WINTER FASHION

The latest fashion trends from The Busselton-Dunsborough Life’s resident fashion expert.

With so many trends hitting the stores this season, dressing up for the cold couldn’t be more fun. Intriguing, romantic and feminine, Victorian-inspired pieces are as popular as ever. The trend includes high necklines, ruffles, velvet, lace and bell sleeves for shirts, tops and waisted dresses. Even the classic white shirt – a wardrobe staple for any season – has undergone exquisite transformations with lace and statement sleeves. As well as white, the Victoriana trend favours black,

burgundy and pale blush, and the footwear of choice – laced up boots. Denim, another classic, has also experienced major makeovers in preparation for a cold snap. There are different washes and new cropped cuts for jeans that have straight legs or flares, and hems that are raw and frayed. And it’s clear that the seventies vibe is still around with the revival of the denim skirt. It now comes highwaisted in a maxi length as well as in shorter subtle A-line styles that sit either above or below the knee. A throwback to the nineties, look out for beautiful sleepwear in the form of silk slip dresses and pyjama-style pieces. To be worn outside the bedroom, it’s a trend

in our mild WA winters. As for coats, fashion always demands a leather jacket and this season’s offerings are reinvented with interesting punky zips, rivets, studs and even a little embroidery. The bomber – another fashion mainstay – has been redesigned in soft fabrics that also feature embroidery as well as zip detailing or a print. And, usually saved for functionality on the ski slopes, the quilted puffa jacket is making a welcome appearance on the high streets this winter in lots of bright colours. There are also longer length coats around in the cocoon, classic wrap and military styles. These will be primarily seen in navy, deep rust and burgundy but there are other colour options too, such as mustard, red and pastels. For footwear, there are currently plenty of flats to choose from, for example, sneakers, loafers and brogues. H o w e v e r, the footwear of the season will be the boot. O ver-theknee boots, whether block-heel or stiletto, pointy toe or almond, will be hugely popular and work perfectly with an A-line skirt or under a long jacket.

If you’re thinking of updating your home, take a look at the following inspirational ideas. Mixing up materials is a trend that works throughout all living spaces, adding interest and a touch of homeliness. As well as colours and textures, think about pairing new items with old, traditional with quirky. Iron and blackened steel have been more commonly seen in the framework for furniture or out in the garden but now they are being used for kitchen flatware, doorknobs and bathroom fixtures. The metals look stunning alongside wood and glass. When it comes to eating, the trend has gone full circle and the formal dining room is making a big comeback. Rather than eating in an open plan space, it feels special to dine at a beautifully dressed table in a room set away from the chaos of everyday life. Embrace this trend for family meals or for more formal occasions. Fireplaces are on the increase too and are becoming the main focal point in a room instead of the TV. They 18 HOME

For accessories, the trend is to have globally sourced, functional items rather than purely decorative objects. Artisan products, such as rugs, bowls, stools and tables from Scandinavia, South America, Mongolia or Morocco, for example, have sought after unique forms and designs, and they are often made from a mix of materials too, which adds extra interest. Trending colours for interiors are leaning towards the pairing of Rose Quartz and Serenity, chosen as the Pantone colours of the year. The soft rose tone and the cool blue are perfect with mid tones of greens and purples and yellows. This colourful palette produces a softer and more airy house than the neutrals and greys seen before.

If there is one room in the house that needs an extra bit of attention, then it has to be the kitchen. The space where family and friends congregate, it needs to feel special and homely as well as being well designed. So, if your kitchen needs an update, take inspiration from these on-trend ideas. Before getting stuck into bench tops and accessories, rethink the actual layout of the room. It’s no longer enough to have a kitchen that looks stylish; it has to work well too. Assess what kind of areas or ‘zones’ are needed to achieve the required lifestyle. For example, is a significant amount of storage required? If regularly entertaining, does the prep need to be hidden in a butler’s pantry or if using a variety of appliances, do they need to invisibly connect to power outlets or the internet? Writing this wish list down in black and white will help to direct design ideas and lead the way in planning how spaces and task lighting should be organised. 20 HOME

