ho doesn’t love a good wedding? Dancing, great food, flowing champagne, tears, laughter and everything in between. It’s one of the few days when we can stop and celebrate something so positive and promising—a new family being born, no matter what the configuration. And, as the lovers hold each other’s Things look bright and rosy on the day Robert Haukoos and I said “I do." hands, ready to jump into the future—together—it’s hard not to revisit our own love stories or dreams of love. So often the wedding day precedes all the real-life weights and responsibilities that follow it. Yes, I know not all weddings are prekids and pre-mortgage but, even when they’re not, this is the day that every bride is a beauty and every groom, a prince. It’s a day of dreams and promises. A day celebrating love and commitment. And, for the guests, it’s a helluva party. We are doing something different in this issue of Beyond, devoting a whole section of this issue to the topic of weddings. We peek inside three real weddings and take a few minutes to focus on a couple of the details that make a wedding sweet—flowers and cakes. Lucy�s Champion A lifelong love of animals drives one man's work to keep pet populations in check In the aftermath of Hurricane Harvey, Joey Herrick quickly jumped into action to help Houston’s injured and lost pets, an act characteristic of a man who has spent his life devoted to animals. Herrick, founder of the Lucy Pet Foundation, and his team, including chief veterinary officer Karen “Doc” Halligan, hurried to Houston in September at the request of the Brazoria County SPCA, which was overwhelmed with the influx of 1,000 displaced animals. Halligan, a pet health expert known for her “Ask the Doc” segment on KTLA 5 Morning News as well as years of advocacy with the L.A. SPCA, became incident commander at the scene, treating injured pets. Herrick took on the task of making room for incoming animals by chartering jets to deliver animals already at the shelter to rescue organizations in Northern California. Actress Renee Zellweger, a native Texan with a heart for animals, made a surprise visit, helping to load animals on the plane and send them off to their new forever homes. Despite Herrick’s intense work in Texas this fall, his focus still remains on his primary passion: reducing pet overpopulation so that fewer pets end up in shelters in the first place. “You’ve got to lower the number of animals coming in. No shelter wants to kill animals but they have to for space,” he says. Herrick says it was the helpless feeling that came from knowing that adoptions were not keeping up with the number of homeless animals that inspired him to form the Lucy Pet Foundation in 2013. The Westlake Village-based nonprofit performs low-cost spay and neuter surgeries using two mobile clinics. L.A. so far and is adding a mobile clinic in Texas. The foundation was named after Lucy, a stray Chihuahua that Herrick’s then 10-year-old son Dylan spotted in the mountainous area near their home. Herrick’s wife, Lynnda, went with Dylan to catch what they thought was a baby coyote and realized she was a little dog, a tire mark on her back, gray with mange and with nails so long they’d grown into her paw pads. “She was all alone
a long time,” says Herrick sadly. After Lucy recovered, the family took the pup to be spayed but found that she was already pregnant from her time in the wild. Lucy gave birth to five puppies. The Herricks kept one and found homes for the rest. Still Lucy’s plight haunted Herrick and he made her the namesake of his foundation. Her image graces the foundation’s logo and she still hangs out with him at Lucy Pet headquarters.
The foundation also works to spread awareness by capturing the public’s attention with their Gnarly Crankin’ K-9 Wave Maker. The 75-foot trailer outfitted with a wave generator and 5,000 gallons of water showcases surfing dogs (including Surfin’ Jack and Coppertone) and one cat (Ricky the Rescue Cat). The Wave Maker has traveled throughout the U.S. and into Canada, drawing attention to adoptable pets as well as the need for spaying and neutering. The foundation also takes Ricky and Jack to schools to educate children. “We want kids to realize that these are living animals with beating hearts that just want to be loved,” says Herrick. His own love for animals goes back to childhood, when his beloved pets slept on his bed. As a young man with a desire to help animals and armed with some innovative ideas for their nutritional needs—“Years ago I was the guy who pioneered duck and potato!”—Herrick partnered with actor Dick Van Patten to launch a wildly successful company, Natural Balance Pet Foods, in 1989. Over the years the company donated millions of pounds of dog food to various charities, but Herrick still wanted to do
more. In 2013 he used the proceeds from selling his company to Del Monte Foods to start the Lucy Pet Foundation. His latest project has taken him back to the world of pet food. Lucy Pet Products foods utilize prebiotics to support immunity through good gut health. Herrick is also proud of the Lucy Pet cat litter, Cats Incredible, which prevents ammonia from forming in litter boxes. One hundred percent of the company’s earnings go to the Lucy Pet Foundation. Meanwhile, the K-9 Wave Maker continues to make waves. At the 2017 Tournament of Roses Parade, the Lucy Pet Foundation broke the world record for longest and heaviest float with eight surfing pups. Herrick promises new and exciting things for the parade this New Year’s Day. In keeping with the theme “making a difference,” the Lucy Pet float will feature heroic animals that have saved people’s lives, he says. Herrick takes no salary from either organization so that all the money can go to helping more animals. “It’s a privilege—and has been for 30 years—to be in the pet industry,” Herrick says. “I want to change animals’ lives.”

