As you peruse the Christmas 2014 edition of From Our Hands to Yours, you are going to notice that it is filled with recipes with exotic names. Take a look at the list of goodies on the facing page, and you will see an amazing array of goodies that do not sound like meat and potatoes. In fact, the more exotic the name, the yummier the recipe. Last year, as we did our annual Countdown to Christmas, my midweek blog posts were titled “Christmas Around the World”, and I discovered that with each stop we made along the way, the more everyone talked about their favorite childhood memories. Since each stop focused on the celebration, the tradtions and the food, it was only natural that we all began sharing our favorite food memories from the holidays. There is nothing that can trigger a memory better than a familiar scent, and the smells of baking apples, tangy dishes and crisping cookies can transform you instantly to your youth. For this year’s ezine, I asked all our contributors to share their favorite recipe that had an ethnic twist on it and their memory of that food. As you can see, we have a wonderful selection to try. This gives us all a chance to try some of the recipes of our friends and fellow artists. While you enjoy all these goodies, spend some time going through the artist and designer’s studios. You will find handmade soaps, jewelry, dish towels, scarves, lotions, baby items and so much more. We make everything we offer by hand, and we are proud of our craftsmanship, which makes handmade a great value. INSTRUCTIONS --

This recipe is a “Healthy version” of one of my favorite Holiday recipes from my childhood, “Chocolate Chip Coffee Squares”. Being forever on a diet and now having food sensitivies, I decided to figure out how to remake this recipe for me now. The way I make it, it is Sugar-Free, Gluten-Free, Low-Carb and DairyFree!! - (The original recipe was already Dairy-Free!) I like it - maybe some of you will want to try it!!

1. In Larger mixing bowl, start with the first 3 Moist ingredients: Coconut Oil (or Butter), Pumpkin, 2 Eggs - mix well with either a Fork or Whisk so all is blended

I have been reading up on the nutritional benefits of Coconut online - so this recipe has Organic Extra-Virgin Coconut Oil, Organic Coconut Flour and Unsweetened Coconut Flakes in it! Preheat Oven to 350 Degrees INGREDIENTS -Moist Ingredients: - 5 Tablespoons Softened Coconut Oil (softened Butter can be used instead if you want it) - 2 Tablespoons Pumpkin (from a can) (Benefits: High Fiber, High Vitamin A, Low Carb) - 2 Large Eggs - 1/2 Cup Coffee (I use Organic Fair Trade Cafe Pajaro that I buy at Trader Joe’s) Dry Ingredients: 1/2 Cup Organic Coconut Flour (Benefits: High Fiber, Low digestible Carb, Gluten Free, HigH Protein Flour, Nourishing Fats, Heat-Stable) - 1/2 Cup Almond Meal - 1/4 Cup Whey Protein Powder (I have Jarrows Caribbean Chocolate Unfiltered Whey Protein concentrate - not treated with growth hormone - rBST) - 1/2 tsp Baking Powder - 1/2 tsp Baking soda - 2-3 Tablespoons Cocoa Powder (I have Trader Joe’s Unsweetened Cocoa Powder that is made from 100% Tumaco Cocoa Beans from southern Colombia) - Dash or 2 of Cinnamon - Dash or 2 of Pumpkin Pie Spice - Pinch of Ginger Powder - Pinch of Sea Salt (because of pumpkin)

In another bowl put a Sifter or Fine Mesh Strainer - and then put in the Sifter or strainer these Dry Ingredients: Coconut Flour, Whey Protein Powder, Baking Powder, Baking Soda, Cocoa Powder, Cinnamon, Pumpkin Pie Spice, Ginger Powder and Sea Salt - and if using powdered Stevia Extract, that too. 3. Take the Sifter or strainer and Sift these dry ingredients in it into the Larger Mixing Bowl that has the Moist Ingredients in it. 4. Then with a Fork or Whisk, Mix up the above Dry Ingredients with the Moist Ingredients really well though do not beat too heavy - just make sure they are Mixed Very Well - then add in the Almond Meal and whatever of the Options you want in them (any chocolate Chips added make the Muffins or Squares very sweet and very chocolate-y) - then put in the 1/2 Cup of Hot Coffee - and again Mix Very Well. Makes kind of a thick, rough Batter. 5. If making Muffins - Grease the Muffin Tins with either a little bit of Coconut Oil or Butter - I use this recipe to make 6 Large Muffins; if making Squares - Grease the Baking Dish or Sheet with a little bit of Coconut Oil or Butter. 6. Put the Batter in the Greased Baking Dish (whichever you choose) - Bake for 15 to 20 Minutes at 350 Degrees - when done check with wood food pick to make sure it comes out clean (with nothing sticking to it). I Call these “Power Muffins or Squares” because with Whey Protein Powder, Coconut Oil, Coconut Flour, Pumpkin - and Chia Seeds if you add them - they are High in Nutrition, High in Fiber and a Source of Energy - a Homemade, Healthy Holiday Dessert both for Holiday Celebrations - and easy to carry with you for meals-on-the-go!!

Sweetner: - 1/2 to 3/4 tsp Organic Stevia Extract (my personal preference) or - 3/4 Cup Organic Raw Agave or - 3/4 Cup Organic Raw Honey Options: - 1-2 Tablespoons Chia Seeds (Adds Fiber, Omega-3’s, Essential Fatty Acids, Antioxidants and Protein) - 1/4 cup Unsweetened Coconut Flakes - High-Cocoa Content Chocolate Chips Page 3

Popovers Jo of Umeboshi shared this yummy recipe with us. This recipe is a special treat I make for overnight visitors. They do have to get up and eat them while they are hot!

