Hello and welcome to this the NEW BLOOD issue of Bed Sheets Magazine. Our search for the new movers and shakers that are leading the new wave of creativity coming out of the City of Angels started right here at Bed Supperclub with our very own DJs. They chase the bass by night and get creative in the corporate world by day utilising their skills in visual communication, advertising, digital media, illustration, and photography. As the country heals from the recent flood devastation, we wanted to give a nod to the kids who are spearheading the new wave of talent that will ensure that Thailand keeps its cool and stays ahead of the game. James Gilbody ( DeLorean ) What do you do at Bed Supperclub? Most of the time you’ll find me with a camera fixed firmly in my hand. Occasionally you’ll spot me behind the decks. When are you the happiest with your work? Making a living by being creative, I consider myself very lucky to be one of the chosen few who enjoys their work. What’s the most creative thing that you’ve ever done? Being able to fund my early years without a real 9 – 5 job! I was making websites when I was 15 and putting D&B parties on when I was 16! What genre of music do you listen to most? At the moment I’m loving the Future Garage movement coming out of the UK. It’s going to explode next year so keep your eyes peeled for that one! Be honest, are you a pirate? My buccaneering days are over! Argh.

What magazine do you read most often? I’m more of a blog fiend; Highsnobiety is up there as my most checked; lots of eye candy, shoes and clothes to add to the wish list. I can highly recommend Xlr8r for a musical fix. What’s your weakness? Cheese.

Pick the one person who’s had the biggest influence on the person you think you are. Picking one person is difficult although I’ve only just passed two decades. There have been a lot of people while growing up who’ve inspired me but right now it would be my girlfriend for being incredibly supportive in everything I want to do and helping me keep my head out of the clouds… most of the time. What annoys you the most? Backpackers on the road to enlightenment and a motorcycle crash. What brand do you head for first in a clothing store? Shoe shop? Has to be Nike. For everything else, I love checking out independent clothing companies. A very close friend of mine runs a company and to see the amount of hard work that goes into it you can only admire those you try. What would you like to stop doing? My girlfriend would probably say moaning, but I think it’s about time to stop hammering the nail in the coffin and quit smoking. If we were to give you one Belgian chocolate now or two in an hour, which would you go for? Ask if you had any Reeses Buttercups. Draw the next thing that comes to mind … I passed art at school by burning flags. I’d be happy to try recreating that with the magazine. 33

What’s the most creative thing that you’ve ever done? I do a weekly TV program show call "ZogZag" on CH [V]. I have to come up with new ideas every week. What music do you listen to most? I’m a 90s kid so I grew up with hip hop and alternative rock. I got my first hip hop CD when I was just 13. My friend introduced me to the Wu-Tang Clan and I fell in love with hip hop right then. By the way if you ask me if it's Blur or Oasis? The answer will be Oasis!

BRIAN WOULFE Suave, youthful and fuelled by his passion for the seamless delivery of bespoke interior design solutions and luxury living environments, Phuket-based Brian Woulfe is becoming the first port of call for a diverse range of clients from all over the globe, that yearn for his distinctive and committed approach to design.

What made you decide to settle in Thailand I was lucky enough to visit Phuket for a birthday celebration nearly two years ago. I’m not really a sit-by-the-pool-and-work-on-my-tan kind of guy so I found myself venturing out to have a look at the Island. I stumbled on a development called Malaiwana. Its design, location and quality of build blew me away. After speaking to a few people, both developers and agents, it became clear that there was a market here for high-end bespoke interior design services. I left Thailand with a fire burning in my mind and a couple of months later I found myself back here, living and working. I haven’t looked back since; it’s been one of the most exciting years of my career so far. Who’s your design icon? Well, it’s hard to choose only one. There are many and I have many thoughts about their work. Christian Liaigre is one designer that has found his own place in design. That is a great achievement for anyone creative. Some see him as an interior designer whilst others identify him with furniture. Whichever the case may be he is certainly the most copied designer of our time. I’ve only recently started to study the different layers of his work. Liaigre’s spaces draw inspiration from the rugged textures of the French Atlantic coast where he grew up. He always seems to make a deep connection with the tradition of each of the locations he works on, which is something I always try to do with the projects I am working on. His books make for great coffee table pieces and are a must for anyone interested in design. Where do you draw your inspiration from? I get inspired by many things. The people around me, my friends and my family are all huge inspirations. I love spending time in cities, museums and in the countryside. I find myself looking at, and drawing inspiration from the interiors and architecture of the hotels, restaurants and bars that I visit. It’s great to see how a designer has brought their design together and it's even more fun