Dr. Sevak Khodabakhshian, Dr. K for short, likens his invention, the IntelliRoll, to a toothbrush for your back: a handy, preventative at-home tool to keep your spine healthy and happy. And, just like brushing and flossing, he says implementing the foam roller in your daily routine will help keep the doctor (and back problems) at bay. The charismatic Thousand Oaks-based chiropractor, personal trainer and entrepreneur approaches his work with mindfulness, intention and the wisdom that comes from almost 20 years treating backs. Though he had always been interested in the inner workings of the body, Dr. K faced the struggle that comes with a spinal injury firsthand when he hit his head on a shallow sandbar as a surfer living in Hawaii. That experience inspired him to resolve to help people achieve physical health through natural medicine. In 2003, he opened Omega Rehab & Sport, a clinic and outpatient orthopedic rehab center in Thousand Oaks. Dr. K and his wife Tyaga, also a personal trainer, soon realized that traditional cylindrical foam rollers weren’t effective in reaching the key joints and muscles along the spine. They set out to design a roller that would actually help strengthen the back—not cause more pain. Dr. K literally took a foam roller to a lathe and carved it to match the angles and curves of the human body. To date, they have sold over 5,000 IntelliRolls and, to help users make the most of their tool, they created Body Fix University, a free online resource that offers proper spinal care techniques and instructional videos. Curious about the IntelliRoll, we asked Dr. K to explain how he takes preventative spinal care back to basics.

Beyond: How did you get into fitness? Dr. K: Ever since we were young, sports have been a part of our lives. I started playing basketball and skateboarding at a very young age. I discovered surfing in my early teens and was hooked right away. Tyaga excelled at soccer in her teens and started working and weight training in a gym in high school. Beyond: What sets your product apart from other foam rollers? Dr. K: We worked . . . to create a product with accurate anatomic features to provide more surface area contact, which reduces the pain commonly associated with foam rolling and reaches a far greater area than flat foam rollers. This makes the experience more enjoyable and efficient.

Beyond: Who can benefit from the IntelliRoll? Dr. K: Anyone with a spine. Seriously! Certainly, anyone with neck or back pain or anyone who is struggling with musculoskeletal conditions where tight muscles are an issue. Beyond: Do you have a favorite way to use it? Dr. K: We use it for 10 to 15 minutes at the end of each day on our neck and upper back as it provides so much relief from the tension that naturally builds up throughout the day. Beyond: What has been the biggest challenge so far? Dr. K: The designing and patent process was the easy part. Becoming an entrepreneur is the biggest challenge because one has to wear many hats; everything from bringing a product to market, to finding the right distribution channels, to finding the right factory and getting the lowest cost basis to stay competitive while providing a quality product. It’s a steep learning curve, but the rewards are many and we are enjoying the ride. Beyond: What’s next? Dr. K: We just released a new pink, slightly softer version called Flexy and are donating 10 percent of the proceeds to the National Breast Cancer Foundation in support of Breast Cancer Awareness Month. We are also going to be introducing a travel and a vibratory version in late 2018. Beyond: How do you juggle life as a chiropractor, entrepreneur and owner of a multidisciplinary clinic? Dr. K: It’s not easy but I’m getting better at it with practice. I’ve always had a faith-based belief system, knowing everything ultimately happens for my personal growth, taking the good with the bad, the ups and downs as part of a greater journey toward self-discovery. Beyond: What’s it like to own a business together? Dr. K: It is both challenging and rewarding at the same time. We get to celebrate the highs and tackle the lows together. It takes awareness and planning to separate business and family. We schedule business meetings together and whenever possible avoid business discussion after the work day is over. We are both passionate about living an active and healthy lifestyle. . . . Our philosophy is simple—to enjoy life we have to keep our bodies as healthy as possible. Our mission is to help others do the same.