Hugely popular currently are black sinks, tapware, appliances and accessories, such as fridges, ovens, dishwashers, and matte cutlery and dinnerware. The dark features give depth to a room and create a striking contrast against pale tones. It’s a strong and sophisticated look. For a softer look, there is a big interest in pastel colours, especially blue and rose hues (again, inspired by the Pantone colours of the year). In partnership, these tones add warmth to the hard surfaces and monochrome palette typically found in kitchens. When it comes to choosing the design and layout of the cabinets and benchtops, bold and clean lines allow the use of the trending new look; mismatching. Play around with tones, colours, textures or even choose different styles and the kitchen will take on more depth and personality. Try to introduce tactile surfaces, such as a thin porcelain countertop, custom timber work wrapped

The different textures can also help to create a modern café look, which is another growing kitchen fashion statement. To create a refined and boutique café– kitchen, add other robust elements, such as natural stone, concrete, reclaimed wood, and metal chairs and bar stools. Mercedes-Benz C-Class Coupé German giants deliver a masterpiece

I

t’s now almost two years since the launch of the stylish C-Class sedan and with the car flying out of dealerships all around the country, there’s never been any doubt about its huge popularity. Setting a benchmark within the mid-size luxury sedan market, its combination of performance and economy, together with its strong visual appeal, has clearly give the luxury German car manufacturer the recent edge over its rivals. So, with the C-Class sedan continuing to be a huge hit with the car-buying public, anticipation has been slowly building to a frenzy for the coupé variant. Yes, for those buyers who prefer the sportier-looking incarnation of the class, there has been the traditionally slightly longer wait for the 2-door model, as is the case with all Mercedes-Benz coupés. But boy, has the wait been worth it! Take one look at the new C-Class coupé and you will be captivated. This stunning vehicle looks sensational from any angle with its sweeping aero-dynamic lines, poised front end and beautifully moulded rear. Longer than the outgoing coupé and riding lower than the sedan, it’s not only a massive step up from the previous model, it’s indisputably a game changer. But it’s not just its looks that will wow buyers. Thanks to its new aluminium body and lightweight suspension system, performance-wise it knocks spots off the outgoing model. Available with five engine choices, the entry level C200 and C300 both come paired with 7G-Tronic transmission and a 2.0 litre turbo petrol engine in different states of tune. Delivering 135kW of power and 300Nm of torque, the C200 reaches 0-100km/h in just 7.7 seconds whereas the C300

with 180kW and 370Nm achieves it in a mightily impressive 6.0 seconds flat. The diesel option is the C250 and this 2.1 litre turbo power-plant doesn’t hang about either. Delivering 150kW of power and no less than 500Nm of torque, it powers its way from 0-100 km/h in just 6.7 seconds. Wait for it, though, there are two AMG models in the range. Fitted with a 3.0 litre twin-turbocharged V6, the C43 coupé delivers 270kW of power and 520Nm of torque, tearing its way from 0-100 km/h in a decidedly quick 4.7 seconds. The C63S, however, with its 4.0 litre twin-turbo petrol V8, paired with a 7-Speed AMG Speedshift automatic transmission, cranks out an astonishing 375kW (that’s over 500hp) and a staggering 700Nm of torque. This propels the car from 0-100 km/h in a mind-blowing 3.9 seconds and, for those brave enough to give it a try, it reaches a top speed of 290 km/h. Phew! Despite all of these impressive numbers, there’s no compromise on the coupé’s economy ratings. Starting with the C200, with its browser beating consumption of 6.0 litres per 100kms, the C250 diesel manages to

All models pass the latest European emission regulations and their efficiency optimised powertrains use up to 20 per cent less fuel than the previous model. Standard features on the C-Class coupé include LED headlights, electric front seats, satnav, parallel and reverse parking assistance and blind spot assist. Premium models add extra software, 19-inch wheels, adaptive cruise control, active lane assist and full leather. With nine airbags as standard and an array of cameras, including rear view and overhead