These popovers are the best ever! Please follow the instructions EXACTLY if you want unforgettable popovers. You will need: • 1 heavy duty popover pan. The thick and tall cups will hold the proper heat and create the tall popovers with the crusty mushroom top! •

Exactly 1 1/4 cup of unbleached white flour

3 large eggs at room temperature (farm eggs are amazing and yellow!)

Exactly 1 1/4 cup of milk at room temperature

2 tablespoons of good butter divided into six portions

1 tablespoon of melted butter

Get all of the ingredients to room temperature and preheat oven to 400 degrees. Lightly coat the pan with vegetable oil and place the pan in the hot oven to get nice and hot for a couple of minutes. Then place a pat of butter in the bottom of each cup and return to the oven until you can smell the butter and it gets bubbly (1 minute). Green Glass Dangle Earrings Sunny Yellow Glass Pendant This glowing yellow handmade dichroic glass oval cabochon pendant is like a sunny mountain morning you can wear on your neck! The pendant measures 2 inches tall (5cm), including the bail by 3/4 inch wide (2 cm). The long oval shape is embellished with shimmering adventurine green leafy shapes and smooth graceful limb-like lines! Page 5

These jazzy little dangle earrings are handmade from dichroic glass and twisted copper wire! The fresh Kelly green accents at the ends of the droplet shaped cabochons are accented with lime green Swarovski crystals, the color of peridots.

While the oven is heating, mix the ingredients (except the 6 pats of butter) in whatever contraption you have that will cream everything well. (This is hard to do by hand.) Fill the bubbly cups about half full or until the batter is gone. Bake at 400 degrees for 20 minutes then turn the temperature down to 300 degrees and bake for 20 more minutes. They should be slightly crunchy on the top. *Here is the best ever spread to use: mix some fresh sour cream with good fruit preserves in a small bowl (to taste). Plop spoonfuls into the piping hot turnovers and there you are!

Cream the butter and confectioners sugar, beating until light and fluffy. Beat in vanilla, crushed anise seed and cinnamon. Stir in flour. On a lightly floured surface, use a floured rolling pin to roll out dough to 1/4 inch thickness. Use a Westie or terrier-shaped cookie cutter to cut out cookies (or trace a terrier pattern onto parchment paper and use a paring knife to cut around the pattern). Transfer cookies to baking sheets lined with parchment paper. Sprinkle lightly with granulated sugar. Chill cookies 30 minutes before baking. Preheat oven to 375 degrees. Bake cookies 5 minutes, reduce heat to 300 degrees and bake 10 minutes more. Remove from sheets and cool on wire racks. Decorations: Add holly leaves and berry shaped candy decorations at the neck before baking, or use colored icing after the cookies have cooled. Yields about 3 dozen cookies.

2 cups all purpose flour pinch of salt 1 tsp. cinnamon 1 tsp baking soda 3/4 cup vegetable oil 1 cup sugar 2 eggs 2 tsp vanilla or almond extract 1/2 cup chopped walnuts 1/2 cup semi-sweet chocolate chips 3 cups apples, peeled and sliced confectioners’ sugar, to sprinkle raisins, optional 1 - Sift flour, salt, cinnamon, and baking soda together and set aside. 2 - Using a wooden spoon only, mix oil, sugar and eggs. 3 - Add vanilla or almond extract, nuts and chocolate. 4 - Mix well. 5 - Add flour mixture and blend well. 6 - Fold in apples. 7 - Mixture will be very thick. 8 - Pour mixture into a greased tube or bundt pan 9 - Bakeat 350 º F. for 1 hour or until done. Sprinkle top with confectioners’sugar when cool.

1 2/3 c. dry breadcrumbs (I use whole wheat) 2 – 3 Tbsp. freshly grated Parmesan cheese 1 tsp. dried oregano 1 tsp. dried parsley 1/4 c. butter How to: 1. Bring large pan of salted water to boil. Break the cauliflower into small florets and cook in the boiling water for 3 minutes. Don’t overcook! Remove from heat, drain well, and transfer to a large, shallow ovenproof dish. 2. Melt 1/4 c. of butter in a small skillet over medium heat. Add the sliced mushrooms, stir to coat and cook for about 3 minutes. Remove from heat and add to the cauliflower. Season with salt and pepper.

3. Combine the breadcrumbs, cheese and herbs in a small mixing bowl. Sprinkle crumbs over the cauliflower and mushrooms. 4. Dice 1/4 c of butter and dot over the crumbs. Place dish in a preheated oven, 450 degrees, and bake for 15 minutes or until the crumbs are golden brown and crisp. This recipe has been shared with us by Catherine of Shadow Dog Designs. My mom used to always serve cauliflower at Thanksgiving and Christmas, but it was always overcooked and slathered in a cheese sauce. When I began cooking the holiday dinners, I wanted to include a cauliflower dish, but something a little more “upscale” and tasty. I ran across this recipe in a vegetarian Italian cookbook many years ago, though it looked good, tried it and it has been a traditional dish since. Think my Mom would have liked it, too! Page 12

6-10 Large Potatoes, peeled and cut into cubes 4-5 Ribs of Celery chopped into thin slices 1 large onion, finely chopped 1 very large (51oz) can of clams packed in natural clam juice 1 qt whole milk 1 tsp. salt Pepper to taste 1 pt. half and half 2 pkgs. (4 oz) Idahoan Butter and Herb or Home Style Mashed Potatoes Finely chopped parsley Paprika In a large 6 Qt. Crock Pot add the first 7 ingredients. Be sure to add the entire can of clams, juice and all. Turn the crock pot on low for the entire day or start later and turn the crock pot to high. You could also precook the potatoes but not until they are done. Crisp would be better. Barely cover the potatoes and be sure to add the cooking water to the crock pot. Proceed for an even shorter cooking time. The chowder will be thin when the potatoes are done. Now add the pt. of half and half and the 2 pkgs. of Idahoan mashed potato flakes. Stir until all are well combined. Continue cooking with the lid off for 10 – 20 minutes while you taste and adjust the seasonings to your liking. Be sure to put a pat of butter in each bowl, sprinkle with parsley and then with paprika for pretty red and green Christmas colors.