Relax. Sip. Enjoy. That’s the philosophy behind Jody Helfend’s instant, savory sipping broths. For the busy father of three and owner of three businesses, it’s also an important reminder to slow down every so often. By no means a newcomer to the culinary arts, Jody joined his family business in the ’80s, creating healthy concentrated soup bases for restaurants and hotels. But it wasn’t until 2012 that the Calabasas entrepreneur launched his own clean-label soup and broth concentrates company, Chef ’s Premium, which supplies MSG-free, “clean-label” (made using yeast instead of MSG substitutes) flavored concentrates to large soup manufacturers. With The Art of Broth, Jody is taking it to the next step, making broth concentrates available for individual consumption. He has created a 15-calorie, non-GMO, vegan, kosher and gluten-free broth using savory flavors extracted from plant-based products. By packaging it in small tea bag sized sachets, Jody has made enjoying broth as simple as steeping tea. Add hot water, wait two minutes and enjoy. The instant broths are already taking flight—literally. Since its October launch, The Art of Broth has been picked up for retail sales in 30 airports across the country, including LAX, and in several Las Vegas casinos. It’s also on the room service menu at the Venetian hotel. Beyond talked to Jody to get a better taste of The Art of Broth philosophy.

Beyond: Where did the idea for your instant sipping broths originate and how did you make it a reality? Jody: The idea came from my wife, Ivette, who suggested one day about a year and a half ago that we create a consumer-friendly package that would allow the soup bases that I make to be offered to the public. This was the most challenging research and development project I’ve ever done. And being able to create savory flavors from plant-based ingredients was a unique challenge. But, from a business perspective, I’m really enjoying going to work. Beyond: And how about the name, The Art of Broth? Jody: Two aspects: There’s a culinary art of creating flavor that I’m passionate about. I’m passionate about creating food that makes someone smile. And there’s the art of enjoying life. Of taking a moment out of the day, out of the normal day of running and running and running. . . . Broth does that. Both are important to me. Beyond: I understand you have a very food-oriented family background. Jody: It started with my grandfather manufacturing soup bases back in the late ’60s. Building The Art of Broth was really a way for my kids to join the family business. In our household, food and family meals together have always been a big part of our family. And soup happens to be a big part of those dinners. Beyond: Why soup? Jody: There’s something about it. It brings people together. It feels like home. We’re filling a unique niche because . . . you can bring it on the plane, in a purse, wallet or briefcase to enjoy comforts of home—it’s more satisfying and filling than a cup of hot coffee or tea. When you taste it, you’ll taste the mouthfeel of chicken fats. The richness is there, but without the calories. And this is how homemade soup is supposed to taste—not like the salty bouillon cubes most people are familiar with. Beyond: You now offer three flavors: Savory Chicken, Vegan Vegetable and Savory Beef Bone. Are there any new recipes in the works? Jody: We will soon be launching two new flavors: a Thai lemongrass and a miso. Beyond: Do you have a favorite way to enjoy? Jody: I’m definitely that person that works at a frenzied pace. I’ll forget to eat or if I do eat, I’ll inhale a bite of a sandwich. I’m high up in an office building, and I have a beautiful view that goes unnoticed for so much of the day. So I’ll get a cup (of broth) and wander to the window, appreciate the view and let my mind wander. I don’t have a lot of time in my day to meditate or work out, and usually by 3 or 4 p.m. I’ve been going at it for a long time and I love taking those five minutes to enjoy the smells and tastes and get centered again. Plus, it’s relaxing to steep. There’s something comforting about the art of dipping the sachet in the water.