view, the car also has a lane departure warning system and the very latest early crash avoidance technology, including a fatigue-detection system to monitor steering behaviour. uxury, refinement and unbridled comfort; we all know what to expect from BMW’s flagship model. However, the launch of a new 7 Series has always been equally as much about the new and the unexpected. Over the years, this luxury sedan has been at the forefront of the very latest motoring technology, showcasing a number of new motoring firsts. ABS, onboard computers, Satnav and electric cruise control all first saw the light of day on the 7 Series before filtering down through the range. So what can buyers expect from the all new, sixth edition of the 7 Series? Well, as expected, plenty of new technology. In fact, according to BMW, the car comes with no less than 13 world-first technologies, the highlight of which is within the body-shell itself. Using a manufacturing technique initially developed on the i-Series models, the 7 Series features an extensive mix of carbonfibre reinforced plastic in the passenger cell of the car. Adding additional strength and at the same time reducing the weight of the car by approximately 130kg, the new found lightness of the chassis together with its adaptive dampers, which are now fitted as standard, have revolutionised the ride and handling of the car. It’s a sign that this new 7 Series has become more of a driver’s car, and this added agility will particularly suit buyers in Australia. Available in both standard and long wheel base mode, the 7-series has long been popular with buyers who employ chauffeurs, however, apparently Down Under, we prefer to get behind the wheel of our cars, and for those that do there’s plenty of fun to be had. Available with an extensively updated six-cylinder V8 engine paired with an eight-speed Steptronic transmission, the entry level 730d is powered by a 3.0

litre, six-cylinder diesel engine that produces 195kW and 620Nm of torque and achieves 0-100 km/h in just 6.1 seconds. The 740i and 740Li feature a 3.0 litre, sixcylinder petrol engine, generating 240kW and 450Nm whereas the 750i and 750Li come equipped with a 4.4 litre, V8 powerplant that delivers 330kW and 650Nm of torque, reaching 0-100 km/h in a decidedly swift 4.7 seconds. Luxurious touches and clever features abound on the new 7 Series and the car’s new smart key is another impressive addition. Not surprisingly for a model of this stature and importance, the list of safety features on the 7 Series is long. on all models, and on the 750i and 750Li, anti-dazzle laserlight technology that doubles the beam range from 300 to 600 metres is available for the first time since its world première on the BMW i8. write this article having just returned from the 2016 State Championships in Perth, and what a weekend it was! I am delighted to announce that of the 20 competitors from Bunbury that took part, all 20 have been selected to represent the WA state team in the national championships in Victoria held during the first week of July. This is a fantastic result for all concerned and gives our centre and all who work and train here a tremendous boost. The sport of artistic roller skating continues to grow and its benefits are well known, a fact that was recently highlighted again to me by the parent of a regular skater. She wrote that one of her friends had asked why she was paying so much money to send her kids skating. Her reply to her friend was that she wasn’t actually paying for the sport she was paying for her kids to learn how to be disciplined, to take care of their bodies, to work with others and to be good team mates, to make and accomplish goals, to deal with disappointment by working harder to achieve the grade, to make life-long friendships, to be active and not sit around in front of a screen all day long and to appreciate that to make it in your chosen sport you have to put in hours and hours of practice, i.e. success doesn’t happen overnight. In other words, she wasn’t paying for just a sport, she was paying for the opportunities skating provides, developing attributes that will serve her kids well throughout their lives. She ended by saying that so far she thought it had been a great investment! ARTGEO C U LT U R A L C O M P L E X W H E R E A R T A N D H E R I TA G E M E E T THE COMPLEX OF BUILDINGS now known as ArtGeo once played a vital role in Busselton’s history and growth as a port. Today, it’s a creative hub for the visual and performing arts, featuring ArtGeo Gallery, the Courthouse and Old Post Office Tea Rooms, Stables Studios, Acting-Up Academy of Performing Arts, Weld Repertory Theatre, Busselton Art Society, Busselton Woodturners and a series of life-size bronze sculptures commemorating the town’s settlement in 1834. Step back in time