Christmas Table Runner This handmade table runner is quite large. It is a gorgeous piece of fabric with the traditional reds and greens, poinsettias, pine cones, berries, and This little ceramic turkey cream pitcher can look very festive on a side table or shelf with a small ar- flowers. The main design appears on both ends rangement of flowers. It just adds a sweet nostalgic with small flowers and berries on the green background making up the center. This clam chowder is our traditional Oregon Coast Christmas Eve Supper and is served with a delicious tossed salad heaped with bay shrimp, a nice crusty bread and a crisp wine. Don’t forget the Christmas dessert and coffee. It’s so easy and unhurried. Then, next day, I can concentrate on our big traditional Christmas dinner. Finally, I must brag a bit. I won a clam chowder cook off with this recipe. I had to make it in my camping trailer, so I came up with the easiest way to make it for a large crowd. Bon Appetite

Last December my family and I moved to Portland, Oregon. We arrived here on December 21st without a long term place to live, instead staying in a weekly rental while we explored neighborhoods and options. We decided to celebrate the move, the winter solstice and general holiday season with a lovely meal on Christmas Day. We are all vegetarians so the traditional main course was out of the question. While surfing the internet I came across a recipe on chow.com that included a photo of what appeared to be a delicious stuffed acorn squash. We tried it and it was such a hit that we kept eating it every week until squash season ended. I am so excited that fall is here and we get to start eating it again! Ingredients: 3 medium acorn squash (about 1 1/2 pounds each), halved lengthwise and seeds removed 3 tablespoons unsalted butter, melted 1 tablespoon packed dark brown sugar 1/2 medium yellow onion, finely chopped 2 medium shallots, finely chopped 4 celery stalks, finely chopped 1 tablespoon minced fresh thyme leaves 2 cups cooked wild rice mix 2/3 cup pecans, toasted and finely chopped 1/4 cup dried cranberries, finely chopped 1 teaspoon kosher salt, plus more as needed 1/2 teaspoon freshly ground black pepper, plus more as needed Instructions: Heat the oven to 450°F and arrange a rack in the middle. Place the squash cut-side up on a baking sheet, brush 1 tablespoon of the melted butter over the tops and insides of the squash halves, sprinkle with the brown sugar, and season with salt and pepper. Roast in the oven until just fork tender, about 25 to 30 minutes.

This handmade boho-chic bracele was created on silver plate stainless steel memory wire and will fit any sized wrist. It will go around an average size wrist approx. 3.5-4 times. I designed it with glass beads from India utilizing a variety of colors, shapes, textures and finishes. And because this bracelet features beads from India I call it “Bangleadesh.”

Meanwhile, place 1 tablespoon of the melted butter in a large frying pan over medium heat. When it foams, add the onion, shallots, and celery, season with salt and pepper, and stir to coat. Cook, stirring occasionally, until just softened, about 6 minutes. Stir in the thyme and cook until just fragrant, about 1 minute. Remove from the heat and stir in the rice, pecans, cranberries, and measured salt and pepper. Divide the rice filling among the roasted squash halves (about 1/2 cup for each) and drizzle the remaining tablespoon of butter over top. Continue roasting until the squash is completely fork tender, the edges have started to brown, and the filling is heated through, about 20 to 25 minutes. The wild rice mixture can be made up to 2 days ahead; keep it refrigerated in an airtight container. You can make the stuffing up to 6 hours ahead; keep it covered in the refrigerator. Page 16

Ingredients: 1 bag red potatoes, cleaned, boiled and drained 1 pkg bacon, fried and crumbled 1 bag shredded mild cheddar cheese 1 bunch green onions or chives, sliced 1 stick butter, melted Sour cream 9x12 baking dish Preparation: Red Potatoes – wash and clean potatoes leaving the red skin on. Cut them into quarters or about inch size cubes. Boil until fork tender and drain. Bacon – Fry bacon and crumble it up. Green onions – Rinse and slice. Butter - Melt butter on low in a sauce pan or place in microwave for 1 minute. Assemble: Place cooked potatoes in bottom of baking dish. Add a layer of crumbled bacon. Add a layer of sliced green onions or chives. If some don’t like onions, put them only on half of the dish. Drizzle enough melted butter over potatoes for your taste. Add shredded cheese on top to taste. Bake at 400 degrees for about 25-30 minutes or until cheese is melted and casserole is hot. Serve onto plate and add a dollop of sour cream on top, if desired.

This is a recipe that has been added to our holiday dinners. One of our 4H moms, Tellie, brought this casserole to a holiday feast about 20 years ago. It was a big hit and everyone loved it. And it’s so easy to make. We have added it to our holiday traditions. It is always great around Thanksgiving, Christmas and Easter feasts, but can be a “one meal wonder” too. This recipe is great to add chicken or beef to for a great tasting casserole any time of year. Anything you can think of to put on a baked potato would be great to add to this casserole! Hammered Copper Metal Bracelet

6. Bring to boil in saucepan.

This lovely handmade copper cuff is layered with a strip of nickle silver and a tiny flower held with a rivet. I cut a 1 1/2� x 7� piece of heavy gauge copper, and hammered it into shape and hand form it . I change the color of the copper with the heat of a torch and seal it with a clear coat to preserve the color. The disk for the flower is copper only ,it will change color with time .

