It’s been a while since I wrote the welcome to one of our magazines so I’m delighted to be here and writing about one of my favourite seasons. Summer is the season of sunshine, blue skies, longer days and warmer evenings. It’s a time to get back in the garden and enjoy everything it has to offer and in the pages of this magazine you’ll find ideas and inspiration in abundance to help you Get Summer Ready!

Monte and Tonic Amaro Montenegro is a bitter-sweet spirit from Italy, where it’s been made in mostly the same way since 1885. It uses 40 botanicals to craft a flavour profile that’s all at once bitter orange, golden sultana, and warming spice. Top Summer BBQ Tips In order to experience the best British BBQ follow Richard’s top tips:• Put the lid down! If you’re lookin’, you ain’t cookin’! • Grill at 250°C to cook foods thoroughly, without burning. • Use Rapeseed oil. A great British product and healthier too! • Cook meat from room temperature. • Pre heat that BBQ! TRY THIS AT HOME
Lamb and Mint Sauce Burgers INGREDIENTS
METHOD
600g lamb mince
Preheat your barbecue for 15 minutes at 250°C grilling heat, lid down and vents open as applicable.
2 tbsp mint sauce 1 tsp sea salt flakes 1 tsp cracked black pepper 1/2 tsp sea salt flakes bread rolls
Combine the lamb mince with the mint sauce, salt and pepper and divide and shape into 4 equally sized burgers. Cook for 2-3 minutes then check to see if the burgers are ready to turn. If they have good colour and come away from the grate easily, flip them over and replace the lid. Cook for a further 2-3 minutes then check their core temperature with a thermometer. If any are 75°C at the core the remove to a serving plate. If there are any less than 75°C move them to the area of roasting heat and close the lid to continue cooking. Once the burgers are 75°C remove from the barbecue.

Two 8-ounce skinless, boneless chicken breasts 3 cups butternut squash 1 red onion, sliced 1 smashed avocado
200g goats cheese 1 cup chopped coriander 150g mixed salad leaves 2 tbsp Cottage Delight Fig & Pomegranate Dressing
King prawns 1 avocado, sliced 2tsp garlic Juice of 1 lemon Handful fresh parsley
75g garlic butter Salt 1 loaf ciabatta, sliced 1tbsp Cottage Delight Fiery Caribbean Sauce
METHOD
METHOD
Line a baking tray with aluminium foil and set aside. Place the chicken on the foil lined tray. Lay the vegetables alongside and drizzle with oil and season. Place the tray on the middle rack of the hot oven and cook for 11-13 minutes. Do not disturb the vegetables or chicken so that they develop a caramelized crust. Transfer the chicken to a plate and cover with foil, then put the baking tray back into the oven and cook the vegetables for an additional 5 to 7 minutes or until done. Slice or chop the chicken breast. Assemble the bowls by layering the chicken with the butternut squash and roasted onion. Top with avocado, goats cheese and garnish with coriander and Fig & Pomegranate Dressing. Serve with mixed salad leaves.
Spread a layer of garlic butter on each ciabatta slice. On a baking tray greased lightly with oil, add the ciabatta slices and cook on the grill on a medium high heat until golden. Combine garlic, half the lemon juice and all of the prawns in a bowl and season with salt. In a large frying pan add a splash of olive oil and cook the prawns for around 3 mins on each side, until cooked. Remove from the heat and sprinkle through the parsley. In a bowl, combine the avocado, tomato, the remaining lemon juice and a pinch of salt, mix thoroughly. Add the cooked prawns and Fiery Caribbean Sauce, folding through gently. Spread onto the ciabatta slices and serve.

Hanging Around A sensational hanging basket can be put together now to last throughout the summer months and it couldn’t be easier to achieve… Ingredients 1 x 14” Wicker Basket 2 x Trailing Fuchsia 2 x Million Bells 2 x Ivy Leaf Geranium 2 x Surfinia Trailing Petunia
1 x Zonal Geranium Bents Multipurpose compost Slow release plant feed Water retaining gel
Instructions Fill your 14 inch wicker basket with multi-purpose compost, remembering to ensure there are sufficient drainage holes. Before placing any plants add the plant feed and water retaining gel. Next place a zonal geranium in the centre of the basket and a combination of 8 trailing plants evenly around the edge. Place plants of the same variety opposite each other so the basket will look balanced. Then water your basket and place in a position to be enjoyed!