According to the Australian Heritage Commission, the old Courthouse has considerable significance for its contribution to the social and economic history of Busselton. With its earliest structures dating from 1860–61, the judicial site contains some of the

oldest buildings in Busselton. For these reasons, the Courthouse was classified by the National Trust in 1972, assessed for the National Estate in 1983 and listed on the State Heritage Register in 1993. The early buildings include a Bond Store, courtroom and nine gaol cells where prisoners were detained for misdemeanours, like being drunk and disorderly, petty theft or vagrancy. One cell with bars and shackles is a


stark reminder of how Aboriginal people were treated in the past. At one time, a tram-line linked the Bond Store with Busselton Jetty so that imported goods, like tobacco, beer, wine, salt, rice and canvas, could be dispatched from ship to store in horse-drawn wagons. Nowadays, the Bond Store is used as a retail outlet for South West arts and crafts. In 1897, a new courtroom was constructed. The brick and timber building designed by WA’s principle architect George TemplePoole is a rare surviving example of Federation arts and crafts architecture. It’s still furnished with the original magistrate’s bench, clerk’s desk, witness stand, dock and public gallery made from Jarrah felled and milled locally.

Across from the Courthouse, a stylish pavilion now known as ArtGeo Gallery hosts contemporary art exhibitions sourced regionally and Australia-wide. Built in 1931 for the Agricultural Bank, this fine example of inter-war neo-classical architecture was listed on the State Heritage Register in 1999 and classified by the National Trust in 2001. In buildings where bankers, magistrates, postmasters and police constables once presided,

W

e regularly tell our children that if they want to land a job with a top salary, a great work environment and career outlook, then they need to have a sound education in order to achieve it. And, as parents, we can help towards this pathway to job satisfaction by both establishing a proper work ethic and channelling interests. It’s a fact that most of the world’s top and best paid jobs that come with all the perks require a strong background in science, technology, engineering and maths (STEM). However, were you aware that due to sharp declines in participation and attainment in these fields throughout Australian schools, as things stand, many of our children may not be considered for these top positions? Why is this happening? To put it simply, students are no longer selecting STEM subjects when it comes to choosing options at senior secondary school and, in turn, are not going on to study maths or science at university either. So not only are Australian children limiting their work options, they are also placing Australia out of the world’s ever-growing, fast-paced knowledge economy. There has been a steady decline among senior high school students taking on maths for around 15 years while students choosing not to study a science subject

have remained at around 45%. It would appear that there is an obvious correlation with this and the fact that the fields are not compulsory at senior secondary level. So students are simply choosing other courses. The question, therefore, arises, should we make it a requirement to take a maths or a science subject? It is compulsory in many other countries in the world to do so and, in fact, England is planning on making a change to its curriculum to ensure students study maths up to the age of 18. But this is not enough. In order to ensure that our students are prepared for the best future careers, they must have the interest and drive to pursue maths and science too. This has to come from the way the subjects are delivered and the experiences that the students have within their learning. Funding needs to be focussed on creating excellent resources right from primary school level, learning outcomes need to be relevant to real life, and links with industry need to be reinforced so that students get to talk to and learn from the maths and science experts themselves. otivating ourselves to exercise at this time of the year can be hard work. It’s not easy to get going on a winter’s morning with the wind howling and rain lashing down outside. Instead, the idea of cocooning ourselves inside with cups of tea and biscuits seems much more appealing! But before we know it, spring pops up, next we’re almost into summer and suddenly we are desperately trying to get our bodies back into shape for the long hot days on the beach. So, rather than feeling bloated through overindulging on comfort foods and sluggish through a lack of exercise, focus on feeling brighter and more energetic and start planning on how to get into shape in plenty of time for summer. How can we shake off our lethargy? The answer is that we need to kick start our metabolism. Our metabolism is the result of all the processes in our bodies working together to create the energy that keeps us going. When these processes occur, our bodies burn calories and produce energy. Our metabolic rate can be high, low or somewhere in the middle but generally it’s higher when we are younger. The higher the rate, the easier it is to lose weight but as we get older and our rate slows down, we are more susceptible to weight gain. In short, a higher metabolic rate not only means we are burning more calories, it also means we have more energy. It’s a win-win situation. Here are some great ways to boost the metabolism, lose body fat and discover boundless waves of energy:-

Eat 5 or 6 small meals

Eating raises our metabolic rate. However, eating 2 or 3 large meals a day encourages the body to store extra calories as fat because it knows it will not have food again for a while. Eat 5 or 6 small portions every 2 or 3 hours.

