions for up to $2 million

Amazon, Zappos, and eBay have undoubtedly changed the way that folks - both young and old - decide what to buy and what’s a bargain. But there’s just something about antique furniture that you want to see, touch, and smell in person. Even so, antique shops like Covesville Store Antiques were not immune to the economic downturn of the last few years. Rick and Sarah Ovenshire, longtime owners of Albemarle County’s Covesville Store Antiques and recent buyers of Nelson County’s Tuckahoe Antique Mall, attribute their success to reasonable prices and hard work. “The secret to us keeping our heads above water and doing well in a bad economy has been low markup,” said Rick. “In our business, you have to sell a ton of volume to make a living. People don’t really need antiques, but they want them – if they are extreme values.” And it doesn’t hurt that the Ovenshires’ business came of age at the dawn of internet shopping, either. Even before they had a physical shop, they were one of the most successful sellers of antiques and art online, via eBay. Rick says they got through the lean years from 2008 to 2010 by focusing on advertising and working the web (including eBay and Facebook) as hard as possible. Now the couple and their store have come out on the other side with big plans for 2014. continued on page 26

Sarah Ovenshire will have a new walkway to shovel the next time it snows. She and husband, Rick, are expanding their antiques business in Covesville to the old Tuckahoe Antique Mall in Nellysford.


“Over the last few years or so, we have outgrown The Covesville Store,” Rick said, adding that they have had to turn away dealers simply for lack of space in the 4,000 square foot retail space they opened in 2004. “A few months ago, we rented a large barn from a neighbor where we have over 100 pieces of antique furniture being stored that is for sale online, but people can’t really see it in person.” Which just wouldn’t do. So when the former owner of the Tuckahoe Antique Mall stopped by the Albemarle store in January offering the Overnshires a chance to purchase the Nelson County landmark, the couple jumped at the chance. Not only will having two buildings give them more space for their inventories, which can be marketed together, but the space was more than they could have imagined.

“We were both amazed at how nice the building is, how beautiful the setting is, and how well everything has been maintained,” said Rick. “We literally made them an offer before we left.”

Fans of the Tuckahoe Antique Mall (now being rechristened “Tuckahoe Antiques”) should not fear the change - Rick says he and his wife plan to figure out what works well and keep doing it, only bringing over some of what works from Covesville to make Tuckahoe better and stronger. Rick said that Tuckahoe Antiques will eventually evolve into a group shop with fewer, more serious dealers and emphasis on value, quality antiques, and original art. “We want to have customers walk in the front door and say, ‘WOW!’” said the new owner. “We want to hear them calling their friends, telling them where they are and that they have to come check it out. We want to be open seven days a week; we want to increase the building’s curb appeal… we want to market the antique store along with the great restaurants, specialty stores, breweries, and wineries [in the area] so that people intentionally plan on visiting us.” BRL

When Robyn Keenan-Jones from Corkscrew Racing contacted Cardinal Point Vineyard grape-grower and wine-maker, Tim Gorman, about hosting the Wine Lovers 5K for Valentine’s Day, he agreed they’d pair well together. “I just didn’t want to be Cupid,” says Tim, who will also be running the race. In honor of the holiday, Robyn and Tim had coordinated with Henry Graff, who works for Cardinal Point and also WVIR-TV (NBC 29), to be in the race as a real-life amorous archer. “He will be cheering on people and get them motivated, maybe shooting them with arrows,” Tim continues. And, although Cupid may no longer be in attendance, there will still be plenty of entertainment. “We promote that it’s more than just a run, it’s an event,” explains Robyn. “Our post race party has live music, we coordinate with a local food vendor to allow runners to preorder food so they can stay longer and enjoy the music.” Even though they just acquired their LLC about a month ago, Robyn and her husband have actually been coordinating these events since 2010. “Autumn Toast 5K at Barren Ridge Vineyards was our first race,” says Robyn. As for the origin of the initial idea, “Actually it was my husband; he’s a Director, City of Waynesboro Parks and Recreation. He also is a runner, and he was running with some buddies on

Down with the Predator For quite some time, I have listened to and participated in the quarrels, tribulations and downright bellyaches of sportsmen who attribute the supposed waning population of quail, turkey, rabbit and other small game to the predators found in the Blue Ridge – mainly the fox, bobcat and coyote. In short, it’s time to set the record straight. Within the matrix of this half truth lies a much more formidable predator that continually upsets the super sensitive balance of ecosystems worldwide. Like the pendulum of a clock moving back and forth throughout history, man’s blunders and miscalculations enacted on nature oscillate between destructor and protector – sometimes actually being both (as is the case here). Invariably our utopian wildlife dreams may need a shot of natural realism java to understand that many, many years ago, the balance of nature was no less than perfect for both predator and prey. I guess the short of this equation is yes, these predators do prey on the aforementioned animals, but the ever so sensitive balance never swayed so heavy in the favor of the predator until man moved onto the scene. Oh what a tangled web we weave … When we destroy native fauna and sow non-native species for whatever reason, the end result to an ecosystem can be devastating. The introduction of fescue into farming was perhaps one of the biggest bombshells that rabbits and similar game have ever faced. Reasons vary from it being very low or absent in their diets (often chosen as a last resort), to the presence of a dense lower growth that does not permit these animals to move freely beneath the canopy and thereby evade predators. Coupled with its naturally invasive nature which chokes out native species, fescue alone has been cited as the culprit for a huge loss in small game. Once again, native spe-