7. Remove from stove, add 1 t. vanilla and 1/4 t. salt. 8. Pour into dishes and cool. You have to wait now!

Directions Preheat oven to 425 degrees F. In a small saucepan combine the water, butter and salt and bring to a boil. Reduce the heat and add the flour all at once and stir it vigorously with a wooden spoon. Cook until the mixture has formed a ball and has a slightly sweaty sheen to it and it has pulled away from the pan. Transfer the mixture to a mixing bowl and let cool for 3 to 4 minutes. The mixture does not have to be cold, just cool enough not to cook the eggs when added. Using an electric mixer or lots of good old-fashioned elbow grease, beat in the eggs 1 at a time. Do not add the second egg until the first is fully incorporated. Add in the cinnamon and beat for another second to combine. Transfer the mixture to a pastry bag equipped with a large straight tip and pipe 1-inch balls onto a sheet tray lined with parchment paper. When done dip your finger in water and smooth the top of each ball where the pastry bag released the dough. Be sure to leave at least 1-inch between each of the balls. They grow! Bake in the preheated oven for 20 to 25 minutes, rotating the tray halfway through the cooking time to insure even cooking. When done, the puffs should be light, airy and dry inside. Cool on a rack. The timing can be hit or miss depending on your oven. When ready to serve, poke a small hole in the bottom of the profiterole and fill with whipped cream that has been mixed with brandy and a tsp of sugar, using a pastry bag to fill. For Chocolate Sauce Bring a saucepan with 1-inch of water to a boil. Put the chocolate in a metal or heatproof glass mixing bowl and place on top of the saucepan with boiling water. Pay careful attention that the mixing bowl does not touch the surface of the boiling water. Add the rest of the ingredients and stir until the chocolate has melted and everything is combined. This is a pretty quick process, once the chocolate has melted remove it from the double boiler set up. Spoon over the filled profiteroles. I sometimes just pick up the profiterole and dip into the chocolate sauce - you get better coverage! Also, it’s always great to have left over chocolate sauce heated up when you serve, so guests can add more if they want. Decadent for sure! Page 22

Ingredients: 1 pkg. puff pastry sheets (like Pepperidge Farms brand) 3 -4 tbs. of toasted bread crumbs with butter 3 tbs. of sugar 1 tsp. of cinnamon 1 can of cooked apple slices 1/4 cup of golden raisins. 1 beaten egg (to spread onto the strudel) powdered sugar Peel off about 3-4 sheets of the puff pastry dough on a floured kitchen towel so that it is easier for you to transfer the rolls onto the baking sheet Sprinkle the puff pastry with toasted bread crumbs, cut up apples, cinnamon and sugar. Sprinkle with raisins. Roll in the long sides of the of the pastry. Press the ends of the roll so that the apple juice does not run out.

Place onto a buttered baking sheet (or use a paper baking sheet)

Blooming Bath Tub Truffles with cocoa butter and mango butter will soothe that dry skin and add the mild scent of chocolate without the calories. Toss one tub truffle into your warm water bath and it will slowly melt, adding moisture to your skin. Relax for about 20 minutes and let the butters do all the hard work for you. Mom’s Little Cheese Cakes Mary of Pretty Gonzo shared her popular dessert recipe with us. 24 cupcake liners (cut in half for 12) 24 Vanilla wafers 2 pkgs (8 oz.) of softened cream cheese 3/4 cup of sugar 2 eggs 1 Tbsp lemon juice (or one teaspoon of lemon flavoring) 1 teaspoon vanilla 1 can of fruit filling Line cupcake pans with liners and place a cookie in the bottom of each. In a small bowl, beat cheese, sugar, eggs, and flavoring until fluffy. Fill the liners about 2/3 full. Bake in preheated 375 degree oven for 15 to 20 minutes (until set). Test with toothpick. T op each miniature cheese cake with 1 teaspoon of fruit filling. Chill the cheesecakes.

Prepare the Filling

Grape Leaves Kev of KevsKrafts offers up this unique recipe for our enjoyment. We call these “grape leaves” and though we do not make them for the holidays we do make them from fresh picked leaves from our property in the summertime for my wife and brother inlaws birthday family gathering. Kind of a tradition they have done since they was kids. We eat them as a main dish and dip them in ketchup. These small bundles of meat and rice wrapped in grape leaves are a favorite dish in Greece. The name comes from the Turkish word “dolma” meaning “stuffed.” They are time- and labor-intensive to make, so the recipe is for a pretty large quantity. They can be stored in the refrigerator for several days, or frozen. Ingredients

Soak the rice for 10 minutes in hot water and drain. (Alternatively, sauté the rice with the onion.) Sauté the onions in 1 tablespoon of olive oil until translucent, not browned. In a bowl, combine the onions, ground beef, rice, remaining olive oil, dill, mint, juice of 1 lemon, and pepper. Mix well by hand. Filling and Rolling the Leaves Gently separate one leaf and place it shiny side down on a work surface. Place a pinch (up to a teaspoon) of the filling on the leaf at the point where the stem joined the leaf. Fold up the bottom of the leaf over the filling, then each side inward in parallel folds, and roll up the leaf. Roll should be firm, not tight, as the filling will expand during cooking. Repeat until all the filling has been used. Cooking the Stuffed Grape Leaves Because the leaves on the bottom can burn while the filling cooks, put a plate or wooden souvlaki skewers in the bottom of a heavy-bottomed pot . The plate should fit as closely as possible to the sides. If there are unused leaves, or leaves that were torn and not used during the filling process, put them on the plate or on top of the skewers.