Add metabolism boosters to your diet Start the day with rolled oats, natural yoghurt or eggs. Then incorporate almonds and peanut butter (in limited amounts!), whole grains, berries, apples, vegetables (spinach is especially good), turkey, chicken breast, salmon, chilli, cayenne pepper, garlic, green tea, mustard and, of course, plenty of water.

This can be as easy as going for a walk; it will feel so much better than staying indoors. Every few minutes, move on to a jog for 1 or 2 minutes then back to a brisk walking pace again. n the continuous search to find new treatments that defy all the rules, clients regularly ask me if there are any new dermal therapy treatments available. Perhaps a laser treatment that will magically take 10 years of their appearance - with no downtime! Or, perhaps a skin tightening treatment that will make facelifts obsolete? Of course, we are all looking for the holy grail of aesthetic procedures. Over the past decade or so, there has been a great deal of new technology released. Therapists can often get caught up in the excitement only to find at a later date that this new technology is no better than before. Marketing often drives these new releases due to a period of stagnation in the market. It’s an effective way to keep the consumer interested. Looking back, there’s no doubt that my industry has come a long way but there have been few revolutionary changes in both clinical aesthetics and medical aesthetics. Instead, we have gradually evolved into what we do today. For me, the biggest change has been in the formal education now available for professionals working in this field. We have access to the best and most up to date evidencebased treatments, modalities and information. However, I believe it is far more important for the therapist to focus

on the patient experience and the outcome rather than focusing on the technology. We need to use our technology as a tool and not be a slave to it. After all, a good photographer should concentrate on taking good pictures and not just buy the latest technology for the sake of it. Using evidence-based dermal therapies in combination with formal clinical-based training while keeping skills and knowledge up todate will bring the required results not the technology alone. Treatments also need to be based on clinical evidence backed by science, published in reputable medical journals. Here are five traits that I would consider essential when selecting a dermal therapist:-

1. GENUINENESS AND HONESTY

Establishing a rapport with your therapist is imperative. It’s also important to feel that the therapist

has your interests at heart at all times.

2. SENSITIVITY TO THE PATIENT’S NEEDS

A therapist should be aware of the vulnerability of certain clients when discussing skin health and appearance-related issues.

3. AN EYE FOR DETAIL

An experienced dermal therapist should be able to determine what is healthy and functioning well and what isn’t.

4. FORMAL TRAINING

A therapist should possess the proper skills, formal training and knowledge to perform the treatment safely and effectively.

5. GOOD COMMUNICATION SKILLS

A therapist should be able to correctly explain a particular procedure or treatment as well as its after-effects and outcomes. They should also be aware of and explain the risks inherent with any treatment.

ith plenty of dangers lurking in the typical home pantry, use this list of toxic products as a guide in helping prevent your four-legged companion getting exposed to harmful substances.

Milk and Dairy Products

Alcohol

Wild mushrooms can contain toxins that trigger issues within numerous organ systems, including the kidneys, liver and brain. Nervous system abnormalities, seizures, a coma, vomiting and death can all result.

Alcohol is rapidly absorbed into the bloodstream and affects pets quickly. Alcohol can cause dangerous drops in blood sugar, blood pressure and body temperature. Intoxicated animals can experience seizures and respiratory failure.

Caffeine

Coffee, tea, energy drinks and diet pills contain caffeine. Symptoms once consumed include restlessness, hyperactivity, muscle twitching, increased urination, excessive panting, increased heart rate and blood pressure levels and seizures.

Chocolate

Dark chocolate is extremely toxic for dogs. It contains methyl bromide which cannot be processed by a dog’s liver. Symptoms are similar to a caffeine overdose.

Fatty Foods

Foods that are high in fat can cause vomiting and diarrhoea. Pancreatitis often follows the ingestion of fatty meals in dogs.

Fat Trimmings and Bones

Fat trimmed from meat, both cooked and uncooked, may cause pancreatitis in dogs. Plus, bones can splinter and cause either an obstruction or a laceration in your dog’s digestive system.

