For me it’s pumpkin lattes, cosy jumpers, warm socks and Halloween! I’m always sad to see the end of summer and the warmer evenings but there is also something quite nice about swapping the barbeque for the slow cooker and trading your iced juice for a hot chocolate! It’s also a slight relief for me to reach October. September is such a hectic time in our family (with 4 Birthdays, 2 Birthday parties & “Back to School” to contend with!), October feels like a time to put my feet up (metaphorically speaking at least!) and enjoy a slightly slower pace. I’m hoping to get more time to relax, enjoy some fresh walks along our beaches, cooler days and maybe even a bit of warming comfort food… (yum!.) Talking of food, I always try and find a recipe that complements the edition and this month I’m treating you to a delicious pulled pork dish that’s perfect for dinner or, if you are like me, simply in a buttered and toasted roll. A real favourite in our household, whether you’re young, old or one of our friends visiting for a party! If you have ‘mini’ bakers in your home, ‘Mum’s the Word’ has a fun recipe for Halloween Spider Cakes. The decoration may be a bit tricky but it’s a great opportunity to spend some quality time tackling these together. Although having baked with kids I know expectation and reality sometimes don’t quite match up! Also in this article and in keeping with the Halloween theme, there’s a great guide of how to pick and carve the perfect pumpkin! Always remember to use battery operated tea lights! Whatever you are doing over the next few weeks, stay safe and always try to have fun!

Look for a pumpkin with an even colour, patches and dark spots may mean it is starting to rot. Check to see how firm it feels, particularly on the bottom, a fresh one will be firm all over. Once you have a fresh one check the stem is long enough that it can be used to remove the ‘lid’ and that it has a smooth skin, this will make it easier for children to draw on and you to carve.

Get your kids involved in making these spooky cupcakes, they will need some help as the decoration can be a little tricky! Then watch them crawl off the plates into hungry mouths! You’ll need: Muffin tin with 6 paper muffin cases, 120g plain flour, 140g castor sugar, 1½ teaspoons baking powder, pinch of salt, 40g butter at room temperature, 100ml milk, ¼ teaspoon vanilla extract, 1 egg. Decoration: 100g butter at room temperature, 200g icing sugar, 1 heaped teaspoon cocoa powder, ¼ teaspoon milk, 80g melted milk chocolate, 6 marshmallows, 3 liquorice wheels, 6 liquorice blackberries, 12 white chocolate buttons. Sieve in the cocoa powder and mix well together, adding ¼ teaspoon of milk to give it a good consistency to pipe. • Place the marshmallows on the end of cocktail sticks and coat with the melted chocolate, stand in egg cups to dry. • Smooth the butter icing onto the cake giving an even coverage. • Put the chocolate icing into a grease proof piping bag and pipe circles from inside to out starting small in the centre and getting larger to the outside of the cake, then take a cocktail stick and drag it through the chocolate lines about 6 times from the centre out. • Take the liquorice blackberries and attach one to each marshmallow with a little butter icing to form the spiders head. • To make the spiders eyes pipe a blob of chocolate icing on each white chocolate button and stick them to each head with butter icing. • Finally, place the spiders body on each of the cakes, unravel the liquorice wheels and cut into 1½ inch strips for the spiders legs, place 6 strips on each cake tucking the ends just under the spiders marshmallow body.

St Faith’s Meet the new Naval and Air Attaché to China! Arguably St Faith’s church played a vital part in the story I’m about to tell. It was there that Royal Navy Captain John Kelly married Pauline, whom he first met stacking shelves in the Lee on Solent Co-op. Pauline’s support and encouragement throughout their married life has been largely responsible for his subsequent success, so John tells me. John was the son of Joan and Gordon Kelly, a submariner who sadly died prematurely on a camping holiday in Spain and would have been justly proud of John’s achievements. John and Pauline, both residents of Lee, have recently settled in Beijing where John will be the Naval and Air attaché to China for the next three years. After this he intends to return to Lee and retire, having served a total of thirty-five years. Wanting to know more about his meteoric rise in the Navy I arranged to meet him at their home over coffee and biscuits, kindly provided by Pauline whom I remember as a star pupil and amazing gymnast when I was Head at Siskin Junior School (now Alver Valley). After attending Lee Juniors and Bay House, John commenced basic officer training at the Britannia Royal Naval College, Dartmouth. He learnt about life at sea on board HMS Bristol during a trip to the Caribbean and attended the Royal Naval Engineering College, Manadon, Plymouth, graduating with a BEng (Hons) degree. Needing to put theory into practice he qualified as an engine room supervisor on board HMS Broadsword and his next move, now a Lieutenant, was to HMS Ark Royal where he worked as the Shipwright and Flight Deck Engineer. Being the ship’s Guard (parade) Officer, he was part of all ceremonial occasions and once sat next to the Queen Mother at lunch who, as Patron of the Ark Royal, often visited the ship. After leaving ‘Ark’ his next job was to oversee the refitting of HMS Edinburgh during which time their son, Lewis (now a Royal Marine) was born. Following a Junior Staff Course at RNC Greenwich he spent some time at HMS Sultan as Assistant to the Director of Training, was then promoted to Lieutenant Commander and became a parent for the second time to their daughter, Mia, who has recently graduated from Leicester University with a degree in International Relations. From HMS Sultan he moved to Vancouver Island working as the Senior Engineer of the Canadian Pacific Fleet. 14