1 jar of large grape leaves in brine (about 60-75 leaves) or about 180 small leaves 8 cups of water 2 pounds of lean ground beef 1 cup of uncooked short-grain rice 2 medium-large onions, finely chopped 5 tablespoons of olive oil 1 bunch of fresh dill, chopped 1 tablespoon of fresh mint, chopped juice of 3 lemons 1/4 teaspoon of pepper 1 teaspoon of sea salt 2 cups of water Prep Time: 0 minutes Cook Time: 60 minutes Total Time: 60 minutes

Place the dolmathakia on top, packing them closely together (not squashed), seam side down, so they don’t unroll during cooking. Layer them until all are in the pot (2-3 layers is best, but no more than 4 layers). Place several unused leaves over the top. Take another plate and place it upside down on top of the dolmathakia, with something to weight it down (a second plate works well). Add 2 cups of water to the pot and cover. Bring the water to a gentle boil, add the remaining lemon juice, reduce heat to low and simmer for approximately 50-70 minutes. Check to see if done. If the rice has cooked, they are done. If not, continue cooking for another 10 minutes and check again.

Preparation

Cooking time depends both on the type of pot used and the particular stovetop element.

Blanch the Grape Leaves

If preferred, use a pressure cooker. No plates needed, but do use the skewers in the bottom. Pack the dolmathakia into the pressure cooker, add the 2 cups of water, close and cook for 15-20 minutes at the first pressure mark.

Bring 8 cups of water to a boil in a large pot, add juice of 1/2 lemon and the salt. Carefully unroll the leaves (do not separate them). Turn off the heat and place leaves in the hot water for 3 minutes. Remove leaves and place them in a bowl and cover with cold water. When cooled, drain in a colander. It is not unusual for many of the outer leaves in the jar or can to be damaged, or to tear while using. Set these aside to use later in the recipe.

Essentially we follow the recipe on our favorite boxed dressing, adding more vegetables than called for; and we use the full amount of butter. To that we add a couple cloves of garlic, mushrooms and pecans. Boxed Dressing 1 onion 4 celery stalks 2 to 4 cloves garlic 2 cups sliced mushrooms 1 cup pecans salt, pepper, seasonings to taste 2 cups chicken broth. Saute vegetables in butter required per boxed recipe, add pecans during last 5 minutes. Season to taste - I like tarragon and pepper. Place bread crumbs in large bowl. Add sautéed vegetables, butter and broth and toss thoroughly. Bake in buttered casserole dish 350 for 45 minutes.

Then add and blend in: 1 egg 1/4 Cup molasses Next add and mix until just blended: 2 Cups flour 2 teaspoon baking soda 2 1/2 teaspoon ginger powder 1 teaspoon cinnamon powder 1 teaspoon clove powder 3/4 Cup chopped, crystallized ginger Cover and chill dough 1 hour. Crispy Pizzelles This delectible delight is shared by Nancy of Wyverndesigns. This is a recipe that my mother-in-law made every holiday and for weddings. Pizzelles are a thin crispy waffle- like cookie that require an pizzelle iron to make. My husband’s grandmother used to make them one by one over the open flame of the stove burner with a cast iron mold. Luckily, I live in modern times and have an electric pizzelle iron.

6 eggs 1 C margarine (melted) 3 1/2C flour 4 tsp baking powder 1 1/2C sugar 1T vanilla extract and 1 T anise or the traditional 2 T anise Beat eggs, add sugar. Beat until smooth. Add margarine (cooled), vanilla and anise. Add flour slowly to egg mixture. Beat until batter is smooth. Preheat pizzelle iron. Drop approximately one teaspoon of batter on each half of the iron. Close cover and cook for approximately 30 seconds. Remove cookies to wire rack to cool. These cookies are fragile and will break easily. I store them in zip lock storage bags. These cookies can also be wrapped in aluminum foil and stored in the freezer. Pizzelles almost always appear at Italian weddings and are a big hit.

Paisley Pendant Celtic Dragon Earrings Pink and silver Celtic Dragons adorn these dramatic earrings. Hand drawn artwork has been transferred onto dusty rose polymer clay. The design was then baked, hand painted and sealed before being made into a pair of earrings. A hand fashioned wire wrapped ring attaches the earrings to the silver plated ear wires. Page 39

I made this Paisley pendant using polymer clay and the mica shift technique which allows a ghost image to be left in the clay after stamping and carefully cutting the raised image away. Amazingly, the pendant is completely smooth but the image remains. I used white pearl polymer clay with the inclusion of Spring Green mica powder to create a pale green, slightly metallic looking clay.

She often served a dish, what my husband thought was called, “Odzinka”. When I was trying to track down the recipe, I discovered that I had lost mine and I couldn’t find “Odzinka” when searching on Google. So I contacted Mike’s cousin, Nancy, to see if she had it.

Nancy, who is very knowledgeable about the family’s Russian heritage, wrote back a funny e-mail telling me that the recipe was called “Hadzimka”, a Russian potato bread. She also said that it was “Uncle John, not “Auntie Ann”, who made the bread. It was often served with fish, and a piece of garlic, along with other traditional holiday favorites. Our beloved Auntie Ann and Uncle John passed away many years ago, but we sure do remember their traditional Russian family dinners. There is a recipe in the “Just a Pinch of Russian” cookbook, but I found a slightly different one on “Pinterest”, searching “Russian potato bread”. 3 c. potatoes, peeled and diced 1 Tbsp. yeast (1 packet) 3 c. white flour 1 c. wheat flour 2 tsp. Salt 2 Tbsp. Butter Directions Cook potatoes until fork tender, as for mashed potatoes. When potatoes are done, reserve 2/3 c. of the cooking water. Drain, and mash potatoes. Mix together yeast, white flour, wheat flour, and salt. Add butter.