Fruit Toxins

Seeds from stone fruit can cause intestinal obstruction, whereas grapes and raisins can cause acute renal (kidney) failure in dogs. 58 ANIMAL HEALTH

Milk and milk-based products can cause diarrhoea. This is because adult dogs are deficient in lactase which is necessary for the digestion of milk.

Mushrooms

Nuts

These can cause an obstruction of the intestines. Mouldy nuts can also trigger signs such as lethargy, vomiting and loss of muscle control.

Onions and Garlic

The ingestion of onions or garlic causes the red blood cells circulating through a pet’s body to burst. Clinical signs of anaemia may be seen and symptoms can include lethargy, pale gums, weakness and collapse. Clinical signs may not appear for several days after ingestion.

Raw Eggs

Dogs can get food poisoning from bacteria such as Salmonella or E.coli. Plus, the excessive consumption of raw eggs may result in a biotin deficiency that can cause skin problems and affect the dog’s coat. Cooked eggs are fine.

Raw Meat and Fish

Raw meat and fish can contain bacteria that lead to food poisoning.

Rhubarb

The vegetable, rhubarb, contains oxalates which can


trigger abnormalities within the nervous system, kidneys and digestive tract.

Salt

Salt is poisonous to your pet and can be ingested in a number of ways from eating household playdough to swallowing too much ocean water. Salt toxicity can be very severe and results in neurologic signs, such as poor coordination, seizures and brain swelling.

Xylitol

Xylitol is a sugar substitute used in toothpastes, mouthwash, sugarless gum, cough medicines and children’s chewable multi-vitamins. Ingestion will cause the rapid release of insulin in dogs, causing vomiting, weakness and sometimes seizures or liver failure. For those concerned a pet may have consumed a toxic substance, contact a veterinarian immediately. Canteen Kitchen, Dunsborough HAVING ATTRACTED PLENTY of positive

reviews since opening its doors last October, new Dunsborough eatery Canteen Kitchen, located on the former site of Samudra, has been high on our must-visit list for a while. Time, then, for a lunchtime sojourn. With its relaxed setting amongst landscaped gardens close to town, the delightful surroundings of Canteen Kitchen offer the best of both worlds for diners. Large, beautifully sculptured, wooden bi-fold doors lead out to family-friendly alfresco dining or, in the cooler months, there’s plenty of room in the delightful restaurant. There’s a cool down-south vibe to be enjoyed but it’s still walking distance from the town centre, local shops and accommodation. Despite its attractive position, Canteen Kitchen may not have existed at all if it hadn’t been for a timely trip away. As operators of a number of highly successful food establishments in Perth, including Cafeina on Hay, The Outram Café and Coast Café, owners Chris Griffin and Josie Kempton had ideas for their next venture further afield. However, a weekend break away led to the pair buying a block of land in Dunsborough and the rest, as they say, is history. With a focus on fresh, healthy dishes - many of the ingredients come from the restaurant’s vegetable and herb garden at the back of the property - the wellthought out menu has something that caters for all tastes and diets. Classic dishes with a unique Canteen Kitchen twist abound, take the Fish and Chips with its 60 FOOD & WINE

Spanish mackerel or the Steak Sandwich with Black Angus sirloin, and there is also a number of daily specials always available. We chose the Slow Cooked Lamb Shoulder Ragu served with penne pasta, wilted spinach, aged parmesan and EVOO (extra virgin olive oil to the uninitiated) and were wowed by the deliciously tender meat and flavourfilled Italian-style sauce. For curry fans, there is nearly always a lunchtime curry special on offer, a perfect way to keep warm in the winter, and on the day of our trip the dish was a tasty looking Thai Green Seafood Curry with fresh snapper, prawns, scallops, mussels and sweet potato served with jasmine rice, pappadums and cucumber raita. Maybe next time! Featuring tasting boards, salads and kids’ meals, the restaurant also serves up some mouth-watering treats that can be ordered directly from the counter, including a range of cakes, tarts and muffins all freshly baked each day. Delicious coffee, we can vouch for that, and a good selection of local beers and wines complement the menu. Open for breakfast and lunch Thursday to Tuesday (Thursday to Monday during the winter) and dinner during the summer months, this outstanding local restaurant comes highly recommended. Winter Recipes

