3 hours before the first course is to be served • Cut all vegetables for the soup and straccoto • Start the straccoto as this will take at least three hours • Mix the chickpea flour and water for the socca and cover • Finish cutting all vegetables • Mix muhammara, cover and chill
1 hour before first course is to be served • Start soup • Wash, cut and dry romaine
Just before the first course • Cook the socca • Mix the Negroni • Have all ingredients for Caesar ready for table side prep • Start the risotto • Serve the meal