A series of moves followed with a spell on HMS Kent, Propulsion Trials Officer at Portsmouth and now a Commander. John also spent four years overseas on secondment to the Sultan of Oman. The list goes on until, after three years as Assistant Naval Attaché at the British Embassy in Washington DC and promotion to Captain, he was selected to be Naval and Air Attaché to China and has spent some time since learning to speak Mandarin. As for a ‘local boy does good’ story, I can think of nothing more impressive. John has risen through the ranks and yet he remains friendly and unassuming as though it was nothing more than doing a job he enjoyed and is still enjoying. Although, he admits, living in high rise accommodation in the centre of Beijing will be slightly different from living in Lee! I am sure that John and Pauline will be ideal representatives of the Royal Navy during their time in China. Finally, if you’re thinking of getting married yourself and wanting it to be followed by a highly successful career, perhaps you too should tie the knot at St Faith’s church. It clearly worked for John and Pauline.

THE GRASS IS ALWAYS GREENER A step by step guide to replacing your lawn Now’s not the time to be sitting back in the late summer sun - there is work to do in the garden before the crisp and cold starts to set in. Amongst the other jobs to do at this time of year (planting spring bulbs, harvesting the last of your apples, taking cuttings etc) this is the last chance you have to turn your attention to your lawn, assuming you didn’t have time to do this during the spring. Whilst the thought of creating a new lawn from seed can be daunting (wouldn’t it just be easier to get in the contractors with a tonne of turves?!) take a look at the guide below and you’ll see it’s reasonably simple to create a fresh batch of grass ready for you to enjoy. So as with everything in life, the key to a great lawn is in the preparation. Don’t skimp on this bit! You might be an impatient gardener but honestly make sure you get the ground ready before you waste further time and money laying seed. First of all, take a look at the size of the area you wish to redo. A smaller plot is generally manageable with a shovel to remove the existing grass, but it is labour intensive and hard work so you may prefer to rent a sod cutter from your local plant store which will slice through the turves and cut them into strips. It’s easier to do this work with wet ground so either wait for a night-time downpour or get your hose out to give you a hand. Once you’ve removed the grass then you’ll likely have a good muddy patch to work on. As with any other growing plant, grass is happiest in well-treated soil so clear away any weeds or plants and give the soil a dig over to remove any stones, lumps and roots. Tread the soil with your boots and take notice of any areas which might need redistributing to create a level lawn. Use a roller to flatten the soil and create a firm surface. Using a rake, go over the soil in different directions (a little

like painting a wall with a brush) and once you’re happy with the level you can add 2-3cm of seeding soil which gives the right conditions for germination. You may need to level again to produce a crumbly texture depending on the brand chosen. Now you have an area that is ready for sowing. This is your big ta-dah! moment! Sprinkle your chosen lawn seed across the area making sure to check the package instructions for the recommended rate of application. Lightly rake the surface to ensure your seed is incorporated into the soil. Using nothing other than gentle boots, walk over the seed pressing it gently as you walk. If your area is particularly large you can use a roller here. Water the whole area thoroughly but be careful not to wash the seeds away in the process so use a fine spray watering can or sprinkler. You’ll need to repeat the watering every day until your seeds are established which can take up to a couple of weeks. Note that it is better to water thoroughly once rather than several times lightly. Let the grass grow to about 5-8cms in length before you’re tempted to do anything with it. Then use your mower on the highest setting to give your handiwork its first cut. Make sure that the grass is dry before you do this. And there you have it. Of course it’s not going to be easy, but then the best things in life need a bit of effort, don’t they? For the sake of some good, old-fashioned hard work you’ll have a beautiful lawn to enjoy for years to come. Annie Gardner

Pulled Pork Sandwiches As the temperature drops, we find ourselves wanting more easy to make, comfort food. Not only is this dish simple to create is also tastes delicious. Perfect for quiet Autumn nights in. Equipment: Large slow-cooker, large bowl, forks Ingredients for 12 servings: 1 medium onion 8 tbsp ketchup 50g brown sugar 4tbsp tomato puree 2tbsp Worcestershire Sauce 5tbsp cider vinegar 2tbsp sweet paprika 1 ½ tsp Salt 1 ¼ tsp ground black pepper 1.8-2kg boneless pork shoulder 12 buns or ciabatta rolls Method: Mix together the onion, ketchup, brown sugar, tomato puree, Worcestershire sauce, vinegar and paprika, then add the salt and the pepper. Once you have done this, pour the sauce mixture into the slow cooker pot and add the pork, making sure to also coat it in sauce. 18

Pop the lid on top of the slow cooker and cook the pork. Do this on a low setting (one which the manufacturer recommends). Cook until the pork is tender for between 8-10 hours. When it is finally cooked, move the pork from the slow cooker into a large bowl. Change the temperature setting on the cooker to ‘high’, cover the pot and then cook the sauce. Do this until boiling point is reached to make the mixture thicker. Pull the pork apart into shreds (you can use 2 forks for this). Then put the shredded pork back into the slow cooker, mixing it into the sauce. Cover once again and cook on high. Finally, once warmed through, spoon mixture into buns and serve.