to consider what I’d do differently. I also love fashion and I draw constant inspiration from it which I translate into my interiors. Be it color combinations, shapes, stitch details or even a pattern. Fashion most definitely influences decor; it always has. Colour combinations, motifs, themes translate easily from fashion to home decor. We often use fashion-scapes to establish moods/feelings. It’s a great way to explain a concept to a client. Much easier for them to understand sometimes. What brings the biggest challenge and the biggest reward in your work? Gosh, that’s a hard one! I mean, I face challenges every day in my work but I never see them as something “big” or impossible to overcome. Simple things like sourcing something at short notice, or working on a particularly difficult floor plan to get the most out of the space are all parts of my everyday life. One of the challenges that I face the most here is keeping an eye on the finished detail. It can be a time-consuming task and infuriating at times but it’s a very important part of design. I always say the devil is in the detail! The biggest challenges always bring the biggest rewards. What are you working on at the moment? My work at the moment is mainly focussed on private residential homes. It’s exciting because I get to work with some great properties. One of my clients purchased a Club Penthouse at the Kata Rocks development in Phuket. It’s a great project to be working on as it won Best Apartment in the World 2010. I’m also working on a couple of villas at Malaiwana Estate. It feels right to be working on them given they were so influential in my decision to move to Thailand. Consulting takes up a proportion of my time and I’m working with developers to choose finishes etc for their project. At the moment I am working with clients based in Hong Kong, Germany, Switzerland, UK and Thailand. It’s great! Every day I wake up and I have something new to do… I could never say my job is boring! 43

We can observe the shen in ourselves and others through the sparkle or dullness of the eye and the glow, or lack of it, in the complexion of the face. In times of anxiety and loss people often become pale, even grey-faced. Some people are almost constitutionally monochrome and joyless. The other extreme is manic overexcitement where joy spins out of control. The shen’s presence creates vitality; when it is absent or clouded there is a lack of connection and eye contact. The far ends of these spectrums require medical treatment but the day-to-day imbalances may be helped with aromatherapy. Looking back over the blends I have created here I have often included an essence to support the shen. Oils don’t have to be blended. Just one on a pillowcase or in the burner can be enough. SHEN / Heart Spirit Aromatherapy falls under the sphere of ‘holistic’ therapies, those that aim to treat the whole individual rather than just particular symptoms or organ systems. This is often seen to encapsulate the mind, body and spirit. In traditional Chinese medicine (TCM) the mind/spirit is called the shen and is housed in the heart (or the Heart’s blood). When the shen is disturbed there may be problems like anxiety, mania or lack of mental clarity. When the shen is ‘not housed’ due to weak blood there may be insomnia or vivid dreams. On an elemental level, the shen is associated with summer and fire-think roses and mid-summer madness.

Fiddle if you like, replacing the crab with shrimp, the coriander with fresh mint – play as you see fit. But any way you make it, this is light food that’s heavy on pleasure and reward. BAKED RICOTTA Time: 40 minutes 18 ounces (2 1/4 cups) ricotta cheese 2 large egg whites, lightly beaten 1/4 teaspoon dried oregano Finely grated zest of 1 lemon Salt and freshly ground black pepper Vegetable oil for greasing pan 1. Heat oven to 350 degrees. In a mixing bowl, combine ricotta, egg whites, oregano and lemon zest. Season to taste with salt and pepper. Lightly oil an 8-inch springform baking pan. Pour in ricotta mixture, and smooth surface. 2. Bake until ricotta is dry on top but not browned, about 30 minutes; it will have risen slightly but will remain a thin disk. Allow to cool slightly, and release from pan. Cut into wedges, and serve warm with a plate of roasted tomatoes. Yield: 4 to 6 servings.