Chicken and Chorizo Casserole A hearty casserole – surely everyone’s idea of perfect, home-cooked comfort food! This recipe uses the Spanish sausage chorizo, which, with its earthy robust spiciness, takes the dish to a whole new level of deliciousness. Serves 4-6

Ingredients 200g chorizo, sliced 1 red onion, chopped 1 whole chicken, jointed 400g new potatoes, halved 1 small punnet cherry tomatoes

250ml white wine 600ml chicken stock 2 tbsp tomato purée 2 tbsp chopped parsley freshly ground black pepper

Method Place the chorizo in a large flameproof casserole dish and fry, without oil, over a medium heat until it starts to crisp and its oil is released. Remove from the dish. Add the onion and fry gently in the chorizo oil for 5 minutes until it softens. Add the chicken and stir to coat it in the oily onion mixture. Brown the chicken on all sides. Return the chorizo to the dish and add the potatoes and the tomatoes. Stir in the white wine, stock, tomato purée, parsley, and black pepper. Bring the liquid to the boil and then place the lid on top. Reduce the heat to its lowest. Cook for 45 minutes or until the chicken is cooked through and the potatoes are tender.

Sweet Potato and Blue Cheese Soup

The richness of this indulgent soup belies its simple ingredients and method. Serve it up straight away or freeze in portions for quick go-to lunches.

Ingredients 1 tbsp olive oil 1 leek, chopped 2 sweet potatoes, peeled and cubed 1½ litres vegetable stock

salt and freshly ground black pepper 150g blue cheese, crumbled

Method Heat the oil in a large saucepan. Add the leek and cook until softened. Add the sweet potato and stock and bring to the boil. At his stage, taste and season with salt and pepper, if necessary, but remember that the blue cheese adds saltiness too. Turn down the heat to low, cover the pan and simmer for 10-15 minutes or until the sweet potato is tender. Blend with a hand blender for a smooth consistency. Pour into bowls and serve with a little blue cheese crumbled on the top. Next time, try this soup with pumpkin instead of sweet potato, and swap the blue cheese for feta. 64 FOOD & WINE

WHO’S NEW? THREE RIVERS BREWING COMPANY a small, family-owned microbrewery has recently opened its doors in Mandurah and, after just a few months in operation, has quickly attracted a loyal and increasingly large following. Run by Mark Rivers and Trina Youchak, Three Rivers Brewing Company takes its name not only from the family name itself but also from the three rivers of the Peel region, the Serpentine, Murray and Harvey. Adding to the significance of the name, the city of Pittsburgh in the USA where Trina grew up is nicknamed the Three Rivers City. A qualified Environmental Scientist with a PhD in Catchment Science, Mark is a former home brewer who, having won a number of amateur awards (including the James Squire Trophy for Champion Amateur Brewer at the 2014 Perth Royal Beer Show), decided to pursue a commercial brewing career. The sales and marketing side of the business is carried out by Trina and the business operates out of a unit on Harlem Road in the suburb of Greenfields, Mandurah. With a total of eight standard beers now being produced, plus an occasional seasonal specialty beer, the philosophy behind the business is simple. Three Rivers Brewing Company believes the general public has had enough of mass-produced, poor quality beer so, to address this, they produce great-tasting, traditional-

style beers from the finest available ingredients. Using just water, malt, hops and yeast, the awardwinning beers are unfiltered and contain no additives, preservatives, colours or sugar and are all brewed to the strict German beer purity law, the Reinheitsgebot. Plus, some beers require extra ingredients, such as coriander or citrus, and these too are of the finest quality. Featuring an American-style malt-driven stout, a classic ESB-style English bitter and German influenced Kölsch, further beers in the range include a Belgian-style white beer and a traditional brown ale affectionately known as The Duck’s Nuts. Many of the brewery’s beers are now available around Mandurah and stockists can also be found from Perth to Bunbury and many places in between. The brewery has also recently announced the opening of its cellar door, which is open for tastings and retail sales only on Friday and Saturday from 12pm to 6pm.