Creating the right ambience for a meal is easier than you think. Don’t spoil the chance of a perfect luncheon or evening get together by skipping on the details of your dining space. After all, if you’ve spent time toiling in the kitchen over a hot stove, you want to present your food in the right way, to be enjoyed by your friends and family. Some of us have dedicated dining rooms, whereas others have bar stools and a breakfast bar. No matter what space you have available, you can make it look beautiful to enjoy your meals with these simple tips: 1. Colour scheme Take a look at the colour scheme of your room and create place settings to match. For example, if you have a neutral space in whites/greys, then sprigs of lavender on a linen napkin can look stunning set on plain white crockery. You can create centre pieces with fresh or faux flowers or even purchase fabric to make your own napkins to tie in with your scheme. 2. Crockery Do your plates need a bit of an overhaul? Cracked or missing pieces are annoying and don’t look decadent. Yet a simple set of white or black plates can look really stylish, especially if they are an unusual shape. Look out for rectangular or square dishes which make a welcome change from round ones. You don’t

have to spend a fortune on new sets but purchase the best you can - a nicely shaped and weighted plate will wash and display well. If you have more of a cottage-style home then floral or delicately patterned crockery can be in keeping with your style in which case you want to keep the rest of your table dressing simple so as not to appear too cluttered. Having said that, some people really enjoy the vintage vibe that goes with mis-matched crockery and this can be reminiscent of the 1940’s with exquisitely shaped cups and saucers, scalloped plates and painted china. Much of this can be sourced from charity shops and is very en vogue, especially as you’re not purchasing from new. 3. Chairs Sitting comfortably for a meal, especially if it is likely to last for a little while, is really important to allow your guests to properly settle in and enjoy your food. You may not have expensive dining chairs but these can be made cosier by adding cushions or bolsters. If you have bench-style seating consider adding blankets or rugs for a stylish, yet comfortable effect.

You can add a magical theme of fairy lights over the table for both day and evening settings which make for a safer (and sometimes less toxic) alternative to candles. If you like a bit of flickering light then try to pick a non-scented candle so it doesn’t detract from the taste of your food. Candles in the top of wine bottles are rustic whereas pillar candles in storm lanterns can give off a good, but gentle glow. Lastly, welcoming your guests at the door with a hug and a smile is always a good start to an excellent food experience and if all else fails, a fabulous bottle of wine should be enough to keep

Keep on Running

Keep on Running September...it’s September! Anyone remember August? What happened? Was it a good one? At GosVegas Running we just know that September will be epic and memorable! You may have seen in the local newspapers or on social media that local superstars walk amongst us, here in our lovely town. We have

showcased some of these ourselves in months gone past. People like Rob Wood, who took on and defeated 6 Amazon Marathons in just 5 days or Dr Dan Rois De Sa who consistently chalks up amazing achievements at Marathon Du Sables and Ironman. Then of course there is Alex Thompson, the Mercedes and Hugo Boss sponsored round the world yachtsman. Joining the ranks of those ‘normal’ folk who go on to achieve extraordinary things we have two of our own, Jenny Shilling and Jackie Tombs. Both are Gosport Road Runners and stalwarts of our 545 RunClub and The Breakfast Club. They are unsung heroes, working tirelessly for their community and are always looking to help those that need a hand. They also just happen to be quite good at this running lark, so good in fact, that they have been awarded their England vests for performances over Half Marathon distance and they got to wear them on Sunday 1st September at Maidenhead Half Marathon. An actual England vest, can you imagine? I’m writing this as they will be getting ready for their moment so can’t at this precise mo-

ment tell you how they got on but as I see it, whatever happens during the race, it is their victory lap for all that they have achieved to date. That vest is a ‘gold medal’ and I hope that they both feel as proud of themselves, as their friends are of them. I’m sure they won’t mind me pointing out that neither of them are the right side of 30, they found their love and passion for running later in adulthood. If their achievements don’t go to prove that where there is desire there is hope, nothing does. So, run for fun or run for glory, it’s up to us to choose. Whichever way we jump doesn’t make us less or more as human but we do have a choice. At this present time, I’m just happy that I can get out in the fresh air a few times a week. Who knows, if the ageing body holds up and I can stop shoveling calories down my neck, I too aspire to a national vest before I’m too old! It’s unlikely but never say never. For now, my Gosport Road Runner yellow vest and my chums at the 545 and The Breakfast Club are more than sufficient. What are you aiming for?
