Auntie Esther’s Lemon-Oatmeal Crispies

What Goes In?

2/3 cup vegetable oil

1cup all-purpose flour

2/3 cup brown sugar

1cup rolled oats

½ cup egg white

½ tsp baking powder

2 tbsp lemon juice

½ tsp baking soda

2 tbsp grated lemon rind

1½ cup crispy rice cereal

1 tsp vanilla extract

Making Those Bite-Sized Blessings!

1. Mix vegetable oil & sugar at medium speed until creamy.

2. Add egg white, lemon juice, lemon rind & vanilla extract to the above ingredients and blend well.

3. Stir flour, oats, baking powder, & baking soda together to blend well.

4. Add this flour mixture to the egg white mixture while beating at medium speed.

5. Stir in crispy rice cereal.

6. Drop tablespoonfuls of mixture onto ungreased cookie sheet.

7. Bake at 350ºF/180ºC for 8-10 minutes (or till light brown in colour).

8. Move cookies to a wire rack & cool to room temperature.

And it’s ready to serve!