A fun and flavorful twist on veggies
When food writer Carina Wolff came across a nifty kitchen tool called a spiralizer four years ago, she could barely contain her excitement. “I love pasta, so when I discovered this machine could make pasta out of vegetables I became obsessed with it!” she says. Carina, who graduated from Westlake High School in 2009, had been making an impact with her healthy food blog, Kale Me Maybe, during her senior year at New York University. After loading her blog, Instagram and Pinterest accounts with her innovative spiralized veggie recipes and accompanying mouthwatering photos, she gained thousands more followers and garnered the attention of a book publisher. “The Spiralizer Recipe Book,” published in 2016, fulfilled both her desire to write and her passion for sharing her nutrition knowledge with others. That passion for creating meals based on vegetables took another leap with Spiralized vegetables take the place her latest book, “Plant-Protein Recipes That You’ll of pasta, crusts and fries in Carina Love” (2017), which has 150 recipes showcasing Wolff's colorful recipes. vegetarian protein sources. Oddly, Carina wasn’t always a health fanatic. “My mom and grandma were really into nutrition before it was mainstream. But I hated eating healthy!” she says. In high school she rebelled and ate whatever junk she wanted. “And then I realized I didn’t feel that great.” Studying the effects of eating well—or not—on the body and mind led Carina to experiment with a plant-based cuisine to make healthy eating taste amazing. “Finding this knowledge on my own inspired me to tell others about it.” Carina’s advice for the beginner spiralizer: start with zucchini. “It’s physically easy to spiralize, plus it’s quick to cook.” Spiralized zucchini, which she calls “zoodles,” are easy to pair with other ingredients normally eaten with pasta. Carina recommends using the biggest veggies you can find that are as evenly shaped as possible for easy spiralizing.