This beautiful chunky long length gemstone necklace is made with glossy, olive green unakite curved gemstones, glossy red rust jasper nugget gemstones, and accented with gorgeous antiqued brass pewter spacers. The necklace measures 25 inches long.

Combine potatoes with the reserved cooking water. Add this potato “slurry” to the flour mixture to form a soft dough. Knead until smooth and elastic. Place in a lightly grased bowl and leave to rise in a warm place 1 hour, or until doubled in bulk. Punch down and shape into a plump oval loaf. Spray a baking sheet with nonstick and place the shaped loaf on the baking sheet. Let rise 30 min. Using a sharp knife, slash the top with 3-4 diagonal cuts to make a criss-cross effect. Bake 30-35 min., until golden and hollow-sounding when tapped on the base.

When I was a little girl, my granny, mom and neighbor peeled and sliced apples and put them on sheet covered tables to dry. The best part was when granny used those apples to make fried apple pies. I follow her recipe, but mine do not taste as good as hers did.

Fiilling: 6 oz dried apples 2 cups water 1 cup sugar 2 tsp molasses 4 Tbsp (1/2 stick) butter or margarine 1 Tbsp lemon juice 1/2 tsp ground cinnamon 1/8 tsp cardamom Crust: 2 cups all-purpose flour 1 tsp salt 1/2 cup shortening 1/2 cup milk Cisco oil or vegetable oil Put apples, water and sugar in a saucepan. Bring to a boil, reduce heat and let simmer until apples are tender. Add sugar, molasses, butter, lemon juice, cinnamon and cardamom to apples. Mash together with a potato masher. Set aside. Dough: Combine flour and salt. Cut in shortening with a pastry blender (you can use fork if you don’t have one). Add milk and stir until dough is sticky. Divide the dough into smaller portions (10 to 12). Roll the individual portions out on a floured surface until they are very thin. Place apple filling just a little below the center, wet edges with water, fold dough over filling and press the edge with a fork to prevent filling from leaking out.

This adorable Crocheted Green Ruffled Dress Set was crocheted using “I Love This Cotton Super Soft” Green yarn and “I Love This Cotton Super Soft” white yarn was used for the trim. This crocheted dress set is for infants 3-6 months. The Crocheted Green Ruffled Dress Set includes matching panties and booties. The buttons are also crocheted using “I Love This Cotton Super Soft” Green yarn.

To fry: Add Crisco or vegetable oil to a large skillet, you will need enough to cover about half of the pie. Heat on medium, when a drop of water in the oil sizzles, it is hot enough. Add pies (2 or 3 at a time) to oil and fry until brown then turn, let the cook until brown and remove from oil. Place the fried apple pies on paper towels. (I put the paper towels on a plate or cookie sheet). To make mini’s, roll out a portion of the dough but not to thin. Cut out the center then finish rolling the dough until thin, put a smaller amount of filling in the center. You can reuse the cut pieces to continue making mini pies.

It is the one that is most like the one that my grandmother made. I remember the aroma of the kitchen still that we used to walk into on Christmas day. A Greek family celebration wouldn’t be complete without the delightful buttery goodness of Kourabiethes (koo-rah-BYEH-thes). These are very rich cookies (as are most shortbread cookies) yet somehow lighter and melt-in- yourmouth good. Be sure to make extra because these will go fast!

Ingredients 1 lb. unsalted butter, softened 2 large egg yolks 1/2 cup confectioner’s sugar, plus more for dusting (about 2 cups) 2 tbsp. ouzo 1/2 tsp. vanilla powder (substitute two tsp. vanilla extract) 1/2 cup almonds, toasted and chopped very finely 1 lb. cake flour (about 3 1/2 - 4 cups) 1/2 tsp. baking powder 1/2 tsp. baking soda Whole cloves for decoration (optional) Prep Time: 50 minutes Cook Time: 20 minutes Total Time: 70 minutes Yield: About 40 cookies Preparation In the bowl of a stand mixer, add the butter and mix until light and fluffy, about 5 minutes. Scrape the sides of the bowl and add egg yolks and confectioner’s sugar. Mix well. Add the ouzo, vanilla, and the toasted chopped almonds. In a separate bowl, sift the flour, baking powder and baking soda together. With the mixer on low, add the flour to the butter mixture and mix until incorporated. You don’t want to over mix the dough because that will toughen the cookies.

Chilling the dough for about half an hour makes it easier to handle and roll. Preheat the oven to 350 degrees. Growing up, we shaped these as crescents but they can also be made round. To make a crescent, take a piece of dough about the size of a walnut. Roll it into a log and then curl the ends in and pinch slightly to make a half-moon or crescent shape. Stud each cookie in the center with a whole clove and bake in the preheated oven for 20 minutes or until just beginning to brown. When the cookies are still very warm, dredge in confectioner’s sugar. (Handle them with care!) The sugar layer will almost melt and coat the cookies. After the cookies cool a bit, add another dusting of confectioner’s sugar. Remove the clove before consuming unless you like to chew on whole cloves! Page 46

Spumoni Cupcakes Diane of Diane’s Dangles shared these goodies with us. 1 box white cake mix 1 box (4-serving size) pistachio instant pudding and pie filling mix 1/4 cup cherry juice (from jar of maraschino cherries) 1 container of chocolate. 18 whole maraschino cherries with stems 1/4 cup chopped pistachio nuts Directions: Heat oven to 325°F. Place paper baking cup in each of 18 regular-size muffin cups. Make cake mix as directed on box. Divide batter evenly into 2 bowls. Add box pudding mix to 1 of the bowls and mix well. Add cherry juice to the other bowl and mix well. Divide pistachio batter evenly among muffins cups. Divide cherry batter evenly over pistachio batter in muffin cups. Bake cupcakes for about 20-23 minutes, check with a toothpick for readiness and cool.