What’s your favourite noise? Almost every kind of music. I love dancing so much! What’s your least favourite noise? My dog's crying to get my attention when I'm sleeping in the morning or at night. Oh yes, I love dogs that much. If you could dine at Bed with two celebrities who would they be? Oprah Winfrey and Sandra Bullock. I love everything about Oprah. Not only is she successful in every aspect of her life but she's also very kind and generous. I like altruistic people who give to others in need. Sandra Bullock is another idol of mine; she’s smart, talented, funny, and also very generous. She always seems to be one of the first stars to step up and donate to disaster relief campaigns. If you could only eat one food for the rest of your life what would it be? Thai fish chill paste. A lot of foreigners think it smells really gross but that’s just like the French eating smelly cheeses. It’s also very nutritional, crammed with calcium and vitamins. Although there is a price to pay. My boyfriend won’t kiss me for days after! We heard you were very active during Thailand’s recent floods. Yes, initially I went out to help rescue dogs that had been abandoned by their owners when they evacuated for higher ground but it soon became apparent that many people were still stranded and suffering. Elderly people were actually out wading in waist-high water begging for food and medicine so I ended up going to very remote areas in my boat and taking food and medicine and doing whatever I could to help. We left early in the morning and most days didn’t get home till around midnight. It was quite perilous at times; at one point I was out in the water and a cobra swam passed me. Cholesterol is a waxy substance that occurs naturally in all parts of the body. We all need a small amount to produce hormones, vitamin D, and acids that help us digest fat. However, too much can lead to atherosclerosis (also known as arteriosclerotic vascular disease or ASVD), a condition in which fat and cholesterol are deposited in the walls of the arteries in many parts of the body. Lowering your cholesterol naturally is simple, so don’t opt for the easy route of taking drugs that lower it as they often come with crappy side effects such as memory loss, irritability, tiredness, liver inflammation and long term use can even lead to congestive heart failure. Do it naturally and you’ll enjoy added health benefits. Diet plays a crucial role in lowering your cholesterol. Here are five foods that can lower your cholesterol.

Go fish Eating fatty fish can be heart-healthy because of its high levels of omega-3 fatty acids, which can reduce your blood pressure and risk of developing blood clots. The highest levels of omega-3 fatty acids include: Salmon Mackerel Herring Sardines *Note - steam, bake or grill the fish to avoid adding unhealthy fats. Go nuts! Almonds and walnuts are the healthiest option. Eating a handful of nuts a day may reduce your risk of heart disease but do make sure they aren't salted or coated with sugar. Foods with added plant sterols or stanols Foods are now available that have been fortified with sterols or stanols - substances found in plants that help block the absorption of cholesterol. Margarine, orange juice and yogurt drinks with added plant sterols can help reduce LDL cholesterol by more than 10 percent. The amount of daily plant sterols needed for results is at least 2 grams - which equals about two 8-ounce (237-millilitre) servings of plant sterolfortified orange juice a day.

Saturated fat sucks! Experts used to pin the blame on cholesterolrich foods and eggs, however they now know that dietary cholesterol isn't the main culprit. It’s now believed that saturated fat causes increases in cholesterol so cut it out of your diet. That means no more animal fats such as cream, cheese, butter, and ghee. You veggies aren’t off the hook either. You need to watch out for plant-based sources of saturated fat, principally coconut oil and coconut milk, palm kernel oil, cocoa butter and palm oil.

Have you had your oats today? Oatmeal contains soluble fibre, which reduces your low-density lipoprotein (LDL), the ‘bad’ cholesterol. Fibre products that contain psyllium are especially good so try to include some in your diet. Soluble fibre is also found in such foods as pears, apples, barley, kidney beans and prunes. 54

I heard that you changed your menu – is this true? It is. For the past nine years, Sun-Thurs, we offered a three-course set menu. As of Feb, 2011, we offer a menu that is no longer restricted by a set, but is much more flexible (a la carte) to give our guests greater freedom when ordering. We also offer half -size food portions and the kitchen is open longer.

I didn’t know that you guys had a restaurant. I thought that you were only a club. Yup, nine years later, this is still the biggest misconception that we have. Since the beginning (2002) we have always had the restaurant, but it often and unfortunately, stands in the shadow of the clubbing aspect. We are currently offering more special dinners (wine dinners, tequila weekend dinners, etc), in an on-going effort to push the visibility of the restaurant.

Why are your wines so damn expensive? Yes, this is very unfortunate. Due to the 400% tax on both foreign and local wines (geared in part to protect the consumption of local Thai beverages), our prices are forced to reflect this tragedy.

Our Bed World card is given to guests strictly through word of mouth to those who have shown incredible loyalty over the years. As of late, we are granting Bed World cards only to guests that are repeat diners in the restaurant. May I book a hen party, birthday party, office party, Christmas party at Bed? Yes, of course.
