RE you stuck in a food rut? Need new inspiration? Rachel’s threehour cookery courses are run from her kitchen in Oundle and teach participants to cook creative and healthy meals. Each workshop includes a breakfast, lunch and dinner recipe and all ingredients are provided. Rachel’s recipes are simple to follow with attendees working in pairs to prepare, cook and consume in a relaxed and fun environment. Nene Living attended the ‘Veggie Superfood’ workshop, which began with a healthy avocado, date and chocolate smoothie – a recipe that can be frozen into popsicles or presented as a mousse-style dessert. We made a deliciously warming cheesy cauliflower soup for lunch and followed this with a fresh tomato spaghetti sauce. Rachel provides time-saving tips throughout: it had never occurred to me that the quickest way to clean a liquidiser was to simply whizz up a few drops of detergent with hot water. And scoring a tomato prior to covering in boiling water will make it much easier to peel, of course! Rachel’s talent as a cook is impressive but her knowledge of the science behind food technology is what sets her above the rest. She has a Ph.D in plant molecular biology and previously taught sixth formers at Oundle School researching plant gene function in a project linked with a Plant Sciences Department laboratory at Cambridge University. Generously imparting her wisdom related to the themed workshops, participants leave with printed notes on the ingredients as well as the recipes. Workshops cost £25 per person and are ideal to share with a friend or make an excellent gift. Rachel also runs children’s parties and tailored cooking lessons from the comfort of your home, as well as bespoke sessions for young adults leaving home for the first time. FOOD and Music Festival will be held at the City Market on July 21, throwing the spotlight one of the city’s hidden gems. One of the highlights of the event will be when Prevost chef and founder Lee Clarke closes his restaurant in Priestgate for the afternoon to prepare a three course menu using ingredients from the stalls and the food hall with its butchers and fishmongers. The feast will cost £40 a head, including wine and water, and tickets should be pre-booked at www.exploretock.com/prevostpeterborough/ If you haven’t visited the market recently, it’s definitely time to take a second look. We recommend ZeroZero Pizza, with takeaway pizza made to a traditional Neapolitan recipe, and featuring varieties such as the Firecracker, with spicy Pastrami, jalapeno chili and garlic oil. If you love Thai food, Siam Thai offers a selection of delicious takeaway soups and curries. Embe2Go is the place to head for Caribbean food, with jerk chicken, curried goat, rice’n’peas and wraps. The City Market Diner, which has recently been awarded a five star hygiene rating, serves classic English breakfasts, hot dogs and burgers. For homemade cakes and bakes, Victoria’s Sponge House has a selection of freshly made treats, including fruit cakes, cup cakes and cookies. Curry fans will find plenty of choice, from takeaways, including fresh parathas and rotis straight from the griddle and delicious potato and onion bhajis, or buy the ingredients to make your own Indian food at home, everything from hard-to-find spices to curry leaves.