large zucchini Tbsp. extra-virgin olive oil, divided Tbsp. ghee (clarified butter) Tbsp. garlic, chopped (about 6 cloves) jumbo shrimp, uncooked cup finely chopped onion cup chopped fresh parsley cherry tomatoes Juice of 2 small lemons tsp. red chili flakes tsp. salt tsp. pepper
Cut zucchini in half crosswise and slice off both ends. Spiralize using a small-noodle blade. Pat between two pieces of paper towel to remove excess moisture. Set aside. In a large pan, heat 2 Tbsp. olive oil and ghee on low heat. Add garlic and cook for one minute. Turn heat to medium-low. Add shrimp and onion and cook for 5 to 6 minutes, stirring every minute or so. While the shrimp are cooking, heat 1 Tbsp. olive oil in a separate large pan on medium-low heat. Add zucchini and toss around for about 3 minutes. Zucchini should be undercooked, as it will cook down more when combined with sauce. When shrimp are done, remove from heat. Add parsley, tomatoes, lemon juice and red chili flakes, stirring until everything is mixed evenly. Pour mixture over zucchini noodles and toss until evenly coated. Potato-Crust Pesto Pizza with Avocado Serves 1 to 2 (makes 1 pizza)
Although it might sound blasphemous, this pizza contains no bread and no cheese, but it will still have you drooling over a slice. Crust 1 large russet potato 1 Tbsp. coconut oil 1 Tbsp. almond flour 1 Tbsp. flaxseed meal 1 Tbsp. olive oil, plus more for drizzling Kale Pesto ½ cup kale, stems removed, leaves torn 1½ Tbsp. walnuts 1 clove garlic 1 Tbsp. olive oil Juice of 1 small lemon Toppings ½ zucchini, uncut 1 small heirloom beefsteak tomato ½ avocado 4 or 5 basil leaves Olive oil, for drizzling Oregano Pepper Preheat oven to 425˚. Peel potato, cut in half crosswise, and slice off both ends. Spiralize using the small-noodle blade. Toss with coconut oil, almond flour and flaxseed meal. Heat a large oven-safe pan with 1 Tbsp. olive oil on medium heat on stovetop. Add noodles to the pan; form into a circular shape and pat down with a spatula. Cover and cook for 3 to 4 minutes on the stove. Remove pan from stove and place it in the oven. Bake about 10 minutes until potato crust is solid enough to transfer to a baking
Butternut Squash “Mac and Cheese” Serves 4
Get creative and use any type of cheese you like, but this recipe calls for cheddar like the classic comfort dish. The kids will have no idea they aren’t eating the real deal, as the physical resemblance is pretty uncanny. 1 large butternut squash 2 Tbsp. extra-virgin olive oil 2 cloves garlic, finely chopped ⅓ cup grated Parmesan cheese ⅓ cup grated sharp cheddar cheese 3 Tbsp. Greek yogurt Cut the bulbous end off the butternut squash (it won’t be used in this recipe). Peel the remaining portion of butternut squash until the top, tough surface is completely removed. Slice in half crosswise and cut off stem end. Spiralize using a small-noodle blade. Heat olive oil in a large pan on medium heat. Add garlic and squash noodles and stir around the pan so that noodles are evenly coated with olive oil and garlic. Cover and cook for about 7 minutes or until noodles are super soft. Lower flame and use a spatula to break noodles into smaller, bite-sized pieces. Add Parmesan cheese, cheddar cheese and Greek yogurt and mix thoroughly on low heat until cheese is melted and noodles are evenly coated. Serve immediately while warm.
Mexican Kale Salad with Spicy Avocado Dressing and Shoestring Fries Serves 2 to 3
If you’ve ever gotten a salad and wished you had a plate of French fries instead, this dish is for you. If you like heat, feel free to add a bit more jalapeño to really pack a punch. 1 medium russet potato 2 Tbsp. extra-virgin olive oil, divided ½ tsp. paprika 5 cups kale, stems removed, leaves torn ½ tsp. salt 1 cup canned black beans, rinsed and drained 4 Tbsp. green onion, chopped 6 cherry tomatoes, halved or quartered Spicy Avocado Dressing Preheat oven to 425˚. Cut potato in half crosswise and cut off both ends. Spiralize using a small-noodle blade, pressing lightly so noodles come out stringier. Spread noodles evenly on a baking sheet lined with aluminum foil, making sure they aren’t covering each other. Drizzle with 1 Tbsp. olive oil and sprinkle on paprika. Toss if necessary to coat evenly. Bake for 20 to 25 minutes or until potatoes are brown and crispy, checking occasionally to make sure they don’t burn. Remove from oven and set aside. Put kale into a large bowl. Drizzle with 1 Tbsp. olive oil and ½ tsp. salt. Massage kale by rubbing the leaves between your hands, using your fingers to soften the leaves. Add beans, onion and tomatoes. Toss salad ingredients with Spicy Avocado Dressing. Top with crispy shoestring potatoes and serve. Spicy Avocado Dressing 1 large ripe avocado ¾ cup cilantro 3 Tbsp. jalapeño, chopped Juice of 3 lemons 4 Tbsp. extra-virgin olive oil 1 Tbsp. apple cider vinegar Blend avocado, cilantro, jalapeño, lemon juice, olive oil and apple cider vinegar in a blender or food processor until smooth. Dressing will be thick. Add additional olive oil if you prefer it thinner. * More recipes at beyondtheacorn.com

sheet. It may not be completely crisp and firm yet, which is ok. It just needs to stay together so you can continue to cook it on the baking sheet. In a blender or food processor, combine kale, walnuts, garlic, 1 Tbsp. olive oil and lemon juice and blend together. Set aside. When potato crust has cooked for 10 minutes, remove from oven and drizzle with olive oil; bake for another 10 to 20 minutes or until crust is almost crispy. Remove crust from oven and increase oven temperature to 475˚. Using a peeler, create zucchini ribbons by dragging peeler from top of zucchini to the bottom. You’ll need about 5 zucchini ribbons. Thinly slice tomatoes and dice avocado. Spread pesto over crust. Place basil leaves on top of pesto and top with tomato, zucchini and avocado. Bake for about 7 to 10 minutes or until veggies are cooked. Remove pizza from oven. Drizzle with olive oil and a dash of oregano and pepper. Serve warm.