cies which have high canopies, mostly open understory and highly sought after seeds naturally enhance and protect all facets of an ecosystem. I consider that the worst enemy of these animals that practically ALL of us are directly responsible for lies in the very bowels of our nature as humans – mainly a clean & safe residential area. In the minds of just about every homeowner is a vision of their property with nicely mown lush green lawn, neighboring forest void of any briars and weeds and long flowing fields of fescue rolling in the breeze. The mower, the bush hog and the weed-eater have destroyed more habitat for these sought after fowl and other small game than any predator could catch in a hundred millennia. Even when we wield the newest arsenal in hunting, the ‘food plot’ or man-made food source specifically planted for hunted animals, in the absence of tall ‘cover’ predators can locate and secure prey with relative ease – to the extent that the minor stature of a tiny field mouse is easily exposed to the gaze and sharp talons of a Red Tailed Hawk. Unfortunately, many will only be able to marvel at the Appalachian stage and prey animals where these predators stalk – rarely seeing them due to their nocturnal nature. But to be an eyewitness of a predator fluidly moving through these Blue Ridge Mountains with both stealth and precision during a successful hunt is a sight that I will not soon forget – one that I would love to not only share but show my son Jack firsthand during a hunt deep in the Appalachia. And the thought of only being able to see a bobcat in the Natural Bridge zoo is both nauseating and infuriating to me. Could never happen here? Hmm. Remember the herds of MILLIONS of buffalo ranging the Great Plains? Me neither …

asktheDr. By Dr. Charles Cole Afton Family Medicine Dear Dr. Cole, I switched to diet sodas in an effort to lose weight, but I have not lost any, and now I hear that diet sodas are bad for you. What’s the deal? Good job in trying to make healthier choices. Sometimes things that seem logical and make sense don’t turn out that way. Lots of people drink diet sodas in an effort to lose weight and be healthier, but studies have shown that this does not work. Studies show that those who drink diet sodas everyday consume more calories each day from solid foods. Over a 10 year period, diet soda drinkers had a 70% greater increase in waist circumference than those who don’t drink them. It isn’t the diet sodas that caused weight gain, but consuming more daily calories caused weight gain. Some of this may be due to the intense sweetness of artificial sweeteners and cravings for other sweet things. Some may be due to psychological reasons where we think we can get away with eating more because of the diet drinks. Drinking diet sodas daily may increase the risk of metabolic

syndrome and diabetes. These conditions increase the risk of heart disease and stroke. Some artificial sweeteners have been linked to headaches. Drinking diet or regular sodas increases the risk of tooth decay due to the acids they contain. Daily soda intake may increase the risk of developing depression. Women who drink colas tend to have lower bone density compared to those who avoid sodas. The best calorie-free drink is good old water. This may not seem very exciting but it is the perfect liquid. It may take some time to get used to drinking water, but before long the sodas will taste too sweet and you won’t want them anymore. I encourage you to go 2 weeks without soda. I think you’ll like the results. And remember to make healthy food choices and get regular exercise. After all, exercise is medicine! Dr. Charles Cole is a licensed medical doctor based in Afton. Mental Discipline The Sochi Olympics will be over by the time you read this, nevertheless, I can’t help but mention how enjoyable it is to watch the competition and learn about the athletes. One of the aspects I admire is the athletes’ dedication to their craft. The long hours of training, self-sacrifice and discipline, by choice, over years of time. We have been discussing in the 2014 BRL monthly issues strategies for life long health. And one of the characteristics for good health is mental discipline. It is the discipline to stick to an exercise program, the discipline to make nutritious food choices and the discipline to be pro-active about your health. It is a challenge for the best of us and so easy to get side tracked. It may be a stressful day and the entire bag of Cheetos is demolished. Or, a vacation throws you out of your exercise routine. What the Olympic athletes have that you may not have (yet) is a team to keep them practicing, feed them the right foods

and support them. However, it is ultimately the athletes who must possess the will and desire to practice to achieve their goal. When you watch Olympic or professional athletes- all who train at the highest level- what is it that enables an athlete to beat his/her opponent on any given day? Mental focus and mental discipline play a huge part. The ability of that athlete to put all the pieces of his/her training in place to culminate into a win. We make dozens of daily choices that concern our health each day. I am not saying give up all vices, however, make conscious choices about the amount you eat, keep track of your exercise program, push yourself to exercise harder(with proper training) and more frequently and get a team to support you. The team could consist of your partner or spouse, friends, doctor, physical therapist and personal trainer. We all need support to stay on track. A Somali proverb states: “The key to a healthy body is a good head.”