However, this has a lovely twist with its toasted macadamia nuts. This is a recipe that is courtesy of Good Eats by Alton Brown. 1 1/2 teaspoons almond extract 8 ounces sweetened shredded coconut One 12-ounce bag semisweet chocolate morsels, melted 1 tablespoon shortening In a bowl mix together the nuts, condensed milk, almond extract and coconut. Using your fingers, press the mixture into balls about 3/4-inch round. Place onto sheet trays and let rest at room temperature for 4 hours or in the refrigerator for 1 hour.

In a large bowl, beat cream cheese and sugar until smooth. Add flour and beat well. Add eggs, beat on low just until combined. Add eggnog and vanilla; beat just until blended. Pour two-thirds of the filling over crust. Top with half of the cranberry mixture (cover and refrigerate remaining cranberry mixture). Carefully spoon remaining filling on top. Return pan to baking sheet. Bake at 325째 for 60-70 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan. Spoon remaining cranberry mixture over cheesecake. Refrigerate leftovers. Yield: 12 servings. Page 52

On top of that is a white scalloped die cut with the hand stamped message, “Merry Christmas and Happy New Year”. The front of seven cards is covered in a piece of red card stock paper that has a snowflakes pattern, the other seven are covered with a green paper with a snowflakes pattern. On top of that is a hand stamped image. The message on the image is “A shining star, a stable forlorn, the hope of all the world is born.” There are images of a star, a stable, a heart and the earth. The image has been colored in by my daughter.

Ingredients 1 cup granulated sugar 1 cup softened butter 1/2 teaspoon salt 1 box (7.4 oz) Alpine Spiced Apple Cider Instant Original Drink mix -not sugar free- all 10 packets (I found this in my grocery store near the hot chocolate mixes.) 2 eggs 1 teaspoon vanilla extract 1/2 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon ground cinnamon 3 cups all purpose flour 1 bag Kraft Caramels (14 oz) Preheat oven to 350° F. Line cookie sheets with parchment. (You really need the parchment!) In a small bowl whisk together flour, baking soda, baking powder and cinnamon. With your mixer (or an energetic spoon) cream together butter, sugar, salt and all 10 packages of apple cider drink mix powder, until light and fluffy. Beat in eggs, one at a time. Add vanilla and mix well. Gradually add flour mixture to butter/egg mixture. Mix until just combined. Refrigerate for about an hour. (If you’re really impatient you don’t have to do this, but it makes it so much easier to work with.) When you are ready to bake, unwrap your caramels. Scoop out cookie dough ball about the size of a walnut. (I used a rounded cookie scoop-full. My scoop holds about a Tablespoon.) Flatten the ball of dough slightly in the palm of your hand. Press the unwrapped caramel into the center of your dough and seal the dough around it, covering it completely. Place on parchment covered cookie sheets 2 inches apart. Bake 12-14 minutes, or until very lightly browned around the edges. Please don’t over-bake! Once the cookies are done, slide the parchment off of the baking sheet right out onto the counter. Allow cookies to partially cool on the parchment. When cookies are cool enough to be firm but still slightly warm, carefully twist off of parchment and allow to finish cooling upside down (either on the parchment or on a rack.) If you forget about them and they cool too much and stick to your parchment, put them into the freezer for a few minutes and they’ll pop right off. Yield: about 4 dozen, depending on how large you make your cookies (or how many caramels have been snitched out of your bag before you begin.) Store in an airtight container. Apples are great all year round, but they do tend to lend a hint of holiday to the air when they are baking during the fall. Page 54

Cherry Clutch Purse Brown Slouchy Purse in Faux Leather This is my handmade slouchy purse with beaded details. This bag is made with a tan colored faux leather that has leather like texture to it. I hand embroidered some pink detail down the sides and around the bottom edge. This shoulder bag has an adjustable strap so that you can wear it at the length you prefer. I lined this bag with a pink and tan floral cotton print fabric. Page 55

Cherries clutch purse with interior divider to separate your items. This purse is made with cotton fabric with a black background and red cherries and green leaves covering it. Across the exterior front I added a red checkerboard print band. I added a red zipper for a closure to keep your items secure. I lined the interior of this purse with a green cotton print, and on the divider is a band of the cherry print fabric. These bags are versatile.