DREAM COME TRUE: Lauren says she had always pictured what she wanted her wedding to be like and after she was engaged to Aaron she knew they both were “on the same page” with everything they wanted the day to be. “We both wanted the ceremony to be special and show how much we love and care about each other but then we also just wanted it to be the best party we ever went to,” she says. SUBTLE WITH SPLASH: They kept the colors neutral: white, gold and black with the bridesmaids dressed in a deep eggplant color. The flowers were masses of white but the florist recommended adding some anemones to the bridesmaids’ bouquets to tie in with their dresses. The hardest thing to decide on was the live band but, says Lauren with a wink, “besides deciding to marry Aaron, hiring them was the best decision ever.” IT TAKES A VILLAGE: “I couldn’t have done the wedding planning without my mom,” says the bride. “She was a lifesaver and helped with so many things. My sister, also maid of honor, was a huge help when I needed another opinion.” And how did it all work out? “I wish we could go back and live that weekend over and over. It was everything we had hoped it would be!” says Lauren. In a word: “Perfect.”

Camarillo Ranch was the perfect spot, with its beautiful gardens and mature trees, which fit the couple’s desire for an outdoor wedding. “Joey and I have had so many memorable moments at the Ranch that it feels like home to us.”
HERITAGE: The theme of the day would be what the couple dubbed “Mexican-bohemian,” reflecting Marissa’s heritage. “I have always loved the bright colors and motifs of Mexican-inspired art and décor,” she says, adding “we celebrated Joey’s Italian heritage as the theme of our rehearsal dinner.” Dahlias, roses, peonies and gardenias in bright jewel tones made up the six dozen flower arrangements, designed by a dear friend’s mom, of course. MEANT TO BE: College sweethearts Laura and Rob tied the knot at Saddlerock Ranch in the Malibu hills. “It was the first and only venue I looked at,” Laura recalls. “I knew I wanted to pick it as soon as I saw it.” HILLTOP RETREAT: Though the Ranch has several spots for weddings, the couple chose the Chateau Le Dome, a stone house perched on a hilltop surrounded by vineyards. With dramatic panoramic views, the couple exchanged vows under an arch made from the branches of a fallen oak tree, then dined and danced with their guests just steps away while the sun set behind the surrounding mountains. The day was intimate and elegant with the romantic, rustic feel of the land surrounding them.

FAMILY TIME: “I wanted family-style (food) because I loved the idea of sharing and passing plates amongst the guests,” Laura explains. “I made sure to include hearty food … like braised short ribs, fried chicken, corn bread with maple bourbon butter.…We had mini lattice-crust pies as escort cards that said ‘Who said you can’t eat dessert first?’” Also, it was important to the couple to have a film photographer. “I feel like film is able to capture the magic and tone of a beautiful vineyard wedding in a way digital could not,” says Laura. Her one word to sum up the day: “Unforgettable.”

In 2014 the GCYFL spent a year researching National medical data for average age and weights of American Youths. We compared this data with 6 years of data on players in our league and came up with new Safer Age and Weight Divisions. The Research data indicates that the average weight of a 9 yr old is roughly 65 lbs and 95% of 9 yr olds are under 95 lbs. The GCYFL used this data and like data across every age group to create our Divisions. s u o r u t Adven it She was just a wisp of a girl, 5'1" and 118 pounds. But Amelia Behrens-Furniss had the guts and courage of a superwoman. Raised by her father, who ran a commercial dive operation serving the oil industry, Amelia grew up around deep sea diving. So when asked to dive 162 feet down a pipe to retrieve some tools that were blocking a drilling operation on Carl Proud’s ranch in Simi Valley, Amelia was game. The year was 1921. Amelia was 25 years old. The young woman made five dives into that 24-inch pipe wearing gear that weighed nearly 450 pounds. Water filled the lowest 45 feet of that pipe and that’s where the tools were. She got stuck once, during a dive that lasted some 3 hours, but ultimately succeeded in retrieving the tools. The press called her “fearless.” Amelia, who once won first prize in a redhead contest, also did some wing walking on the bi-wing airplanes of that time, appearing in movies and air shows. While filming a scene for “The Perils of Pauline,” Amelia had to jump from a 110foot beam into the ocean while being chased by a villain. The film’s hero rescues her but, according to Amelia, the actor was not a good swimmer and nearly drowned her. Amelia also served as a WAC nurse during World War II.
