The ‘signature’ Lemon Drizzle Cake - Nick Marston, Assistant Technical Officer I use various loaf tins 2lb or 1kg Ingredients 225g of ‘margarine’ I use Aldi’s Beautifully Buttery 225g caster sugar 4 eggs, medium or large 225g self-raising flour 1 large lemon, zested For the drizzle topping 1½ lemons, juiced approx. 60mls 75g caster sugar 6 Sugar cubes Method STEP 1 Pre-heat the oven to 180C/160C fan/gas 4.

STEP 2 Beat together the butter and caster sugar until pale and creamy, then add the eggs, one at a time, slowly mixing through. STEP 3 Sift in the self-raising flour, then add the lemon zest and mix well. STEP 4 Line your loaf tin with greaseproof paper, then spoon in the mixture and level the top with a spoon. STEP 5 Bake for 55-65 minutes until a thin skewer or toothpick inserted into the centre of the cake comes out clean. Whilst baking add the caster sugar to the juice and rest on the oven to dissolve the sugar STEP 6 While the cake is cooling in its tin, mix together the lemons juice and caster sugar to make the drizzle. STEP 7 While the cake is cooling in its tin prick the warm cake all over with the skewer or toothpick, then spoon the drizzle quickly adding the sugar cubes for extra crunch. STEP 8 Leave in the tin until completely cool, then remove and serve. Stand back and watch it disappear...

Low-carb quick and tasty postshift meal Pauline Newsome, Clinical Educator My healthy quick meal after a day at work can be ready in 10 minutes! • In a large frying pan put half a tin of anchovies and its olive oil on a medium heat (or just oil) • A dd some garlic & a bit of chilli (or not) • Cook soba noodles (5 minutes) or courgette noodles - to use that spiralizer you got for Christmas for a low carb meal (or if not, use linguine or other pasta if that’s what you have in the cupboard) • In the frying pan throw in a bag of seafood, prawns or pre-cooked hot salmon. • Add your cooked ‘pasta’ to the pan to mix. • I add a bit of rocket for a bit of greenery and voila. Fast and healthy - means I can have my chocolate later whilst I read my kindle - nothing like a bit of murder to help me relax!