Making Swedish sausage for Christmas dinner. My great grandparents both imigrated to the US from Sweden in the late 1800’s. One of the foods that has carried through to this day in our family is our homemade Swedish sausage or as my grandma called it Korv. I remember going to grandmas on the first Sunday of December and the family would come together to make this wonderful dish, her kitchen smelled of onions, potato’s and meat, the main ingredients to this sausage. When the meat, potatoes and onions were mixed together just right then we would stuff it into casings with funnels. After it was made it would get packaged up and frozen till Christmas eve. I have to say that my favorite scent of Christmas is the smell of this sausage cooking, it always makes me remember walking into grandma’s house on Christmas eve. These days the family still gets together one day at the end of Nov. or beginning of Dec. to make this sausage. It has grown so much that the last few years we have to make 3 large recipes, so that their is enough sausage for everyone to take home. Swedish sausage (large recipe) for a small recipe reduce to 1/4 10 lbs ground beef 4 lbs ground pork 10 lbs potatos 7-8 onions (5 lbs) sausage casings salt and pepper *peel potatoes and cut into chunks that fit your grinder. *peel off outer skin of onion and cut into chunks that fit your grinder. *grind potatoes and onions together. *mix ground beef, ground pork, and the potatoes and onions you just ground together by hand in a large bowl or tray. *salt and pepper ~ I recommend pouring the salt in one bowl and the pepper in another, this is so you don’t contaminate the salt and pepper containers. * season the meat mixture with salt and pepper, remember you can always add more but you can’t take it out. make small patty with the meat and fry in pan (add a little oil or pam to the pan). *cut sample into pieces and have yourself a little tasting party. If it tastes seasoned enough then you are ready to stuff, if not season, mix and taste again. Some years this part can really go on and on. *clean sausage casing in cold water, then cut into 12 to 18 inch lengths (you can do them longer if you choose) We choose to stuff 2 different ways 1) use large funnel place casing on the funnel and push the casing up the funnel till you have about 10 inches of casing from the end of funnel opening. place meat in funnel and shove into casing. continue to stuff until casing comes off the funnel. take a needle (if you use a needle or toothpick, take care to know where it is) or toothpick and pop all bubbles you see in the sausage. rinse off in cold water. place in freezer bags and freeze till Christmas eve. 2) use sausage stuffer I can’t give any tips on this because I haven’t actually done this part before, but I would say follow thestuffer instructions. We have 2 sausage stuffers we now use and I would never go back to only using funnels. Our family has been making 3 large recipes every year for the past several years now and that would be a lot to make with only funnels. Page 56

1. Heat on large can tomatores in large pot, mash up. 2. Add 2 cloves garlic, 1 small onion sauteed in olive oil 3. Add 1 beef boullion cube dissolved in 1 C. water 4. Add on (15 oz) can butterbeans, white kidneys, great northerns, ceci beans or whatever. Total 3-4 cans 5. Add 2 bay leaves, 2 peppercorns Simmer 1 hour, Cook ditalini or small shell macaroni DO NOT ADD SALT, DO NOT DRAIN BEANS, removed leaves before serving.

Some mix ‘em al together, but I like to pour the bean and tomato mixure on top of the ditalini. This is a secret restaurant recipe.

Blue Morning Expressions Macaw Parrot Watch with Tropical Flower Beads This watch is a combination watch and bracelet, and it features my parrot beads. I used a polymer clay parrot cane, pink hibiscus flowers and teal petaled flowers to create these bezel pieces that I used as the basis of this tropical watch. I live at the Top of the Tropics.

These little shortbread cookies do not last long once they are put on a plate. For the sake of your mixer, use a heavy duty mixer if you have one. These are stiff cookies that can burn up a mixer if not careful. While these are not a family tradition, they have become our tradition over the last few years, so a new tradition is born. 2 cups softened butter 1 cup white sugar 2 teaspoons of vanilla 4 cups of all-purpose flour Preheat the oven to 350 F/180 C Cream the butter and sugar until it is fluffy. Add the vanilla, then mix throughly Add the flour and mix very well. Remember, this is flour heavy, so it will be hard to mix. This mix is well suited to using a cookie press to get those really cool shapes, but I do the old fashioned flattened cookies. You can do this two ways; you can:

Plum Crazy Lampwork Beaded Bracelet

Tiger Stripe Beaded Necklace with Tigereye Gems and Swarovksi Crystals

These artisan created lampwork beads are an explosion of purple swirled with pinks, golds and light blues. They are an iridescent rainbow of gorgeous colors. I took these beads and paired them with cubed Tanzanite Swarovski crystals and AB copper Swarovski crystal bicones. All this sparkle and the gorgeous purples are amazing in this bracelet.

This beautiful matinee style heavily beaded necklace and earring set is truly a one of a kind set. I have created the tiger beads individually by hand using polymer clay and a tiger stripe polymer clay cane that I thinly sliced and applied to a base bead. These beads have been handsanded and have a slight coat of varnish added to them to give them shine.

Roll the dough into a ball the size of a walnut. Press it flat with the end of a glass that has been moistened and dipped in sugar. -orRoll the dough into a log and chill it for 30 minutes. Then you can slice and bake them like the refrigerator cookies. Place the cookies on parchment and bake for 10-12 minutes. Decorate at will.

The recipe is for Sandbakkels, which is a Norwegian cookie that my grandmother would always make for the holidays. She was a wonderful baker and this was a large part of my Christmas memories with her. I remember the long snowy, sometimes dangerous drive from Watertown to Holmen Wisconsin. The old GMC had many drafts, and we were always bored on that 5 hour drive, but equally excited to see my Grandmother. We would pull up and slog through the snow to be welcomed by the warm and wonderful smells from my grandmother’s baking. They had a old wood stove that would be completely stoked and ready to warm our chilled little bodies. Then she would open one of those great big bins of freshly baked cookies and hand us a beautiful heart shaped Sandbakkel; it made the whole journey worth while. Sandbakkels 1 cup butter 1 cup white sugar 1 egg 2 cups all purpose flour 1 tsp of Brandy (old recipe) or real vanilla extract Cream butter, sugar together then add the egg and vanilla and continue to beat until light and fluffy. Gradually add the flour in until it is well blended, but not over-beaten. Chill the dough for a mininmum of 2 hours, wrapped tight so it doesn’t dry out in the refrigerator. Press dough evenly into the Sanbakkel tins (which maybe hard to find but I get mine from vintage shops) bake in a 350 oven until golden (approx 10 - 15 minutes) do not let them get brown.
